J
eunes Restaurateurs d’Europe (JRE) is een vereniging van jonge restauranthouders met uiteenlopende doelstellingen, onder andere het delen van hun Talent en Passie voor gastronomie en alles wat daarmee verband houdt. JRE, met in totaal 350 restaurants in meer dan 12 landen in heel Europa, heeft de oorspronkelijke visie van zijn oprichter vervuld en deze visie zelfs overtroffen. In 1974 was Jacques Marnier-Lapostolle zeer vooruitziend en had het idee om een vereniging op te richten voor de volgende generatie chef-koks en ondernemers van Frankrijk, de Jeunes Restaurateurs
de France. Begin jaren negentig was deze droom werkelijkheid geworden, en waren zijn doelstellingen internationaal geworden, met als resultaat de huidige Jeunes Restaurateurs d’Europe. Sindsdien is de groei van de vereniging niet te stoppen. Ieder jaar verwelkomt de vereniging nieuwe landen, leden, restaurants, partners en uiteraard evenementen. De JRE Awards erkennen de buitengewone prestaties van onze leden en partners ter ondersteuning van ons gemeenschappelijk doel: ons gastronomische en culinaire erfgoed promoten en doorgeven aan de volgende generatie.
Jeunes Restaurateurs d’Europe CULINARY INNOVATION AND TRADITION Jeunes Restaurateurs d’Europe (JRE) is an association of young restaurateurs with various objectives, among them sharing their Talent and Passion for gastronomy and everything related to it. With a total of 350 restaurants in more than 12 countries across the whole of Europe, the JRE has fulfilled and surpassed the initial vision of its founder. In 1974 Jacques Marnier-Lapostolle had the foresight to create an association for France’s next generation of top chefs and entrepreneurs, the Jeunes Restaurateurs de France. By the early nineties, this dream had turned into reality and its objectives had become international, resulting in what is today the Jeunes Restaurateurs d’Europe. Since then the association’s

growth has been unstoppable. Every year it welcomes new countries, members, restaurants, partners and, of course, events. The JRE Awards recognise the exceptional achievements of our associates and partners in supporting our common aim: to promote our gastronomic and culinary heritage and to pass it on to the next generation. One successful new project is quality control, which checks the performance of our associates through mystery visits. The intention is not to punish or to judge but rather to assist and support our chefs and restaurateurs who constantly strive to improve as professionals and perform their very best for you, our guests. Another fine example of sharing is the ’jam session’, an extraordinary idea conceived by our Belgian colleagues. On certain days a group of chefs and sommeliers come together for a gastronomic workshop where they are provided with a ‘mystery basket’ of ingredients from which they create dishes. The combination of the finest products from a select group of producers, the latest techniques and an enormous amount of passion leads to innovation and creativity. This informal means of collaboration fosters new ideas, attracts the attention of the social media, and results in the creation of surprising new recipes. We also invest a lot of time in education: not only do we train young cooks but we run a pioneering sommelier programme. In collaboration with our loyal partners Carpe Diem Kombucha and Nespresso, we provide incentives to concentrate on service and education. This part of our profession needs much more attention and investment to make it a fulfilling challenge for young people. There can be no exceptional cuisine without great service.

Een succesvol nieuw project is “quality control”, dat de prestatie van onze leden controleert via anonieme bezoeken. De bedoeling is om niet te straffen of beoordelen, maar eerder om onze chefs en restaurateurs te helpen en te ondersteunen, bij hun voortdurend streven om als professionals te verbeteren en hun uiterste best te doen voor onze gasten. Nog een mooi voorbeeld van delen is de“jamsessie”, een buitengewoon idee, ontwikkeld door onze Belgische collega’s. Op bepaalde dagen komt een groep chefs en sommeliers samen voor een gastronomische workshop
waar ze voorzien worden van een mand met onbekende inhoud, met ingrediënten waarmee ze gerechten moeten creëren. De combinatie van de beste producten van een selecte groep producenten, de nieuwste technieken en een enorme hoeveelheid passie, leidt tot innovatie en creativiteit. Deze informele manier van samenwerken bevordert nieuwe ideeën, trekt de aandacht van de sociale media en resulteert in de creatie van verrassende nieuwe recepten. We investeren ook heel wat tijd in onderwijs: we leiden niet alleen jonge koks op, maar we voeren een baanbrekend programma
Following our successful 2011 International Congress in Madrid, the setting for our 2013 Congress will be Salzburg in Austria, the city of Mozart. Our Austrian colleagues are preparing an informal gathering of the JRE family under the slogan ‘Taste of Austria’. A fine programme featuring the highlights of Salzburg will be presented under the leadership of our joint Presidents Thomas Dorfer and Andreas Döllerer. Supplying the venue for the gettogether on the opening night will be the Carpe Diem Finest Fingerfood Restaurant. On Monday there will be a convention and culinary food fair in the Gwandhaus and a visit to the amazing Hangar 7, followed by a closing dinner in the famous Felsenreitschule (Rock Riding School) and Karl Böhm-Saal, venue of the Salzburg Festival. These are the true discoveries of the baroque city of Salzburg, listed as a UNESCO world heritage site.

Het Carpe Diem Finest Fingerfood Restaurant wordt de ontmoetingsplaats op de openingsavond. Op maandag zal er een conventie en culinaire voedingsbeurs plaatsvinden in het Gwandhaus en een bezoek aan de indrukekkende Hangar 7, gevolgd door een afsluitend etentje in de beroemde Felsenreitschule (rijschool) en Karl BöhmSaal, de locatie van het Salzburg Festival. Cuvée Louise, The Masterpiece by Pommery
The history of Champagne Pommery is the story of one woman: Jeanne Alexandrine Louise Pommery (maiden name Mélin, born 1819). From a good family, she met and married Alexandre Louis Pommery, with whom she had two children, Louis and Louise. Monsieur Pommery then worked in the wool trade, which in the mid-nineteenth century was being battered by the crisis. To ensure the future of their children, Monsieur Pommery took up activity in the Champagne trade, which was then becoming very important. Monsieur Pommery suffered from fragile health and died on 18 February 1858, a year after having launched the business. Madame Pommery looked at her daughter Louise, who was not yet one year old, and joined forces with her to begin one of Champagne’s loveliest stories.
De geschiedenis van Champagne Pommery is het verhaal van één vrouw: Jeanne Alexandrine Louise Pommery (meisjesnaam Mélin, geboren in 1819).

Monsieur Pommery had een zwakke gezondheid en stierf op 18 februari 1858, een jaar na het opstarten van de onderneming. Madame Pommery keek naar haar dochter Louise, die toen amper 1 jaar oud was en samen begonnen ze aan een van de mooiste verhalen van Champagne.
Monsieur Pommery werkte vervolgens in de wolhandel, die in het midden van de negentiende eeuw zwaar getroffen werd door de crisis.

Cuvée Louise dankt zijn naam aan deze visionaire dame die de wereld een nieuwe, pure, verfijnde en elegante stijl bood: de Pommery-stijl. De prestigieuze vintage van Champagne Pommery is afkomstig van de beste velden, die er nauwgezet voor gereserveerd worden. In navolging van de traditie van Pommery Nature 1874, is Cuvée Louise nu een speciale vintage met een laag suikergehalte, waardoor de wijn op natuurlijk wijze zijn buitengewone zuiverheid uit. Cuvée Louise telt slechts drie fantastische wijnen: twee Chardonnays uit Avize en Cramant en een Pinot Noir uit Aÿ. De wijn moet zes tot acht jaar rijpen om zeker te stellen dat de aroma’s volledig ontwikkelen. Naast zijn unieke karakter, is Cuvée Louise Rosé een eerbetoon aan Madame Pommery, die liefdevol “De dame van de Rosés” genoemd werd, omdat ze
een ware voorliefde had voor dit soort wijn. Cuvée Louise Rosé 2000 ontstond vanuit een onderscheidend karakter en respect en kon alleen bedoeld zijn voor iedereen die zijn schoonheid bewondert. De speciale flessen van Cuvée Louise Rosé zijn het gevolg van finesse en verfijning. De Cuvée Louise Rosé, die fleurig en elegant is, kan in één woord (als dit al mogelijk is) beschreven worden als een meesterwerk.
Cuvée Louise owes its name to this visionary woman who gave the world a new style full of purity, refinement and elegance: the Pommery style. Champagne Pommery’s prestige vintage comes from the best plots, which are scrupulously reserved for it. Following the tradition of Pommery Nature 1874, Cuvée Louise is now a special vintage with low sugar content, hence the wine expresses in a natural form its exceptional purity. Cuvée Louise solely consists of three great listed wines: two Chardonnays from Avize and Cramant and a Pinot Noir from Aÿ. Six to eight years of maturation is needed to ensure that the aromas are fully developed. Beyond its unique character, Cuvée Louise Rosé pays genuine homage to Madame Pommery, who was affectionately known as ‘The Lady of the Roses’ as she felt true passion for this type of wine. Cuvée Louise Rosé 2000 was born of distinction and respect and could only have been intended for those who praise its beauty. The special bottles of Cuvée Louise Rosé are the fruits of delicacy and sophistication. Florid and elegant, if there is an allembracing term to describe Cuvée Louise Rosé, we would undoubtedly say that it is a masterpiece.

atrik Kimpel is een voorvechter van de diepgaande verfijning van de traditionele keuken. Als hij praat, is zijn enthousiasme voor voedsel en de professionele bereiding ervan bijna tastbaar. Het wordt al snel duidelijk dat hij iemand is met kennis en inzicht en met een ogenschijnlijk ongebreidelde energie voor meer dan alleen koken. In het fijnproeverrestaurant Kronenschlösschen, dat idyllisch gelegen is in Eltville - Hattenheim, slaagt hij er telkens opnieuw in om zijn klanten, die van heinde en verre komen, in vervoering te brengen met zijn creaties; traditionele recepten met een moderne twist. Kimpel, sinds 1997 lid van JRE en actief voorzitter van de Duitse vereniging van chef-koks, stelt vooral de vriendschappen tussen Jeunes Restaurateurs op prijs. Ook in de keuken is het belangrijk om upto-date te blijven en te blijven evolueren. Wat doen de JRE in Duitsland om op niveau te blijven? We steunen gemotiveerde jonge mensen, bieden hen kansen om een opleiding als professionals te volgen. We hebben zeer goede resultaten behaald met onze elitecursussen (drie voor de hotelsector en drie voor chef-koks) en met onze eigen academie. Hier moedigen de collega‘s elkaar echt aan, zodanig dat het niveau van de studenten bij het eindexamen in sommige gevallen bijna zo hoog is als dat van anderen tijdens hun afstudeerexamen. Ook mensen die al meer dan vijf jaar voor ons werken, bieden we een beurs aan voor een aanvullende opleiding als chef-kok, sommelier of restaurantmanager.
Neue Deutsche Küche is het achtste kookboek van JRE Duitsland. Wat valt er op deze 544 pagina’s te leren over de Duitse keuken? Het kookboek dat deel uitmaakt van de Rolf Heyne Collectie, is een culinaire metgezel voor het hele jaar. Van januari tot december stellen drie Jeunes chef-koks iedere maand een driegangenmenu voor met verse regionale seizoensingrediënten. Het kookboek geeft ons een idee van de rijkdom van de Duitse keuken. Hoe definieert u de Duitse keuken? Er zijn heel wat traditionele producten en gerechten die qua vorm en kwaliteit alleen in Duitsland bestaan. Of het nu gaat om Pumpernickel (volgranenbrood) in de regio van Westfalen, of Stollen (een kerstgebak) uit Dresden, de Duitse keuken doet voor niemand onder. De Duitse chef-koks mogen zich tot de besten ter wereld rekenen: ieder
Patrik Kimpel From Sylt to Oberstdorf – the JRE in Germany Patrik Kimpel is an advocate for the thoughtful refinement of traditional cuisine. When he speaks one can feel his enthusiasm for food and its professional preparation. It is soon clear that this is someone with knowledge and perspectives involving an apparently boundless energy that goes beyond cooking. At the gourmet restaurant Kronenschlösschen, idyllically located in Eltville - Hattenheim, he manages for his customers, hailing from near and far, to fall in love with his creations, traditional recipes with modern twists. Kimpel, a JRE member since 1997 and acting president of Germany’s association of chefs, values above all the friendships between Jeunes Restaurateurs. In cooking it is also important to stay up to date and continue to evolve. What do JREs do in Germany to maintain their level? We support motivated young people, offering them opportunities to train as professionals. We have obtained very good results with our elite classes (three for the hotel sector and three for cooks) and with our own academy. Here the

jaar trekt het “Rheingau Gourmet und Weinfestival” van Kronenschlösschen niet alleen internationale chefs, maar ook leden van Jeunes Restaurateurs uit heel Duitsland aan. Het hoogtepunt van het festival is het kookfeest van JRE waarbij acht Jeunes chefs koken voor 450 gasten terwijl drie groepen de festiviteiten van live muziek voorzien. De JRE’s werken met een aantal selecte leden. Wat hebben deze leden gemeen? We hebben fantastische leden en iedereen steunt elkaar. Bij JRE vinden onze leden een zekere concurrentie die ze kunnen inzetten voor hun eigen projecten. Ze hebben één ding gemeen: ze spelen allemaal aan de top. Ze zijn wereldwijd dus zeer succesvol. We moedigen iedereen ook aan om productief samen te werken. Iedere klant die bijvoorbeeld een auto koopt bij Kundencenter Rastatt Mercedes Benz,
ontvangt een gratis exemplaar van JRE’s huidige restaurant- en hotelgids, die met zijn eerste oplage van 100.000 exemplaren duidelijk gegeerd is. Vorig jaar vierde u als voorzitter van JRE Duitsland een zeer speciale gebeurtenis met de beste jonge Duitse chefs: 20 jaar Jeunes Restaurateurs Duitsland. Hoe werd dit gevierd? Het hele jaar stond in het teken van onze 20ste verjaardag. We nodigden onze klanten uit voor 25 kookfeesten in totaal, en stuk voor stuk onvergetelijke ervaringen. Deze culinaire vieringen zijn leuke kookervaringen voor gasten die andere JRE’s willen ontmoeten, die de bereiding van nabij willen volgen en misschien zelfs een paar knepen van het vak willen leren. Voor de JRE’s is het koken als lid van een team een waar genoegen. Koken als

We also offer employees who have been working with us for over five years a grant for additional training as a chef, sommelier or restaurant manager. Neue Deutsche Küche is the eighth cookbook by Germany’s JRE. What can one learn about German cuisine in these 544 pages? The cookbook published in the Rolf Heyne Collection is a culinary companion for the entire year. From January to December, each month three Jeunes cooks present a three-course menu using only regional foods which are fresh at the time.The cookbook gives us an idea of the richness of German cuisine. What defines German cuisine? There are many traditional products and dishes which in their form and quality only exist in Germany. Whether it’s Pumpernickel (bread made from whole grains) in the region of Westphalia, or Stollen (a Christmas sweet) in Dresden, German cuisine takes a back seat to none. German chefs are among the best in the world: Each year Kronenschlösschen’s Rheingau Gourmet und Weinfestival Festival attracts not only international chefs, but also Jeunes Restaurateurs members from all over Germany. The highlight of the festival is the JRE’s cooking celebration in which eight Jeunes chefs cook for 450 guests while three bands brighten the festivities with live music. The JREs work with a set of selected members. What do these members have in common? We have great members and we all support each other. At JRE our members

find a competitiveness they can put to use on their own projects.They have one thing in common: they all play in the Champions League. That is, they are very successful around the world. We also establish productive collaborations. For example, every customer who buys a car at Kundencenter Rastatt Mercedes Benz receives a free copy of the JRE’s current restaurant and hotel guide which, as evidenced by its initial printing of 100,000 copies, is in high demand. Last year as President of Germany’s JRE you celebrated a very special event with the best young German chefs: 20 Years of Jeunes Restaurateurs Germany. What is this kind of celebration like? We dedicated a whole year to our 20th anniversary, inviting our customers to a total of 25 cooking parties, all of which were unforgettable experiences. These culinary celebrations offer fun cooking for guests who wish to meet other JREs, who want to experience preparation right up close, and perhaps learn a trick or two. For the JREs, just cooking as part of a team is a joy. Cooking on a team at the Berlinale, at the Bambi Awards Ceremony, the Sports Gala, the Koblenz Garden Show, Munich’s Olympic Tower or the remodeled spa in Baden Baden, is a challenge which brings people together, and is also incredibly fun. All the cooking events in the JRE’s series are characterized by their exceptional atmosphere, so this year we have also printed 30,000 event calendars with which to invite people to our common celebrations. JRE Germany is concerned about the proper training of the new generation of cooks, but what do you think about the new generation of customers? In order to foment a fascination with fine food among young people we have introduced TWENÚ, the menu for twens (twentysomethings). For €59 it offers young people under age 30 everything a good menu must include. With this menu young customers do not have to worry about choosing the right wine, because in a relaxed atmosphere an appetizer, entrée and wine suitable for the three-course menu are all served. This is a complete package which takes all the worry out of

zijn: we zitten in de bergen, op het strand, in de stad, op het platteland en in bistro’s en fijnproeverrestaurants. Of we nu samenkomen voor een workshop of een gala-avond, JRE’s leveren als gastheren steeds een buitengewone inspanning. Dus, ieder bezoek aan één van onze JREvrienden is een bijzonder leuk evenement, in het bijzonder voor onze gasten.
Finally, let me ask you for a personal assessment: what is special about JREs? JREs are united not only by their shared passion for cooking, but by their deep friendship, so that we could also talk about a JRE family. We exchange information on new developments in the industry, we help each other with the collaborators, and there is no idea of competition amongst us, or secret knowledge which we do not share. When we get together we celebrate unforgettable parties. This may be due to how multifaceted we are: we’re in the mountains, at the beach, in the city, the countryside, and at bistrots and gourmet restaurants. Whether we meet for a workshop or for a gala evening, as hosts JREs always make an extraordinary effort. Thus, every visit to one of the JREs’ friends is a really nice event, especially for our guests.

And we have had ginger in Europe ever since. Appetizer, ingredient, spice and remedy; all these nouns are worthy labels of this famous rhizome. It was originally used as

However, all lesser mortals believe that it contributes to rejuvenation, fighting the free radicals that cause tissue breakdown. It also has antiinflammatory properties, is a stomach tonic and artery benefactor. It can be used to help cure or prevent infections, heart attacks, toothache, halitosis, skin cancer, bloating, viruses, coughs and as a component in weight-loss diets. Not to forget its renowned aphrodisiac properties that are directly related to its ability to stimulate blood flow. e Chef van Culinair, Steven Dehaeze, is een echte liefhebber van Nieuw Zeelands hertenkalf. Maar waarom precies? In een kort gesprek licht Steven enkele typische aspecten (de oorsprong, de smaak, de verwerking, ...) van Nieuw Zeelands hertenvlees toe. Een verslag van deze culinaire kennismaking lees je hieronder. Wanneer kwam je voor het eerst in aanraking met Nieuw Zeelands hertenkalf? Mijn eerste kennismaking met Nieuw Zeelands hertenkalf vond ongeveer 10 jaar geleden plaats. Via mijn vaste leverancier had ik hertenvlees besteld. In plaats van Belgisch hertenvlees kreeg ik Nieuw Zeelands hertenvlees bezorgd. Ik maalde er niet om, en ik verwerkte het vlees in de eerstvolgende service. Precies omdat mijn gasten er zo goed op reageerden, was ik
snel gewonnen voor dit product. Waarom werk jij graag met Nieuw Zeelands hertenkalf? Nieuw Zeelands hertenvlees is veel toegankelijker in vergelijking met Europees hertenvlees; enerzijds omdat het aanbod constant is – terwijl ons eigen wild gebonden is aan het “wildseizoen” – anderzijds omdat het ook qua smaak veel toegankelijker is. Veel mensen staan huiverachtig tegenover wild hertenvlees, vanwege zijn uitgesproken smaak, dan vormt Nieuw Zeelands hertenkalf een waardig alternatief. Waarin ligt volgens jou de meerwaarde van Nieuw Zeelands hertenkalf? Door de zachte en milde smaak slaat het het vlees bij zowel jong als oud aan. Als chef moet je ook minder moeite

During a short interview, Steven reveals to us some of the typical aspects (the origin, the taste, the method of production, …) of tender New Zealand venison. This is a report of a culinary discovery. When did you encounter young New Zealand venison for the first time? I discovered it for the first time about ten years ago. Via my usual supplier, I had ordered just venison. But instead of local venison, he supplied me with New Zealand venison. No matter: I worked with the meat for the following service. And it was precisely because my customers appreciated it so much that I was so quickly conquered by this product. Why do you like working with New Zealand venison so much? New Zealand venison is far more

accessible than European venison; on the one hand, because the supply there is constant, while our own game is seasonal, and on the other, because its flavour is also distinctly more accessible. Many people hesitate in the face of wild venison, because of its marked flavour. Consequently, New Zealand venison constitutes a choice alternative solution. What in your view is the added-value of New Zealand venison? Because of its delicate and mild taste, the meat appeals to all age groups. As a chef, it is easier to convince the patrons. Consequently, New Zealand venison constitutes a perfect introduction to the assortment of more ‘difficult’ game. Can you tell us more about the provenance of the venison? The New Zealand venison is bred in the great outdoors, in New Zealand’s vast pastures. There, the animals are taken care of throughout their growth. The prime animals are never more than two years old before they are slaughtered, and furthermore no slaughter takes place during the reproduction period. Moreover, those animals are particularly accustomed to the presence of man. When they’re taken to the slaughterhouse, they’re really not afraid, this absence of stress has a positive incidence on the taste. As the the muscles don’t contract, the meat remains really tender. With all the respect that is due to them, the hunters handle wild deer differently, and this has a major incidence on the structure of our local game venison. I‘d readily compare New Zealand venison with Wagyu beef, because those animals are also bred under optimal conditions for their species to produce good meat. The tenderness and soft flavour of the meat is very similar.

Het Nieuw Zeelands hertenkalf wordt gekweekt in de vrije natuur, op de grote velden in Nieuw Zeeland. Daar worden de dieren verzorgd in hun groeiproces. Ze worden nooit ouder dan 1 à 2 jaar vooraleer ze geslacht worden – behalve de bronstijd wordt er ook nooit geslacht. Daarenboven zijn de dieren erg gewend aan menselijke aanwezigheid. Wanneer ze dan naar het slachthuis gebracht worden, voelen ze dat niet echt aan. Dat gebrek aan stress heeft een positief effect op de smaak. Omdat de pezen en de spieren niet samentrekken, blijft het vlees dus mooi zacht.
Hoe lang doet het hertenkalf erover om Europa te bereiken? Zo’n transportproces naar Europa neemt zes weken in beslag en het vlees blijft zo’n veertien weken houdbaar. De rijping neemt een aanvang vanaf het moment waarop het vlees vacuüm wordt getrokken. Op die manier krijg je een perfect gerijpt stukje vlees op je bord. Welke hert-recepten heb jij op je kaart staan? Omdat het Nieuw Zeelands hertenkalf zo zacht is, kies je bijna automatisch voor lichtere en hedendaagsere bereidingen. In de zomer kan je het vlees bereiden op de barbeque, maar je kan er ook leuke, gerookte toetsen aan toe voegen door met The Green Egg te werken. Zo zie je maar; er zit een enorme veelzijdigheid in de bereidingen. Naast de filet mag men niet vergeten dat de bout heel interessant kan zijn, zowel op prijs- als kwalitatief niveau. De bout is verkrijgbaar in een 7tal verschillende delen. Het voordeel is dat de kwekers uit Nieuw Zeeland een ruime variëteit aan gestandardiseerde versnijdingen aanbieden. Zo kan je zelf je keuze maken.
How long does it take for the venison to get to Europe? The transport to Europe requires six weeks by seafreight. The chilled vacuum packed venison has a maximum shelflife of 14 weeks. Maturation begins as from the moment when the meat is vacuum packed. This way, the meat is served on your plate when perfectly mature.
Zet je het hertenkalf elk seizoen op je kaart? We merken soms dat onze klanten ervan overtuigd zijn dat hert iets is dat je enkel in het wildseizoen kan degusteren, wat volgens mij een grote misvatting is. Dit type hertenvlees kan je het hele jaar door aanbieden, mits je als chef voldoende creativiteit aan de dag legt. Wij hebben bijvoorbeeld in april een carpaccio van hertenvlees op het menu gehad, waarbij we truffel serveerden. Zo ontstaat er al snel een compleet nieuw verhaal. Mijn favoriete gerechtje met hert momenteel is mijn hamburgercreatie. Daarbij is er ook op de
presentatie gelet: in plaats van een kolossale hamburger te dresseren, heb ik gekozen voor drie kleine hamburgertjes, met een beetje chutney erbij.
What venison-based recipes do you have on your menu? As New Zealand venison is so tender, I almost automatically choose lighter, more contemporary preparations. In the summer, the meat can be prepared on the barbecue, but you can also add nice little smoked touches by working it with The Green Egg. You have an embarrassment of choice; the possible preparations are legion. In addition to the fillet, don’t forget that the haunch can also prove to be among the most interesting, in terms of price and quality alike. The boneless haunch can come divided into seven different cuts. The advantage here is that the New Zealand producers offer the haunch in a number of varieties, either whole bone-in, or, silverskin removed and divided into 7 different cuts, so you can make your own choice. Do you put venison on the menu each season? We sometimes note that our customers are convinced that they can only have venison during the game season, which, in my opinion, is a real misunderstanding. Venison of this kind can be served throughout the year, provided you can be sufficiently creative as a chef. Thus, in April, we had a venison Carpaccio, in summer a grilled venison leg steak Rossini,... You thus quickly obtain a totally new story. My favourite dish is currently my hamburger creation. We also pay a lot of attention to the presentation: instead of erecting one colossal hamburger, I’ve opted for three small ones, accompanied by a little chutney.

ruiden en Europa: twee concepten die elkaar kruisten op hun pad door de 15e, 16e en 17e eeuw. Engeland, Spanje, Frankrijk en Nederland waren de grootste kruidenhandelaars in die periode. Nederland was het meest volhardend, aanhoudend en succesvol. 1599 was het jaar waarin de Nederlanders de Banda-eilanden veroverden met slechts één enkel doel voor ogen: hun leven wagen om het monopolie te winnen over sommige kruiden die volgens de artsen van het Elizabethaanse Londen het vermogen hadden om ziektes zoals de pest te genezen en die ook een driehonderdvoudige winst

Muskaatnoot, een kruid dat ooit gebruikt werd om winderigheid of een gewone verkoudheid te bestrijden, werd ineens de koningin van alle kruiden, niet alleen in Europa, maar ook in India, waar het twee keer zo vaak gebruikt werd als in Europa. England, Spain, France and Holland were the major spice merchants during this period. Holland was the most insistent, persistent and enduring. 1599 was the year in which the Dutch conquered the Banda Islands with a single goal in mind: to risk their lives to gain the monopoly of some spices that, according to the physicians of Elizabethan London, were purported to cure diseases such as the plague, as well as bringing in a three hundred-fold profit. generatie op generatie doorgegeven via recepten als pepernoten (typische ronde koekjes gemaakt van bloem, bruine suiker, stroop en een theelepel gemengde kruiden), speculaas (koekjes met kaneel, kruidnagel, muskaatnoot, kardemom, gemalen koriander, gember en foelie), jenever (Nederlandse gin gedistilleerd van maltwijn werd in de 16e eeuw verkocht als medicijn), muisjes (anijszaadsnoepjes die een symbool zijn van vruchtbaarheid) en dropjes (Nederlandse drop in zoete, halfzoute en zoute versies). En tegenwoordig komt Nederland nog steeds op de derde plaats als importeerder van kruiden in de EU en op de eerste plaats als exporteerder.
Holland became the first colonial government to set up in the Indonesian archipelago, as a result of its naval power and its successful trading practices of bartering with real currency, heavy woollens, damasks and other manufactured goods, in a belligerent period dominated by a desire to gain control of spices such as cinnamon, cardamom, ginger, cloves, white pepper, aniseed and coriander. Dominant under the yoke of the famous and highly-respected Dutch East India Company (VOC), the Dutch merchants were connoisseurs of the spices’ aromatic qualities. Not only did spices flavour and mask the inevitable rotting process of meat in those days, but they also acted as preservatives, medicines and even had aphrodisiac properties. The legacy of these spices has been passed from one generation to another through recipes such as Pepernoten (typical round biscuits made with flour, brown sugar, syrup and a teaspoon of mixed spice), Speculaas (biscuits with cinnamon, cloves, nutmeg, cardamom, ground coriander, ginger and mace), Jenever (Dutch gin distilled from malt wine sold in the 16th century as a medicine), Muisjes (aniseed sweets that are a symbol of fertility) and Dropjes (Dutch liquorice in sweet, semisavoury and savoury versions). And today, Holland is still the third ranked country as a spice importer in the EU and the number one exporter.

Achim Schwekendiek ist een grote voorstander van de “naar aarde” smakende linzen en stelt in dit boek zijn mooiste recepten voor. Linzen zijn gezond en zitten boordevol voedingsstoffen. Ze bevatten waardevolle proteïnen en mineralen en voedingsvezels. Opmerkelijk is het meer dan gemiddeld hoge zinkgehalte, dat een centrale rol speelt bij de stofwisseling.
