If not too long ago, recipes of the large variety of mouth-watering Indonesian dishes that are fused with mysterious herbs were carefully kept secret by housewives and royalty, today this is no more. Indonesian cuisine has gone global. As a matter of fact, in 2011 CNN-Go readers choose Indonesia’s Beef Rendang and Nasi Goreng as the two top dishes among the World’s 50 Most Popular Dishes. It was after all in the quest for Indonesia’s rich variety of spices that in the 16th century European nations raced to be the first to find these precious Spice Islands. In Jakarta, a number of Fine Dining Restaurants have opened, serving meals in heritage settings, offering sumptuous gourmet food, elegantly served by a slew of waiters and waitresses. Among the most outstanding in Jakarta are The Oasis, the Tugu Kunstkring Paleis, Kembang Goela and many more.

The Oasis
Tugu Kunstkring Paleis is the latest addition to Jakarta’s fine dining scene. Located in the posh Menteng area, the Kunstkring is housed in a 100 years old white colonial building that was once Indonesia’s Immigration Office. The building has been completely restored and refurbished keeping its colonial style and kept wonderfully cool by surrounding tall shady trees and foliage. The main dining room and adjoining private rooms are set in a gallery atmosphere decorated with heirlooms from the Palaces of Solo and Mangkunegaran. This is truly a culinary and cultural experience wrapped in one. Its main presentation is Rijsttafel comprising a cone of steaming white rice and an array of side dishes of succulent meats, fish, spicy vegetables, crackers and sambals, finishing with deserts and a hot cup of coffee or tea. Rijsttafel is usually served for a party of 6 or more diners. All these are served by a slew of waiters and waitresses, who enter the dining hall dancing accompanied by typical Betawi music.
When you need to entertain foreign VIPs and you are looking for exclusive Indonesian cuisine with a unique atmosphere then your choice should be the Oasis. The restaurant is housed in a colonial early 19th century residence and still serves the fabulous Indonesian Rijsttafel in the old-fashioned way. Former President Clinton and wife Hillary were guests at this restaurant when they visited Jakarta, as were many other dignitaries. Rijsttafel is a set of many sumptuous dishes that covers the entire menu from appetizers to dessert and coffee, where each dish is served individually by a slew of waitresses in traditional costume.

Betawi Cuisine and Restaurants If you are looking for a taste of Jakarta’s original Betawi cuisine, there are also a number of restaurants specializing in Betawi cuisine. Just as the Betawi culture is a cosmopolitan fusion of the different cultures from Java and overseas settlers, so too is its Food. Betawi Cuisine has incorporated dishes and cooking techniques from the surrounding Sunda lands, the Javanese further afield, as also the Chinese, Indian and Arab merchants who settled here as well as the Portuguese and Dutch colonial masters. Some popular Betawi dishes include: gado-gado-fresh vegetables covered in peanut sauce, kerak telor-a thick and spicy egg crepe, bir pletok-an aromatic and warming drink, the sticky dodol sweet rolls, symbol of togetherness and more. These can be easily found in many restaurants and especially in the Betawi neighbourhoods around Setu Babakan and Condet. Betawi cuisine normally uses plenty of lemongrass, pandanus leaves and shallots. Characterisric to Betawi cuisine is that it favors stir frying most ingredients first before mixing these with sauces, which is unlike Padang food, for example. And when cooking offal, the Betawi insist on cleaning this thoroughly first, then boiling these in a mixture of herbs with ginger before mixing them with other side dishes. Aside from the above dishes, a number of dishes influenced by the Chinese are bakso or meatballs, bakmi-meaning noodles, or soun-glass noodles, while Indian inspired popular food include martabak egg crepes, while Arabian inspired is nasi kebuli.

Soto Betawi This is Indonesia’s traditional chicken or beef soup, the taste of which varies from province to province. If elsewhere, Soto is clear soup filled with chicken slices, Soto Betawi’s base is beef broth cooked with coconut milk and vegetable oil. Soto is then served with slices of beef, lung and offal that have been boiled with sauted ingredients of lengkuas, lemongrass, salam and salt. Soto Betawi is usually served with emping melinjo crackers and sambal with a slice of lemon to complete this dish.
Gado Gado Betawi -the Betawi Salad This is Indonesia’s Salad, consisting of boiled long beans, beansprouts, fresh cucumber slices, fried tofu and soy bean cake, sliced boiled potatoes and other preferred vegetables. The boiled vegetables are mixed together, added with slices of boiled eggs. It is then smothered in peanut sauce that is mixed with chili, shrimp paste, lemon and red sugar and strewn over with deep fried shallots.
Bir Pletok
Bir Pletok–Betawi’s heart-warming “Beer” Although called beer, this drink is completely non-alcoholic and very specific to Betawi. It is actually a warming ginger drink mixed with sugar, sari bunga selasih and different roots. Ingredients comprise ginger, sugar, kayu secang, rasped lemon skin, pandan leaves, lemongrass, pepper, nutmeg, cinnamon and water. Preparing this drink is very simple. Clean all the ingredients, boil in water until aromatic, then serve.

Kerak Telor or Egg Crepe This is a popular snack that can be found at every festivity in Jakarta. This dish consists of sticky rice and mixed with ingredients of kencur, ginger, salt and pepper that are ground together, sauted and added with rasped coconut meat. The frying pan is given some oil and the rice is spread over it then covered until cooked. Eggs are whisked and poured over the now crispy rice and added with the coconut and other ingredients. To make this more attractive, it is strewn with fried shallots. The pan is closed again until all is ready to be served.

Roti Buaya
Roti Buaya the Alligator Bread This bread made in the shape of an alligator is a must at any Betawi festivity and must most certainly not be absent from marriage proposal ceremonies. Roti Buaya or the Alligator Bread symbolizes eternal loyalty to its partner. It is also a symbol for patience, since alligators are known to be bide their time when espying their prey. Originating on Java, Nasi Tumpeng is usually served at special occasions, at “Selamatan” or thanksgiving gatherings on anniversaries, weddings, births, circumcisions or other special events. The top of the rice cone is cut by the host and given to the guest of honor. The Tumpeng is to be enjoyed by all. By partaking of the Tumpeng guests are believed to be blessed or give blessing to the occasion.
Nasi Uduk is a special Betawi culinary dish. Different from the daily steamed rice, nasi uduk is a little off white and its grains do not stick to each other, this is caused by the process of cooking. Half cooked rice is mixed with coconut milk, salam (a kind of laurel for cooking), lime leaf, galingale and lemongrass then steamed till fully cooked. Its result is delicious, aromatic rice.
Today, at special dinners or in fine dining restaurants individual Tumpengs are also served. The center piece of Tumpeng is a large cone of yellow rice surrounded by side dishes, served on a rice winnowing tray decorated with banana leaves. The yellow rice is plain white rice steamed in coconut milk mixed with turmeric to get the yellow color. Traditionally, Tumpeng side dishes consist of fried chicken, telur pindang (marbleized boiled eggs), shredded omelettes, sweet dry fried tempe (soya bean cake), mashed potato fritters, sambal goreng ati (liver in chili sauce), teri kacang (fried small fish with peanuts), urap (vegetables in rasped coconuts) and more.

Sayur Besan This dish is indeed served particularly to welcome the bridegroom’s family by the bride’s relatives, which takes place before the wedding at time when the groom comes to ask the girl in marriage or during the actual wedding celebrations.
Gabus Pucung The gabus fish is cooked in the black “keluak” sauce which is derived from the fruits of the kepayang tree. The Betawi call keluak, pucung. Besides keluak, other ingredients include coriander, galangal, turmeric, vinegar, coconut sugar, fried shrimp paste and more. The result: an extremely tasty dish.

Beef Rendang, Fit for the king Chicken, goat, or beef satay, Among the Minangkabau ethnic group in West party favourite Sumatra, who created this extraordinary dish, Beef Rendang is the piece de resistance at any formal occasion, especially when graced by the Sultan himself. This is because its preparations are most painstaking and require a lot of patience since cooking this takes hours before it is deemed exactly right. It is small wonder, therefore, that Beef Rendang has been voted the Most Delicious Food in the World by CNN-Go viewers. Beef cubes are slowly simmered with coconut milk and a mixture of lemongrass, galangal, garlic, turmeric, ginger. chilies and shallots, then left to stew for a few hours to create this dish of tender, flavorful bovine goodness. There are two types of Rendang, the dry and the stew type. The best is the dry Rendang when the meat has become sweet and crunchy, soaked in the mixture of aromatic herbs.
Sambal
Indonesians find that no dish is complete without Sambal. In dire need, Rice with Sambal suffices. Sambal is a chili-based condiment. Indonesia has more than 300 varieties of sambal, depending on the meat or fish served, the place of origin and of course herbs and vegetables available in the surrounding. Sambal can be extremely spicywatch out for the small green chilies that are very hot, belying their size and color–to nicely mild.
Sambal Bajak, this is chili fried with oil, garlic, terasi (dried shrimp paste), candlenuts and others. It is dark and rich in flavor.

In Bahasa Indonesia, the word “sate” means marinated meat, which is skewered and grilled over an open charcoal fire, then usually served with peanut or sweet soya sauce. Meats can be chicken, beef, goat, pork or even fish. While skewers are made of bamboo, sometimes the midrib of the coconut leaf, whereas Bali uses lemongrass as skewers for sate, to add just that bit of flavor. Ingredients include shallots, candle nuts, garlic, chilies, which are ground to a fine paste then saute’d until fragrant and mixed with ground peanuts, sweet soy sauce, salt and water added. Skewer the meat, marinate with half of the sauce for 2 hours then grill over an open fire, turning occasionally. Eaten as a cocktail dish or as a meal with rice, Satay never ceases to be a favorite at parties.

Dabu-Dabu, for example is typical Manado Sambal from North Sulawesi. Consisting of coarsely chopped tomatoes, calamansi, shallots and basil, chili, vegetable oil and salt, this condiment is usually served with barbequed fish, which is abundant and almost a staple in the region. Dabu-dabu comes closest to the Mexican salsa sauce.
Sambal Terasi, this is the most common and most popular Sambal. Similar to the Malaysian belacan, Sambal Terasi has a stronger flavor due to its fermentation. Sambal Terasi consists of red and green peppers, terasi, sugar, salt, lemon or lime juice. Sometimes it comes fried with pounded tomatoes.

Chinese Peranakan Cuisine and Restaurants Chinese food and Chinese Peranakan food are also popular in this cosmopolitan city and are very well frequented. Lately, more Chinese Peranakan Restaurants are appearing on the scene. This is the cuisine that blends Chinese recipes with original Javanese or other Indonesian cuisines to make these distinctly their own. Some Fine Dining Peranakan Restaurants include Shanghai Blue, the Lara Djonggrang and Bunga Rampai, but, you can find a number of more popular Peranakan Restaurants also in Malls.

Originating along the north coast of Java, this dish, therefore, blends with Javanese ingredients and taste. Formerly served only on Cap Go Meh celebrations, which is the 15th day after Chinese New Year. This dish which is believed to bring good luck and prosperity is now popular across Indonesia and available at any time. Lontong is a compressed rice cake rolled into cylinders, wrappped in banana leaves. Its side dishes comprise chicken boiled in coconut milk (opor ayam), fried liver sambal, vegetables cooked in coconut milk (sayur lodeh), marbleized eggs, beef floss and pickled cucumbers. The dish is eaten with a tasty soup of coconut milk that has been mixed with various herbs, like ground shallots, garlic, kemiri and coriander.

Laksa This dish is similar to the Penang Laksa but has a distinct Indonesian taste. Glass noodles are boiled to a soft consistency, this is then added with slivers of tuna fish, pineapple slices, red chili and is then drenched in clear broth, and added a mixture of bunga kecombrang and aromatic shrimp paste. To add to its freshness, lemon is squeezed over it. This is a favorite dish at the Toean Njonja Restaurant at Jalan Wahid Hasyim.

For a more exclusive taste try the Sop Burung Dara or the Pigeon Soup at Shanghai Blue. This is a clear soup filled with slivers of dove meatballs. Lotus is added to provide that crunchiness.
This healthy and tasty vegetable dish consists of different kinds of mushrooms, like black mushrooms, shiitake and champignons, as well as peas, kecambah, tofu, young bamboo shoots and corn.

5 As Jakarta today attracts an increasing number of tourists from the Middle East, more restaurants are now also catering to this growing clientele, both in upmarket surroundings as well as in more economy style restaurants. These also offer cuisine from different countries. The Anatolia and the Turkuaz, for example, serve Turkish culinary presentations, the Maroush serves Moroccan food, and Al Nafoura Lebanese. Others like New Sindbad and the Hadramout concentrate on Yemeni cuisine.

Jakarta’s Betawi Traditional Spa Treatment The indigenous Betawi of Jakarta have long practised their own traditional spa treatment, that are primarily focused on preparing a girl for her big wedding day, her marriage intimacies, pregnancy and childbirth.
For the Betawi, a wedding is not complete if the bride herself does not shine with outer and inner beauty. For this reason weeks before her wedding, the bride is given lulur massages over her entire body, to clear the skin from dead skin and impurities. At the same time she must drink special herbal drinks to make her specially attractive to receive her husband. After she has given birth, more massages and treatments are applied to keep her beauty, restore her svelte figure and keep her fit and healthy even to old age. A number of treatments, include the restoration of elasticity of her uterus and restore her libido. The treatment include massages with mixtures of herbs and other ingredients, including ground eggshells, temugiring, laos and ginger. Then added with akar wangi, lime and lemon leaves, kemuning, lemongrass, pomegranate and sepang leaves. While, after giving birth, the mother’s tummy is covered with a mixture of laos and ginger paste and bound with a corset for three months. Meanwhile the mother must also eat clear spinach soup, green soy beans soup without the coconut milk, and continue to take coriander drink.
