Uiteraard is het ook mogelijk de gerechten individueel te bestellen. Wij adviseren er drie tot vier per persoon. HOME OF THE BUTCHER
Our butcher uses the meat from Dutch Weiderund, which is matured dry-aged. These are Rondbont cows that graze outside almost all year round in the Weideland. They had a good and loving life, which strongly promotes the quality of the meat. During ripening in the cell - a process that takes at least 21 days - the moisture in the meat evaporates up to thirty percent and natural enzymes break down muscle tissue. This gives the meat a very tender texture and intense flavor.
Onze slager gebruikt enkel Nederlands Weiderund, dat dry-aged gerijpt is. Dit zijn Rondbont koeien die bijna het hele jaar door buiten in de Weideland grazen. Ze hebben een goed en liefdevol leven gehad, wat de kwaliteit van het vlees sterk bevordert. Tijdens het rijpen in de cel – een proces dat minimaal 21 dagen duurt – verdampt het vocht in het vlees tot wel dertig procent en de natuurlijke enzymen breken het spierweefsel af. Hierdoor krijgt het vlees een zeer malse structuur en een intense smaak.
WAGYU 7+ Seven is the class of the Wagyu image that is partly determined by the fat content in the meat. Wagyu contains unsaturated fatty acids which is healthy for your body, in contrast with other fats.
