JRE: Culinaire vernieuwing en traditie Jeunes Restaurateurs d’Europe is één van de meest prestigieuze culinaire verenigingen in Europa. Ze heeft restaurants in 10 landen, en werd opgericht met het doel om klanten voortreffelijke gerechten op te dienen, bereid door de meest vernieuwende chefs van het moment. Een nieuwe wereld boordevol smaken, aroma’s en gevoelens, die de goedkeuring geniet van de beste gastronomische gidsen van het Europese vasteland.
JRE: culinary innovation and tradition
The history of JRE dates back to 1974, when it was created with the aim of sharing and transmitting a passion for gastronomy, and a love of the flavours, aromas and colours of European cuisine. Nicole Seitz, head of External Relations at Grand Marnier from 1953 to 1998, was the driving force behind its creation. As part of her work she used to pay frequent visits to restaurants, meeting and getting to know many chefs and their families. The young chefs who inherited the culinary art from older generations conveyed their need to interact with other young restaurateurs so that they could share their ideas, knowledge and expertise. Nicole felt that she could help them and that Grand Marnier could play an important role in making it work, so she asked chairman Jacques Marnier-Lapostolle if he would create an association for young restaurateurs.

De geschiedenis van JRE gaat terug tot 1974, toen JRE werd opgericht met als doel de passie voor gastronomie en een liefde voor de smaken, aroma’s en kleuren van de Europese keuken te delen en over te brengen. Nicole Seitz, hoofd Buitenlandse Betrekkingen bij Grand Marnier van 1953 tot 1998, was de sturende kracht achter de creatie van JRE. Een van haar taken bestond uit het regelmatig bezoeken van restaurants en talrijke chef-koks en hun gezinnen te ontmoeten en leren kennen. De jonge chef-koks die de culinaire kunst hadden overgeërfd van oudere generaties maakten duidelijk dat ze een behoefte hadden om met andere jonge restauranthouders te
interageren zodat ze hun ideeën, kennis en expertise konden delen. Nicole vond dat ze hun kon helpen en dat Grand Marnier hier een belangrijke rol in kon spelen om dit te laten slagen, dus ze vroeg voorzitter Jacques Marnier-Lapostolle of hij een vereniging wou oprichten voor jonge restauranthouders. Hij werkte het idee uit en Jeunes Restaurateurs de France (JRF) werd opgericht. JRF was een enorm succes en telde weldra meer dan honderd leden. De buurlanden wilden ook deelnemen en dus veranderde JRF in de jaren ’90 zijn naam in Jeunes Restaurateurs d’Europe (JRE). dankzij de niet-aflatende steun van Jacques Marnier-Lapostolle, de oprichtende en
waarnemende voorzitter, die vandaag nog steeds actief betrokken is bij de organisatie. Het succes van JRE is niet te miskennen: het telt meer dan 350 deelnemende restaurants in landen als Duitsland, Oostenrijk, België, Kroatië, Frankrijk, Slovenië, Spanje, Italië, Luxemburg, Nederland en Zwitserland en het overstijgt ook andere grenzen, nu onlangs ook Australië werd toegevoegd. Dit succes benadrukt het belang van talent en passie en het markeert de start van een nieuw tijdperk in gastronomie.
Dit jaar viert Duitsland zijn twintigste verjaardag als lid van JRE, met meer dan 50 deelnemende restaurants. De Duitse keuken met zijn centrale ligging in Europa en culinaire tradities en erfgoed dat net zo rijk en gevarieerd is als zijn omgeving, heeft veel invloeden ondervonden van de geschiedenis en lokatie van het land, en het varieert enorm al naargelang de streek. De uitstekendheid van de Duitse keuken is ook toe te schrijven aan zijn wijnen, bier en brood, zonder zijn nagerechten over het hoofd te zien, die een waar genot voor de zintuigen zijn.
He embraced the idea and Jeunes Restaurateurs de France (JRF) was founded. JRF was a resounding success and it soon had more than one hundred members. Neighbouring countries also wanted to join in the venture and so in the 1990s, JRF changed its name to Jeunes Restaurateurs d’Europe (JRE), with the unfailing support of Jacques MarnierLapostolle, the founding and honorary president, who is still actively involved in the organization today. JRE’s success is undeniable: it has more than 350 member restaurants in countries such as Germany, Austria, Belgium, Croatia, France, Slovenia, Spain, Italy, Luxembourg, Netherlands and Switzerland, and it also transcends other borders, with Australia being the latest addition to its ranks.This accomplishment highlights the importance of talent and passion and it marks the start of a new era in gastronomy. This year, Germany is celebrating its twentieth anniversary as a member of JRE, with over 50 member restaurants. Situated in central Europe, with culinary traditions and heritage as rich and varied as its environment, German cuisine has many influences that come from the country’s history and location, and it varies greatly from one region to another. The excellence of German cuisine is also due to its wines, beer and bread, without neglecting its desserts, which are a real treat for the senses.

Een meer dan 2.000 jaar vrijwel ongewijzigde productiemethode, die vanuit het oude Azië generatie op generatie is doorgegeven, vormt de basis van Carpe Diem Kombucha. Chr.) deden er verhalen de ronde over Kombucha, de gefermenteerde theedrank. Het recept werd eeuwenlang overgeleverd en Kombucha genoot in de hele wereld faam, niet alleen als een gezond, maar ook een lekker drankje. Overtuigd van de unieke frisdrank haalde Carpe Diem deze Kombucha aan het einde van de jaren 1990 naar Europa. Jarenlang
werd verder aan de samenstelling van de theekruiden gesleuteld. Een proces dat net zo complex is als het perfectioneren van topwijnen. De huidige samenstelling is een uniek bedrijfsgeheim, maar over enkele ingrediënten kunnen we wel een tipje van de sluier oplichten. Onder andere rozenbottels, hibiscusbloesem, braambesbladeren en vlierbloesem worden met elkaar vermengd. Deze uitstekende theekruiden vormen de basis voor de ontwikkeling van de verfijnde smaaknuances en het scala aan aroma’s in het eindproduct. De unieke selectie wordt uitgeschonken en met natuurlijke bietsuiker gezoet. Tijdens de unieke dubbele fermentatie wordt de suiker allereerst na afsluiting van zuurstof door Kombucha-culturen in alcohol omgezet. Deze wordt door de toevoer van zuurstof tijdens de tweede fermentatie weer afgebouwd. Daarbij rijpen meer dan twintig verfijnde aroma’s in elk type Kombucha. Er ontstaan

It involves the double fermentation of carefully selected herbal teas, during which a variety of different aromas develop, making this natural drink the ideal nonalcoholic accompaniment to every good meal. The first reports of the fermented tea drink Kombucha date back to the Chinese Chin dynasty (around 221 B.C.). The recipe has been handed down through the centuries and has become known throughout the world as a healthy but also enjoyable beverage. Convinced by the potential of this extraordinary drink, Carpe Diem brought Kombucha to Europe at the end of the 1990s.The composition of the tea herbs has been consistently refined over the years. A process that is as complex as the blending of fine wines. The specific composition is a company secret. However, a few of the ingredients can still be mentioned. Rosehip peel, hibiscus flowers, blackberry leaves and elderflower are combined, among other ingredients. These carefully selected tea herbs form the basis for the development of subtle flavour nuances and the many different secondary aromas in the final product. Water is added to the exceptional selection and the mixture is sweetened with natural beet sugar. During the unique double fermentation process, the sugar is first of all converted into alcohol through Kombucha cultures under the exclusion of oxygen. The alcohol content is then metabolised with the addition of oxygen during a second fermentation. During this process, more than twenty fine aromas develop in every sort of Kombucha. Furthermore, valuable organic acids are formed, along with carbohydrate-splitting enzymes, which bestow the natural drink with its digestible character. The picture they compose outlines their defence of the values they share: discipline, simplicity, naturalness and, of course, feminine creativity. This Slovenian chef is not only totally absorbed in her cuisine but also in her family, with whom she shares her work in this wonderful natural setting as the most intimate form of expression, thus blending her professional and personal life harmoniously. Reuter, Rheda-Wiedenbrück (North Rhine-Westphalia, Germany) is the restaurant where Iris Bettinger can be found. She captivates her diners with the experience handed down through four generations, and with the pure devotion she shows in what she does. Persevering and determined, she also balances her work with her personal life. Les Eleveurs, Halle (Belgium) is owned by Sofie Dumont, a chef who delights us with her know-how in extremis that is the result of her innate love of her work. Although she solely and exclusively works as a chef in her business, she is also aware that as a woman, her personal and professional life is inseparable. These three young restaurateurs pamper, indulge and educate palates and much more, thus referring to their role as chefs and of course, as a benchmark for women. As women, they share the same views, have similar concerns, cooking with the full weight of their emotions, but by no means neglecting textures, flavours and cer tainly applying technique and a natural feeling for their products. Hij vond zijn roeping als het ware bij toeval toen hij een vakantiejob deed, en sindsdien heeft hij zijn hele leven gewijd aan de kunst van het koken. Franky Vanderhaeghe staat aan de top van de veelbelovende en realistische chefs: de Gault Millau gids verkoos hem in 2003 tot één van de meest veelbelovende chefs van België, het tijdschrift “Culinaire Saisonnier” verkoos hem in 2001 tot de beste chef van België en hij is lid van de Orde der 33 meesterkoks van België. Hij is zaakvoerder van het restaurant St.Nicolas (Elverdinge, West-Vlaanderen), dat hij zelf omschrijft als “een culinaire tempel voor alle zintuigen”. Hier is het, dat hij en zijn vrouw, Sandra Nys, hun meesterlijke culinaire vaardigheden aanscherpen, met
bijzondere nadruk op de eindsmaak van hun creaties en de presentatie van de gerechten, wat voor hen net zo belangrijk is.

Volgens Adolfo Muñoz moeten we zo gezond mogelijk proberen leven, want onze gezondheid is ons dierbaarste geschenk. Deze visie komt tot uiting in zijn liefde voor verse producten van het land en uit de zee.

Het beste advies dat chef-kok Adolfo aan jonge starters in de keuken kan geven is eenvoudig: discipline en verantwoordelijkheid. Dat klopt, een kok is een kunstenaar. Maar een uitstekend gerecht moet niet alleen lekker zijn, het moet ook gezond zijn. Een smakelijk gerecht moet zorg dragen voor je lichaam; het moet je voeden, maar het moet ook een aangenaam en prettig gevoel geven. Dat vergeten we maar al te snel in ons drukke bestaan, maar de oplossing die chef-kok Adolfo hierop gevonden heeft is het vermijden van routine en monotonie, want niets geeft meer voldoening wanneer hij bij zijn gasten het resultaat ziet van een geslaagd gerecht; goed doordacht, gecreëerd en samengesteld. Hard werk moet aangevuld worden met nieuwe ideeën en een goede portie gezond verstand.
Het is een man die houdt van tradities en die erin geslaagd is om een evenwicht te vinden tussen werk en gezin, hoewel hij maar al te graag toegeeft dat het niet altijd makkelijk was. Hij heeft zijn liefde voor koken doorgegeven aan zijn kinderen en is daar trots op. Samen met zijn vrouw Julita en zijn kinderen heeft hij een grote groep opgericht; de Adolfo Group. De groep telt ondermeer restaurants, hotels, wijnbouwbedrijven en een kokschool. De Spaanse keuken staat hierbij steeds centraal. Het geheim van zijn succes? Wel, er zijn geen geheimen. Innovatie is belangrijk, maar men dient steeds rekening te houden met de basis: zorg dat je iedere dag een beetje beter wordt, bied altijd alleen het allerbeste aan, behandel gasten alsof ze thuis zijn, moedig gesprekken en conversaties aan tafel aan en geniet van het gezelschap. The best advice that chef Adolfo can give to young people starting in the kitchen is simple: discipline and responsibility. It’s true, a cook is an artist. But making an excellent dish does not mean that it shouldn’t be healthy. A tasty dish has to be good for your body; it has to nourish you, but it also has to create a pleasant and agreeable feeling. It’s something that is all too easy to forget with our frantic pace of life, but chef Adolfo’s solution is to avoid routine and monotony, because there is nothing more rewarding than seeing the result in his guests of a job well done, a dish that has been well thought through, created and developed. Hard work has to be complemented with new ideas and a lot of common sense. He is a traditional man, who has managed to

De Amalfi kust op het Sorrentijnse schiereiland in de Golf van Salerno stijgt uit boven het kalme water van de Middellandse Zee tussen de steden Positano en Vietro sul mare. Deze kuststrook is het product van persistent ontbossingswerk en vakkundige terrasbouw, die tegen de Middeleeuwen al zijn specifieke charme verleend had aan dit stukje kust. De kronkelende kustbaantjes domineren de zee en bieden een uniek uitkijkpunt dat de reiziger versteld doet staan, net zoals de kleine gehuchten die zich tussen de rotsen verschuilen of boven de terrassen tussen overvloedige wijngaarden en citrusbomen uitsteken. De schitterende natuuromgeving van de Amalfi kust strekt zich uit tot het eiland Capri en biedt de achtergrond voor de pittoreske witte huizen die opgetrokken zijn uit kalksteen en tuf, de kenmerkende gebouwen van de streek. De kust, een werelderfgoedlocatie, ontleent zijn naam aan de stad Amalfi, de centrale kern van de kust, niet alleen geografisch maar ook historisch. Het was zelfs de oudste maritieme republiek met volledige politieke autonomie toen het zich rond het midden van de negende eeuw met eigen middelen moest verdedigen tegen continue aanvallen van de moslims. Dit is één van de mooiste kuststreken in Italië, met een har telijke gastvrijheid en
uitgelezen en exclusieve hotels. De 4- en 5-sterren hotels zijn van hoogstaande kwaliteit, maar dit geldt ook voor de goedkopere 2- en 3-sterren hotels. Tijdens de zomer vindt u er ook een breed aanbod van traditionele pensions, toeristische dorpjes en gasthuizen die te huur worden aangeboden. Het is een schitterende kust met dorpjes die uniek en zelfs mythisch zijn voor buitenlanders die ervan dromen om de regio minstens één keer te bezoeken. Hier smaakt vakantie naar de zee, de fijne inheemse producten, de limoncello likeur, en de verse visgerechten die de restaurants aanbieden.
THE DIVINE COAST Impressive landscapes and traditional cuisine Located on the Sorrentine peninsula which sticks out into the Gulf of Salerno, the Amalfi Coast rises above the calm waters of the Mediterranean between the towns of Positano and Vietri sul mare. This stretch of coast is the product of persistent deforestation work and the skilful craft of terrace cultivation, which by the Middle Ages had already conferred its peculiar charm on this fragment of coast. The winding roads which run along the coast following its course, dominate the sea and provide a unique vantage point which leaves the traveller speechless, as do the small population centres fitted between the rocks or located above the terraces between luxuriant vineyards and citrus trees. The marvellous natural scenery of the Amalfi Coast extends to the island of Capri and provides the setting for the picturesque white houses made of limestone and tuff, the characteristic buildings of the region. Listed as a world heritage site, the coast takes its name from the city of Amalfi, the central nucleus of the coast not only geographically but also historically. In fact, it was the oldest of the maritime republics to acquire full political autonomy when, around the middle of the ninth century, it had to defend itself using its own resources from continuous attacks by the Muslims. This is one of the most beautiful coastal regions in Italy, with a very warm welcome and select and exclusive hotels. The 4 and 5 star hotels are of high quality, but so are the more economical 2 and 3 star hotels. It is also possible to find a wide range of traditional boarding houses, tourist villages and guest houses

Het is onvoorstelbaar dat er binnen de luttele kilometers die de Amalfi kust telt zoveel verschillende manieren worden aangeboden om de lokale producten te bereiden. Dezelfde ingrediënten die ten volle tot hun recht gekomen zijn onder dezelfde zon of opgevist werden uit dezelfde zee, krijgen verschillende, unieke en speciale smaken en geuren. Ieder dorp aan de kust heeft zijn eigen gerecht, zijn eigen manier van koken, zijn eigen kenmerkende culinaire en gastronomische cultuur waar het argwanend over waakt.
Of het nu gaat om voorgerechten of desser ts, de regio biedt basisingrediënten van de hoogste kwaliteit die specialiteiten zoals Amalfi’s scialatielli, een handgedraaide pasta vergezeld van authentieke verse schelpdieren, tot leven wekt. De tweede gangen, op basis van vis en schepdieren, zijn ook een vermelding waard. Tot slot vormen desser ts en likeuren een belangrijk onderdeel van de lokale gastronomie: bovenal, sfusato amalfitano, dat beter bekend staat als limoncello.

Also worthy of mention are the second courses, based on fish and shellfish. Finally, desserts and liquors form a key part of the local gastronomy: above all, sfusato amalfitano, better known as limoncello.

Tijdens een gesprek met Alders krijgen we enkele van zijn karaktertrekken te zien, zoals integriteit, consistentie, toewijding, identiteit, volhardendheid en vastberadenheid, om er maar enkele te noemen. Deze chef raakt niet in vervoering door mode of trends, maar door de essentiële zaken in de wereld van de gastronomie: persoonlijke aandacht, natuurlijkheid en eerlijkheid; deze zaken worden stuk voor stuk uitgedrukt in altruïstische creaties, bereid met de meest verse seizoensproducten op de markt. Zijn keuken is als een voetbalveld waar Alders de coach is, hij coördineert de timing, kwaliteit en techniek van zijn spelers, maar laat steeds ruimte voor creativiteit. De hoeksteen van zijn kunst is een sublieme mix van techniek, traditie en avant-garde keuken. Zijn savoir faire komt tot uiting in
zijn keuken waarin iedere hiërarchische laag net als in een piramide steunt op de vorige laag, zodat een schitterende finale ontstaat. Toch was deze ster pas het begin van een lange weg die bezaaid ligt met bekroningen, een weg die geleid heeft tot de creatie van een uitmuntend product met een extreme wiskundige precisie: het ontstaan van een totaalpakket in de vorm van een creatieve seizoenskeuken op basis van licht verteerbare traditionele Franse ingrediënten met een Mediterrane toets en intense smaak. The semiclosed glasshouse creates the optimal environment for the cress to grow. Solar panels provide the electricity required by state of the art LED lights. These in turn, provide the exact amount of light for optimal growth. Excess heat is harvested and stored 200 m deep, so it can be used in winter. Cold water is used in summer to cool the greenhouse. To ensure the cleanest starting materials, the company produces the seeds itself or under supervision. Seeds are soaked and washed before being sown on cellulose, the cleanest medium possible. Tap water is used to water the plants preventing any chance of bad influences. Biological crop control guarantees the absence of pesticides or other residues. The company works according to the HACCP rules and is only one of two companies in the Netherlands that have the SQF certificate, living up to the extremely strict US and Australian regulations.

In de 6e eeuw importeerden de Arabieren de rijstkweek in Spanje, van waaruit het geïntroduceerd werd in Italië. Rijst was meteen populair bij de boeren omdat rijst dankzij de fantastische flexibiliteit van deze graansoort niet alleen een functie gaf aan het moerasland, maar ook aan niet-verbouwde en steriele velden en eender welk type land dat overstroomd kan worden. Sicilië was de eerste regio waar men rijst begon te verbouwen, gevolgd door Sardinië en regio’s in noord-Italië zoals Piëmont, Lombardije en Veneto. Hier, tussen Vercelli en Novara, had men de ideale plaats gevonden voor het verbouwen van rijst, dankzij het gebruik van landbouwtechnieken die nu werden aangepast voor de moderne tijden.
Ieder jaar, vanaf begin januari, wordt het land voorbereid binnen geometrisch vierkante rijstvelden, die lichtjes afhellen en omheind worden door dijken. Deze dijken worden af en toe onderbroken door kleine openingen, waardoor het water van het ene rijstveld in het andere kan stromen. De rijst wordt gezaaid tussen april en mei. Nadat de rijst gezaaid werd, wordt het water zodanig vastgehouden dat het opgewarmd wordt door de zon en de grond bedekt wordt tot op een diepte van tien centimeter. Tijdens het kiemen en de ontwikkeling van de zaailingen, dient men ervoor te zorgen dat het waterpeil steeds enigszins boven het hoogste deel van de plant uitkomt. RICE: A TRULY UNIQUE ITALIAN PRODUCT The ancient history of a product of great versatility Rice cultivation was introduced into Italy from Spain, where it had in turn been imported by the Arabs around the time of the sixth century. It was given a warm welcome by farmers, as it made possible not only the utilisation of marsh land but also of uncultivated and sterile fields, thanks to the great adaptability of this cereal to any type of land that could be flooded. Sicily was the first region to begin to cultivate rice, followed by Sardinia and by regions of northern Italy such as Piedmont, Lombardy and Veneto. Here, between Vercelli and Novara, the ideal place for rice cultivation was found, using traditional agricultural techniques which have now been adapted for modern times. Every year, from the beginning of January, the land is prepared within geometrically square paddy fields, which are on a slight downward slope and are delimited

Zijn restaurant, “Cinzia – da Christian e Manuel” is gevestigd in Vercelli en de twee chefs kennen de mogelijkheden van dit product zeer goed. “Rijst is zoals een onbeschilderd doek” – zegt Christian “het is een voedselsoort die met eender welk ingrediënt gecombineerd kan worden, waardoor het zowel een licht voorgerecht als een overheerlijk dessert wordt”.
