Een zeldzame handgemaakte white thee uit de Nuwara Eliya district van Ceylon, geteeld op zo’n 2.000 meter hoogte. De tere knoppen van de theeplant zijn bij de dageraad met de hand geplukt en volledig handmatig verwerkt. De knoppen zijn zongedroogd en voorzichtig met de hand gerold, waardoor de karakteristieke zilver-, naald-achtige knoppen met een fluweelzachte textuur ontstaan. De thee is licht en delicaat van smaak: ongrijpbaar en mild in de mond, met in de nasmaak een vleugje ‘groen’ dat eigen is aan een hoog groeiende thee. De prachtige aanblik van de knoppen in het theewater verhoogt het plezier van deze unieke thee. A rare white tea from the Nuwara Eliya region of Ceylon, Grown at 6.000 feet elevation. The tender duds of the plants are handpicked at dawn before being sun dried and hand rolled, producing the characteristic silver-, needs-like buds. Their pale liquor is delicate and mild on the palate with a touch of the ‘greenish’ seasonal high grown character in the finish. The beauty of the infused buds adds to the pleasure of this unique brew.

ZWARTE THEE / BLACK TEA Single Estate Darjeeling

Een bijzondere en milde Darjeeling afkomstig uit de beroemde Indiase theestreek Darjeeling. Dit is een Single Estate Darjeeling thee, verbouwd op een hoogte van circa 2300meter (met uiitzicht op de Mount Everest) een subtiele, delicate en gedistingeerde smaak eigen aan Darjeeling. Een beetje bloemig met een pittig karakter en een zachte ondertoon. Een verfijnde thee die zonder melk en bij voorkeur ook zonder suiker gedronken dient te worden. Various shades of dark browns, greens, yellows and a hint of blue in this loose twist leaf are eye-catching. The infused leaf, cut and broken green leaf with red edges are unexpected. Liquor of dark gold and orange. Light aromas of tobacco and hay hint of a delicate tea. However this is a medium bodied tea of medium astringency. A strong upfront bitterness is detectible in the mouth and the flavour of flowers and oak present themselves in a tea that has a refined nature. There is even a hint of Muscat in the flavour. Een speziale thee die in China bekend is om zijn geneeskrachtige waarde. Pu-Erh thee wordt geteeld in de provincie Yunnan en is al sinds de Tang-dynastie populair in die regio. Toen wird Pu-Erh vooral gedronken ter bevordering van de spijsvertering en meer recent ook ter verlaging van Cholesterol. Pu-Erh is een half gefermenteerde thee met een karakteristieke aardse smaak. Het opvallende houtige karakter, met een zweem van kruiden en de kenmerkende smaak, is ongebruikelijk voor Chinese thee, die meestal licht bloemig is. Dit is het resultaat van het rijpingsproces dat uniek is voor Pu-Erh. Renowned in China for it’s medicinal value, Pu-Erh has been popular since the TangDynasty when it was taken to relieve indigestion and more recently to reduce cholesterol. This is a semi-femented tea with a typically earthy taste. It’s prominent woody character with hints of herb is unusual among Chinese teas which are usually light and floral. This is the result of the post-fermentation process unique to Pu-Erh.
