Lonely cottage on the moors Een eenzame single-lane road in Sutherland, hoog in Schotland. Een uur lang zijn daar slechts de moors, het enige teken van leven een zeldzame tegenligger. Het
passeren vraagt om een stuk achteruit rijden, een lachende groet is de beloning. En dan opeens - deze cottage, een plaatje. Mijn foto-oog noteert direct een boeiende,

slingerende line-in. Dit wordt een mooie, als het licht tenminste mee wil werken.
Uitstappen dus om de mogelijke composities te onderzoeken. Vanaf ooghoogte

Gelukkig beschikt onze camper over een imperiaal, compleet met laddertje. Na wat voor- en achteruit steken is de juiste positie bepaald. Ook het weer werkt mee en zet de cottage in het licht.
Rest de vraag naar de (tijdelijk) bewoners. Wat een bestaan in verlatenheid... Maar
misschien is dat een bewuste keuze. Verder van de wereld wonen lijkt bijna niet mogelijk!

Scotland’s history Caledonians, Picts and Romans Trimontium - Newstead Roman fort Trimontium (the place of three mountains), a massive Roman fort at Newstead near Melrose, was the Roman military headquarters for the south of Scotland.
It was a key position overlooking the river Tweed, and the site resembled a wheel with roads radiating out in all directions. The fort itself was built and rebuilt many times, and the garrison numbered between 2000 and 5000 at any one time.
A frontier town spread around the fort to house artisans, suppliers and traders. The principal buildings were laid out in a strict pattern within the fort: the headquarters
was the ‘Principia’; nearby was the Commandant’s house and the officers’ homes all with the luxury of under-floor heating. There were also barracks, a granary with enough grain for a year, stables and a drill hall. The workshop and baths were built outside the ramparts in case of fire.
The Romans abandoned Trimontium as a permanent base around AD 185.
Hadrian’s Wall The emperor Hadrian visited Britannia in AD 122 and ordered his generals to build
a wall from the Tyne to the Solway, to prevent raiders from the north destroying the strategic Roman base at Corbridge, in Northumberland.
Hadrian’s Wall was 80 Roman miles long - about 73 modern miles or 117 km. It was
built in 5 mile stretches, with seventeen forts. Smaller forts called ‘milecastles’ were

Hadrian’s Wall west of Housesteads built every mile and between these were signal turrets. Building the wall was a huge undertaking; it took 15 years to build, and sons followed
fathers into guarding the wall. Eighteen thousand soldiers worked on it, and 4 million tonnes of stone were used. It served as a frontier for several Roman incursions into Caledonia.
Much of Hadrian’s Wall was about 10 Roman feet wide - 3m or 9.7 modern feet. It
stood about 5 to 6 metres tall (16 to 20 feet). It was about a third wider at the base than it was at the ramparts.
By AD 367 the wall was attacked by an alliance of tribes as part of the ‘Barbarian
Conspiracy’. The Roman peace - ‘Pax Romana’ - was restored for a short time, but

Vindolanda letters
The Vindolanda Letters were written in ink on postcard-size sheets of wood; there was no local source of papyrus. The longer documents were tied together by punch-

The fort of Vindolanda was one of the earliest Roman garrisons, and even older than
Hadrian’s Wall. Most of the letters, or writing tablets, date from this time (AD 97-103). The letters enable us to picture community life. We can inspect official correspond-

Incoming mail (tablet 346) is also revealing: ‘I have sent you ... pairs of socks from
Sattua, two pairs of sandals and two pairs of underpants.’ It was obviously a bit cold for soldiers on the north-west frontier of the Roman Empire.
In one letter (tablet 291) Claudia Severa invites Sulpicia Lepidina to her birthday
party:
Claudia Severa to her Lepidina greetings. On 11 September, sister, for the day of the
celebration of my birthday, I give you a warm invitation to make sure that you come to
us, to make the day more enjoyable for me by your arrival... I shall expect you, sister. Farewell, sister, my dearest soul, as I hope to prosper, and hail.
King Bridei of the Picts The Picts left no written record of how they lived, apart from a Latin manuscript with
a list of their kings. One of the earliest known was Bridei or Brude, son of Maelcon or Melcon, who became king around AD 555 and died around AD 586. Bridei’s kingdom
of Pictland stretched north from the land between the Forth and the Clyde. In Pictish royal families, kings were not succeeded by their sons - the lineage came through the mother’s royal birth.
During King Bridei’s reign, Columba, the Abbot of Iona, tried to convert the Picts
to Christianity. The Life of Columba, written by Adamnán, tells that King Bridei was persuaded to listen to the words of the gospel when the shut and bolted gates of his stronghold were opened miraculously by Columba.

no curves, so were well suited for carving on stone. The language the Picts spoke has been lost.
More than 250 symbol stones have survived. They are monuments to the skills of

Massive Pictish silver chains, weighing over 1.5 kg and fastened with decorated sil-
ver rings, may have been made for nobles or warriors to wear on special occasions. A silverwork hoard discovered at Norrie’s Law, near Largo in Fife, included brooches,
handpins and earrings or pendants, with the symbols filled in with red enamel to
make the design particularly striking. The Gaulcross silver hoard, found at Ley, Banff-

Scotland’s history shire, included highly detailed hand-pins and a spiral arm-band. A spectacular hoard of Pictish silver containing eight decorated bowls, silver
spoons and 12 penannular brooches of silver gilt was discovered on St Ninian’s Isle in Shetland. The hoard may have been hidden to keep it safe from Viking raiders. It was found in a wooden box that had been buried in a ruined chapel on St Ninian’s Isle.

Portmahomack Pictish Monastery Portmahomack, on the northern coast of the Tarbat Peninsula in Easter Ross, is one of the earliest Christian sites uncovered in Britain. It is the first Pictish monastery to be excavated.
The settlement has been dated from the 6th to the 9th centuries AD. Archaeological
excavations discovered that the Portmahomack Pictish monastery was destroyed between AD 780 and 830 - probably during a Viking attack.
Archaeologists found more than 200 fragments of Pictish stone sculptures, including the ‘Calf Stone’ which shows a bull and cow licking their calf.
Finds from the Portmahomack excavations can be seen at the National Museum
of Scotland in Edinburgh and the Tarbat Discovery Centre in St Colman’s church at Portmahomack.

Jouke MacAuckema is al vele jaren actief in de Schotse, Ierse en Keltische folkmuziek.
Jouke is zanger, entertainer en multiinstrumentalist. Naast gitaar speelt hij ook mandoline, luit, bodhran, mandola,

The Christian saints of the early church included Ninian and Colum Cille (Columba). They were missionaries who created Christian centres and worked to spread the word among the kings and the people. Ninian built a white, plastered stone church known as ‘Candida Casa’ - the ‘White House’ - or ‘hwit aerne’ in Northumbrian - now Whithorn in Galloway. It became an important centre for training monks and missionaries.

Scotland’s history Ninian travelled across Scotland trying to convert the pagan Picts to Christianity. By AD 432, after Ninian’s death, Christianity had spread northwards throughout Strathclyde. St Ninian’s Day is 16 September.

As a monk and missionary Kentigern - or Mungo, meaning ‘dear one’ - travelled
preaching the gospel. He founded a religious centre at Glasgow. Today Mungo is the patron saint of Glasgow, and he is famous for the miracles symbolised on the city’s coat of arms.

The tree was a hazel branch that Mungo mysteriously ignited when the fire at Serf’s
monastery had gone out. The bird was Serf’s pet robin, which Mungo brought back to life. Mungo helped the Queen of Strathclyde find her lost ring inside a salmon. The
holy bell was brought back from a visit to Rome. Mungo also gave Glasgow its motto: ‘Let Glasgow flourish by the preaching of the word.’

In AD 563, an Irish monk named Columba and twelve followers set up a church and monastery on the Isle of Iona in the Inner Hebrides.

Fantastisch landschap als u richting Oban rijdt. 13 Kilometer voortijdig linksaf slaan naar Seil Island, over de “bridge across the Atlantic”, erg pittoresk met een pub naast de brug. Terug naar de hoofdweg op naar Oban, zeevis hoofdstad van Schotland. Overnachting hier.

Iona may have been a sacred isle in pre-Christian times. It was on the sea route between Ireland and the West of Scotland.
Iona became a training centre for monks, who lived in small beehive-shaped stone huts, where they had solitude for prayer and could follow their vows of obedience and
poverty. The island became a major pilgrimage centre, a ‘cradle of Christianity’, and a sacred place where Gaelic, Irish and Norwegian kings were buried. It became known as ‘I Chaluim Chille’ - the Isle of Colm Cille - Columba’s Island.

In AD 563, Columba and twelve followers set up a church and monastery on Iona.
This was not a small, out-of-the-way island retreat - sea routes between Scotland
and Ireland were well established at that time. Two years later Columba travelled to Inverness, capital of the Pictish King Brude’s realm, where he tried to convert the pagan king and his subjects to Christianity.
Columba died at Iona, where his grave is marked by the stone he is said to have used as a pillow. Iona grew as a centre for learning and pilgrimage, helping to re-

Dag 2 een ochtend uitstapje. Van het VVV-kantoor wordt u opgehaald door de toeringcar die u naar de River Ness Jacobite Loch Ness Cruises brengt (bij de reis inbegrepen). U vaart door het loch naar Urquhart castle om de ruïnes van dit kasteel, ooit een van de grootste van de highlands, te bezoeken. Ruimschoots de tijd voor een bezoek, te winkelen en wat te eten. De bus wacht u op om u terug te brengen naar Inverness. Eenmaal aangekomen, neem een taxi naar Culloden Battlefield waar Bonnie Prince Charlie in 1746 werd verslagen (zijn enige nederlaag) door de Engelsen. Hier een bezoek aan het fantastische museum, gevolgd door een wandeling met een gids over The Battlefield Moor. Terug wanneer u dat wilt naar Inverness per taxi. De rest van de dag vrij te besteden om de vele winkels te ontdekken, pubs, wandelingen langs de rivier, touristische attracties. Overnachting in Inverness. Dag 3 opnieuw naar de trein, in zuidelijke richting naar de in de Perthshire highland gelegen stad Pitlochry. Hier zijn twee whisky distilleerderijen (Edradour & Bells), theater, visladder, tuinen, winkels en restaurants. Een Victoriaanse vakantiestad! Als u zin hebt een balletje golf slaan. Ook het beroemde Heathergems Centre bevindt zich hier: sieranden en snuisterijen gemaakt van heide. Een alleraardigst pension voor uw overnachting. Dag 4 Opties voor vandaag zijn: per locale bus naar Blair Castle of per touringcar naar Dewar world of whisky in Aberfeldy, the Crannog (oude boven het water gebouwde huizen), Killin en de Falls of Dochart, pittoreske stroomversnellingen met plaatselijke dorpspub, erg pittoresk. Overnachting in Pitlochry. Dag 5 een laatste treinreis, deze keer naar Edinburgh. De resterende tijd van de dag besteden aan het ontdekken van onze hoofdstad, zoveel te zien en te doen. Book of Kells The Book of Kells (sometimes called the Book of Columba) may have been created to mark the 200th anniversary of the saint’s death. It is an illuminated manuscript of the four gospels of the New Testament.
It is a masterpiece of Celtic art, with its complex decoration of human figures, animals and mythical beasts, intricate knotwork and interlaced patterns. Its ochres and pig-
ments came from the Mediterranean, and lapis lazuli from Afghanistan; the colours were bound by egg whites and decorated the folios of calf vellum.
The work may have been completely or partially created by scribes at Iona. Iona had
amassed one of the greatest libraries in Western Europe but was largely abandoned by c AD 800 after a series of Viking raids. The Iona monks sailed west, taking the book to Kells, in County Meath in Ireland, for safekeeping. It became a treasure of the new Columban monastery founded in Kells in AD 807.

René van Iterson Dutch piper honored René van Iverson, a Dutchman of Scottish descent, was presented with a ‘Certificate of Appreciation’ from the Atholl Highlanders as a mark of respect and appreciation of
his contributions to help foster harmonious Dutch-Scottish relations. The Dutchman is a regular contributor of articles in Dutch journals and publications about Scotland and had already been decorated in the Netherlands for his work.
René’s forebears left Scotland around 1600 to take up arms with the Dutch Scots Brigade against Spain.

René van Iterson A keen piper, he is the historian of the Dutch Scots Heritage and also worked tireles-
sly with his wife, Mattanja, to promote Scottish culture in the Netherlands. He is a knowledgeable genealogist to a growing number of Dutch citizens who are interested in discovering their Scottish roots. He is the Piper to the Dutch Caledonian Society.

Recepten Vegetarian haggis with whisky glazed turnip pearls straw potatoes with chive and malt cream sauce Ingredients Serves: 6
Individual vegetarian haggis x 6 1 whole swede
25ml blended whisky
25g soft brown sugar 25g butter
2 large potatoes (peeled and cut into matchsticks steep in cold water) 200ml double cream 25ml malt whisky
Peel and cut the potatoes into matchsticks and rinse in cold water. Drain and pat dry,
1 small handful of chives chopped finely
then gently fry at 170c until golden (be careful as they cook quickly). Bring the double cream and malt whisky to the boil and reduce slightly. The mixture should be sticky

enough to coat the back of a spoon.
Recommend using an electric fryer Cut swede into quarters and bring to the boil until 2/3 cooked. Using a melon baller, press into the turnip and scoop out into ball/pearl shapes.
Add the whisky, butter and sugar into a shallow pan and reduce until syrupy then add the turnip pearls and cook for a few minutes until pearls are nicely glazed and golden. Poach individual haggis for 15 minutes in light simmering water.
To serve, place a spoonful of the Straw potatoes onto plate and place the haggis in the centre.
Place the turnip pearls around the haggis and drizzle the Chive and Malt Cream
Sauce over the dish.

McLean Scotland A wee tasting with Big Ross in Perth 3rd December 2015 On a wet night we tracked doon to Exel shop once again for a tasting ... Big Ross I know very well, lives in Perth but working at the Aberfeldy Distillery, some may know as Dewar’s. Guess who was first there? Aye well, needed to get out of the rain (my
excuse), shook hands and chatted with big man, havnee seen him in ages, so caught up a wee bit, “who are you tonight?” he asked (it’s a facebook thing, didnee know to
call me Paul or Sean), it’s nice to be nice eh? We got underway ... first up was the Aultmore, this has been on the shelves around a year I think, it is light, fruity at 46%,
non chilled no colour in ex Bourbon casks/barrels. No smokiness here, more floral
than mineral, it’s a nice starter from this “Buckie Road” distillery near Keith, the aptly named Foggie Moss goes into quite a few blends, however this 12 year old was quite nice, but would need to move on to another after a few, as we did.
Deveron, in its new packaging, used to be Glen Deveron, now a really nice newly designed tube and frosted bottle, this 12 year old Highland hit just the right spot with
me. We tried one bottle from the 2.5 million litre output tonight, a shame as I could have sat there all night with a few bottles. Previously a 10 and 15 year old, this is now 12yo with a spice/malt taste, out of a Bourbon/Sherry finish from the 5 stills, it is quite tight and can also be found in the Willie Lawson blend, it has a large market in France. I would like to try the 18yo (hint there big man). Then we got around to the
Aberfeldy 12 year old, what is it tonight with the twelves? This has had several make over jobs, from the Perthshire distillery built for the blending market. It has a sweetness to it, like myself, and has matured from its 70 hour fermentation and arriving
through wood and stainless steel to drop into a glass, realistically called the golden

High Street, now a Newlook shop - how times change. This delightful dram is the
heart of all the Dewar blends and aye, it does contain a wee bit o caramel. Any of these first three would be good for a whisky beginner.

McLean Scotland Ah, my (almost) favourite of the night, the delicious Royal Brackla 12 year old
(again). Travelling doon from near Cawdor castle/Nairn (I am there this Christmas by
the way) this is the oldest distillery in the group of 5. The kings own dram, this was the first to get the handle Royal (three only) - er, was it king Willie 4th? Tis nae wonder all those German royals come to Scotland eh! This has more sherry than the others
(put together is my thought), possibly Olorosso or PI, at only 40% this is a dram for me bhoys! I get toffee, fudge and Christmas cake, love it. There are also a 16 and 21 year old brothers to this dram, coming from the 3.5/4 million litres production, making
this the largest output in the group? Cawdor Burn has been the constant water sup-
ply for Royal Brackla, with the Cursack Springs being used for mashing. There is a
dribble of colouring, but as I like the taste so much, let’s forget that bit. The “Brackla” portion is, like the distillery itself, something of a mystery - I am sorry I don’t know
what Brackla means, hmmm annoyed at meself. Finally we arrived at the Craigellachie 13 year old, what! 13 years old? Moving on ... the biggest and boldest of the five
said Ross, a nice Speysider fruity aye, but I was bowled over by the RB. It is only an Angus company who supply barley to this distillery next to the petrol station (garage
in Scots), this distillery has worm tubs, the dram has a sneaky sliver of sulphur - try
saying that at the end of a tasting - non chilled at 46% it does grow on you after a few. The surprise dram, Ross brought in a bottle that can only be bought at the distillery,
one of 600 I think, 16 years in a first fill sherry cask, this limited edition Ramble is 56% and will set you back £160 - is it worth it? Here’s my money Ross, a true sherry
bomb. So excited was I that Keron (Exel shop lassie) opened up a bottle of Aberfeldy 21 year old, a much calmer version of the 12 yo, smoother, could taste the wood, a lovely end to the night, many thanks Keron and Ross for allowing me in! Favourite?
The one I asked to buy - there was only around 2 inches left, same as Perth actually, that’s another story, but Ross kep a tight hold of it, am no goin to argue wi him!

After the distillery visit, we shall all enjoy a wee dram at Rannoch barracks; built in 1746 in response to the Jacobite uprisings, and to overawe the Robertson clan,
though, by a strange quirk of fate, they would later become the residence of the chief. Following the defeat of the Jacobites at Culloden (1746), “Butcher” Cumberland ordered his troops to show no quarter to any remaining Jacobite rebels. The Hanoverian Army (known as “Redcoats”) then embarked upon the so-called “pacification” of
Jacobite areas of the Highlands. Numerous barracks were constructed throughout the Highlands to house the Government troops, more quarters than castle.

This evening’s theme; A return to the dark ages!
Beinn Dubh was the name given to Ben Macdui - the highest peak in the Cairn-
gorm mountain range - by Professor Norman Collie after his solo climb to the summit

in 1891. It translates from Gaelic as the black mountain - a reference to the mystical
and spooky atmosphere Prof Collie encountered on Ben Macdui. Speyside Distillery
wanted to recreate the essence of the black mountain in a bottle, and Beinn Dubh
finished in toasted port casks from the Douro Valley in Portugal. Speyside Distillers Ltd man-
was born. It gets its unusual colouring because it has been
aging director Patricia Dillon says, “Like the mountain, the whisky is dark and myste-
rious. It is very much the whisky of the Cairngorms - the water used in its production
is from the Black Mountain itself, and the malted barley is sourced locally. Beinn Dubh’s taste is deep and dark: rich fruits, currants and chocolate dominate at first,

but these gradually give way to both bitterness and sweetness. Beinn Dubh is 43% ABV and the 70cl bottle has an RRP of £50.

tion of four expressions. Their Scottish barley is grown locally and malted with a little
peat smoke to exact specifications, the Chapeltown Spring in the Romach Hills, is
just a couple of miles behind the Distillery. Nothing is hurried at Benromach - taking
time over the fermenting, allowing the wash to linger for between 3 and 5 days in the wooden washbacks to help develop the right quality of spirit. And when the heart of the run has been cut, the spirit rests in high quality first fill casks for as many years

as it needs, to create that classic Speyside character beautifully balanced with a light touch of smoke. Only using the highest quality first fill casks. They come from
a variety of sources, casks from the bodegas of one of the world’s leading sherry houses in Spain: Williams and Humbert, new oak casks made to exact specifica-
tions - thickness of stave and level of charring by Antonio Paez Lobato. Allowed to
mature in sherry for 3 years before they’re emptied and shipped, also ex-bourbon
barrels, which are shipped from America and coopered in Speyside before being
sent to Benromach. After hand-filling a cask with fresh Benromach spirit, it goes to a traditional warehouse. ‘Dunnage’ warehouses: long, low and whitewashed with an earthen floor. They keep the casks consistently cool all year round: the best condi-
tions for maturing Scotch malt whisky. Casks are not stowed on metal racks 10 or 12 casks high, instead: no more than 3 high on wooden stows.

ROYAL BRACKLA: The King’s Own Whisky Met de eerder uitgegeven limited edition van een 35-jarige single malt à 15.000
dollar per fles, mag men Royal Brackla terecht een royale whisky noemen. Het huis werd in 1812 als een van de oudste distilleerderijen ter wereld opgericht door kapitein William Fraser, die zich na zijn legerdienst toelegde op de Schotse stookkunst.
De drank werd in 1883 als allereerste distilleerderij erkend als hofleverancier van
koning William IV en kreeg daarom het label “The King’s Own Whisky”; een verdienste die tot op de dag van vandaag met gepaste trots op het etiket wordt vermeld.
Het rijpen van whisky gebeurt op eikenvaten van verschillende afkomst. Amerikaanse witeiken, de zogenaamde bourbonvaten, Europese eikenvaten, Oloroso sherry-en wijnvaten, zo komen allemaal voorbij. Natuurlijk komt ook de liefhebber van peaty en smoke aan zijn trekken. Een diapresentatie over de smaken, de soorten en het distilleren maakt het geheel compleet. Dit mag je dus echt niet missen! Fraser’s traditionele productiemethode blijft na twee eeuwen distilleren nog steeds
overeind. De complexiteit en fruitigheid van deze single malt is het gevolg van een
extra lange fermentatiefase die tot wel tachtig uur kan duren. De combinatie van

Compass Box transparency Compass Box transparency breaks EU law EXCLUSIVE: Independent bottler Compass Box has removed detailed information
about two new whiskies from its website after being informed by the Scotch Whisky Association (SWA) that it had broken the law.
The company revealed the precise ‘recipes’ for two new bottlings, This Is Not A Lux-
ury Whisky and Flaming Heart, including the distilleries involved, the cask types, the ages and their proportions in the final blend.
But the SWA, acting on a complaint from an unnamed member, contacted Compass Box to point out that revealing so much information - specifically with regard to component age - was in breach of EU law.
‘We have always told people our recipes,’ Compass Box founder John Glaser told
Scotchwhisky.com. ‘We’ve always been open about the distilleries we use, the types of cask we use. In this case, we have been completely transparent on everything, including age.’
‘Following a complaint from a brand owner, we contacted Compass Box to point out
that the advertising did not comply with the law,’ said Magnus Cormack, SWA director of legal affairs.
Cormack explained that, under Regulation 12.3 of the Spirit Drinks Regulation No
110/2008, any mention of a maturation period or age could only refer to the ‘youngest alcoholic component’ in a spirit.
This rule applies to the ‘description, presentation or labelling’ of a spirit drink - including advertising, promotion and images.

Compass Box transparency ‘We believe Scotch producers should have the freedom, but not the obligation, to disclose all of the components of a blend,’ said Glaser. ‘Consumers have the right to know.
‘In the past, when consumers asked the question [about what was in a blend], the
industry response was: “We can’t tell you, it’s a secret,” which was always marketing bullshit.
‘If they are now going to say: “We can’t tell you because it’s against the law,” how
ridiculous is that? It will make consumers sceptical. It will hurt over time, so we need to look at it as an industry.’
Cormack said the law applied to all aged spirits sold in the EU, adding that the UK has no power to derogate from the rule - meaning that any change in the law would require the agreement of all 28 EU states, and the support of other spirits sectors.
Meanwhile, Compass Box is deciding on its next move in taking the matter further. ‘Watch this space,’ said Glaser.

McLean Scotland An educational whisky trip to Speyside It was a Wednesday evening, Shona was picked up from Eden.Mill distillery in St Andrews by Liz (mum). Timezone 4pm in the late afternoon, the skies are getting a
wee bit dark, driving over to Perth to collect Paul (and more importantly - some may say - the whisky). From Perth thery set off north to Aviemore in the highlands, where
they turned for Spesyide, passing Glenfaclas in the dark, en route to Elgin. As a staff educational visit it was decided to stay 4 star, well, why no? After the girls drammed
a wee bit in the car, the hotel appeared out of the gloom in Elgin, a quick check in then, what all whisky tour operators do, hit the bar. A catch up for Paul, more for the girls, a 3 course dinner followed. Relaxing later in the lounge (you guessed it - with
a bottle), chatting over the next day itinerary, could things be better? Decant to the rooms, select the largest one, start the whisky tasting - all for educational purposes you understand. Drams aplenty followed, Paul stopped at 9pm, the next day driver!
Thursday morning: Shona and Paul appeared for breakfast, Liz? Dinnae ask. Around 9am all three departed for Cardhu distillery, where we had called into previously (Liz
and Paul the week before) to set this up. In 1811 John and Helen Cumming sited their first still at Cardow Farm on the Mannoch Hill, above the River Spey. It is alleged that Helen Cumming distilled the first gallon of Cardhu, the only malt whisky to be pioneered by a woman. For many years Helen Cumming produced only the smallest
quantity of malt whisky in Cardhu’s little still as quality was her chief concern. She continued to contribute to Cardhu’s success well into her 90’s. Cardhu is not only a world renowned brand but has a close connection to Johnnie Walker - the biggest
selling blended whisky in the world. By the way, all three are Friend of the Classic Malts.
From here a wee detour (just to look) to Dalmunach distillery, a superb new distillery in the Chivas family, Liz and Paul had a private tour here a while back - it has been

ucts include The Famous Grouse and Cutty Sark blended whiskies and Highland

the blending, the Whisky is aged for 1 year in Scotland,

in spring 2017, from what there is to see - including the wooden model - it will be
another superb place to visit. The design is essentially a series of a grass-covered
undulating roof forms that are sympathetic to the area. “LUNCH followed at Glenfiddich – just to keep the theme going strong!” Paul McLean.
With full bellies they drove the short distance to the Cooperage to see coopers at
work, a favourite stop on their tours, like all visits before, they know them well with many friends and contacts. The trip finale arrived at Strathisla distillery. Of the many whisky distilleries you will find in Speyside, none is older or lovelier than Strathisla
in Keith. The smooth, flavourful single malt whisky for which Strathisla is famous
has been produced here since 1786. James and John Chivas never actually owned
the distillery themselves. It was only later, in 1950, after many twists and turns, that
the company was finally able to purchase the distillery - safeguarding the precious
stocks of Strathisla single malt whisky for Chivas Regal. After a tour and tastes, the road to Broughty Ferry beckoned ... the girls happily ensconced in an alcoholic haze while Paul sat there driving homewards totally sober! PS He caught up when they got home!

McLean Scotland Here is the same trip as told by Shona Gillespie (Liz’s daughter) ... This week I had the luxury of spending twenty four hours in the marvellous region of Speyside. As a budding whisky fanatic I was thrilled to be shown the root of several
of my favourite drams. Paul and Liz selecting the most adorable accommodation Mansion House, in Elgin. Historic and classic, this quaint hotel has open fire places,
heavy curtains and creeky doors, the ideal setting for an atmospheric whisky tasting. Paul, the whisky master, brought a selection of unusual whiskies from his private collection including some extremely niche spirits paired with chocolates! We sampled whiskies from across the globe, the most surprising spirit was actually all the way
from Paul John Distillery in Goa, India! This particular whisky was less than seven
years old, mellow and peated, at 59.7% it was exceptionally smooth, delicious. My top three drams were definitely Speyburn, Octomore and Balvenie 22!

a lovely tour, a great addition to this distillery was the takeaway drams and the nos-
ing of malts. Our travels took us next to Macallan, who are currently in the process
of building their new distillery. Coming from such a traditional distillery like Cardhu to the modern giant that is Macallan was quite a jump. I was pleasantly surprised by the Sienna, an incredibly rich whisky which appealed to my sweet tooth- definitely worth the stop for this dram alone!
The highlight of my day was without a doubt Speyside Cooperage. The video played at the beginning of the tour sets the scene beautifully and the photography is stun-
ning. I was completely fascinated with the coopers, their skill and speed. Towards the end of the visit I had a go at making my own cask, surprisingly I was actually good

the car and lunch at Glenfiddich (poshest toilets in the world) we found ourselves at Glenmoray for a tasting! Glenmoray is the biggest selling whisky in France, it is clear why - delicious whiskies with incredibly memorable flavours. Their port finish stood
out to me particularly as it reminded me of strawberry jam. Now all I need is the rice pudding to drizzle the whisky over.
As the sun went down, our final distillery was Strathisla, picturesque and beautiful, it felt more like visiting a five star hotel than a distillery. Strathisla’s own single malt was lovely, I will most definitely go back to sample their currently maturing Japanese oak
cask whisky. After an extremely busy trip Paul and Liz chattered the entire journey
home as the final drams began to send me off to sleep! Aside from the vast amount of new knowledge I have acquired from the dynamic duo I now have a new found respect for coopers and those who can drink over twenty drams in a day. An exceptional trip around Speyside with even more exceptional company.

Going back again in time, any blend, aye ... any blend would have had a dribble of Tomatin hidden in there, they used to sell 99.9% to blenders, not any more thank-
fully, now they offer fantastic single malts - I’ll get to them - with maybe W&M being a blend they still supply. Japanese owned since 1985, this distillery we reckon gives maybe 3% to the angels, being a highland laddie with varying temperatures. So, to
the sampling from the 12 remaining stills ... we started with Tomatin 12yo. At 43% it is chill filtered, bourbon cask and sherry finish 6 - 9 months, ah, they do sometimes add
a wee bit o colour/caramel to ensure the consumers see a consistent colour. I think maybe USA is a big market for this one, a cheeky wee highland malt, could easily pass for a Speyside, good value, nice but no a favourite I have to say.
Moving on to the Tomatin 14 yo, this was really good, a port finish, 46% non chilled,
13 years in bourbon and a year in Tawny Port pipe. A pinky colour (no added colour)
you can taste the port influence, but not overly so. Yep, liked this one. By the way, Tomatin have no plans to drop age statements. Third up, the 18 year old (my best
dram of the night), their signature dram, 16 years bourbon followed by 2 in Oloroso

reminded me of a Glenmorangie Signet, chocolate and sherry, 12 - 16 year olds, this
almost took first prize of the night, reckon just a midgie’s whisker away from the 18
yo. This gem ended our Tomatin tasting, but - more to follow, we had a Cu Bochan (koo bochan or bocan, both are okay pronunciations) single malt, lightly peated,
virgin oak, the name in Gaelic; the ghost dog, or wolf. It was good. Followed by Cu
Bocan Bourbon, refil cask, limited edition.
The night ended there (whisky), many thanks to Alistair and Keron, by the way Keron, will be back for a cask bottle. A great tasting, lovely drams and informative, learned a lot. By 8pm I was starving, so dondered over to Mr Chan’s place for food, got home

Tomatin glass neatly shelved! What’s the next one? I have to say, before the Tomatin

That is as nothing, however, compared to the time lapse regarding distilling. The last
(legal) Borders whisky was made in Kelso in 1837, but now three separate projects are vying to remedy that situation.
Mossburn Potentially the most ambitious in scope is planned for the site of the former Jedfor-
est Hotel, five miles south of Jedburgh, and adjacent to the cross-border A68 trunk
road. This project is in the hands of Mossburn Distillers Ltd, which is currently in the

process of developing Torabhaig distillery on the Isle of Skye.
Mossburn is headed by chief executive Neil Mathieson, who established spirits im-
porter Eaux de Vie in 1984. Eaux de Vie is now owned by Marussia Beverages BV, which in turn belongs to the Swedish investment company Haydn Holding AB.

well as working with Caribbean rum producers, so getting involved in Scotch whisky distilling seems a logical next step.
Mossburn’s Borders distilling venture is to be no bijou, ‘artisanal’ operation, however,
as £35-40m has been earmarked for its creation, announced with great fanfare early in 2014.

“We hope to have the smaller of the two, containing pot and hybrid stills, up and run-
ning in 2018. Around the same time, we plan to relocate Mossburn Distillers’ offices
to the site and the former Jedforest Hotel, which we have now completely renovated. Bonding and bottling to be done on site too.”
Mathieson adds: “We expect to start building the first distillery next year, with just a few planning issues still ongoing. It’s a major project in total, and we’re in no hurry. We really want to get it right. Stylistically, the two distilleries will probably not produce
the same malt whisky, but overall we are looking to find a Borders style of single malt, probably lighter in character.”
Mossburn has a fully-funded 25-year business plan for its Borders distilling project,
which means that there will be no sales of new-make spirit to generate income and no ‘founders’ casks’.
“The first limited release bottlings will probably be of five-year-old whisky before a
standard 10 or 12[-year-old] appears,” says Mathieson. “This will depend on the Glen Moray distillery

The Three Stills Company will transform this brownfield ste in Hawick into a modern Lowlands-style Scotch whisky distillery. The Three Stills Company (TTSC) was created in 2013 by four former directors of
William Grant & Sons: George Tait, John Fordyce, Tim Carton and Tony Roberts.
The former Turnbull & Scott heating systems premises on Hawick’s Commercial Road has been identified as the production site, with visitor facilities to be developed alongside it.
After hovering below the radar for some time, TTSC hit the local headlines in November 2015 when it announced that £10m of funding had been secured, with money
coming from the Edinburgh investment company Badenoch & Co, owned by Malcolm Offord, from members of the Ballande family who have extensive commercial
interests in France and Asia, and from Swiss investment group Drake Enterprises.
Closer to home, the UK’s largest private landowner, the Duke of Buccleuch, has also become an investor.
Planning permission for the development will be sought in early 2016 and, according
to project leader John Fordyce, it is hoped the distillery will be operational at some

Borders Scotch whisky Fordyce says of Hawick: “The town has a very proud legacy as the centre for textile
production in Scotland, and we felt very strongly that we wanted to uphold this rich industrial tradition and bring back distilling to the region after such a long absence.”
In terms of likely spirit style, Fordyce says: “It will naturally be more Lowland style than Speyside style, slightly lighter, and more aromatic than you would perhaps get in the north.”
R&B Distillers Last but not least of the would-be Borders distilling trinity is R&B Distillers, headed
by businessman Alasdair Day and financial backer Bill Dobbie, founder of web dating
site Cupid. Day’s whisky heritage dates back to his great-grandfather Richard Day,
who worked for a whisky blender in the Borders town of Coldstream back in 1895.
Day launched The Tweeddale Blend in 2009, and has subsequently added to his
portfolio of whiskies, including a Borders Single Grain, launched in November 2015, while R&B Distillers was established to create distilleries on the small Hebridean

The Raasay project is expected to be completed during 2017 and, much as Mossburn Distillers plans to turn its attention to its Jedburgh venture once Torabhaig on
Skye is up and running, so R&B will focus on the Borders once Raasay is on stream. Having initially identified a former water mill in the village of Walkerburn, near Peebles, as a potential home for their Borders distillery, R&B then opened an online poll

Robert Burns’ farm to become distillery 15 December 2015 by Becky Paskin An Ayrshire farm that was once home to Robert Burns is to become the site of a new distillery and visitors’ centre in homage to the Scottish poet. Ayrshire Council has granted planning permission for Lochlea Farm to be transformed into a Scotch whisky distillery, complete with maturation warehousing and ‘visitor interpretation centre’. Farm owner Neil McGeoch intends to build a whisky distillery within a small courtyard of out buildings on the site. The whisky itself will be a Lowland single malt produced from barley grown locally at Lochlea, and eventually given a Burns-related name. By-products from the production process will be recycled as cattle feed. Robert Burns’ family moved to Lochlea Farm in 1777 from the smaller Mount Oliphant farm near Ayr. Aged 18, Burns and his brother Gilbert worked the farm along with their father, William. The family remained at Lochlea until 1784, when William passed away and Robert and Gilbert subsequently moved on to rent nearby Mossgiel Farm at a rate of £90 per annum. The distillery and visitors’ centre is expected to employ eight full-time staff, and increase tourism to the area.

McLean Scotland Curling in Scotland for our Norwegian friends It is over, it was good, it was enjoyable, it will happen again. Our four intrepid curlers
from Norway came to Scotland again for the curling, the scenery, the fun - and the whisky! They had it all.
2 November, an early start for Paul (driving), up at a silly hour to reach Broughty Ferry for Liz and 7am, a cuppa then on the road to Aberdeen airport to meet the guys at 9.20. Once we had them we wandered to the van and loaded luggage, even
before the engine turned, Liz had given each of them an Innis & Gunn beer - Toasted Oak IPA 5.6% ABV. India Pale Ale first made its name in the 19th century. Its fervent hoppy character hails from the unique addition of large quantities of hops at three
separate points during brewing. The result is a beer that’s rounded yet refreshing,
with delicate floral notes and oodles of zesty freshness. It didnee last long! Almost an hour later we were at Huntly, where we turned off for Dufftown (and its 7 distilleries),
sadly we drove through this time on our way to Rothes, where we did stop at Glen Grant distillery. Gruppo Campari is the 6th largest worldwide in the premium spirits
industry, and marketed in more than 190 countries in the world. We toured their
Rothes distillery - and enjoyed it and the drams that followed. Lunch break - we drove to the leisure centre, then met up with the opposing team - Elgin Rotary Curling Club, a very local club selected a team to compete with us in the first “International” curl-
ing for 2015. Sadly we lost, actually it was 4 ends each, but Elgin had more points, no matter, always another match to play. At the hotel they relaxed a wee while, then headed out for a fish supper (fish ‘n’ chips), a very good first day.
3 November, a wee lie in, as curling started at 10am, ten minutes from the hotel. Fochabers curling club were the team this morning and aye, we won! A good two
hour session and the guys were overjoyed, handing out (as they do) drams and pin badges and saying thanks you and goodbyes. We scampered doon to Glenfiddich
for a great lunch. This was a good easy relaxing lunch with great food I might add,

enjoyed the time there, two wins, two defeats. We showed them Elgin cathedral, they also enjoyed Spey Stout beers. This was followed at 2pm by The secrets of
Solera. Including a visit to warehouse 8, the malt masters blending room: here they enjoyed tasting a number of cask-strength samples and a chance to step into Malt Master; Brian Kinsman’s role, preparing their very own version of Glenfiddich 15 year old by combining different cask samples together. A shopping diversion then back to
the hotel. Rest - drink - chill out - take a walk - for later we met up and enjoyed a few
Johnstons shop, dropping them in town (they wanted to shop in M&S!). They ended the night with an Indian meal.
