De Belgische Vereniging voor de VoedselketenControle of BVEC bestaat sinds 1997 en ontstond binnen de vroegere voedselveiligheidsinstanties maar evolueerde mee bij het ontstaan van het FAVV. Ideeën uitwisselen en unieke projecten organiseren in het kader van voedselveiligheid zijn enkele kerndoelstellingen. Intussen groeide deze beroepsvereniging uit tot een vaste waarde voor personeelsleden van het Voedselagentschap. Het FAVV stimuleert en ondersteunt de projecten van het BVEC. Dankzij die steun kan er dan ook met trots teruggekeken worden naar de reeds georganiseerde projecten. BVEC mag dan wel 3 jaar ouder zijn dan het FAVV, de jonge spirit ervan is intenser dan ooit!
L'Association belge pour le contrôle de la chaîne alimentaires ABCA existe depuis 1997 et a été créée sous l’égide des instances officielles de contrôle de la sécurité des denrées alimentaires de l’époque, mais a évolué et accompagné l'AFSCA. Echanger des idées et élaborer des projets uniques dans le cadre de la sécurité alimentaire sont quelques objectifs clés. Entretemps, l'association professionnelle a pris sa place auprès du personnel de l'Agence alimentaire. L’ AFSCA encourage et soutient les projets de l’ABCA. Grâce à ce soutien nous pouvons être fiers des projets qui ont été organisés. L’ABCA peut avoir trois années d’ancienneté de plus que l'AFSCA son esprit jeune est plus vif que jamais!

Normandië 2010 De jaarlijkse internationale studiereis gaat door van 21 tot en met 23 oktober. Dit jaar werd gekozen voor Normandië Frankrijk. Een gevarieerd programma werd uitgewerkt. Zo wordt er een bezoek gebracht aan de grootste silo’s van Europa in Rouen en worden we ontvangen op de landbouwkamer van het departement Seine-Maritime
waarbij we collega’s uit Frankrijk ontmoeten. Het volledige programma is terug te vinden op www.abca-bvec.be of op pagina 28. La journée d’étude internationale aura lieu du 21 au 23 octobre prochain. Cette année c’est la Normandie qui a été choisie. Le programme est varié. C’est ainsi qu’il est prévu de visiter à Rouen l’un
des plus grand silo d’Europe et nous serons reçu à la Chambre Agricole du Département de Seine –Maritime où nous aurons le plaisir de rencontrer des collègues de l’hexagone. Le programme complet est disponible sur www.abca-bvec.be où à la page 28.

B V E C Belgische Vereniging voor de VoedselketenControle De Belgische Vereniging voor de VoedselketenControle of BVEC is een beroepsvereniging voor personen actief in de sector van voedselveiligheid en kwaliteitszorg. BVEC heeft als doelstelling perspectief te geven aan een job waar voedselveiligheid centraal staat. BVEC staat open voor iedereen die betrokken is bij de kwaliteit en de controle van voedingsmiddelen. De vereniging behelst alle professionele interesses gerelateerd aan voeding. De leden zijn actief in de landbouwsector, verwerkende sector en distributiesector, gaande van controleurs en inspecteurs van het Voedselagentschap tot kwaliteitsverantwoordelijken van overheid- en andere instanties. In elke provincie is er een contactpersoon voor de vereniging en samen met het bestuur van de vereniging vormen zij een team en de kern van deze beroepsvereniging. De vereniging werkt nauw samen met andere Europese lidstaten en dit in een overkoepelende organisatie namelijk de European Working Community for Food Inspection and Consumer Protection of kortweg EWFC. Via dit platform worden jaarlijks congressen, periodiek internationale studiereizen en uitwisselingsprogramma’s georganiseerd wat heel wat perspectieven biedt voor controleurs, inspecteurs en iedereen die betrokken is bij de controle van de voedselketen en bescherming van de gezondheid van de consument, dieren en planten. Lidmaatschap - waarom lid worden van BVEC voor slechts € 15 / jaar?

AB C A L’Association Belge pour le Contrôle de la Chaîne Alimentaire L’Association Belge pour le Contrôle de la Chaîne Alimentaire ou ABCA est une association professionnelle constituée de personnes actives dans le secteur de la sécurité alimentaire. L’ABCA est chargée de donner des perspectives aux professions où la sécurité alimentaire est une priorité. L’ABCA est accessible à toutes les personnes qui s’investissent dans la qualité et le contrôle de la chaîne alimentaire. Elle réunit tout professionnel ayant un rapport étroit avec le domaine alimentaire. Ses membres sont actifs dans le secteur de la production primaire et les secteurs de la transformation et de la distribution de denrées alimentaires ; cela va des contrôleurs / inspecteurs de l’agence alimentaire jusqu’aux responsables qualité en entreprises et dans les pouvoirs publics. Dans chaque province, l’ABCA possède un point de contact. Ensemble, ces personnes forment un groupe, représentant le cœur de cette association professionnelle. L’association travaille étroitement avec d’autres pays membres européens sous la houlette de l’EWFC ou European Working Community for Food Inspection and Consumer Protection. Cette plateforme organise chaque année des séminaires ou congrès, périodiquement des voyages d’études internationaux ainsi que des programmes d’échanges représentant des perspectives intéressantes pour les contrôleurs / inspecteurs de l’agence alimentaire mais aussi pour toute personne impliquée dans le contrôle de la chaîne alimentaire et la protection de la santé du consommateur, des animaux et des plantes. Adhésion – Pourquoi devenir membre de l’ABCA pour seulement 15 euros par an?
Quelques exemples de cette association professionnelle: Accroître les contacts entre collègues, aussi bien au niveau national qu’international ; Participer à des formations spécialisées ; Prendre part à des visites en entreprises (gastronomie moléculaire, ferme high-tech, SIAL-RUNGIS, Luxcargo, viticulture luxembourgeoise et belge, cuisine de collectivité sur un bateau de croisière,…) ; Participer à des voyages d’études (Paris, Grand-duché du Luxembourg,…) ; Etre informé via notre magazine ; Utiliser le réseau via un login ; Apprendre à connaître tous les secteurs de la chaîne alimentaire …

Antwerpen ’t scheld Aïda blu 21 april 2010 ca 14u00 Blauwe lucht, lente, zon en op de Aïda Blu mogen. Een 14 deks hoog splinternieuwe cruiseschip. De aanblik van dit schip tegen de blauwe lucht deed ons dromen van palmbomen en raffiarokjes. Aan de overzijde van ’t Scheld ontwaarden we echter het strand van Sint-Anneke. We waren nog in België. Na drie check in’s (paspoort controle, RX etc.) konden we met een speciale pas aan het bezoek beginnen. Dank zij de inzet van het bestuur van ABCA-BVEC werden wij met de nodige “egards” verwelkomd door de hotelmanager en de chef-kok van dit droomschip. Een exclusieve fruitcocktail “Aïda Blu” werd ons aangeboden in de lounge, waar wij de nodige uitleg kregen over dit gloednieuwe schip van de AIDA cruises met standplaats Rostock in Duitsland. Ieder jaar wordt een nieuw passagiersschip te water gelaten! Alle vragen die we stelden werden bereidwillig beantwoord. De technische data van dit schip zijn: 1.088 passagierskabienen, 7 restaurants en 13 bars, een zonnedek van ca. 8.300m², 2.600m² wellnessfaciliteiten, een totale lengte van 252m en 32m breed, 14 dekken en verder een theatrium, een discotheek, casino, internetcafé, shops, hospitaal, brouwerij, kinderopvang en tot slot een motor van 24.000KW vermogen! De chef-kok is chef van 140 koks (!) en 160 man keukenpersoneel. Daarmee worden 7 restaurants en 13 bars bediend. In totaal 300 man keukenpersoneel. Alle keukeninrichting was in inox uitgevoerd (ook de muren vloeren en het plafond!) en het was kraaknet. Alle opslagplaatsen werden door ons bezocht, ook die met sterke drank (twee verschillende personen hebben elk een verschillende sleutel voor de twee sloten van de deur!). De verse voeding (fruit, groenten,..) was perfect gestapeld met respect voor lotnummers en het FIFO-principe. Jaarlijks wordt dit schip geaudit voor de voedselveiligheisnorm ISO 22000. Alle bedrijven die leveren aan dit schip dienen ook over die norm te beschikken. Wetenswaardig: in dit schip is een complete brouwerij geïnstalleerd waar men een aantal bieren maakt met zeewater. Uiteraard wordt dit zeewater eerst behandeld met omgekeerde osmose, UV desinfectie, etc zodat men volledig zuiver water verkrijgt. Daarna wordt een snuif mineralen erbij gevoegd om terug een normaal Duits smakend water te bekomen. Wij vonden het daarmee gebrouwde bier lekker, maar de tijd ontbrak spijtig genoeg om dit verder uit te testen. In de wijnkelder (inox vaten met leidingen en cip-cleaningssysteem) werd gevraagd welke wijnsoort het succesnummer was. Verrassend was het antwoord dat dit afhangt van het seizoen, het weer, de temperatuur en het publiek. Bijvoorbeeld in de winter wordt meer witte wijn gedronken, in de zomer rode wijn, in de Caraïben daarentegen kan men niet volgen met de drinkwater bedeling. Bij koud weer wordt veel fruit geconsumeerd en in een warm klimaat eet men groenten, etc. Blijkbaar hebben de mensen, aan hun eetgewoonten te zien, toch een groepsgeest en is het voor de keuken van groot logistiek belang dit fenomeen goed in te schatten. Bij stormweer blijkt het dan weer erg rustig in de restaurants. In het onderste verdiep woont de bemanning die bijna uitsluitend uit Fillipino’s bestaat. Na nog enkele geschenken te hebben ontvangen eindigden we dit twee uur durend bezoek. De directie van het schip kreeg Belgische chocolade (van een gekende Hofleverancier uit Brussel) als dankgeschenk. We mochten steeds terugkomen voor een bezoek. Het was zeer leerzaam en een verlofdag meer dan waard . Als bezoeksthema een echte aanrader. Wij denken trouwens dat een cruisetrip van een weekje op dit schip aan te bevelen voor ieder van het FAVV die de drukke dagelijkse sleur eens wenst te doorbreken om te ontstressen. Anvers t’Scheld - Aïda blu - 21 avril 2010 aux environs de 14h00 Un ciel Bleu, le printemps, le soleil et avoir accès à l’ Aïda Blu. Un navire de croisière flambant neuf haut de 14 ponts ! La vue de ce navire sur fond de ciel bleu nous fit songer à des palmiers et des pagnes. Sur la berge en face de nous, nous aperçûmes d’ailleurs la plage de Sint-Anneke. Nous étions toujours en Belgique. Après que l’on ait vérifié par trois fois nos papiers, check-in et sécurité oblige, (contrôle de passeport, RX, etc) nous avons obtenu un laisser passer qui nous a ouvert la voie à la visite. Grâce aux efforts du comité de l'ABCA-BVEC nous avons été accueillis avec «déférence» et salués par le manager, le chef coq et toute l’équipe de cuisiniers de ce navire de rêve. Nous avons été conduit dans le salon où nous nous sommes délectés du cocktail de fruits maison "Aïda Blu" en écoutant les explications sur ce nouveau navire de l’entreprise de AIDA Cruises implantée à Rostock en Allemagne. Chaque année, un nouveau navire pour transport de passagers est mis à l’eau! Ils ont répondu aimablement à nos nombreuses questions.Les données techniques de ce navire sont: 1088 cabines passagers, 7 restaurants et 13 bars, un deck au soleil d'environ 8.300m ², 2.600m ² de superpicie réservée au bien-être, une longueur totale de 252m et 32m de large, 14 ponts et... un Théâtre, une discothèque, un casino, un cybercafé, des boutiques, un hôpital, une brasserie, une garderie pour enfants et, enfin, un moteur d’une cylindrée de 24.000KW Le chef coq règne sur 140 cuisiniers (!) et 160 personnes de cuisine. Ils désservent ainsi 7 restaurants et 13 bars avec service. Au total, 300 personnes. Toutes les installations de cuisine sont en inox ( y compris les murs, plafonds et sols) et tout est d’une propreté irréprochable . Nous avons vu toutes les réserves y compris celles recelant les alcools (deux personnes différentes disposent de deux clefs différentes pour l’ouverture des deux serrures de la porte !). Les aliments frais (fruits, légumes, ..), était parfaitement rangés avec respect pour les numéros de lot et le système FIFO. Chaque année, ce navire est audité pour les normes de sécurité alimentaire ISO 22000. Toutes les entreprises qui fournissent ce navire doivent également satisfaire à ces normes. Bon à savoir: Ce bateau est équipé de toute une installation de brasserie qui produit certaines bières à partir d'eau de mer. Évidemment, cette eau de mer est d'abord traitée par osmose inverse, désinfectée par UV, etc. de manière à obtenir de l'eau complètement pure. Ensuite, ils y ajoutent une pincée de minéraux afin de lui conférer la touche allemande indispensable. Nous avons apprécié la bière ainsi brassée mais nous n’avons malheureusement pas eu le temps de la tester davantage. Dans la cave à vin (fûts et tuyauteries en acier inoxydable avec système de nettoyage CIP) nous avons demandé quel était le vin le plus demandé. Étonnamment, on nous a répondu que cela dépendait de la saison, de la météo, de la température et du public. En hiver par exemple c’est le vin blanc qui est le plus demandé, en été c’est le vin rouge qui a la quote et dans les Caraïbes on peut à peine répondre à la demande d’une bonne eau désaltérante. Par temps froid on consomme beaucoup de fruits, sous les climats chauds on mange des légumes, etc. Apparemment, les gens ont, au vu de leurs habitudes alimentaires, un esprit de groupe car tout cela doit être bien connu de la cuisine pour évaluer correctement les commandes. Par temps d'orage par contre il fait plus calme dans les restaurants. L'équipage constitué presque exclusivement de philippins réside à l'étage inférieur. Après avoir reçu quelques cadeaux, nous avons terminé cette visite de deux heures. Nous avons offert du chocolat belge (d'un fournisseur de la cour de Bruxelles) à la direction du navire en guise de remerciement. Nous serons encore les bienvenus pour une visite. Ce fut très instructif et valait bien un jour de congé. A retenir comme thème de visite. Nous pensons d’ailleurs qu'un voyage d’ une semaine de croisière sur ce navire est à recommander pour chacun à l'AFSCA, pour casser la routine quotidienne et décompresser de tout le stress. De beroepsvereniging BVEC werkt in teamverband. Geheel vrijwillig en met enthousiasme probeert deze organisatie door opleidingen, bedrijfsbezoeken en ontmoetingen een extra dimensie te geven aan iedereen met een functie in de wereld van voedselveiligheid. In deze rubriek stelt het team zich graag even voor. Het BVEC team bestaat uit contactpersonen per provincie voor heel België, een secretaris - schatbewaarder, een vicevoorzitter voor EWFC en een nationale vicevoorzitter. Tot slot is er de voorzitter die de dagelijkse werking coördineert. L’association professionnelle ABCA-BVEC travaille en équipe. C’est bénévolement et avec enthousiasme que cet organisme œuvre afin d’élargir l’horizon de tous ceux qui sont actifs dans le secteur du contrôle de la sécurité de la chaîne alimentaire. L’équipe est composée pour toute la Belgique de personnes de contact par province, d’un secrétaire-trésorier, d'une vice-présidente pour l' EWFC et d’un vice-président national, enfin la présidente qui se charge de coordonner les activités. Ils saisissent maintenant l’opportunité de se présenter dans cette rubrique.

Je leert collega’s binnen je eigen PCE kennen op een andere manier en komt in contact met collega’s van andere PCE’s. Etant contrôleur en distribution au sein de l'UPC Bruxelles depuis bientôt 4 ans, je ne connaissais l'ABCA-BVEC que de nom. La motivation et l'enthousiasme de Martine Fretin pour cette association m'ont donné l'envie de m'y intéresser. Le métier de contrôleur AFSCA demande une mise à niveau constante, que demander de mieux que de pouvoir échanger son point de vue et son expérience avec d'autres membres expérimentés qui la composent! C'est donc avec un réel plaisir que je participe aux activités diverses et futures proposées par l'ABCA-BVEC. C'est dans cet esprit d'échange et de collaboration que je vais devenir point de contact pour l'UPC Hainaut. Benoit Delbart

Je zou graag wat meer te weten komen over nieuwe technieken, productieprocessen, … die in de verschillende stadia van de voedselketen worden geïntroduceerd. Je hebt je al eens afgevraagd hoe deze controles in onze buurlanden worden georganiseerd. Je hebt een drang om ideeën en ervaringen uit te wisselen met collega’s in België en zelfs in andere Europese landen. Je hebt altijd al eens willen kijken achter de schermen van een luchthaven, een cruiseschip, … . Kortom als je één, enkele of alle vragen met een ja hebt beantwoord, is ABCABVEC beslist iets voor jou! Groeten, David

Diététicienne d’âme et de passion, j’ai exercé plusieurs années en milieu hospitalier. Il y a 13 ans j’ai rejoins les équipes de contrôles de denrées alimentaires des services publics. Je suis affiliée à l’association des contrôleurs depuis sa création. Une telle association est un élément clé pour l’information des professionnels du contrôle et permet d’avoir des contacts avec les contrôleurs des autres pays. Depuis le début de l’aventure, je suis personne de contact pour l’association. Actuellement, j’ai rejoint la cellule de vulgarisation de l’AFSCA. J’ai pris mon bâton de pèlerin en main. Je sillonne les routes de Belgique et vais à la rencontre des opérateurs du secteur de la distribution. J’anime des séances d’informations sur la réglementation auprès des professionnels. Quoique ma fonction je ne fasse plus de contrôles, je reste fidèle à l’association des contrôleurs et continue à être personne de contact. Carine Verbestel
Schoubben Els aanspreekpunt BVEC voor Antwerpen controleur distributie PCE Antwerpen Als ik u was, zou ik kiezen voor deze beroepsvereniging omdat er allerhande voedingsgerelateerde uitstappen worden georganiseerd, samen met collega’s, die bovendien nog eens educatief en leerrijk zijn in onze job. Zo ben ik mee gaan kijken naar de keuken en organisatie van één van de grootste schepen ooit (!) aangemeerd in de Antwerpse haven, en eind oktober volgt er een lang weekend in Normandië met bezoeken aan de regionale voedingsbedrijven, een kaasmakerij, de landbouwschool, etc. Hier bovenop leer je ook de collega’s van de andere PCE’s kennen, kortom alleen maar voordelen om lid te worden van de Belgische Vereniging voor de VoedselketenControle! Bezoek aan de “Salaisons Meyer” in Bascharage Op de ruime parking voor het bedrijf konden we nog wat profiteren van het mooie weer tot het gezelschap volledig was. Iedereen stipt op tijd en blijkbaar ontsnapt aan de ochtendfiles. Ook de toezichthoudende dierenarts van de inspectiedienst werd ons voorgesteld door Dr. Serge Losch van onze zustervereniging in Luxemburg en die ons deze twee dagen zou begeleiden. Tevens kwam het hoofd van de Luxemburgse inspectiedienst ons verwelkomen. Het bedrijf Meyer is een artisanaal bedrijf dat al generaties lang rookproducten maakt. Dankzij deze lange traditie is men erin geslaagd aan deze producten een bijzondere smaak te geven. Dit hebben we persoonlijk kunnen proeven in de Brasserie Béierhaascht, vlak naast deze vleesfabriek en door dezelfde familie uitgebaat. De trilogie van ham viel zo in de smaak dat verschillende collega’s in de naastliggende winkel hun voorraad hebben opgedaan om ook het thuisfront van deze bijzondere vleeswaren te laten meegenieten Onze groep werd langs een smalle gang het bedrijf binnengeloodst , voorzien van de nodige beschermende kledij en weldra stonden we in een centrale gang vol inox deuren, tot drie verdiepen hoog. Op het gelijkvloers bevindt zich een uitsnijderij , waar de hespen in een speciale snit worden gezet. Deze hespen worden geselecteerd op PH en gewicht (15 kg.), hoofdzakelijk van Luxemburgse origine , maar gezien de omzet ook regelmatig aangevoerd uit België. Na het versnijden worden ze diepgevroren, daarna ontdooid en gemasseerd om alle bloed en vocht uit de bloedvaten te krijgen. Dan begint het zoutproces van 15 dagen. Natuurzout met kruiden wordt daarvoor op de liggende hespen gelegd. Om het zout beter te laten indringen wordt de temperatuur regelmatig verhoogd en verlaagd. Daarna begint het droogproces op een temperatuur van 2-4°C, het roken en het maandenlang rusten en verder drogen bij 12°C voor minstens 4 maanden. Voor deze laatste fase wordt het gedeelte van de ham zonder huid bekleed met een vetlaag, zodat dit vlees niet teveel uitdroogt en de smaak van de kruiden beter in de ham blijft. Iedere processtap heeft zijn eigen frigo, zodat op regelmatige basis de hammen via de centrale gang van plaats wisselen. Het hele proces duurt 12 tot 24 maanden, waardoor we een ham krijgen met een uitzonderlijke smaak. Van de snijlingen worden droge worsten gemaakt. Ook salami’s, stukken bacon en zelfs stukken wild worden op dezelfde manier gerookt en gedroogd. Het bedrijf heeft dus een heel gamma aan gerookte producten, alles te verkrijgen in eigen beenhouwerij en te proeven in hun eigen ruime en gezellige ‘ Brasserie .’ Wat bij ons ondenkbaar is maar blijkbaar hier geen probleem. Ook het aangevoerd wild voor de Brasserie wordt opgeslagen in de frigo’s van het bedrijf Meyer en daar versneden, waarna het via een vernuftig transportsysteem (rijdende bakken) in de keuken van het restaurant terecht komt. Voor we ons konden vergewissen van de kwaliteit van het geserveerde voedsel doken we eerst nog de kelders binnen waar de brouwer van dienst ons nog vlug de knepen van het bier brouwen bijbracht. Want de familie Meyer produceert niet alleen vleesproducten , maar ook een eigen bier van lage gisting, de “Beierhaascht” , een bier dat 5 weken gist bij een temperatuur van 5-15°C. Dat het bier samen met de ham nadien opperbest heeft gesmaakt hoeft geen uitleg. En de verbroedering met onze Luxemburgse collega’s verliep dan ook bijzonder vlot. Paul De Graeve Insp. WVL

Visite des Salaisons « Meyer » à Bascharage au Gd Duché du Luxembourg Nous nous sommes rassemblés sur le grand parking de l'entreprise baigné par les rayons du soleil printanier. Tout le monde était à l'heure ayant apparemment échappé aux bouchons de la circulation matinale. Nous avons fait la connaissance du vétérinaire de contrôle de l’établissement qui nous a été présenté par ... nos collègues et amis de notre association soeur du Grand Duché du Luxembourg qui nous ont accompagnés et guidés tout au long de ces deux journées de visite. Nous avons même rencontré les dirigeants du service d’inspection au Grand Duché. La société Meyer est une entreprise artisanale qui fabrique des produits de viandes fumées depuis des générations. Grâce au maintien de sa tradition, ils ont réussi à donner à leurs produits ce goût si particulier. Nous avons comme il se doit dégusté leurs produits à la Brasserie Beierhaascht, située juste à côté des ateliers de préparation de viande et exploité par la même famille. La trilogie de jambon a été tellement appréciée que plusieurs de nos collègues ont fait leurs emplettes dans la boutique attenante afin d’en faire profiter la famille dès le retour aux pénates. Notre groupe est entré par un long couloir étroit au sein de l’entreprise, après avoir revêtus les équipements de protection requis nous nous sommes retrouvés dans un couloir central flanqué de grandes portes en acier inoxydable, hautes de trois étages. Le rez de chaussée abrite l’atelier de découpe, où les jambons sont « taillés » comme en couture. Ces jambons sont sélectionnés d’après le Ph et le poids (15kg), la viande est principalement d'origine luxembourgeoise, mais étant donné le succès, elle provient également (souvent) de Belgique. Une fois taillés, ils sont congelés, puis décongelés et masser afin d’expulser tout le sang et autres liquides des vaisseaux sanguins. Débute alors l’opération de salage qui prendra 15 jours. Les jambons sont couchés puis recouverts de sel et d’ épices, la température de macération des jambons est régulièrement augmentée puis diminuée ce qui permet d'améliorer la pénétration du sel dans la viande. Commence alors le processus de séchage à une température de 2-4 ° C, le fumage et les mois de repos pour achever le séchage à 12°C pendant au moins quatre mois. Avant cette dernière phase, la partie du jambon sans peau est recouverte d'une couche de gras pour que cette partie ne se dessèche pas trop et que la saveur des herbes pénètre bien dans le jambon. Un frigo spécifique est réservé à chaque étape du processus de telle sorte que , au moment voulu, les jambons puissent changer de place via le couloir central. L'ensemble du processus prend de 12 à 24 mois, ce qui donne au jambon un goût exceptionnel. Toutes les chutes de taille de jambons sont utilisées pour faire des saucissons secs. L’entreprise fabrique également des salamis, du lard, du bacon et travaille également le gibier qui est fumé et séché par le même procédé. La société offre ainsi un large éventail de produits fumés, disponibles dans leur propre boucherie attenante, et proposés à la dégustation dans leur spacieuse et confortable "Brasserie". Ce qui est inconcevable chez nous, mais qui apparemment ne pose pas de problème ici. Le gibier acquis pour la Brasserie est également stocké dans les frigos de la société Meyer et y est découpé, puis il est dirigé via un ingénieux système de transport (bacs roulants) dans la cuisine du restaurant. Avant que nous puissions apprécier la qualité des aliments servis, nous sommes descendus dans la cave du brasseur de séant qui nous a enseigné en passant les bonnes méthodes de fabrication de la bière artisanale. Car la famille Meyer ne produit pas seulement des viandes préparées et des préparations de viande , elle brasse aussi une bière de basse fermentation, le «Beierhaascht», une bière qui fermente durant 5 semaines à une température de 5-15 ° C. Personne ne sera surpris d’apprendre que la bière et l’excellent jambon ont été superbement appréciés scellant ainsi la fraternité avec nos collègues luxembourgeois. Paul De Graeve Insp. WVL

Op 2 april 2010 ging het ABCA-BVEC erop uit. Dit keer ging het richting Zottegem naar de hoeve ‘t Alkeveld. Hoeve 't Alkeveld is een gemengd akkerbouw-melkveebedrijf met zuivelverwerking en ijssalon. De boerderij is zeer landelijk gelegen, heeft een omvang van ongeveer 55ha en wordt geleid door Chris en Leen Steenhuyse. We werden er hartelijk verwelkomd door Chris die ons wat meer vertelde over het bedrijf en hoe het vandaag tot een bloeiend landbouwbedrijf is gegroeid met – naast de klassieke bezigheden - tal van randactiviteiten zoals verwerking en verkoop van zuivelproducten, kindvriendelijke educatieve rondleidingen, kookworkshops. Het bedrijf draait op 100% regenwater en 50% zonne-energie. Chris probeert op gebied van de geldende wetgeving altijd op de hoogte te blijven en die zelfs vóór te zijn. In 2004 startte Chris als jonge boer op het ouderlijk 't Alkeveld met de verwerking van melk tot botermelk, boter, plattekaas, yoghurt, rijstpap, chocomousse en pudding. Deze lekkernijen worden verkocht in de bijhorende winkel. Onze rondleiding startte bij de kalfjes. Zij worden in een buitenhokje gespeend en verder grootgebracht. De scheiding van het moederdier gebeurt onmiddellijk na de geboorte om te voorkomen dat ze een emotionele band met elkaar krijgen. Na enkele weken worden ze telkens in groepjes van dezelfde leeftijd –ong. 4 à 5- bijeen gebracht in een loopstal. Dit groepje zal bij elkaar blijven tot ze zijn uitgegroeid tot volwassen koeien. In 2008 werd er een nieuwe verblijfplaats gebouwd voor het melkvee zodat er nu plaats is om 120 koeien te huisvesten (nu telt het bedrijf 60 melkkoeien). De stal is voorzien van een melkrobot die men vanuit een educatieve ruimte op de bovenverdieping kan aanschouwen. Bij deze revolutionaire, volautomatische manier van melken bepalen de koeien zelf wanneer ze gemolken willen worden en dit 24 uur op 24. De koeien dragen een enkelband met informatie over hun gezondheidstoestand en de laatste melkbeurt zodat de robot exact weet welke koe er klaar staat om gemolken te worden. Het optimale rendement bedraagt 10 000 liter melk per koe per jaar. Tot slot konden we nog een kijkje nemen in de aardappelloods. De aardappelen worden er vorstvrij bewaard, om via groothandel en thuisverkoop te verhandelen. Na de rondleiding konden we proeven van het ambachtelijk gemaakte roomijs. Sylvia Palais, controleur OVL

European Working Community for Food Inspection and Consumer protection What is the E.W.F.C.? European Working Community for Food Inspection and Consumer Protection is a joining together of professional organizations for Food Inspection from the Member States of the EU. It was founded in 1991 with the Founder Members Germany and France. The EWFC promotes uniform Food Inspection in the EU and looks after the professional interests of its 3.500 Members. At first the aims were to set-up and organise food-inspection, training of food inspectors and future co-operation in the EU. So the main task was to make a European organization for staff, who are working with food monitoring and consumer protection. The EWFC made it a rule to try to contact professional organizations in all member states of the EU. It should consider the organizations of Food Inspectors, Meat Inspectors, Veterinary Surgeons, Food technicians, Food chemists and Doctors.
It’s Aims and Objectives are to promote the professional interests of its members, exchange experiences, continuation of the training and co-operation with the expert organisations at EU Level. The EWFC intends being an association capable of being heard by the European Commission to be able to help in the construction and the development of legislation.
What has the E.W.F.C. achieved up to now? In February 1994 a talk with the GD III took place in Brussels. It was among other things about an exchange program for people in the food monitoring area, with financial contributions from the EU, employment opportunities and standardized training-contents for food inspectors in the EU as well as the privatisation of the food monitoring and the admission in the consumer committee of the EU. Still in 1994 the exchange could be protected by food controllers within the EU. The exchange program with the name "Karolus" allowed people who are active in the official food monitoring process to participate.
"Guidelines for good control practice " and "Guidelines for official sampling" both guidelines were supported financially as projects by the EU and already offer good assistance to the new member countries.
Twinning projects participation in EU projects to "aid development" for the new member countries of the EU participation in projects on the basis of intergovernmental agreements (at present there are many inquiries for Twinning projects in the new member countries from Eastern Europe)
Exchange programs for Food Controllers in other European countries with financial subsidy from the EU Spanish "Sociedad Española de Seguridad Almentaria" (SESAL) joins EWFC. This organization became a new member of EWFC in April 2010. For more info see

Every year the board of ECOS Users association goes abroad. ECOS is a Support System for municipal Environment and Health Protection with approx. 130 municipals as users and members. One of the major purposes getting abroad is to get new impressions. This year we went to Brussels. Before we went to Brussels some people said that “Brussels is the most boring town in Europe!” Now when we have been there we can say “That is not true!” One day ABCA-BVEC with support of the Food Safety Agency organised our program and a warm welcoming waited for us at the Food Centre in Brussels! They gave us a good view of how Food Safety is administrated in Belgium. We also discovered that we had a lot in common with our colleagues in Belgium. The complexity of four different languages, however, is unique. A visit to a local chocolate production unit was also on the program. This was a very interesting and “tasty” visit. We got a day together with professional people that showed a great hospitality and seemed to love their work. Thank you! We really hope to see you soon in Sweden! Facts about Food Control in Sweden. In Sweden there are three different levels of authorities for control. These are: The National Food Administration (Livsmedelsverket, www.slv.se ) have the responsibility of food control at slaughterhouses, producers > 7,5 tonnes/week, ferries, trains, airports etc The County Administrations (21 counties in all, www.lst.se ) have responsibility for food control at prime production The municipal Environment and Health Protection Committees (290 municipals in all) have responsibility for food control at restaurants, café’s, schoolkitchens, grocery stores, producers < 7,5 tonnes/week, water plants etc. Besides food controls the municipals also have responsibility to do controls for Environmental and Health protection.

This document can also be found on the EWFC website. Please find the EWFC analysis of the FVO reports on the next page Dr. Serge Losch gave a PowerPoint presentation. Dr. Schnellhadt responded that The Commission states that there is no need to fundamentally change the current hygiene package. We know, however, said Dr. Schnellhardt, that the member states would like changes to the requirements for the use, recruitment and training of PIAs. In the near future we must consider whether the current official controls are enough to protect consumers. Official controls, however, must continue. Dr. McAvan (Socialist Group) stated: Dr. Schnellhardt is more experienced in these matters than me; he was on the environment committee in 2004 when the hygiene package went through the parliamentary stage. Dr. Evans (Green Group) stated: I have read the EWFC analysis of the FVO reports and I agree the situation in some member states is very bad. The Green grou p recognise that the resources designated for meat controls have been reduced across the EU and we regard the EWFC evidence as very powerful. A general discussion now ensued centred on the EWFC analysis of the FVO reports and the intentions of the Commission and memb er states council of ministers for changes in official controls in slaughterhouses. At the end of this exchange of views the MEPs stated that they were aware of the issues concerning the independence of meat inspection and that they support the maintenance of the current legislation for red meat. www.EWFC.eu

European Working Community for Food Inspection and Consumer Protection (EWFC) Briefing to Members of the European Parliament EWFC supports the continual, science based, review of official meat controls, which must change to protect the consumer from emerging or re-emerging threats. For example, the introduction of the Specific Risk Material (SRM) regulations, which ensure the removal of potentially high risk BSE/vCJD material from the food chain and future regulations that may be needed to deal with the resurgence of Bovine Tuberculosis. The United Nations Food and Agricultural Organisation (FAO) recently stated that 75% of all new human diseases come from animals or food of animal origin. They are also convinced there is problem with official food controls that needs international intervention. These problems will be made worse by passing official meat controls to the employees of commercial organisation who obviously have a conflict of interest. In 2010/11 an EU Animal Health package is planned. EWFC does not believe that commercial organisations will adequately fund the involvement of their employees in any meat controls associated with such an exercise. When the current hygiene package came into force on 01.01.06 the regulation, governing official controls of food of animal origin, continued to allow member states to use meat plant employed inspection assistants (PIAs) to assist the Official Veterinarian in post mortem inspection of poultry and rabbits. In 2004 the European Parliament Environment Committee ensured, however, that the new regulation required the qualifications of the assistants to be harmonised and improved so that they were the same as officials in those official tasks they were asked to perform. They were also required, by 2010, to achieve the same standard as official poultry inspectors in every aspect of the official’s work. During 2008/9 member states approached The European Commission and obtained a change in the regulation, so that the 2006 derogation continued after 2010, i.e. assistants need only attain the same level as officials in those tasks they are asked to perform. This was done by “commitology” and so did not come before the European Parliament. When the regulation was published in 2004 The Commission stated that it would later review the way the PIA system was working and make proposals concerning such staff and whether their use could be extended into the red meat sector. A review of the Food and Veterinary Office (FVO) website shows that only Four countries, France, Cyprus, Finland and Latvia, have had their poultry slaughterhouses visited by the FVO since the regulations were introduced. France has deliberately reduced the number of personnel involved in official meat controls. It is now impossible for that member state to carry out its official duties in poultry slaughterhouses. In consequence France has used poorly trained PIAs to carry out some inspection, which is frequently only at the position where the bird is seen whole, not when the carcase is opened and the most important inspection should place. The FVO poultry slaughterhouse reports show that the two member states that were using plant staff for official controls, France and Finland, were criticised far more than the two European Union newcomers, Cyprus and Latvia, that use exclusively officials for all aspects of official controls. The French system was so bad that country was told it was in infraction of the regulations. France’s red meat abattoirs were inspected by the FVO in May 2006 and were also criticised. In June 2009 the exercise was repeated and the conditions found were extremely bad. France has some good slaughterhouses that have in place the correct official controls. The premises found wanting by the FVO, however, had badly organised official controls and hence very poor standards. A brief review of those and other FVO findings in some EU red meat slaughterhouses is given in the Annex below. The FVO came to Britain’s red meat slaughterhouses in May 2009 and their report was also very unfavourable, the mission team found very dirty sheep being slaughtered, faecal contamination on carcases, vacuum packed meat and frozen meat in cold store, British standards of meat inspection and enforcement have clearly declined. Britain like France has reduced its inspection staff; in Britain’s case by approximately 20% of the workforce. Of that reduced official presence 20% of the Official Auxiliaries (OA) are now newly qualified veterinarians from other member states who are employed by private companies and are then made available to the British competent authority as cheaper contract OA’s. These young veterinarians often have no previous experience of meat inspection and receive very little additional training in Britain before being required to work unsupervised on British slaughter-lines. The FVO report shows that the British competent authority is failing in it’s duty to protect British consumers and has reduced the number and competence of it’s meat hygiene inspectors to a level where they do not have the time or sometimes the capability to stop dangerously contaminated meat entering the human food chain. The FVO reports on their visits to Italy and particularly Spain also show very low standards of meat production, even worse than the findings in Britain. In Spain plant employees sometimes performed official controls even when this was not allowed by EU regulations. The FVO visits are announced well in advance, the member state and the meat plant know they are to be inspected and want to make the best impression possible. Both parties will have spent days, if not weeks, preparing for the visit. The standards seen by the FVO, therefore, are seldom duplicated during normal production. Bearing this in mind one must question whether some French, Spanish, Italian and other member state slaughterhouses normally have any official controls in place at all. The reports also show that some countries officials try to deceive the FVO as to the true practices in their meat plants. 20
The transfer of official controls to commercial interests, the unrealistic reduction of inspection workforces and, we believe, the desire to give national meat industries what they want at the expense of the consumer, has led to the problems found by the FVO particularly in France, UK, Spain and Italy. If member states are allowed to continue to use meat plant employed staff to carry out official controls, even when this practice is not permitted by the regulations, and to reduce staffing levels so that inspectors are unable to detect dangerously contaminated and unwholesome meat, human foodborne illness will increase and consumers will lose confidence in meat as a product. On the 22nd and 23rd May 2007 French officials came to the UK Food Standards Agency (FSA) in London to discuss proposed changes to official controls. The FSA want to transfer meat inspection to meat plant operators. We believe that these two countries are cooperating in this way to reduce their government-employed workforces and avoid the need to recreate a proper system of meat inspection. The proposal to audit slaughterhouses and then punish those with low standards allows them to put consumers health at risk until they are caught and punished. Correct official controls stop the consumer from being put at risk. The EWFC asks members of The European Parliament to ensure that the use of meat plant employees to carry out official controls in meat plants is not extended into the red meat sector and to call on the Commission to make proposals to return to the exclusive use off officials for official controls in poultry plants in order to protect the consumer. The above is the practice in the new member states whose standards the FVO found to be much higher than those using PIAs. We also ask the European Parliament to ask the Commission to make proposals to ensure all member states operate to the same high standard of Hygiene in slaughterhouses and to act more quickly when member states are in breach of EU regulations. Annex: Summary of Food and Veterinary Office (FVO) reports on European slaughterhouses In each section below the country visited is stated followed by the title of the report, the year and the point it is taken from.
White Meat slaughterhouses France Poultry meat and poultry meat products November 2008 5.2.3 There are 131 Official Auxiliaries (OA) who inspect permanently in high throughput plants and occasionally in low throughput establishments. From 2005 to 2008 there was a reduction of 15% in the number of Official Veterinarians (OV) and 21% in the number of Official Auxiliary (OA) employed by the French authorities. 5.2.4 The FVO found that officials were insufficiently educated, particularly in animal welfare. 5.4.3 The above section contains a long list of failings including some parts of premises not inspected in 2007 or 2008 5.4.4.4 Ante mortem inspection was performed by OA and not in conformity with the regulations. In high throughput plants the OA was not always present to do the ante-mortem and birds are often slaughtered with no officials on site In low throughput plants the OA was only rarely present. Food chain information does not conform to the requirements of the regulations. The lack of ante-mortem inspection affected animal welfare as well as animal and public health and OA and OV did not know what should be done on very hot days as the slaughterhouse had no way of cooling birds awaiting slaughter. Post mortem inspection is carried out by OA assisted by (PIA). The above process was not done in conformation with the regulations. Poultry processed in low throughput slaughterhouses were only rarely inspected. In high throughput slaughterhouses the OA was not always present and inspection and removal of unfit birds was done by PIAs without permanent OV presence as required by the regulations. The PIAs are trained but this is not equivalent to that of the OA in tasks they are asked to do as required by the regulations. In half the slaughterhouse visited there was no post-mortem during or after evisceration, this stage is generally regarded to be the most important phase of poultry inspection. Viscera are not always identifiable with the carcase, there is no inspection for faecal contamination and some Turkeys were seen with abscesses and no action was taken. 6 conclusions There were not enough officials to do the job properly. Ante and post mortem inspection was not carried out in conformation with the regulations. The above problems have been noted in previous visits and now constitute an infraction.
Cyprus Poultry meat and poultry meat products January 2009 5.3.2 Some deficiencies were found in hygiene, ante and post mortem but the FVO criticism was not severe. Post-mortem inspection is carried out by OA and was generally satisfactory. The OV was not always able to fulfil all his/her official functions.
Latvia Poultry meat and poultry meat products May 2009 Official veterinarians carry out all inspection and the FVO had very little to raise with this member state.

Significant deficiencies were identified in the abattoirs visited; there were problems with both ante and post mortem official inspection. Serious failings were also noted in the stunning of lambs and the management of waste material. Observations General Hygiene Requirements 5.4.1.1 Specific Hygiene Requirements 5.4.1.2 The first abattoir had dirt, rust and pieces of waste meat contaminating the premises; the roof also had holes in it. The old refrigeration equipment was encrusted with frost and stalagmites and stalactites were seen in the chiller. There was no equipment for cleaning the bins, which were used to collect white offal for human consumption, or to sterilise the sternum splitting saw. The second abattoir was also rusty and dirty with serious problems concerning a lack of separation of dirty and clean processes. The slaughterhouse was approved to slaughter but was also carrying out the unauthorised cutting of meat in an area not properly separated from the slaughtering process. Specific Risk Material and meat fit for human consumption were removed from the production area by the same access as personnel entering and leaving the abattoir. The stunning equipment for lambs did not work and the slaughtering practices were poor leading to numerous incidents of contaminations of carcases. Lamb carcases were also inflated in breach of EU regulations. This abattoir had been given permission to continue production by the local prefect in spite of a recommendation, by the national authorities that no permission at all should be granted. The third abattoir was the worst, with dirt and rust everywhere, both on the surfaces and the equipment, there was also a complete absence of any cleaning, disinfection or hygiene. The roof was so rusty, covered in algae and pierced with holes that it looked as if it would fall in. The premises had also produced positive microbiological results that should have been acted on by the competent authority. This third and worst abattoir was not seen working but it’s appearance and the presence of hair and faecal contamination on carcases in the chiller indicated that its production methods were poor. Containers for collecting and storing pig’s blood for human consumption were also found to be rusty and encrusted with dirt, hair and animal waste. The area for emptying intestines was even worse with manure and animal waste on many surfaces, it also contained a dirty container covered in hair and animal waste, this part of the premises was also used for the preparation of calf heads and white offal for human consumption. Animal by-products categories 1 and 3 were stored in this area. The tripe harvesting area was disgusting and the adjoining toilette repulsive. This abattoir was so dirty that the FVO team demanded that it immediately cease production. The prefect later confirmed that the entire establishment was now closed. All the premises visited had a HACCP system. The systems frequently did not identify the most important risks. The systems of official certification contain major weaknesses especially that veterinarians certify data they have no knowledge of and have not been previously certified by other officials. Given the severe deficiencies found in 3 abattoirs the Commission wrote formally to the French authorities on 07.07.09 requiring drastic action without delay.
UK Official controls Related to the Safety of Food of animal Origin Specific requirements 5.3.2 Audit findings Very dirty sheep had been accepted for slaughter in one slaughterhouse visited. This could lead to a serious risk of contamination of the meat during slaughter. Bleeding, de-hiding and evisceration was carried out in such a way that contamination of the meat could not be avoided. In one slaughterhouse, the trachea and oesophagus of sheep were not kept intact during bleeding. Unhygienic de-hiding procedures were observed when slaughtering sheep. Contact between the fleece, the hands of the workers and exposed meat was not always avoided. The slaughter procedure applied in one slaughterhouse led to consistent spillage of faeces from the rectum onto the exposed meat during evisceration on all sheep carcasses. Cross contamination between carcasses was not prevented. The equipment for sterilising working tools was inadequate and not working properly in one slaughterhouse visited. In another slaughterhouses there was no sterilising equipment for the splitting saw. Some carcasses in chilling rooms were seen with faecal contamination. Contaminated meat was seen in one cutting plant (even on vacuum packed meat), and in a cold store receiving frozen meat for storage directly from a slaughterhouse. The equipment in some cutting rooms had deep cuts into the worktops (in one case so deep that there actually were holes right through). Some unclean work tops and in one case a conveyor belt in a poor state of repair was also seen. In several establishments visited, plastic crates and containers used for products were not sufficiently cleaned. In some cases there was no clear separation between containers used for products approved for human consumption and waste foods or animal by-products. HACCP Conclusion: Procedures based on HACCP principles are in place but the CA had in most cases failed to identify the deficiencies found by the FVO team or, where a corrective action request had been issued, this had not been adequately followed up. Spain Food Hygiene Food of Animal origin April 2007 5.4.1.2 In most establishments visited major deficiencies were found in relation to hygiene. This section contains a list of serious slaughterhouse problems including inadequate washing of equipment, dirty livestock accepted and visible faeces on carcases. 5.4.1.3 HACCP systems were in place in plants but the list that follows this statement shows they were not being implemented and the FVO state that HACCP principles were not applied. It was certified that plant staff had been trained recently but one member of staff said they had not been trained for 3 to 4 years. Rodent control was inadequate, microbiological results indicated a contamination problem but no action had been taken. Very dirty cattle were presented for slaughter and faecal contamination seen on carcases. A system of microbiological sampling of pig carcases started only one week before the FVO visit. Ante-mortem inspection was not satisfactory. The previous FVO visit had asked for improvements in post-mortem inspection, in spite of this the following was found: In none of the slaughterhouses visited was post-mortem carried out in accordance with the regulations. In one establishment plant staff carried out the inspection with only limited supervision by the Official veterinarian. 22
In the slaughterhouses visited processing beef, the same repeated deficiencies were found as reported in the previous visit. Spinal cord was not removed from cattle over 24 months. The veterinarian stated that the spinal column of fighting bull carcases would be removed later but no evidence was seen of the carcase separation necessary to make this possible. In the slaughterhouses visited processing pigs the same repeated deficiencies were found as reported in the previous visit. In addition piglets were only inspected by observation from a distance. The report continues with further listed failings. Italy Food Safety food of Animal origin May 2008 5.1.2 One slaughterhouse OV acted as if he were a member of the Food Business Operator’s (FBO) staff and denied obvious failing, he went on to contradict the proposed official enforcement action. An OV in a slaughterhouse with serious deficiencies did not understand what was required during pos-mortem inspection. There were serious general official staff shortages. 5.4.1.1 In 3 of the 4 slaughterhouses visited standards of hygiene were unsatisfactory. 5.4.3.2 Post mortem inspection was not done properly 6.4 Little improvement in official controls and hygiene were seen since the last FVO visit. Denmark
Food Safety food of Animal Origin October 2008 5.1.3.2 Serious deficiencies in elite slaughterhouses. 5.1.4.4 The FVO were denied access to written reports, on officials responsible for premises they found to have serious problems, on confidentiality grounds. 5.4.1.2 Domestic consumption, as opposed to export premises, appear poor with bad hygiene practices Greece Food Safety food of Animal origin March 2008 Post-mortem inspection of intestines was not done properly and the OV was not aware of what process should be carried out when hearts were inspected. During the FVO visit the hearts were inspected properly but hearts seen by the FVO in the chiller from a previous day’s kill were not cut at all and therefore could not have been inspected. Most of the problems noted on previous visits still existed. Sweden Food Hygiene Food of Animal origin 2007 Some establishments showed significant problems in operational hygiene. HACCP plans were in place but their compliance and application showed great variation. Portugal Food Hygiene Food of Animal origin June 2007 5.4 One abattoir had particularly serious problems with faecal contamination of beef carcases, wild birds were seen in the abattoir. One slaughterhouse had only carried out bacteriological sampling, as required by the regulations, for 3 months because they cost too much. 5.4.1.2 HACCP was in general not functioning.

Laat ik me even voorstellen. Ik ben Sylvia Palais, 26 jaar en werkzaam als controleur bij het FAVV in de sector distributie van PCE Oost-Vlaanderen. Mijn controlegebied bevindt zich in het Gentse. Zoals velen van mijn collega’s in deze sector heb ik een vooropleiding in voedings- en dieetkunde en het is ook via deze studies dat ik in aanraking gekomen ben met het Voedselagentschap. Sinds dit jaar ben ik ook lid van ABCA-BVEC en heb via deze weg al heel wat nieuwe collega’s en bedrijven leren kennen. 7:03 De wekker gaat af, nog even blijven liggen om naar het weerbericht en de verkeersinfo te luisteren op de radio, dan het bed uit en kleren aan. De hond wordt buiten gelaten en dan richting de keuken om te ontbijten. Ik ga nooit zonder ontbijt het huis uit. Het ochtendritueel wordt beëindigd met een kort badkamerbezoek. 7:40 Tijd om te vertrekken naar de PCE. Het is nog zomervakantie en dus ook rustiger op de weg want door de werken op de E17 tussen Kruishoutem en Deinze gaat het soms langzaam. Eenmaal aangekomen wordt de laptop aangezet en geniet ik tijdens het opstarten even van het uitzicht op Gent vanaf de 10 e verdieping van ons gebouw. Het is gelukkig mooi weer, want bij mist hangt onze verdieping er vaak midden in. De missies van de controles van de vorige dag worden aangemaakt, de checklists worden ingegeven. Mails worden gelezen en beantwoord, de administratie is tegen de middag zo goed als rond.
12:05 Mijn maag vertelt me dat het tijd is om te eten. Hiervoor doe ik vandaag beroep op mijn vertrouwde broodjeszaak. 12:35 Nog even de mails checken en de laatste administratieve taken afwerken. Dan is het tijd voor de praktijk. De dossiers worden ingepakt en ik rij richting Gent voor een aantal controles waaronder een naar aanleiding van een klacht. Eenmaal aangekomen worden de dossiers eerst voorzien van de nodige checklisten uit de voorraad die altijd in mijn auto aanwezig is. Dan nog even de parkeermeter eten geven, dossiers en map met standaarddocumenten meenemen, tas met controlemateriaal bij de hand en we kunnen vertrekken. Na even wandelen bereik ik de juiste straat. De operator waarvoor een klacht binnengekomen was blijkt gesloten, maar het volgende restaurant blijkt wel open te zijn. Ik meld me aan, overloop even de gegevens van de zaak met de verantwoordelijke, plaats het onnodige controlemateriaal voorlopig ergens in een hoekje en begin aan mijn controle. Op en24

Gedurende de maand februari 2011 heeft het ABCA -BVEC het genoegen onze collega’s, leden van het OSQCA (www.securitealimentaire.public.lu) van Luxemburg te verwelkomen voor een tweedaags bezoek aan een voedingsbedrijf in de provincie Luik. Op het menu; ontdekking van artisanale en geïndustrialiseerde methodes. Een begeleid bezoek van de “Cité Ardente” zal uiteraard deel uitmaken van het programma. Ondertussen profiteren we ervan om onze genodigden te laten proeven van de uitstekende Luikse keuken.
Durant le courant du mois de février 2011, l’ABCABVEC aura le plaisir et l’honneur d’accueillir nos amis et voisins luxembourgeois, membres de l’OSQCA (www.securitealimentaire.public.lu), pour deux journées de visites en entreprises agroalimentaires en province de Liège. Au menu, découvertes de méthodes de fabrications artisanales et industrialisées. Une visite à pied de la « Cité Ardente » fera également partie du programme. Nous profiterons par ailleurs de ces deux journées pour initier nos invités à l’excellente cuisine traditionnelle liégeoise.
