Met deze uitgave, opnieuw boordevol nieuws en uiterst smakelijke aanbevelingen, opent de vereniging Jeunes Restaurateurs d’Europe ook deze keer weer de wereld van de haute cuisine voor haar leden en tafelgasten. Al zes jaar lang is T een internationaal en veeltalig ontmoetingspunt van vooruitziende gastronomie waar tafelgenoten, chefs, sommeliers en ondernemers uit twaalf landen gezamenlijk kunnen genieten van de nieuwe Europese culinaire cultuur, die —ondanks de huidige crisis, maar dankzij het enthousiasme, de kennis en de inzet van jonge vakmensen, waaronder de leden van JRE— een van de meest bloeiende en inspiratievolle momenten beleeft. Een goed voorbeeld hiervan zijn de winnaars van de prijzen van het Internationale J Congres 2013, waarop uitgebreid wordt ingegaan tijdens een groepsinterview. Naast avant-gardistische innovatie, is er ook plaats voor eenvoud, traditie en lokale smaken in de keuken van natuurtalenten zoals de Nederlander Peter Gast. Through this magazine, which is full of the most mouth-watering news and suggestions, the Jeunes Restaurateurs d’Europe association once again throws open the doors of haute cuisine to its guests and members. For six years now Talent & Passion has served as an international and multilingual meeting point. It has become a gastronomic forum where diners, chefs, sommeliers and entrepreneurs from twelve countries can share and celebrate the new European culinary culture, which despite the current times is enjoying its most florid and inspired moments, thanks to the enthusiasm, know-how and determination of the young professionals who comprise JRE. Providing a good example of these qualities are the prize winners at JRE’s 2013 International Congress. You can learn much more about their excellence in the most varied and innovative facets of the restaurant business through the group interview we conducted with them. De basis van de culinaire toekomst Jeunes Restaurateurs d’Europe THE ROOTS OF GASTRONOMY ’S FUTURE The association Jeunes Restaurateurs d’Europe (JRE) includes young gastronomy professionals from twelve countries and counts among its ranks more than 300 of our continent’s best and most innovative restaurants. JRE’s origins go back to the nineteen seventies, when the visionary Nicole Seitz, then Grand Marnier’s Head of Public Relations, had the idea of creating a means by which the new French chefs who sacrificed so much to this marvellous profession (whilst at the same time representing its future) could exchange knowledge and experience. In 1974 Jacques Marnier-Lapostolle, the famous liqueur manufacturer’s President, turned this dream into reality by creating Jeunes Restaurateurs de France (JRF). Within a few years it exceeded a hundred members, and in the nineteen nineties

Restaurateurs de France (JRF). Binnen enkele jaren groeide JRF uit tot een vereniging met meer dan honderd leden en dit ongekende succes leidde in de jaren negentig tot de oprichting van een Europese vereniging, JRE.
Ontstaan in de jaren zeventig, toen de visionaire Nicole Seitz, toentertijd hoofd Externe Betrekkingen van Grand Marnier, op het idee kwam om een manier te vinden waarop de nieuwe Franse chefs die zoveel over hadden voor dit schitterende beroep en tegelijkertijd diens toekomst vormden, hun kennis en ervaringen konden delen. In 1974 gaf Jacques Marnier-Lapostolle, directeur van het beroemde likeurhuis, vorm aan deze droom en stichtte Jeunes
JRE rust op de passie en het talent van de leden, die hun krachten verenigen om de huidige vooruitzichten van de wereldgastronomie te vergroten en te verbeteren, een toekomst te zaaien voor de nieuwe generaties chefs, sommeliers en andere vakmensen uit deze sector (via talrijke cursussen en initiatieven, zoals de gastronomische jamsessions, waarin wordt geïmproviseerd met onverwachte ingrediënten om verrassende recepten te creëren) en, vooral,
om internationale kwaliteits- en servicenormen te creëren en te verbeteren om de klanten van de ondernemingen die deel uitmaken van dit unieke wereldnetwerk, te allen tijde opmerkelijke culinaire ervaringen te kunnen bieden. Om de twee jaar organiseert JRE een internationaal congres waar de talrijke leden bijeenkomen om culinaire en professionele ervaringen te delen, indrukken uit te wisselen over de situatie in de horecasector (voortdurend aan vernieuwing onderhevig dankzij de inzet, creativiteit en aspiraties van de nieuwkomers), elkaar beter te leren kennen en te genieten van de gastronomie en cultuur van het gastland. Het afgelopen congres vond half april jongstleden plaats in Salzburg, de geboorteplaats van Mozart. Enkele belangrijke evenementen waren het openingsdiner in het originele tapasrestaurant Carpe Diem Finest Fingerfood, een proeverij van
etenswaren en producten van «Oostenrijkse smaak» in het charmante Gwandhaus en het eindgala in het vermaarde Festspielhaus. Een speciale vermelding verdient de uitreikingsceremonie van de JRE-prijzen voor uitmuntendheid in de horeca. Deze keer vielen de prijzen, gesponsord door diverse samenwerkingspartners van JRE, ten deel aan: Rolf Fuchs, van het Zwitserse restaurant Panorama (Talent van het Jaar, gesponsord door San Pellegrino); Marco Parizzi, uit Parma, die de Ondernemersprijs won (gesponsord door Diners Club International) voor het beheer van zijn restaurant Parizzi; Nils Henkel, van het Duitse hotelrestaurant Schloss Lerbach, die de door Nespresso gesponsorde Innovatieprijs kreeg; Mart Scherp, uit Nederland (Eco-prijs, gesponsord door Pommery); en de Oostenrijkse Maria Steffner, van restaurant Mesnerhaus, die de Sommelierprijs in ontvangst nam, gesponsord door Carpe Diem.
its unprecedented success led to the creation of its European incarnation (JRE). JRE’s pillars are the talent and passion of its members, who combine their efforts to broaden and improve the current horizons of gastronomy worldwide, sowing the seeds for future generations of chefs, sommeliers and other sector professionals (through numerous courses and initiatives such as gastronomic ‘jam sessions’, in which chefs improvise with surprise ingredients to create unusual recipes), and above all creating and improving international standards of quality and service so that customers of the establishments that form part of this unique global network will always enjoy noteworthy culinary experiences. Every two years JRE organises an international congress in which its numerous members meet to share culinary and professional experiences, exchange views on the state of the gastronomy sector (always in continual renewal thanks to the effort, creativity and restlessness of young blood), and get to know better the culture of the host country and taste its gastronomy. The last congress took place in the middle of last April in Salzburg, birthplace of Mozart. Significant events included the inaugural dinner in the original Carpe Diem Finest Fingerfood tapas restaurant, the Taste of Austria food and product fair in the charming Gwandhaus, and the closing gala in the famous Festspielhaus. A particular highlight was the ceremony to present JRE’s awards, which recognise excellence in gastronomy. Sponsored by JRE’s various collaborating partners, this year’s prizes were awarded to: Rolf Fuchs, of the Swiss restaurant Panorama (Talent of the Year prize, sponsored by San Pellegrino); Marco Parizzi from Parma, who took the Prize for Best Entrepreneur (sponsored by Diners Club International) for his management of his restaurant Parizzi; Nils Henkel, of the German hotel/restaurant Schloss Lerbach, who won the Innovation Prize sponsored by Nespresso; Mart Scherp, of the Netherlands (Environmental Sustainability Prize, sponsored by Pommery); and the Austrian Maria Steffner, of the Mesnerhaus restaurant, who took the Sommelier Prize sponsored by Carpe Diem.

Talent and Passion — What do you think about the new technical approaches to gastronomy? Rolf Fuchs (Talent of the Year Prize) — The new cooking techniques result in an even more precise job and a qualitative improvement in the end product. But only those who best know the traditional preparation methods should employ them. Marco Parizzi (Best Entrepreneur Prize) — It is odd that up till now so little has been said about “what we put inside” something as essential as food, which has been left to an oral tradition. But now, at last, we don’t only talk about flavours but also about preparation processes, textures and the molecular changes of foods, with

Rolf Fuchs (Talent van het Jaar) — De nieuwe kooktechnieken uiten zich in een nog nauwkeurigere uitvoering en een kwalitatieve verbetering van het eindproduct. Maar alleen degenen die de traditionele bereidingswijzen het beste kennen zouden deze moeten toepassen. Marco Parizzi (Ondernemersprijs) — Het is opvallend dat er tot nu toe zo weinig werd gesproken over «de inhoud» van zoiets
belangrijks als eten, overgelaten aan een mondelinge traditie. Tegenwoordig hebben we het gelukkig niet alleen over smaken, maar ook over bereidingsprocessen, texturen en moleculaire wijzigingen van voedingsmiddelen, met een wetenschappelijk tintje. Dit is een nieuwe grens die uiteraard iedereen boeit. Nils Henkel (Innovatie) — Ik denk dat het belangrijk is om zich ver trouwd te maken met de moderne keukentechnieken en de samenhang van producten en de verwerking ervan. Er zijn technieken, zoals het koken op lage temperatuur, die een positief effect hebben op de kwaliteit van de producten. Mart Scherp (Eco-prijs) — Dit zijn instellingen met een toegevoegde waarde,
zoals aanvullingen op de klassieke basis. Wanneer je weet hoe een product reageer t op een bepaalde bereiding, kun je hier handig op inspelen om de materie goed te beheersen en tot een perfect eindresultaat komen. Voor mij is dat erg belangrijk.

Maria Steffner (Somellierpijs) — We voeren diepgaand onderzoek uit op het gebied van nieuwe kooktechnieken, we proberen ze uit en beslissen zelf wat we wel of niet willen eten. Het is van groot belang zo veel mogelijk kennis op te doen. Met name op het gebied van creativiteit spelen nieuwe combinaties een doorslaggevende rol, zowel wat betreft smaak als voedingswaarde. Daarom is het zinvol om op de hoogte te zijn van de nieuwste ontwikkelingen.
Het restaurant Parizzi is al drie generaties lang een waar genot voor de bezoekers van Parma. Maar in plaats van op de lauweren van je familie te rusten, heb je het bedrijf uitgebreid met een klein hotel en een kookschool. Nils Henkel (Innovation Prize) — I think it is important to familiarise yourself with modern cooking techniques, the contexts of the products and their preparation. There are techniques such as low temperature cooking which have a positive effect on the quality of the products. Mart Scherp (Environmental Sustainability Prize) — These are approaches which can add value to the classical foundations. If you know how a product reacts to a specific preparation, you can adapt in order to master the material and obtain a perfect end product, something that I consider to be very important. Maria Steffner (Sommelier Prize) — We examine the new cooking techniques in depth, we test them and we decide for ourselves which to take and which to leave. It is very important to be as knowledgeable as possible. Especially in the sphere of creativity, new combinations are decisive, both regarding flavours and substances. Hence it makes sense to keep up-to-date. Your dishes look like tiny sculptures, with impressive use of colour. To what extent does the artistic appearance of food influence the gustatory experience? Rolf — Together with flavour, which is most important, the visual factor plays a very significant role. As with love, in the end internal values count more than appearance. But no-one can claim that they do not enjoy flirting with beauty. The Parizzi restaurant has delighted three generations of visitors to Parma. But instead of resting on your family’s laurels, you have gone further and added a small hotel and a culinary school. Do you think that diversification and expanding what you offer is essential to surviving the crisis? Marco — Today diversification is essential. Years ago, for example, it would have been unthinkable for a Michelin two-star restaurant to do catering. But now it is essential to survival. We try to apply ourselves every day. The public’s memory is too short and the world’s progress is too quick for us not to adapt. Your cooking respects the characteristic flavours of the local products, at the same time as you manage to constantly adapt and surprise. What are your sources of inspiration? Nils — My menus are based on the

Aan de andere kant is het belangrijk verwachtingen te scheppen rond het eten en de gasten te verrassen. Tussen de keuken en de klant staat altijd de service en, in het bijzonder, de sommelier. Als de klanten ver trouwen in hem hebben, ver trouwen ze het totale aanbod. Voor ons staat vast dat dit beroep, deze rol, altijd zal blijven bestaan. Het is cruciaal dat elk van ons met enthousiasme en toewijding zorg draagt voor zijn taak.

We employ many regional fair-trade products, whether organic or not. We follow the seasons and the WWF’s Seafood Guide. We buy long-lasting products. We always separate types of rubbish. We use environmentallyfriendly cleaning products. We promote Zeeland and the new developments in the region. We reduce salt through the use of water from the Oosterschelde estuary. We experiment with organic shellfish, fish and seaweed. We have saved energy by buying a Lohberger induction stove with a peaksaver system, and so on. What do you think is the future of the profession of sommelier? Do you think that it is in good health? Maria — A customer who values eating well will always want fine drinks to accompany their courses. The waiters, and especially the sommelier, mediate between the kitchen and the customer. If the customers trust the sommelier, they will trust everything on offer. We are certain that this profession, this role, will always exist. The important thing is that everyone does their job with enthusiasm and dedication.

He prefers to win us over through our taste buds, and he does it wonderfully. In Zutphen, a colourful corner of Holland with a medieval flavour, Peter Gast and his wife, the sommelier Jacqueline van Liere, manage the intimate ‘t Schulten Hues restaurant, where attention to detail is everything. Peter’s dedication to the preparation of creative dishes with local natural ingredients is complemented perfectly by the exquisite attention Jacqueline pays to the diners. This irresistible couple earned themselves a Michelin star after just two years in business. Almost a decade later, this restaurant’s menu and ambience still brims over with naturalness, talent and purity.

Wat vind je het leukste aan je werk? Het werken met uitstekende ingrediënten, daar iets moois van maken waar de gasten en het team blij van worden. Daarnaast, de chaos en stressfactor is wel iets wat we nodig hebben om die prestatie te leveren. De auto pilot is dodelijk.
What aspects of the restaurant business would you happily do without? Those diners who from the moment of making the reservation deliberately or unconsciously complicate everything, so we have to make a huge effort all evening to get a smile out of them. I have never managed to understand this type of customer, since supposedly one goes out to eat to enjoy the company, the food and the drink.
Welke aspecten van de horeca zou je liever missen? Gasten... die vanaf het moment dat ze de reservering maken er bewust of onbewust een dingetje van maken, dan moet je de hele avond trekken en duwen om een glimlach te krijgen. Do you think that helps you to offer better quality? No, not at all. You could also offer the same quality by expanding the team. At the time we decided to do that because we thought that diners would be comfortable and their expectations would

be met.Today one has to bear in mind that customer demands have changed over the last ten years. Customers want something more uninhibited, informal and intimate, but with the same quality. Restauranteurs must adapt to that. Sometimes it’s also worth taking a step back and getting an overview of what you’re doing.
Een aantal jaar geleden zijn jullie verhuisd naar een grotere ruimte en heb je je keuken opengesteld voor tafelgasten om ze de gelegenheid te geven je aan het werk te zien terwijl ze genieten van je gerechten... Maar het aantal tafels is altijd vrij beperkt gehouden. Ben je van mening dat dat bijdraagt aan gerechten van betere kwaliteit? Nee, zeker niet. Je kan ook je brigade uitbreiden, dan kan je dezelfde kwaliteit geven. Wij hebben dat toen gedaan omdat wij van mening waren dat gasten dit zouden ervaren als comfort en passend bij het verwachtingspatroon. Je merkt nu dat de eisen van de gast ten opzichte van tien jaar geleden zijn veranderd. Men wil meer los, informeel en gezellig maar wel dezelfde kwaliteit. Wij als restaurateurs moeten hierin mee gaan. Daarnaast is het gezond om af en toe een stap terug te doen en te overzien waar je mee bezig bent. Zou je ons jouw creatieve proces kunnen omschrijven? Dat is vrij makkelijk. Wij proberen ons te beperken tot de regio, namelijk Nederland. Gelderland of Zutphen alleen zou gewoon te klein zijn. Dus veel producten komen niet in aanmerking. Verder houden we ons aan de seizoenen en op een matrixachtige manier wordt het dan puzzelen met combinaties en daarna pas met bereidingen. Veel belandt in de prullenbak. Daarnaast vind ik dat een stijl ook erg belangrijk is. Die proberen we uit te diepen in plaats van 6 maal per jaar een geheel nieuwe kaart te fabriceren. Op welk van je gerechten ben je het meest trots? Ik vind ons gerecht uit 2008 nog steeds erg gaaf, de eendeleverstaafjes met druivenijs en pompoenpitolie, die je horizontaal eet in verband met tempertuur en structuur. Hoe zou je jouw creaties omschrijven? Eerlijk, helder, fris en met liefde. Je betrokkenheid bij lokale producten is tamelijk groot. Geeft dit je het gevoel dat hierdoor creatieve mogelijkheden worden beperkt en dat producten uit andere landen
Can you describe your creative process? It is very simple.We try to restrict ourselves to the region, or more specifically, to the Netherlands, as Güeldres or Zutphen alone would be too limited. So there are many products we don’t consider. We are also governed by the seasons, offering endless possible combinations. Then the preparation stage begins. Many things end up in the rubbish. Apart from that, I think it is very important to pursue a style. We try to explore this style instead of preparing a totally new menu every couple of months. Which recipes do you feel most proud of? I still love our dish from 2008, strips of duck liver with grape sorbet and pumpkin seed oil, which are eaten horizontally due to their temperature and structure. How would you describe your creations? Honest, straightforward, fresh and made with love.

Your commitment to local products is fairly intense. Other ingredients could suggest new recipes, so do you feel that this commitment restricts your creative palette? Or does it stimulate you to be more inventive? The latter. Indeed, it is exactly what stimulates me. Given that we have a large number of small suppliers providing the same information, I prefer to line the pockets of a local business rather than a foreign one. I think in these difficult times we also have a bit of an obligation. At the same time, we can easily get by on what Holland has to offer a restaurant like ours. It’s nearly opening time. Passievolle week in de italiaanse haute cuisine

ijdens de afgelopen Meubelbeurs in Milaan, werd de Italiaanse keuken in de schijnwerpers gezet en schitterde onder leiding van JRE, vertegenwoordigd door zeven gepassioneerde koks, bekroond met Michelinsterren. Van 8 tot 14 april, konden we het artistieke werk van deze jonge chefs bewonderen in de open keuken van het stijlvolle Ristorante Oltremare van Hotel Boscolo en iedere avond genieten van een ander, exclusief menu, vergezeld van voortreffelijke wijnen, champagnes en likeuren, in een voor de gelegenheid perfecte combinatie. Marianna Vitale, chef van het Napolitaanse restaurant Sud, opende de week. Ze fascineerde haar tafelgasten met een kleurrijke visschotel met groente en fruit, een verrassende pasta met anemonen en een verfrissende vitello stonnato. Het diner werd afgerond met een romige citruscrème, geserveerd met rum.
Op de tweede avond, georganiseerd door Paolo Masieri, die in San Remo het juweeltje Paolo e Barbara leidt, genoten de gasten van een menu met ingrediënten uit eigen huis, gecombineerd in een select menu dat traditionele gerechten in ere herstelt, zoals het verdronken ei met zee-egels en garnalen uit San Remo of de sacripantina uit Genua (een heerlijke combinatie van chocola, koffie en Marsala-wijn). More than Passion THE SUITE DINNER Italian haute cuisine’s week of passion During the latest edition of the Milan Furniture Fair, Italian cuisine took centre stage and shone brilliantly thanks to the JRE, which was represented by seven passionate chefs who have all won Michelin stars. From the eighth to the fourteenth of April, we could both admire the artistry of these young chefs as they worked in the open kitchen of the Hotel Boscolo’s Ristorante Oltremare and sample a different menu each evening exclusively accompanied by wines, champagnes and liqueurs worthy of the occasion. Marianna Vitale, from the Neapolitan restaurant Sud, started the week by bewitching diners with a colourful stew of seafood with fruit and vegetables, an astonishing pasta course with sea anemones, and a chilled dish she called vitello stonnato. The dinner finished with a citrus fruit cream accompanied by rum. Those who attended the second evening orchestrated by Paolo Masieri, whose Paolo e Barbera restaurant in Sanremo is a little jewel, enjoyed a menu dominated by ingredients grown by the Masieri family itself, combined within a menu which revived traditional dishes such as poached eggs with sea urchins and Sanremo prawns as well as the Genoan dessert sacripantina (a delicious combination of chocolate, coffee and Marsala). The next day, the Ristorante Oltremare Maria Luisa Fischetti entranced us with neo-traditional dishes, among which stood out the chestnut, mushroom, white bean and cocoa bean soup complemented by champagne, the burrata and herb ravioloni with truffles which melted in the mouth, and the ricotta sponge with citrus fruit which rounded off the menu. On the fourth night we were in the capable hands of Ilario Vinciguerra, who amazed us with a starter of cod cheeks, puffed rice and buffalo milk which contrasted wonderfully with the marinated Piamontese beef with pine kernels and the sizzling veal cheeks with lemon compote which were served next. Undoubtedly we have much to learn from the Varese Gastronomy School’s young teacher. On the twelfth of April the dazzling fish dishes of Fabrizio Ferrari, from Lecco’s Al Porticciolo 84 restaurant, delighted those present with their pure flavours.The menu included the most delicious Atlantic crab purée and a stupendous dish of mezze

Voor de zesde avond had Nadia Moscardi, van restaurant Elodia, een menu vol smakelijke contrasten bereid, met als hoogtepunten het voorgerecht ricotta schuim met saffraan met gedroogde boletus en olie in poedervorm en het crespelle pasteitje, ar tisjokken uit Prezza,
noten en gerookte ricotta. De toegewijde chef van L’Aquila sloot het menu af met een verrassende bavarois met kaneel en zoethout uit Atri. De week eindigde met Francesco Sposito, van Taverna Estia, achter het fornuis waar hij op lage temperatuur gekookte artisjokken, gerookt en gevuld à la Napolitana bereidde en een flink speenvarken, afgelakt met annurca appels en seizoengroenten. The charming chef from L’Aquila finished off with a playful cinnamon and liquorice Bavarian cream from Atri. The week ended with Francesco Sposito from Taverna Estia at the stove,who presented delicate artichokes sautéed at low temperature and then smoked and stuffed in the Neapolitan style, followed by a robust black suckling pig lacquered with Annurca apples and seasonal vegetables. Finally he tantalised our taste buds with a babá (a type of baked, liqueur-soaked sponge cake typical of Naples). LUXEMBOURG Melting pot of culinary traditions The nature of the people and cuisine of the world’s last sovereign grand duchy reflects the pride and humility of its communities, who have suffered numerous changes of ownership due to the machinations of kings and emperors, have seen their borders crossed by countless armies of occupation, and have learned to endure through adaptation, change and making the most of the virtues of their “visitors”. Luxembourg’s landlocked location right in the heart of Europe, where it is surrounded by France, Germany and Belgium, has exposed it to the vagaries of the history of our continent. But this location has become an attractive virtue regarding the country’s traditional gastronomy, which is notable for its popular roots (naturally enough given the numerous changes of the nationality of the Grand Duchy’s rulers) and for its fusion of many culinary traditions. Luxembourg’s traditional dishes perfectly amalgamate the care and preparation that is characteristic of Franco-Belgian cuisine with the robustness and strong flavours typical of German cooking.

In het har t van Europa, ingesloten door Frankrijk, Duitsland en België en nergens aan zee grenzend, onderging Luxemburg de grillen van de geschiedenis van ons continent. The gastronomy of a country of this size (barely a half million inhabitants) is never usually very varied. But the Luxembourgers compensate for this lack of diversity through attractive sauces and making great use of local fresh produce, notably the trout (cooked in Riesling sauce), pike (in salsa verde) and crayfish (in Riesling and fish broth) which may be found in the country’s rivers and lakes, especially those which snake around lovely medieval castles and hamlets among the green forests and hills of the Ardennes. De rundermaag, flink gepaneerd, wordt gebakken in olie of vet, om de stevige kuddelfleck te bereiden. Uitstekende patisserie, overwegend van Franse oorsprong (vooral de quetschentaart met pruimen is het proeven waard), en een uitgebreid wijnaanbod van eigen productie, met name de witte droge wijnen afkomstig uit het microklimaat van de Moezelvallei, zorgen voor een uitstekende afronding van een typisch Luxemburgse maaltijd. Maar Luxemburg biedt vanzelfsprekend ook alternatieven die niets met traditie

meat and fish dishes regardless of the variety of ways they may be prepared (“without potatoes it’s not a proper meal” is a common saying among local diners), pork and beef tripe play a key role. Pork is present in such simple, delicious soups as bouneschlupp and is the main ingredient in more substantial recipes such as judd mat gaardebounen (neck of pork with broad beans and, of course, potatoes), while the stomach of a cow is generously covered in breadcrumbs and fried in oil or lard to make the robust dish kuddelfleck. Typically Luxembourgish cuisine is rounded off to perfection by great confectionery with a markedly French stamp (don’t forget to try the plum quetschentaart) and a significant choice of domestically-produced wines, notably the dry white wines which benefit from the Moselle valley’s micro-climate. This cuisine can especially be recommended to those with adventurous palates who enjoy more earthy culinary traditions with basic and unaffected flavours, but also want attractive preparation. However, Luxembourg also offers other options which depart from tradition. Tom Weidert’s Le Grillon restaurant in the tiny village of Osweiler awaits those who want to move away from traditional cooking and try contemporary cuisine which is rather more innovative. Weidert, who won the title of Best European Apprentice Chef in 1997, is a young chef who prepares dishes with fresh and creative touches. And those who prefer a less earthy menu may find a good balance between tradition and innovation in the cosy L’Ernz Noire hotel/restaurant, half-hidden amongst the rural greenery of Grundhof, where David Albert revisits the French facet of Luxembourg’s gastronomic heritage and re-interprets his country’s popular dishes in the style of haute cuisine. ANDY ZAUGG & DAS ZELT– Chapiteau PostFinance THEATRICAL GASTRONOMY Switzerland’s multicultural character has traditionally led to a certain amount of division between its twenty six cantons, which are each devoted to their own linguistic, artistic and culinary roots. But that is changing thanks to initiatives such as those of the DAS ZELT–Chapiteau PostFinance theatrical troupe and the chef Andy Zaugg.

Maar hierin is verandering aan het komen dankzij initiatieven zoals die van de kunstgroep DAS ZELT - Chapiteau PostFinance en de chef Andy Zaugg.

De lijfspreuk van Zum Alten Stephan, het restaurant van Zaugg «Comme il est difficile d’être simple!», duidt op zijn engagement met authenticiteit. Altijd op zoek naar nieuwe uitdagingen, begon hij elf jaar geleden met een catering service, waarmee hij de traditionele gastronomie uit Soleura, gekruid met een internationale touch, door heel Zwitserland verspreidde.
Hoe is de samenwerking met het culturele project van DAS ZELT - Chapiteau PostFinance tot stand gekomen? Het sluit perfect aan bij de slogan van Jeunes Restaurateurs: talent, passie en innovatie. Dat is wat ik op een culinaire wijze wil overbrengen, waarbij ik mijn JRE-vrienden regionaal wil betrekken.
DAS ZELT, daarentegen, begon tijdens de Expo 02 als cultureel platform in de Duitse kantons, en breidde dankzij de inzet van David Dimitri en Adrian Steiner, in 2007 hun opvoeringen uit naar de Franse en Italiaanse delen van Zwitserland. In hun drang om uit te groeien tot culturele expressie van hun land, zijn ze dit jaar een winstgevend verband aangegaan met PostFinance. Op dit moment is DAS ZELT - Chapiteau PostFinance het

Always in search of new challenges, eleven years ago Zaugg began to offer catering services, spicing up Soleura’s traditional gastronomy with an international touch and taking it to the whole of Switzerland. In turn, DAS ZELT was launched during Expo 02 as a cultural platform in the German cantons. Thanks to the determination of David Dimitri and Adrian Steiner it kept going and in 2007 extended its performances to the French and Italian parts of Switzerland. In its eagerness to grow as a cultural expression of its country, this year DAS ZELT began a fruitful association with PostFinance. Today DAS ZELT–Chapiteau PostFinance is the only project from that Expo still in existence, and its two simultaneous stages have become a multi-coloured showcase for the best of the Swiss scenic arts. At the beginning of 2013, DAS ZELT– Chapiteau PostFinance and JRE came up with the idea of a combination of theatre and gastronomy in which spectators purchasing a VIP or Dinner and Show package could also become the guests at a gourmet dinner hosted by Andy Zaugg and other invited chefs. What led you to collaborate with the DAS ZELT–Chapiteau PostFinance cultural project? The fact that it fits perfectly with the Jeunes Restaurateurs slogan: talent, passion and innovation.That is what I want to convey in a culinary form, involving my regional JRE friends. The menu of Zum Alten Stephan (a restaurant with a lot of history rooted in Soleura, the most baroque Swiss city) is dominated by seasonal products, so the menus often vary. You are also a somewhat restless chef, always “on the road”. With so many changes of fresh products and scenarios, are there

We would not have remained successful for twenty-one years without taking care of our popular classics and letting them evolve slightly. At the same time, the right amount of experimentation is necessary. This balance is something I seek with my partner Stefan Bader, head of cuisine at Stadtbeiz. He is also a member of JRE, and his youth guarantees constant inspiration. What dishes would you recommend to those attending one of the DAS ZELT– Chapiteau PostFinance evenings for the first time? The individual, regional and seasonal star dishes of the JRE chefs. Each recipe is of the highest quality and comes from a renowned chef, so the diners only need to let themselves be led by their preferences. Your project is famous for supporting new generations of theatrical performers, and now working with JRE you are extending your patronage to young gastronomic artists. How was your collaboration born? A mutual friend brought Andy and his exceptional cuisine to our attention in 2010, and we were fascinated by the idea of collaborating with the highly talented chefs of JRE. Certain contractual commitments made us wait until this year. Now Andy Zaugg is acting as JRE’s ambassador to DAS ZELT–Chapiteau PostFinance, and we are excited by active collaboration with the guest cooks of the various cantons. What do the new performers have that the previous ones didn’t? It largely depends on the specialism, and of course, each performer has their own style. These days the audience can make better comparisons and has a keener eye. But the audience also values surprising and poignant moments, both in comedy and in the circus. We also see the increasing use of multimedia resources. How do the audience respond to the combination of gastronomy and theatre? The guests can appreciate the proven quality of the best chefs and theatrical performers. The visitor is immersed in a world of pleasure and fascination, and for a few hours can leave their everyday concerns behind. SPRUITJES Geconcentreerde gezondheid Food & Health BRUSSELS SPROUTS Concentrated Health Brassica oleracea var. gemmifera is a much richer and more complex plant than at first appears. One of its many secrets is that of its origin, which some authors trace to Italy during the Roman Empire, although the first reliable descriptions of these leaf buds in the form of miniature cabbages clustering around a solid central stalk locate them in the vicinity of Brussels at the beginning of the nineteenth century. It was much later, during the Second World War, that their cultivation spread throughout Europe thanks to their resistance to low temperatures. The complex taste of Brussels sprouts, which includes hints of both bitterness and sweetness and is rather strong when cooked for the right time (removing them before they lose their brilliant

Firstly, among the whole family of plants to which they belong, Brussels sprouts are the ones that provide us with the most Vitamin C. They also contain betacarotene and B Vitamins as well as calcium and magnesium for our bones. Their antioxidants block the damaging effect of free radicals and reduce cardiovascular and cerebrovascular risk. The folic acids they possess help during pregnancy to reduce the risk that the baby will suffer neural tube defects, and they participate in the production of red and white corpuscles, the synthesis of genetic material and the formation of antibodies. They are very useful vegetables in weight control diets both because of their low calorie content and because of their high content of water and fiber (which satisfies and reduces the appetite as well as helps prevent constipation, lowers cholesterol levels and controls blood sugar concentration). They also help eliminate excess liquid from the body, and among edible vegetables they have the highest content of iodine, essential to the working of the thyroid gland.

Furthermore, Brussels sprouts contain other phytochemicals which contribute to the prevention of some degenerative illnesses and stimulate the immune system (these include the sulfurous compounds responsible for the aforementioned strong smell). For these reasons, doctors and nutritionists have been recommending Brussels sprouts to us for decades. But it was only at the end of the nineteen nineties that a team of scientists at the Institute of Food Research in Norwich made a discovery that for health fans catapulted this humble vegetable to culinary stardom. And that discovery was that Brussels sprouts contain high levels of a derivative of the glucosinolate sinigrin called allyl isothiocyanate, which inhibits the development of pre-cancerous cells linked to cancer of the lung, prostate, breast, stomach, liver and colon. Curiously, the more sinigrin these miniature buds of health contain, the bitterer they are. This is one of the ironies of the vegetable world that their detractors, fans of milder tastes, should learn to enjoy, because not all gold glitters.

Terroir CURED HAM A solid, delicious tradition Pork has been a staple of European food since ancient times, when various forms of salting and curing were developed to make it possible to preserve and trade it. But none of these forms has maintained as much continuity nor has achieved as much international prestige as those responsible for Spanish cured ham. According to some historical sources, the pre-Roman inhabitants of the Iberian peninsula were masters in curing cuts of pork, especially the hind legs. The trade in this meat earned them abundant wealth and much fame. This type of production continued during the time of the Roman Empire, when ham became a much-coveted and highly-valued product. During the eras of Augustus and Agrippa coins were minted in the shape of a hind leg.

Thanks to discoveries like the fossilised ham from the ancient city of Tarraco (now Tarragona), which is more than 2000 years old, we can see that their preparation procedures were practically the same as the ones used today, which makes cured ham a food product with one of the most solid and continuous traditions in the whole world. Because of their sophistication and artisan roots, these methods can be compared to those responsible for producing all of Europe’s great wines. Immediately after the slaughter and the cutting, the hams are buried in salt for several days at a temperature between 1 and 5 degrees centigrade and a relative humidity of between 80 and 90 per cent. Then the hams are left to rest while the surface salt is absorbed and water is drawn from the inside, a process which lasts between 50 and 90 days. Next they are rinsed with hot water and cleaned with brushes to eliminate the excess surface salt and prepare the joint for its inoculation with a special mold. The hams are then moved to natural drying sheds where ventilation and temperature is rigorously controlled. They are left to rest there for between six and nine months, during which time the fat is uniformly disseminated throughout the muscle tissue and the ham begins to attain its characteristic taste and smell. Finally, after the hams have been classified according to their weight, quality and shape, they are hung in cellars for between 6 and 18 months. During this aging process there is no interference with the

The trip, at the invitation of Deer Industry New Zealand, took Jan Verhelst, Steven Dehaeze, Gianni Caruso and Laurent Van De Vyver to locations and places that may not be classics on the world map, but do increasingly more often appear on the menus and the wine lists of the better restaurants in this world. The company travelled from the bustling Auckland to a sublime food experience in Queenstown, a deer farm where a

De reis op uitnodiging van Deer Industry New Zealand voerde Jan Verhelst, Steven Dehaeze, Gianni Caruso en Laurent Vandevyver naar plekken en plekjes die misschien geen klassiekers zijn op de wereldkaar t, maar wel steeds vaker voorkomen op de menu- en de wijnkaarten van de betere restaurants in deze wereld. Het gezelschap trok van het bruisende Auckland naar een sublieme food experience in Queenstown, een her tenboerderij waar een helikopter geen overbodige luxe is, een culinaire hoogmis in Christchurch en een wel heel bijzondere slachterij… Jullie hebben ontzettend veel gezien en beleefd in die 6 dagen. Wat is jullie uit die rollercoaster van ervaringen het meest bijgebleven?
Laurent — Ik denk dat ik voor iedereen spreek, als ik zeg dat we de hele tijd stevig onder de indruk waren. Niet alleen van de landschappen, maar ook van de manier waarop de Nieuw-Zeelanders met die geweldige natuur omgaan. Er wonen en leven zo’n 4 miljoen mensen op een oppervlakte van het formaat van Groot-Brittannië. En toch is alles er perfect geregeld. De natuur mag er nog echt z’n gang gaan. En als de mens ingrijpt, gebeurt dat met heel veel respect voor de omgeving. Dat heeft natuurlijk ook z’n invloed op de keuken.” Gianni maakt meteen de vergelijking met Italië. “Je zou het niet meteen verwachten, maar de jovialiteit van de NieuwZeelanders is toch wel opvallend. In het noorden heerst er zelfs een zuiderse mentaliteit. Italiaanse uitbundigheid, Engelse humor en de exotica van Zuidoost Azië. Smijt dat in één pan en je hebt een zalig gerecht: Auckland. Ecologie, natuurbewustzijn, duurzame landbouw… Dat zijn ook ervaringen waar Jan spontaan naar teruggrijpt: “Een mooi voorbeeld is de zalmkwekerij die we bezocht hebben, niet ver van Mount Cook. Je ziet die machtige gletsjers en dan merk je hoe slim ze daar het water opvangen
en er met hydraulische centrales een onuitputtelijke energiebron van maken. En in die kanalen hebben ze dan weer zalm uitgezet. Die moet tegen een enorme stroming inzwemmen, waardoor het vlees alleen maar steviger wordt. Inventieve jongens, die Nieuw-Zeelanders.” Het was vooral de bedoeling om de NieuwZeelandse hertenvleeskeuken te leren kennen. Jullie hadden al wel ervaring met het product, maar nu kregen jullie ook inzicht in het hele proces. En? Steven — Fascinerend. We hebben een her tenboerderij bezocht op South Island waar 5000 her ten rondlopen op een domein –maar wat heet domein! 7000 hectaren. Zé-ven-dui-zend hectaren. Dat kunnen wij ons hier gewoon niet voorstellen! Gianni — Het domein heet Cattle Flat Station en wordt geëxploiteerd door de Ewing family. We hebben daar een rondvlucht gemaakt met de helikopter. Een heel gewoon vervoermiddel voor de mensen daar. Maar voor ons was het puur avontuur, natuurlijk. Jan — Ze gebruiken die helikopters voor zowat alles. Voor het onderhoud, voor de controle, maar ook voor het bijeendrijven

What do you remember most from that rollercoaster of experience? Laurent — I think that I speak for all of us when I say that we were deeply impressed the entire time. Not only with the landscapes, but also with how the New Zealanders treat this wonderful nature. Some four million people live on an area the size of Great Britain. But nevertheless everything is arranged perfectly. The nature can still really go its own way. And when man intervenes, that is done with great respect for the environment. This also has an effect on the cuisine, of course. Gianni immediately made the comparison with Italy. “You would not expect it right away, but the joviality of New Zealanders is quite striking. In the north there is even a southern mentality that prevails. Italian exuberance, English humour and the exotica of South-East Asia. Throw that into one pan and you have a delicious dish: Auckland.” Ecology, awareness of nature, sustainable agriculture… These are also experiences that Jan Verhelst spontaneously remembers: “A good example is the salmon farm we visited, not far from Mount Cook. You see that powerful glacier and then you notice how cleverly they capture the water there and make it an inexhaustible source of energy by using hydro-electric power stations. And they have also released salmon in these channels. They must swim against a powerful current, which means the meat becomes even firmer. Inventive chaps, those New Zealanders”. The main aim was to get to know the New Zealand venison cuisine. You already had some experience with the product, but now you also obtained insight into the whole process. And? Steven — Fascinating. We visited a deer farm on South Island where 5,000 deer roam on a domain - but what is called domain! - of 7,000 hectares. Seven thousand hectares. We just cannot image that here! Gianni — The domain is named Cattle Flat Station and is run by the Ewing family. We made a flight around it with the helicopter. A very ordinary means of transport for the people there. But for us it was a pure adventure, of course. Jan — They use the helicopters for just about everything. For the maintenance, for the checking, but also for the rounding up of the deer. The deer run around freely on defined areas of 1,000 hectares. More than one hectare for each deer, which is quite a nice space to live in.

Aren’t the deer there rather like our cows? Jan — That would undoubtedly be regarded by a deer breeder as an insult! Their animals just live naturally in the wild. They do their own thing in their area. The breeding itself can also not be compared. The monitoring, the checking, the vaccinations, everything is focused on the health of the animal and that of the consumer. The care for the environment is also unnoticeable. And in the area of food safety, transport and processing, the New Zealanders have extremely high standards. Steven has put New Zealand venison on his menu for more than 10 years already. Nevertheless, he continues to be amazed at how the nearly 2,500 deer breeders in New Zealand treat their animals. “Venison is the red meat of the future, you could say. The animals are so well cared for and are so contented that you can really taste that in the meat. It is very tasty and especially tender. Why that is, you can only understand when you see them on the spot and see how the people treat the animals”. Laurent — Customers now want to know what is on their plate. It must not only be tastily prepared. They want meat that ‘has not suffered’. Ecology and sustainability are becoming increasingly more important. Gianni — And health! Did you know that venison contains less cholesterol than beef and chicken? It is also lean in nature. Thus low in calories. That is something that women will be happy to hear. Laurent — The deer in New Zealand are bred on grassland. They do not develop any intramuscular fat and the meat itself contains less than one third of the volume of saturated fat that is in our beef! Gianni — It may sound a little strange, but with venison there is also a smaller footprint on your plate. Tall stories, but in the game season don’t you still want our own venison? A hearty leg of venison from our own forests? Jan — I disagree. Our own wild venison has a considerably intense flavour. Not everyone likes that. Steven — A deer that has been hunted is considerably stressed. This also translates itself into the structure of the meat. The animals in New Zealand are slaughtered before they are two years’ old. They remain with their mother for six months and afterwards are selected on quality. A deer is ready for slaughtering when it weighs between 60 and 75 kilograms.

En op het gebied van voedselveiligheid, transpor t en verwerking hanteren de Nieuw Zeelanders extreem hoge normen. Steven zet al meer dan 10 jaar NieuwZeelands her tenvlees op z’n kaar t. Toch blijft ook hij zich verbazen over de manier waarop de bijna 2500 her tenkwekers in Nieuw-Zeeland met hun dieren omgaan. “Her tenvlees is het rood vlees van de toekomst, mag je wel zeggen. De dieren worden zo goed verzorgd en hebben het zo naar hun zin dat je dat echt proéft in het vlees. Het is erg smakelijk en bijzonder zacht. Hoe dat komt, begrijp je pas als je ter plekke ziet en meemaakt hoe men met de dieren omgaat.”
Laurent — De klant van nu wil weten wat er op z’n bord ligt. Het moet niet alleen lekker klaargemaakt zijn. Hij wil vlees dat ‘niet heeft geleden’. Ecologie en duurzaamheid worden steeds belangrijker. Giann — En gezondheid! Wist je dat her tenvlees veel minder cholesterol bevat dan rundsvlees en kippenvlees? Het is ook mager van nature. Caloriearm dus. Dat zullen de vrouwen dan weer graag horen. Laurent — De Nieuw-Zeelandse her ten worden gekweekt op grasland. Ze ontwikkelen geen intramusculair vet en het vlees zelf bevat minder dan één derde van het volume verzadigd vet in ons rundsvlees! Gianni — Het klinkt misschien ‘n beetje vreemd, maar met her tenvlees ligt er ook een kleinere voetafdruk op je bord. Straffe verhalen, maar in het wildseizoen wil je toch hertenvlees van bij ons? Een stevige hertenbout uit onze eigen bossen? Jan — Niet akkoord. Wild her tenvlees van bij ons is behoorlijk heftig van smaak. Niet iedereen is daarvoor te vinden. Steven — Een her t dat opgejaagd wordt, is behoorlijk gestresseerd. Dat ver taalt zich ook in de structuur van het vlees. In NieuwZeeland worden de dieren nog voor hun tweede jaar geslacht. Ze blijven een half jaar bij de moeder en worden daarna op

Steven — De Nieuw Zeelandse keuken is een fusion tussen Engels, frans, Zuid oost Aziatisch, Japans gerechten en smaken. Laurent — Nieuw Zeeland heeft zo een overvloed aan top ingrediënten of ze komen uit de zee, rivieren of vanop land ze zij van een zeer hoog culinair niveau. Hebben jullie tijdens de trip ook een typisch hertenvlees restaurant bezocht?
“Graham Brown’s Cookhouse! Dat is een chef die perfect met hertenkalf omgaat,” aldus Steven. “Die man heeft meer dan veer tig jaar ervaring, runt z’n eigen her tenkwekerij en geeft geweldige cooking classes. Fantastische man.” Jan — Hij heeft ons een degustatie van her tenbereidingen voorgeschoteld op basis van diverse versnijdingen, een echte ontdekkingstocht. Gianni — Zijn ravioli met her t waren heerlijk Laurent — De salade met vers gerookt her tenvlees ook Terug naar het product: hertenvlees. Wat zou je de collega’s die dit artikel lezen aanbevelen? Daniel Lehmann combineert traditie en innovatie en verrast hij zijn gasten dagelijks met iets nieuws, van aperitief tot dessert. Hij herinterpreteert basisgerechten en beschouwt rationaliteit en productkwaliteit als iets essentieels. Zelf zegt hij over zijn beroep: “het mooiste aan mijn vak is het combineren van producten van hoge kwaliteit uit onze streek met sensationele producten uit de hele wereld”. In het rustige Trautmannsdorf, in Südoststeiermark, heeft een jonge kok een plaats veroverd in het hart van fijnproevers van heinde en ver. Een originele persoonlijkheid en een briljante kok: Vitus Winkler. Nog geen 30 jaar oud, maar al in het bezit van twee koksmutsen, werkt hij onvermoeibaar verder aan het perfectioneren van zijn talent. Gratineren kan tot hoogstaand genot leiden op basis van eenvoudige ingrediënten, iets wat thuis ook mogelijk is.
