De meubels van Pilat&Pilat zijn stoer, Fries en duurzaam. Maar ook warm, rijk en vertrouwd. Niet voor niets krijgen alle modellen de naam van een familielid. ‘Alles draait om mensen bij Pilat&Pilat’.
Pilat&Pilat furniture is sturdy, Frisian and durable. But at the same time warm, rich and familiar. And with good reason, all models have been named after a member of the family. ‘At Pilat&Pilat, it is all about people’.
Het is maar goed dat de familie Pilat zo groot is. Tientallen en tientallen meubelontwerpen bevolken inmiddels de Famyljecollectie van Pilat&Pilat (Famylje is Fries voor ‘familie’). Stamoudste Pake Sytse, zijn naam is sinds 2012 verbonden aan de stamtafel met een klokkenstoel als onderstel, kwam uit een gezin van dertien kinderen. Ook het gezin waarin Gjalt Pilat, oprichter van het Friese meubelbedrijf, werd geboren, telt dertien kinderen. ‘Soms verdwijnt een meubelstuk na jaren uit de collectie. En dan mis ik zo’n familielid toch’, geeft Gjalt Pilat toe. Niet zelden keert een Lutske, Hindrik of Jelle dan later toch weer terug, in een nieuwe gedaante. Op de boerderij in Twijzel – die in de loop der jaren vaak werd verbouwd en uitgebreid – konden zowel het familiebedrijf als de Famylje-collectie tot bloei komen. Ruim veertig jaar geleden begon Gjalt Pilat hier met het verkopen en opknappen van antiek. Gaandeweg ging hij in de houtwerkplaats ook eigen meubels te ontwerpen. Zijn oog voor vormgeving samen met zijn koopmansgeest deden de rest. Sinds begin jaren negentig is de Famylje-collectie een feit, en de laatste jaren zijn er (inter) nationaal steeds meer winkels die Pilat&Pilat verkopen. In Twijzel werken zo’n twaalf mensen dagelijks aan het ontwerp en de verkoop van de meubels. De werkplaats is er alleen nog voor kleine klusjes en reparaties. Zo’n tien jaar geleden verplaatste Pilat de productie naar een eigen fabriek in Bosnië, waar het hout praktisch naast de fabriek voorhanden is. Net als goede ambachtsmensen trouwens. En zo als dat ook in een familie gebeurt, ontwikkelt het familiebedrijf zich organisch verder. De fabriek Nord Ent viert het tienjarig jubileum met een flinke uitbreiding. Hard nodig, want inmiddels werkt de fabriek ook in opdracht van anderen.
Just as well that Pilat is a big family. By now, many scores of furniture designs populate the Pilat& Pilat Famylje collection (Famylje is the Frisian word for ‘family’). Tribe elder Pake Sytse, whose name was given to a sturdy table with a belfryshaped support in 2012, was from a family of thirteen siblings. The founder of the Frisian furniture business, Gjalt Pilat, was also from a family of thirteen. ‘Sometimes, a piece of furniture is taken out of the collection after many years. When that happens, I really miss that member of the family, admits Gjalt Pilat. The names of Lutske, Hindrik or Jelle may pop up again with a new look after a few years. At the farmstead in the Dutch village of Twijzel – renovated and extended many times over the years – both the family business and the Famylje collection were to flourish. This is where Gjalt Pilat started selling and restoring antique furniture more than forty years ago. Little by little, he also started using the timber workshop for designing his own furniture range. He had an eye for design as well as a good business sense; and the rest is history. The Famylje collection was created in the 1990s. In recent years, more and more retailers in the Netherlands and abroad are stocking Pilat&Pilat furniture products. In Twijzel, about a dozen people are engaged in the design and sale of furniture on a daily basis. The workshop is currently used for small jobs and repairs only. Some ten years ago, Pilat moved the production to their own plant in Bosnia, where a large supply of wood is available basically on their doorstep. As well as many skilled craftsmen. And like a family, the family business sees a steady growth. The Nord Ent plant celebrated its 10th anniversary with a substantial addition. A real necessity, since the factory is now also in the process of manufacturing for others.

Vandaag de dag is Pilat&Pilat een sterk merk in duurzame, houten meubels. ‘En we zijn fabrikant en distributeur van de verschillende eigen collecties’, legt Kristien Pilat uit. De oudste dochter van Gjalt Pilat werkt sinds 2001 als vormgever in het bedrijf en nam bovendien haar eigen kindermeubellijn Warber mee. Peter Tromop is de derde ontwerper binnen Pilat&Pilat. Hoewel Pilat&Pilat inmiddels ook groot is in Bosnië en steeds meer winkels in binnen- en buitenland de collectie aanbieden, zijn de Friezen honkvast. Nog steeds is de boerderij in Twijzel de thuisbasis van het bedrijf. Hier rollen de ontwerpen van de tekentafel en ontstaan de ideeën voor nieuwe collecties. Bovendien proef je hier in de showroom heel goed waar Pilat&Pilat voor staat. Kristien: ‘De verkoop van onze meubels laten we heel graag over aan de goede dealers die wij hebben. In onze eigen showroom hebben we alle ruimte voor de collectie en onze manier van interieur inrichten.’ Een tocht naar Twijzel is bovendien een uitje op zich: met wandelpaden die bij de achterdeur beginnen, het interieurcafé en regelmatig exposities van werk van kunstenaars en andere ontwerpers/merken. Volgens Kristien schuilt de kracht van Pilat&Pilat in de tijdloosheid van het merk. ‘Onze meubels zijn even eigentijds als geworteld in de traditie van houtbewerken. Op een bijzondere manier zijn ook alle ontwerpen herkenbaar als Pilat: het handschrift is helder en eenvoudig, maar de afwerking en de materialen zijn rijk. De vertrouwdheid en huiselijkheid liggen diep opgesloten in de robuuste ontwerpen voor kasten, tafels, stoelen, banken en accessoires. Ook het familiegevoel voegt echt iets toe. Het gaat er hier gemoedelijk aan toe, het is allemaal heel eigen en vertrouwd.’
Today, Pilat&Pilat is a strong brand in durable, wooden furniture. ‘And we are manufacturer and distributor of the various Pilat collections, explains Kristien Pilat. Gjalt Pilat’s oldest daughter has been working in the company as a designer from 2001. She also brought her own line of children’s furniture Warber with her. Peter Tromop is the third designer within Pilat&Pilat. Although Pilat&Pilat have also been growing in Bosnia and many more national and international retailers are stocking the collection, the entrepreneurs remain true to their Frisian origins. The farmstead in Twijzel is still the company’s home base. This is a place for the drawing board and the cradle for new collections. Besides, their showroom gives a fair idea of what Pilat&Pilat is all about. Kristien: ‘We gladly put the sale of our furniture into the hands of the many good dealers of our extended family. In our own showroom we have plenty of space for the collection and our way of interior layout. ‘For many people, a trip to Twijzel can also be a nice day out. Take for instance the walkways starting at our back door, the interior café, as well as the regular exhibitions from artists and other designers/brands. According to Kristien, the strength of Pilat&Pilat is in the timelessness of the brand. ‘Our furniture is both contemporary and rooted in the tradition of woodworking. In a particular way, all the designs also carry the Pilat stamp: the signature is clear and austere, but the finish and the materials are abundant. Familiarity and hominess are deeply engrained in the robust designs for cabinets, tables, chairs, benches and accessories. The sense of being part of a family is also undeniable. There is a pleasant atmosphere; everything is very much at home and familiar.’

Van Doboj naar Tešanj slingert zich een weg over beboste heuvels. Hier en daar biedt de weg zicht op een boerenwoning. De boer en zijn vrouw houden kippen en koeien, maar leven vooral van hun boomgaard. De vruchtenbomen leveren walnoten en kersen die hun weg vinden naar de markt. Is de boom rijp voor de kap, dan zijn houtwerkplaatsen dichtbij om er meubels of onderdelen van te maken. Met de opbrengst van drie bomen kan het gezin, dat vaak uit drie generaties bestaat, aangenaam de winter door. Eens per maand reizen de Pilatten af naar Bosnië. Voor Gjalt Pilat voelen die 1700 kilometer, zeker als hij ze met de auto aflegt, ‘een beetje als vakantie’. ‘Je reist letterlijk naar een andere wereld. Daar tref ik een eenvoudig, ietwat boers volk, dat nog leeft van wat de aarde opbrengt. Het doet me aan vroeger denken. Na een drukke dag wandel ik graag weg van de fabriek, zo het bos in.’ Na jarenlang in hotels te hebben gelogeerd, besloot Gjalt een eigen gastenverblijf te bouwen op het terrein van zijn fabriek. Van hout uiteraard. Hij koos voor een blokhut zonder verdieping, open aan de zonnige tuinkant en meer gesloten aan de weg. De constructie verraadt de Friese achtergrond van de bedenker, die er voor koos het gebinte aan de buitenkant zichtbaar te laten. In dat geraamte hangt een doos van planken Robiniahout. Het houten huis biedt aan weerszijden plaats aan een slaapkamer met eigen badkamer. In het hart van het huis bevindt zich de keuken met eetruimte. Een grote glazen pui geeft toegang tot een veranda over de hele lengte van het huis. Hier zit je beschut tijdens de hete zomers die Tešanj kent, met ruim zicht op de beboste heuvels rondom.
Every trip to Bosnia offers another opportunity, time and time again. The second homeland inspires to develop new products and projects. At this location, Gjalt Pilat built his wooden guest rooms as the foundation for a new adventure. A winding road through forested hills connects Doboj with Tešanj. Farmhouses are dotted along the way. The farmer and his wife rear chickens and cattle, but their main source of income is from an orchard. The fruit trees produce walnuts and cherries they can sell on the market. Once the trees are ready for the chop, the sawmills that process the wood are never far away. The family, often consisting of three generations, can comfortably get through winter from the proceeds. The Pilat family members travel to Bosnia every month. Gjalt Pilat considers the 1,700 km trip ‘more or less as a holiday’, even more so when travelling by car. ‘It’s really a trip to a different world. People over there have a simple and rustic lifestyle, who live off the land. It reminds me of my childhood years. After a busy day, I like to go for a walk in the forest, which is at a very short distance from the plant.’ After staying at hotels for many years, Gjalt decided on building his own guest rooms on the site of his plant. Made of wood, of course. He chose for a single-storey log cabin with an open plan living area on the sunny garden side, and more closed on the side facing the road. The construction gives away the Frisian background of the designer, who chose to leave the trusses exposed on the outside. In this framework hangs a box of robinia wood planks. On either side of the house is a bedroom with an en-suite bathroom. The kitchen and dining room are located at the centre of the home. A large glass facade gives access to a veranda across the entire length of the house. ‘This place stands for the new links between Tešanj and Twijzel. People can get to know our activities in a very

Peculiar designs and products expressing the ties between Friesland and Bosnia. In this way, travelling and living open the doors to new possibilities.’

Is Bosnië niet een heel exotische keus voor een Friese meubelmaker? ‘Eigenlijk niet, ik noem het al mijn tweede land. Het doet me een beetje denken aan het Friese platteland van de jaren vijftig. Vader is er nog de baas in huis, mensen trouwen er jong en krijgen dan kinderen. En iedereen heeft een moestuin waar nog onbespoten groente wordt verbouwd.’ Maar hoe raakt een Fries verzeild in Bosnië? ‘In de jaren negentig hadden we een tijdje een eigen winkel in Amsterdam. Dat zorgde voor veel goede pr en steeds meer winkels gingen onze meubels verkopen. Onze werkplaats in Twijzel kon de vraag niet meer aan, dus we moesten nadenken over uitbreiding. Tot die tijd gebeurde alles in Friesland: we kochten het hout lokaal in en maakten de meubels in eigen werkplaats. Zarko Mandir, een van de meubelmakers, wees me op de mogelijkheden in zijn geboorteland Bosnië. Bijna 80 procent van het land is bebost, het hout gaat daar zo van het bos de fabriek in. We zijn samen gaan kijken en ik voelde: als ik iets nieuws moet opzetten, doe ik dat graag hier. Als ondernemer ben ik een snelle beslisser. Voelt het goed? Dan gaan we het doen.’ Was dat niet moeilijk, een bedrijf beginnen op de Balkan, waar de burgeroorlog nog maar net was beëindigd? ‘Het bleek inderdaad lastig om met bestaande werkplaatsen goede afspraken te maken. Vooral de hoge kwaliteit die wij eisen was een struikelblok. Een ondersteuningsregeling van het ministerie van Economische zaken – dat ondernemerschap tussen Bosnië en Nederland wilde stimuleren – gaf de doorslag. Bosnië is een land met ongekende mogelijkheden maar ook van

Could Bosnia be seen as a rather exotic location for a Frisian furniture maker? ‘Not really. I already consider it my adopted country. In some way, it reminds me of the Frisian countryside of the 1950s. Father sets the rules at home; people marry at a young age and have children. And everyone has a veggie patch for growing unsprayed fruit and vegetables.’ But how does someone from Friesland end up in Bosnia? ‘Back in the 1990s we were running a shop in Amsterdam for a while. We created excellent public relations, and our furniture became increasingly popular with many retailers. Our workshop in Twijzel could no longer meet the demand, so we had to consider extending our business. Until then, everything was done in Friesland: we purchased the wood locally and we made furniture in our own workshop. One of our furniture makers, Zarko Mandir, mentioned the possibilities in his country of birth, Bosnia. Almost 80 per cent of the country is covered by forests, and the trees are taken straight from the land and into the sawmills. We went and had a look together, and straight away I sensed: if I want to start anything from scratch, this would be the place where it is going to happen. As an entrepreneur I do not need much time to make a decision. If it feels okay, it will be okay.’ Was it not hard, starting a business in a region where people were still recovering from the civil war? ‘Absolutely! Making proper arrangements with existing workshops was no easy job. Particularly our demand for highquality products formed a stumbling block. A support scheme

‘We kunnen duurzaam werken in Bosnië, omdat het hout naast de deur groeit
veel teleurstellingen. We hebben echt pionierswerk verricht.’ Inmiddels werken er veertig mensen bij Nord Ent en spreekt de directeur zelfs Nederlands. Wat is er gebeurd? ‘De banden met Bosnië zijn prima, al kan ik met de meeste medewerkers niet spreken. Anders dan in Bosnië gebruikelijk is, bestaat binnen onze fabriek een vorm van sociale opvang. Het land is hard, de meeste mensen zijn niet volledig verzekerd voor arbeidsongeschiktheid of ziektekosten. Binnen ons bedrijf hebben we een gezamenlijke pot voor noodgevallen. Mensen waarderen dat enorm. Dat er voor ze gezorgd wordt en dat het leven na jaren van oorlog weer goed is. Over die trauma’s hoor je niet veel, maar de pijn zit er wel. Af en toe, tijdens een barbecue op een zomeravond, wil er nog wel eens een verhaal loskomen.’ Wat zijn de voordelen van een fabriek in Bosnië? ‘We kunnen duurzaam werken in Bosnië, omdat het hout naast de deur groeit. Het gaat letterlijk van de familieboomgaard naar de Famylje-collectie, een logisch proces. De Europese Houtverordening stelt eisen aan de herkomst van het gebruikt hout. Bij de productie van onze meubels wordt aan deze verordening voldaan. Het gebruikte hout gaat vergezelt met de juiste papieren. Verder is het hout met vergunning gekapt en voor herbeplanting is gezorgd. Bovendien zijn de vakmensen goed, terwijl de lonen relatief laag zijn. Zo kunnen wij op een verantwoorde manier een goede prijs vragen voor onze meubels die tóch nog in Europa gemaakt worden. Meer bedrijven waarderen dat. Zo gaan wij de fabriek binnenkort uitbreiden. In die hal, waar nog eens twintig mensen gaan werken, kunnen we andere technieken toepassen zoals lakken, fineren en stalen onderdelen verwerken. Straks komen ook de kasten van andere merken uit onze fabriek. En we produceren regelmatig in opdracht van andere bedrijven.’

of the Ministry of Economic Affairs, aimed to stimulate commercial activities between Bosnia and the Netherlands, was the deciding factor. Bosnia is a country of unprecedented possibilities as well as many setbacks. We have done some real pioneering work.’ At this point in time, Nord Ent has forty staff and its Managing Director is able to communicate in Dutch. What is the secret formula? ‘The ties with Bosnia are excellent, even though I am unable to talk with most of the staff. Unlike at most workplaces in Bosnia, our plant has some form of social welfare. Life can be tough in Bosnia. Most people have no 100% health or disability insurance. Within our company, we set up a fund to cover emergency cases. People appreciate that very much. I mean, that somebody cares and that life after many years of war is not too bad after all. They do not talk much about their traumas, but it still hurts. But every now and again, like during a barbecue on a summer’s night, someone will open up and tell their story.’ What are the benefits of having a plant in Bosnia? ‘In Bosnia, we are able to work in a sustainable manner, because the trees are growing in our backyard. Trees from the family orchard are processed in one run and become part of the Famylje collection. A logical process. The EU Timber Regulation makes high demands on the origins of the wood being used. During the production of our furniture we meet the demands of this regulation. The wood processed in our plant has the correct documentation. A permit is issued for the trees chopped for our wood, which are replaced with young trees. On top of that, the skilled workers are great and the wages are relatively low. In this way, we will be able to ask a fair price for our furniture that is still made in Europe in a wellconsidered manner. Several other businesses can appreciate that. Following this initiative, we will soon be extending our operations. In that hall we can employ another twenty people and apply other techniques, such as painting, veneering and processing steel parts. In due course, other brand cabinets will be manufactured in our plant. And we will take regular orders

Bosnië biedt dus veel perspectief voor de toekomst? ‘Ja, we kunnen er groeien en we voelen ons er thuis. Er is een klik met die mensen die net als wij ook altijd zichzelf blijven. Mensen voeden en inspireren mij, dus dat is wel belangrijk. Meubels maken is veel meer dan de productie op zich. Het gaat over inspiratie, over mooie momenten delen en over de wederzijdse afhankelijkheid tussen de mensen in Tešanj, Bosnië en de mensen in Twijzel, Friesland.’

So Bosnia holds many possibilities for the future? ‘Without a doubt. Our business can grow and we feel at home in Bosnia. We get along just fine with those people, who remain themselves, just like we do. People feed and inspire me, so that is an important issue. Making furniture is much more than having a manufacturing plant alone. It is about inspiration, about sharing precious moments, and about mutual dependence between people of Tešanj, Bosnia, and Twijzel, Friesland.’

DE Turfhoeke in Gorredijk De Turfhoeke in Gorredijk – Hessel Koopmans en Maaike Ploeg: ‘Alles is hier van Friese makelij’ – Het was in eerste instantie niet de bedoeling, maar achteraf is het logisch dat groepsaccomodatie de Turfhoeke is ingericht met Pilat-meubels. Het is immers een vijfsterren logies met Friese signatuur. Maaike is zelf bovendien dochter van een Pilat. ‘De Friese inslag versterkt het hele concept.’
– Hessel Koopman en Maaike Ploeg, ‘Everything here is made in Friesland’ – Not part of the initial plan, but in hindsight it was quite obvious to have “De Turfhoeke” group accommodation furnished with Pilat furniture. After all, it is a 5-star accommodation of a markedly Frisian nature. Besides, Maaike is the daughter of one of the Pilats. ‘The Frisian twist strengthens the entire concept.’ Technical investigator Hessel Koopmans and head of primary school / coach Maaike Ploeg have been dreaming for many years of changing their course. Once upon a time they thought of looking after guests at a very nice location. Seven years ago, they really came into action after they bought an old farmstead at a stone’s throw from the village of Gorredijk. “De Turfhoeke” (The Peat Region) – as the name suggests – is located on the former peat route amidst farmland and also close to the Beetsterzwaag forest area. Farming had been abandoned at this place for some 25 years, so at first they had to stay under very primitive circumstances in the living quarters which they personally altered. Meanwhile, the permits for renovation work were applied for, and planning authorities were studying the plans. At the rear of the farm, campers already started pitching their tents on the minicampsite. In the autumn of 2011, the contractor could also start working inside. The old cowshed was transformed into guest rooms, and four out of eight bedrooms were built upstairs. A modern glass atrium connects the cowshed with the old barn, where another four en-suite bedrooms were built. Hessel and Maaike deliberately rejected the Bed & Breakfast concept and chose in favour of group accommodation instead. On weekdays they cater for teams and companies, while families and groups of friends have their attention in the weekends. However, the concept gradually changed. Hessel: ‘We were looking around at several furniture retailers and thought: “Especially in times of doom and gloom, we must have the courage to stand out above the rest”. Very luxurious and comfortable group accommodation was nonexistent in those days.’ Maaike takes over: ‘We were going to provide the best possible quality. Our new mantra became: “Experience the best of Friesland”. And that was only a very small step to choosing the Pilat&Pilat furniture I have always been fond of.’

Technisch rechercheur Hessel Koopmans en basisschooldirecteur/coach Maaike Ploeg droomden er al jaren van het roer om te gooien. Ooit wilden ze samen gasten ontvangen op een bijzondere locatie. Zeven jaar geleden begonnen ze echt te bouwen aan die droom toen ze, onder de rook van Gorredijk, een oude boerderij kochten. De Turfhoeke – de naam verraadt het al – ligt aan het doorgaande water van de oude Turfroute, midden in de weilanden maar ook vlakbij de bossen van Beetsterzwaag. Al 25 jaar had niemand meer op deze plek geboerd, dus het was in het begin kamperen in het woonhuis dat ze eigenhandig verbouwden. Ondertussen moesten de vergunningen voor de verbouwing worden aangevraagd en bogen schoonheidscommissies zich over de plannen. Aan de achterzijde van de boerderij streken kampeerders intussen al neer op de mini-camping aan het water. In het najaar van 2011 kon de aannemer ook binnen aan de slag. In de oude koeienstal kwamen de verblijfsruimtes, met boven vier van de acht slaapkamers. Een modern glazen atrium verbindt de stal met de oude boerenschuur waar zich nog eens vier slaapkamers met eigen badkamer bevinden. Hessel en Maaike kozen bewust niet voor een Bed & Breakfast maar voor een groepsaccommodatie. Door de week ontvangen ze teams en bedrijven en in het weekend families en vriendengroepen. Gaandeweg veranderde het concept wel. Hessel: ‘We waren al aan het rondkijken bij de woonboulevard voor meubels toen we voelden: juist in een tijd van crisis moet je je durven onderscheiden. Heel luxe en comfortabele groepsverblijven, die waren er nog niet.’ Maaike vult aan: ‘We wilden topkwaliteit bieden. “Beleef het beste van Friesland”, dat werd ons nieuwe mantra. En toen was het ineens heel logisch om te kiezen voor de meubels van Pilat&Pilat, waar ik altijd al gek op ben geweest.’ ‘De mooie, natuurlijke uitstraling van de houten meubels

‘Beleef het beste van Friesland, dat werd ons nieuwe mantra. En toen was het ineens heel logisch om te kiezen voor de meubels van Pilat&Pilat’ vormden vanaf dat moment het uitgangspunt voor de inrichting’, vertelt Maaike. Ook het familiegevoel komt tot uiting in de Turfhoeke, want elk van de kamers kreeg de naam van een familielid, net als in de Famylje-collectie van Pilat&Pilat gebruikelijk is. Heel vaak ontwierp Gjalt Pilat bij de gekozen naam/meubel een speciaal bed of uniek meubel voor de Turfhoeke. Eigenwijs als de Pilatten zijn, voegde Maaike eigenhandig ook de namen van haar ouders toe: Jetze en Hebel. ‘Pilatten zijn creatieve, spontane mensen met ondernemerschap en lef. Het is heerlijk om die Pilat-sfeer hier ook te voelen. De hele familie – meer dan honderd man – is hier inmiddels al eens geweest voor een reünie, een goede traditie in onze familie.’ Toen eenmaal was gekozen voor de robuuste meubels van Friese bodem, bleek het hek van de dam. Hessel en Maaike gingen op zoek naar de beste materialen van eigen bodem. Ook de tegels in de boerderij komen van Friese grond, net als de kunst aan de muren, de professionele keuken en de bedden van Avek uit het Friese Surhuisterveen. De gasten reageren laaiend enthousiast op hun Friese vijfsterrenluxe, merken de nieuwbakken logieseigenaren. ‘We horen dat het teams in twee dagen tijd lukt – in de rust van het Friese land en gezeten aan stamtafel Pake Sytse – intensief te werken en grote stappen te zetten. Families en vrienden kunnen hier heerlijk onthaasten, samen koken of genieten van een maaltijd van de huiskok, een stukje varen of de zon in het water zien zakken bij de gloeiende warmte van de buitenhaard... Niet voor niets staat het gastenboek vol loftuitingen’, vertelt Maaike Ploeg trots. Er is geen woord van gelogen. ‘Allemachtig, wat prachtig’: het zijn de eerste woorden in een vol gejubeld gastenboek. ‘We wisten niet dat Friesland zo veel te bieden had.’

‘The beautiful and natural appearance of their wooden furniture would become our basic principle for the design from then on, says Maaike. The sense of being part of a family was also expressed in De Turfhoeke, as all rooms were given the name of a family member. This idea was taken from the Pilat&Pilat Famylje collection. On many occasions, Gjalt Pilat designed a special bed or unique piece of furniture for De Turfhoeke to go with the name. Cocky as the Pilat family members can be, Maaike also added her parents’ names: Jetze and Hebel. ‘The Pilats are creative, spontaneous people with entrepreneurship and guts. It is a wonderful thing to also have that Pilat feel here with us. The entire family – more than one hundred family members – has been here for a reunion; a great tradition in our family.’ Once the choice was made to go for the robust Frisian furniture, there was no stopping them. Hessel and Maaike went out searching for the best home-grown materials. The rookie operators noticed that guests were wildly enthusiastic about their Frisian 5-star luxury. ‘We hear that teams – in the tranquillity of the Frisian countryside and seated at the Pake Sytse sturdy table – manage in two days to work intensely and make great progress. Families and friends can escape from their busy lives, cook together or enjoy a meal prepared by the resident cook, do some sailing or watch the sunset at the radiant heat of the outdoor heater. And with good reason the visitors’ book contains many words of praise’, says Maaike Ploeg proudly. Truer words were never spoken. ‘Good heavens, what a beauty’, is the first of an avalanche of jubilant comments in the visitors’ book. ‘We had no idea of all the things that Friesland can offer.’

Omer’s beacon
At the end of the day, it is all about people at Pilat&Pilat. About their stories and their way of living. Because they are the ones who use all those chairs, tables and cabinets, made with so much love and devotion. One of the Bosnian staff touched the right chord with Gjalt Pilat.
Uiteindelijk draait het allemaal om mensen bij Pilat&Pilat. Om hun verhalen en hun manier van leven. Want voor hen zijn de stoelen, tafels en kasten bedoeld die met zo veel liefde en aandacht worden gemaakt. Een van zijn Bosnische medewerkers raakte precies die gevoelige snaar bij Gjalt Pilat. Al jaren kwam Gjalt Pilat in Bosnië en al die tijd probeerde hij zo goed en zo kwaad als het ging met zijn medewerkers in de fabriek te communiceren. Niet makkelijk, want hij spreekt geen Bosnisch en zij alleen maar. Dat hij bovendien hun namen moeilijk uit elkaar kon houden, stoorde hem. De Leeuwarder beeldend kunstenaar Trude van Assem, die vaak met hem meereisde naar Bosnië, bedacht ter plekke een plan. Ze zou van elke ambachtsman en elke houtbewerker een foto maken die daarbij een naambordje voor zijn borst zou houden. Met dat smoelenboek moest het lukken in elk geval de juiste namen bij de gezichten te houden. Trude ging aan het werk en leverde uiteindelijk een boekwerk af bij Gjalt. ‘Prachtig natuurlijk, helemaal toen ik was aanbeland bij de pagina van Omer. Deze ontzettend sympathieke werknemer, met vrouw en gezin en altijd aandacht voor zijn collega’s, had me een teken gegeven. De O van zijn naam was door het plaatsen van een ‘vogelpootje’ veranderd in het vredesteken.’ Een simpel gebaar, maar het raakte Gjalt Pilat diep. ‘Ik voelde ineens zo’n onderlinge verbondenheid met deze man, en daarmee met al deze mensen. Hij gaf daarmee aan dat het goede regeert en dat hij gelukkig was. Ik wist weer precies waar het uiteindelijk om draait. Voor mij, en voor Pilat&Pilat.’ Toen hij een tijd later de vraag kreeg om voor een Friese kunstroute een beeld te maken, als onderdeel van een beeldenroute, was de keus snel gemaakt. Samen met vrienden en mensen uit de omgeving bouwde hij op het terpenlandje achter de boerderij in Twijzel een baken van (bak)stenen. Daarbovenop prijkt sindsdien het vredesteken van Omer, in metaal gevat. Datzelfde vogelpootje, nu omsloten door een metalen cirkel. De cirkel is rond. Nu vormt het baken van Omer de verbinding tussen gelijkgestemden op duizenden kilometers van elkaar. Tesanj en Twijzel, in vrede verbonden…
Gjalt Pilat has been visiting Bosnia on many occasions, and every time he tried to communicate with his factory staff for better or worse. No easy job since he does not speak Bosnian and they speak nothing but Bosnian. It also bothered him that he could not put names to the employees’ faces. A visual artist from the city of Leeuwarden, Trude van Assem, who often joined him on his trips to Bosnia, came up with a plan on the spot. She was going to take a photograph of every craftsman holding a nameplate in front of his chest. This mug shot album should help to match the right names with the faces. Trude got to work and in the end she presented Gjalt with the completed album. ‘Great for me, of course. Especially when I saw Omer’s page. This incredibly kind employee, who was always concerned about his wife and the rest of the family, had given me a sign. He placed a ‘bird’s foot’ inside the letter O of his name, turning it into a peace symbol.’ A simple gesture maybe, but it certainly affected Gjalt Pilat. ‘Suddenly I felt an enormous mutual affinity with this person and, through him, with all these people. It told me that good things always prevail, and that he was a happy man. It was a reminder for me to realise what it was all about. For me personally and for Pilat&Pilat.’ As he was later invited to produce a sculpture as part of the Frisian art trail, he did not need much time to decide. Together with some friends and people living nearby, he built a brick beacon on an elevated piece of land behind the farmstead in Twijzel. On top is Omer’s peace symbol cast in metal. The same bird’s foot encapsulated by a metal ring. What goes around, comes around. Today, Omer’s beacon makes a link between like-minded people living thousands of kilometres apart. Sometimes you have to push your luck. Sander Wijnstra had it all: a successful catering business and cooking facilities. But his dream really came true after he gave it all up. Today, he has got it all together in Interior café ArtiSante at Pilat&Pilat.
‘Hier voel ik dat alles klopt, dat ik elke dag dichter bij mijn droom kom’, vertelt kok en ondernemer Sander Wijnstra terwijl hij in de open keuken van het Interieurcafé thee zet en – en passant – een bakblik met quiches de oven in schuift. Sinds 2010 bevindt zich aan de achterkant van Pilat & Pilat het Interieurcafé. Sander Wijnstra streek hier eind 2012 neer met zijn bedrijf ArtiSante. Van oorsprong komt Sander uit het iets noordelijker gelegen Dokkum waar hij de laatste jaren een wijnbar annex deliwinkel runde, en verderop in de stad een kookstudio. Beide ruimtes waren te klein om te kunnen koken voor dinerende gasten, een wens van Sander. ‘Het was altijd druk. Ik was of hier of daar, en had geen ruimte om mijn ideeën uit te werken. Hoe leuk het ook was, ik miste iets.’ Dapper genoeg besloot hij te stoppen met zijn bedrijf. Net nadat hij zijn personeel had ingelicht, ging de telefoon. Het was Gjalt Pilat. Of Sander er voor voelde om het vrijgekomen Interieurcafé over te nemen. ‘Het was op een zaterdag. Ik kende Gjalt Pilat. Jaren eerder had ik als kok gewerkt in de Waard van Ternaard, de herberg die Gjalt begonnen was. Ik had goede herinneringen aan de sfeer, maar twijfelde aan Twijzel. Dokkum heeft de levendigheid van een stad, Twijzel is een klein dorp midden in het land.’ Twee dagen later reed hij naar Twijzel. Met het zicht op de weilanden, waar het Laarzenpad een avontuur in het groen belooft, trof hij een oase van rust. Verstilde eenvoud, houten tafels, uitnodigende banken, een enorme stamtafel en een open keuken. ‘De klik was er met Pilat&Pilat. De mooie materialen, de eenheid die heerst in het café, de duurzaamheid en de mooie afwerkingen van de meubels: het is de ondergrond die mijn
‘Here I feel that everything is right, that I get closer to making my dream come true’, says chef and entrepreneur Sander Wijnstra, while he makes a pot of tea in the open kitchen of the Interior café and meanwhile puts a baking tray filled with quiches into the oven. The Interior café is located at the back of Pilat & Pilat since 2010. Sander Wijnstra settled here with his ArtiSante business by the end of 2012. Originally, Sander is from the city of Dokkum, a little further up north, running a wine bar annex delicatessen shop for a couple of years, and further downtown a cooking facility. Both places were too small to both cook for and accommodate diners, which was Sander’s ultimate goal. ‘It was always full on. I was here, there and everywhere. I had no time to work on my ideas. No matter the amount of fun I had, something was missing.’ He then took the courage to close his business down. Gjalt Pilat called him just after he gave his staff the bad news. He asked Sander whether he would be interested in taking over the vacant Interior café. ‘It happened on a Saturday. I knew Gjalt Pilat. Many years ago, I worked as a cook for Herberg de Waard van Ternaard, the inn Gjalt had started. I had happy memories of the atmosphere but had my doubts about Twijzel. Dokkum has the bustle of a town; Twijzel is a small village in a rural setting.’ Two days later he made a trip to Twijzel. With meadow views, where dirt roads promise an adventure amidst green pastureland, he found an oasis of piece. Tranquil simplicity, wooden tables, inviting benches, an enormous sturdy table and an open kitchen. ‘I really found my niche at Pilat&Pilat. The beautiful materials, the unity that rules the café, the

‘Wij delen de zintuiglijkheid, onze gevoeligheid voor materialen, vormen en smaak’
gerechten alleen maar versterkt. Ik kook met pure ingrediënten en smaken, houd van krachtige combinaties maar ook van eenvoud en herkenbaarheid. En vooral wil ik mijn gasten zien en ontmoeten, weten wat ze beweegt en vertellen wat ik voor ze kook. Dat kan hier allemaal. Op de terugweg wist ik al: hier kan ik mijn droom waarmaken. Alle twijfel over Twijzel was verdwenen.’ Sander schuift een houten theeblad over de bar. Het is afkomstig uit de accessoirecollectie van Pilat&Pilat. ‘Gjalt vroeg me er een concept mee te maken voor een theeritueel’, legt hij uit. Sander combineerde het houten blad met een zwart, gietijzeren theepotje en porseleinen kommetjes met daarin de losse thee. ‘Die schep je zelf aan tafel in een zakje. Zo wordt theedrinken echt genieten. Het is mooi om te zien dat we die zintuiglijkheid delen, die gevoeligheid voor materialen, vormen, kleuren, smaken.’ Sander is van dinsdag tot en met zaterdag geopend voor de lunch en van donderdag tot en met zaterdag ook nog voor het diner. Op de andere dagen kunnen gasten zelf aan de slag in de keuken van het Interieurcafé, of kookt Sander voor feesten en partijen elders. ‘Het is heerlijk om iedereen hier welkom te heten. Wandelaars met trek strijken neer op het terras voor een broodje of een pasta, vriendinnen komen voor een high tea of een familie voor het diner. Ik zie ze ontspannen. Ze kijken om zich heen, laten hun ogen langs de mooie meubels glijden, voelen aan het hout. Het interieur is zo rijk, zo comfortabel en zo vol kwaliteit. Van een sobere eenvoud maar niet ‘gewoon’. Dat vinden mensen fijn, zeker als ze uit zijn. En ik zelf ook. Als de gasten weg zijn, kan ik hier helemaal in mijn element aan het werk zijn. Ideeën borrelen als vanzelf op. De sfeer nodigt uit om ze rustig te laten rijpen. Hier komen ze wel tot wasdom.’

I am using pure ingredients and flavours; I like powerful combinations but I also like simplicity and recognisability. I also insist on shaking hands with my guests, I like to know what makes them tick and I like to tell them about the meal I will be preparing for them. This can all be done here. On my way back I already knew: this is the place where I can make my dreams come true. Every last bit of hesitation about Twijzel had gone.’ Sander puts a wooden serving tray onto the counter. It is part of the Pilat&Pilat accessories collection. ‘Gjalt asked me to come up with an idea for a tea ritual’, he explains. Sander combines the wooden tray with a black, cast-iron teapot and small porcelain bowls filled with tealeaves. ‘The idea is for the guests to create their own tea bags. That is how drinking tea becomes a pleasant experience. It is nice to see us share our sensory perceptions, our sense for materials, shapes, colours and taste.’ Sander’s business is open for lunch from Tuesday through to Saturday, as well as for dinner from Thursday through to Saturday. At other times, the guests can do their own thing in the kitchen of the Interior café, or Sander is out cooking for birthdays and anniversaries elsewhere. ‘Saying “Hi” to everyone who comes along is a wonderful experience. Hungry hikers descend on the deck for a bread roll or pasta, girlfriends pop in for high tea, or a family group comes along for dinner. I can see them relax. They look around, allow their eyes to wander along the beautiful furniture and touch the wood. The interior is so abundant, so comfortable and of such a high quality standard. An austere simplicity, but far from ordinary. People like that, especially when they go out. And I like it, too. After the guests have gone, I can be here at work by myself and feel like a fish in the water. Ideas come effortlessly to the surface. The atmosphere allows them to slowly come to fruition. A place where they can reach their full growth.’

Erfgoedlogies Rikkerda in Lutjegast Rikkerda Heritage Lodging at Lutjegast – Frits Schuitemaker: ‘Rikkerda hoort op deze plek, dat mag je voelen’ –
Zijn vrijheidsdrang brachten hem en zijn vrouw Caroline Baan eind jaren zeventig naar het Noorden. Schuitemaker groeide op in het coulisselandschap van Twente, maar raakte gegrepen door de weerbarstige weidsheid van het Groninger land. Die verstilde ruimte was Caroline echter al te rigide, en zo vonden ze uiteindelijk hun gulden middenweg in Lutjegast. Hier zorgde kruiend ijs voor een stuwwal in het landschap. Later kwam de zee tot dit punt, slik met zich meeslepend. De ondergrond op de gast bestaat uit zand, en iets verderop begint het veen. Zo open als op de klei is het hier niet, houtsingels vormen natuurlijke scheidslijnen tussen weilanden. ‘Het Westerkwartier is nieuw land. Het aangrenzende Waddengebied is al duizenden jaren bewoond en barst van de cultuurhistorie. Maar dit was moeras, drassig en ontoegankelijk land, pas sinds enkele honderden jaren bewoond.’ De vervallen boerderij Rikkerda trok begin jaren negentig de aandacht van Schuitemaker. Het weidse uitzicht aan de achterkant van de kop-hals-rompboerderij en de ruimte rondom raakten een gevoelige snaar. Hier wilde hij eigenhandig de historie vasthouden. Om er te wonen én gasten te ontvangen. ‘De boerderij is organisch tot stand gekomen. Ik heb zelf alles gesloopt, dat kostte jaren. Maar het gaf me ook veel tijd om na te denken over hoe de boerderij verbouwd moest worden. Over letterlijk elke spijker is nagedacht.’ En daarom bepalen de gebinten, de oude indeling van doorrit, voergang en stallen nu hoe de gastenappartementen zijn gebouwd. De oude balken zijn nog op veel plaatsen zichtbaar
With respect for logic and the farm history, Frits Schuitemaker personally renovated his Rikkerda at Lutjegast and turned it into a residential home, office and lodgings. The heritage also had to be tangible inside, in harmony with the region. And so came the Pilat&Pilat furniture. ‘This furniture is modern, sturdy and bold.’ His thirst for freedom took him and his wife Caroline Baan up north by the end of the seventies. Schuitemaker grew up in the bocage of Twente, but he was seized by the stubborn grandeur of the Groningen countryside. However, the tranquil space was too rigid for Caroline, and so they finally found their happy medium in Lutjegast. In this area, drifting ice created a lateral moraine in the landscape. At one time, the seawater had reached this point, bringing mud along the way. The soil of the moraine is sandy, and a little further down the peat soil begins. At this point, the land is not as exposed as on the clay grounds; shelterbelts form the natural boundaries between the fields. ‘The “Westerkwartier” is reclaimed land. The adjacent Wadden Sea region, inhabited for thousands of years, is full of cultural history. But at one time this was a swamp, a marshy and inaccessible piece of land, inhabited for only the last couple of centuries.’ In the early nineties, the dilapidated Rikkerda farm drew Schuitemaker’s attention. The panoramic view from the back of the head-neck-body farmhouse and the surrounding area struck a chord. At this place he personally wanted to preserve the past by taking up residence and taking on guests. ‘The farmstead was “organically grown”. I personally pulled it down, brick by brick. It took many years to complete. But it also gave me plenty of time to think about ways to renovate the farm. Consideration was given to every nail that holds the building together.’

Met eerbied voor de logica en de historie van de boerderij verbouwde Frits Schuitemaker eigenhandig zijn Rikkerda in Lutjegast tot woonhuis, kantoor én logies. Ook binnen moest het erfgoed voelbaar zijn, in harmonie met de streek. Dus kwamen de meubels van Pilat&Pilat. ‘Die zijn modern, stoer en boer.’

en onderstrepen de constructie van het gebouw. ‘We wilden de oude elementen in hun waarde laten. Nieuwe toevoegingen contrasteren bewust, zodat geen verwarring ontstaat.’ Veel architecten gebruiken Rikkerda als uitvalsbasis of logeeradres, zij doen graag inspiratie op in de met zorg gerenoveerde boerderij. Het grijze appartement van de twee – het andere kent zwart als accentkleur – heeft boven een woonkamer. De plaatsing van de trap was een uiterst precieze klus. ‘De gast – de stuwwal van Lutje – loopt oost-west, het verkavelingspatroon noordzuid. Ik wilde dat je bij het betreden van de bovenkamer die ruimtewerking naar het zuiden zou voelen. Dat heb ik nog onderstreept door lange dakramen, precies op de juiste plek onderbroken. Als je op de bank zit, ontvouwt het landschap zich door de onderste ramen, sta je op dan biedt het bovenste deel van de ramen nog meer zicht op de landerijen. Op de vloer ligt hier Larixhout, dat – heel bijzonder – taps toeloopt en om en om is gelegd. ‘Je ziet hoe de planken uit de boom zijn gezaagd, dat is een speciale manier van vloeren maken die past bij de herkenbaarheid die wij hier nastreven.’ Het interieur is sober, met glad gestucte wanden, een moderne keukenmodule, de oude balken in het zicht en de meubels van Pilat&Pilat. ‘Wij kenden Pilat, en de mooie boerderij waarin het bedrijf is gevestigd. We wilden hier geen neutrale, wereldse meubels plaatsen maar juist de lokale identiteit versterken, harmonie bewerkstelligen met de omgeving. De houten meubels van Pilat komen hier uit de buurt, daarin zien we een manier van denken en een ambachtelijkheid die past bij de oude boerderij: het is sober, comfortabel en doordacht. Samen kozen we voor banken en tafels van walnotenhout die met de tijd alleen maar mooier worden.’ In de slaapkamers bedden met houten bedschot, warme wollen spreien, op maat gemaakte kasten en comfortabele stoelen. Er grazen Groninger Blaarkoppen op het land achter de boerderij. Het zijn eigenlijk ‘decoratiekoeien’ maar ze mochten niet ontbreken. ‘Een boerderij zonder koeien is niet echt.’ Bovendien vervullen ze een functie; ze onderhouden de weilanden, die onder natuurbeheer staan. Vertier of opsmuk is verder niet te vinden op het erf. ‘Onze gasten waarderen de rust, de eenvoud, het stoere van de plek: alles waar wij ook van houden. Soms vragen ze wat er te doen is. Niks, zeg ik dan. Maar dat is ogenschijnlijk. Want je kunt hier wandelen en fietsen in een uitgestrekt en aaneengesloten gebied van Nationale Landschappen en Nationale Parken, maar ook met prachtige steden als Dokkum en Groningen en zelfs waddeneilanden als Schiermonnikoog zijn onder handbereik. Het zijn precies de activiteiten waar onze gasten warm voor lopen.’

For that reason, the trusses, the old layout of passage, feed alley and barns determine the way the guest apartments were built. The old beams are still visible in many places and emphasise the construction of the building. ‘We wanted to leave the old elements the way they were. New additions purposely have a contrastive effect to avoid any confusion.’ Many architects use Rikkerda as an operating base or choose it as a guesthouse. They like to be inspired by the carefully renovated farmstead. The grey apartment (one apartment is predominantly grey and the other one black) has an upstairs living room. The construction of the stairs was an extremely accurate job. ‘The “gast” – i.e. the lateral moraine of Lutje – runs from east to west, the land division pattern runs from north to south. I wanted to experience the three-dimensional effect to the south when entering the upstairs room. I emphasised this effect by splitting the long skylights exactly at the right spot. If you sit on the couch, the landscape unfolds through the lower windows. If you stand up, the upper windows offer an even better view of the farmlands. The floor is made of larchwood, which - most peculiarly - is tapered and laid out in a fishbone pattern. ‘One can see how trees have been cut up into planks; a special way of floor construction that fits in with the recognisability we aim for.’ The interior is austere with smoothly plastered walls, a modern kitchen module, old beams that are clearly visible, and furniture supplied by Pilat& Pilat. ‘We knew Pilat and the beautiful farmstead that is home to their operations. We did not want to fill the space with neutral, worldly furniture, but rather strengthen the local identity and bring it in harmony with the environment. The wooden Pilat furniture is from this region. This, to us, is a way of thinking and craftsmanship that fits in with the old farmhouse: it is austere, comfortable and sophisticated. Together we opted for walnut benches and tables, which only enhance in beauty as time goes by.’ Beds in the bedrooms have wooden headboards, warm woollen bedspreads, tailor-made wardrobes and comfortable chairs. Groningen whitehead cows occupy the land behind the farm. Actually, the cows are serving a decorative purpose only, but one could not do without them. ‘A farm without cows is not a real farm.’ Besides, the cows are of some use; they maintain the grassland, which is controlled by the Conservation Department. The grounds offer no further entertainment or other frills. ‘Our guests appreciate the tranquillity, the simplicity and the boldness of this spot; everything we like as well. Sometimes they ask where all the action is. I tell them: nothing is going around here. But that is only at first sight. Because visitors can walk or cycle in a vast and continuous area of National Landscapes and National Parks, visit beautiful cities such as Dokkum and Groningen, and even the West Frisian Islands like Schiermonnikoog - are within reach. Those are exactly the activities our guests are after.’
