Amarant
• Amaranth is one of the synthetic cereal and were grown already by the ancient Mayas, Aztecs and Incas. Because of its high nutritional value and low-growing is called crop of the third millennium. Amaranth with its qualities is important as prevention for all ages. Particular value is for small children (lysine promotes the formation of brain cells) and athletes (minerals, vitamins, unsaturated acids and quality protein promote the growth of muscle mass). For older generation is important for promoting cell regeneration and significantly affects metabolism. • Compared with ordinary cereals (wheat, oats, barley, rye, rice, corn) is grain amaranth richer in protein, fiber quality oils, minerals and vitamins.
What is gluten?
Gluten is the main protein in wheat. It is a mixture of two types of proteins that are present in: • wheat (including semolina, spelled, and kamut), and rye, • smaller amount also in barley and oats. Proteins called prolamins cause celiac disease mainly (wheat contains these protein substances are called gliadin and in rye secalins, in barely are called hordeins and in oats avenin). Whereas type of protein which is called glutelin is mainly responsible for allergic reactions. Word gluten is really related to stickiness, in the matter fact gluten is in Latin stand for glue.
Wheat gluten 4 elemental types of protein are varying of solubility: • albumins (water soluble) • globulins (soluble in solutions of salts), • prolamins (soluble in dilute alcohol) • glutelin (soluble in dilute acids and hydroxides) Composition of dry matter wheat gluten: 43% gliandinu (wheat prolamin), 39% gluteinu (wheat glutein), 4% other proteins, 6% starch, 8% lipids, saccharide, minerals, etc.
Diseases associated with gluten Among disease caused by gluten intolerance include: • celiac disease i.e. celiac sprue i.e. gluten enteropathy (malabsorption of nutrients and water) • gluten intolerance (allergy) • Dermatitis herpetiformis • selective malabsorption (impaired absorption of one or several defi ned s) • Crohn‘s disease (inflammatory bowel disease) • many other Food intolerance to gluten is the only one of these diseases, allergic cause.
Legislation • Changing the laws (in Czech Republic) COMMISSION REGULATION (ES) No. 41/2009 of 20 January 2009 concerning the composition and labeling food suitable for gluten intolerant people. The law changes labeling food for coeliacs. This Regulation shall enter into force on the twentieth day following that of its publication in the Official Journal of the European Union. Manufacturers and suppliers are obliged to follow this regulation from 1 January 2012. • 2 food groups (simplified explanation): −food with „very low gluten“ - food must not contain more than 100 mg gluten / kg in a state sold to the final consumer. − „Gluten-free food“ - food must not contain more than 20 mg gluten / kg in a state sold to the final consumer. • If is oats used in food, then containing gluten in oats must not be higher than 20 mg / kg.
