A 2010. március 11-13. között megrendezett Legjobb Gyakorlatok Workshop központi témája a fiatal gazdák szerepe a vidékfejlesztési programok megvalósításában; vidékfejlesztési források felhasználásának konkrét, jó példákon keresztül történő bemutatása volt. Így a résztvevőknek a 9 ország képviseletében megjelent 17 előadón keresztül volt alkalmuk megismerkedni különböző gazdaságokkal, melyek önerőből és más fejlesztési forrásokból sikeresen fejlődtek az egy-egy fiatal gazdálkodó által kitűzött cél felé. A gazdaságok bemutatása mellett vidékfejlesztési programok (LEADER a különböző országokban) is terítékre kerültek. Az eseményen betekintést nyerhettünk a cseh, olasz, holland, svéd, szlovák, szlovén, romániai és az Egyesült Királyságban meglévő agrár kultúrába, és természetesen ezt a képet saját színeikkel kiegészítették a magyar fiatal gazdálkodók is. A rendezvény létrejöttének fontosságához, eredményességéhez fűződően Dr. Mikula Lajos szavait idézzük: „Közösen gondolkodtunk a rendezvény során. Közép európai programunk azt hangsúlyozza, hogy a környéken hasonlóak a problémák és tudunk együtt gondolkodni, konkrét problémákról. Mindenki elmondta azt, miben jó és ez erőt, ötleteket adhat másoknak is.” Az alábbiakban a konferencia során elhangzott projekteket ismertetjük, bemutatva az előadók véleményét is a végrehajtással, saját jövőjükkel kapcsolatban.
The central topic of the Best Practices Workshop – which was hold between 11th and 13th of March, 2010 – was the role of young farmers in the implementation of rural development programs and to present the best use of rural development sources through concrete, good examples. In this way participants had the opportunity to get acquainted with different farms by 17 presenters representing 9 countries, that has developed successfully to reach the aim targeted by young farmers by using selfsources and other development sources. Beside the presentation of the farms, rural development programs (LEADER in different countries) were mentioned also. We could have a look at the Czech, Italian, Dutch, Swedish, Slovak, Slovenian, Romanian and British agricultural culture on the event, and naturally these images were completed by own colors of the Hungarian young farmers. About the importance and success of the event we quote the words of Lajos Mikula Dr.: “We have been thought together during this event. Our Central-European program emphasizes, that the problems are quite similar in the neighboring countries and we can think together about concrete problems. Everyone has told in what she/he is good in, and that may give strength and ideas to others.” In the followings we introduce the projects, which were presented during the conference, with the opinions of the presenters about the implementation and their own future.

LEADER program, YOUTH program The presenter works for a local action group in the Czech Republic. The local action group means a partnership, which builds on a coopearation among the civil sphere, the entrepreneurs, farming and non governmental organisations locally, along the principles of LEADER. 112 supported local action group operate in the Czech Republic. The LEADER program is the IV. axis, which means only 5% of the total support for rural development. LEADER has the advantage, that it tries to solve the local problems locally, with the use of available sources, in an innovative way.
Az előadó egy csehországi helyi akciócsoportnál dolgozik. A helyi akciócsoport olyan partnerséget jelent, amely a civil szféra, a vállalkozói, gazdálkodói és a nem kormányzati szervek közti együttműködésre épül, helyi szinten, LEADER alapelvek mentén. Csehországban 112 támogatott helyi akciócsoport működik. A LEADER program a IV. tengely, amely az összes vidékfejlesztési programra jutó támogatásnak csak 5 %-át jelenti. A LEADER egyik előnye az, hogy megpróbálja a helyi problémákat helyben, a rendelkezésre álló erőforrásokkal, innovatív módon megoldani. Hogyan támogatottak a fiatal gazdák a LEADER programon belül? Három célcsoport létezik a programon belül: fiatalok, nők és gazdálkodók. Ezért a helyi akciócsoportok létrejöttekor, aktívan kommunikálnak az említett csoportokkal. A helyi akciócsoport 22 tagjából 8 vállalkozó – amelyből 5 gazdálkodó, 3 fiatal gazda -, 5 tag a közszférából van jelen, 5 tag pedig a civil szervezetektől. Ez azért fontos, mert a stratégiai tervek elkészítésénél meghatározásra kerülnek a támogatott témák és így 9 intézkedésből 3 fiatal gazdáknak szól. Egyik intézkedés a farm-diverzifikáció, másik az agroturizmus, harmadik a helyi élelmiszer termékek feldolgozásának támogatása. Egy konkrét projekt: a STARTER program Csehország és Európa problémái hasonlóak: 25 polgármesterből csak három az, aki negyven év alatti, hasonlóképpen a városvezetésben is. Csak egy középiskola van régiónként, a helyi akciócsoportok területén, egyetem pedig egy sincs. A legnagyobb probléma azonban az, hogy a fiatalokat lustának, „léhűtőnek” tartják. A program a fiatalokat szólította meg abból a célból, hogy őket is bevonják a helyi akciócsoportok munkájába. Ezzel az általánosnak mondható passzivitásukat próbálták meg felrázni, annál is inkább 2
How are the young farmers supported within the LEADER program? There are three target groups in the program: youth, women and farmers. Therefore, by the establishing of the local action groups, they are actively communicate with those groups. The local action group has 22 members 8 members are entrepreneurs – including 5 farmers, 3 young farmer –, 5 members of the public sector and 5 members of the civil organizations. This is important, because when strategy plans are determined, the supported themes are defined, and three of the nine measures are for young farmers. One measure is farm diversification, the second is agro-tourism, and the third is the support for processing of local food products. A specific project: the STARTER program. The problems of Czech Republic and Europe are similar: in every 25 mayors only three are under the age of 40, and the situation is similar in local governments too. There is only one high school in every region of the LAGs, and there is no university in the areas of the local action groups. But the biggest problem is that the youth are said to be “lazybones”. The program has aimed the youth to involve them into the work of the local action groups. With it they tried to shake up their passivity because it highly influences the region’s future. That is why 8 of the 22 members of the action group were elected, that they are under 35 years.

A program alapötlete az volt, hogy motiválja a fiatalok együttműködését a régió akciócsoportjával, és együtt jelöljék ki a közös irányokat a lehetőségek feltérképezésében. Az előadó különösen nagy hangsúlyt fektetett a fiatalok felelősségérzetére, melyet véleménye szerint csak úgy lehet mélyíteni, ha teret engedünk nekik a döntésre váró kérdésekben. Ezzel természetesen a számonkérés lehetősége is növekszik az egyes feladatok megvalósulásának tekintetében. Fontos, hogy ők is érezzék, mekkora hatást gyakorolnak a régióban történő eseményekre. Elemezni kell az igényeket és a kívánalmakat. A programcímek nyitottak voltak, csak a témák kerültek meghatározásra. Ez a projekt csak az első lépés volt, később pénz nélkül is működnie kell. Egy ötlet, amelyre csak egyszer volt forrás. Egy lehetőség, amely során a különböző ötleteket tesztelni lehetett. Kevés kritérium került lefektetésre a programban való részvételhez, de alapkövetelmény volt, hogy nem csak a résztvevőkre, hanem a tágabb környezetre is pozitívan kell hatni. A támogatott projektekről Négy projekt került támogatásra, nem gazdasági, inkább szociális témákban. Projektenként 500 eurós költségvetésre volt keret. Ilyen volt a „beilleszkedés színháza”, amely egy táborozás keretében a fogyatékos és hátrányos helyzetű gyerekeknek szólt, a színház témájára felépítve. Egy hetet töltöttek el együtt, az utolsó napon valamennyi gyerek előadott. Egy másik projekt a kreatív workshop (Anvrk címmel) volt, ahol gyerekek és felnőttek egy animációs filmet készítettek. A „Három állat” projekt egy színházi előadás volt, azzal a céllal, hogy pénzt gyűjtsenek vadállatok védelmére. Hógolyó címmel sportkiállítást rendeztek, amelynek során új sportok kerültek bemutatásra, mindemellett felhívták a figyelmet a régióban lévő hiányosságokra. Mi volt a fiatal gazdák szerepe a projektekben? Három fiatal gazdát vontak be az első és a második projektbe, akik kreatív tagjai voltak a csoportnak. A LEADER program alapelve a hálózatok fontossága és hármukon keresztül a többi fiatal gazda is elérhető. A STARTER program célja, hogy bevonja a gazdákat az agroturizmus által. A gazdák gépei, az ezekkel végzett szolgáltatások is a bemutató program részei. A STARTER programon keresztül, amely elsősorban fiataloknak szólt, bevontak az együttműködésbe három fiatal gazdát. A négy programból három folytatódik, már nem ugyanabból az alapból, más forrásokból. A program sikeresnek mondható, fiatal gazdák és fiatalok kapcsolódtak be a programba, a térség életébe és együttműködtek a helyi akciócsoporttal. n
The basic idea of the program was to motivate the cooperation of the local youth with the action group of the region, to indicate together the common directions by searching opportunities. The speaker made particularly strong emphasis on young people’s responsibility, according to his opinion this can only be deepened if we give them enough opportunity by the decision process. Of course, this also increases the possibility of checking of the certain tasks’ implementation. It is important that they feel, how big impact they have on the events which are happening in the region. Their needs and the demands have to be analysed. The program titles were opened, only the themes have been identified. This project was the first step, later it has to be able to work without any subsidy. It was just an idea, which was financed once. It was an opportunity, during the ideas could be tested. Just a few criteria were lied down for the participation in the project, but it was a basic requirement that it had to effect positively not only the participants, but also the wider neighbourhood. About the supported projects: Four projects were supported, not economic, but rather social issues. The budget allocation was 500 EUR for each project. One of these projects was the “theatre of adapting”, which was a camp for handicapped and disadvantaged of children with the topic of theatre. They spent a week together, on the last day all the children performed something. Another project was the creative workshop (with the title Anvrk) where children and adults made together an animation movie. The “Three animals” project was also a theatre performance, with the aim to collect money for the protection of wild animals. There was a sport exhibition titled snowball, where new sports were presented, and they called the attention to the deficiencies of the region. What was the role of young farmers in the projects? Three young farmers were involved in the first and second project, who were creative members of the group. The basic principle of the LEADER program is the importance of networks, and via these three farmers, the other young farmers are also accessible. The aim of the STARTER program is to involve the farmers on the field of agricultural tourism. The machines and services done with these are also part of the demonstration program. The STARTER program was principally dedicated to the youth and it reached three young farmers. Three of the four programs are continued, not from the same found, but from other sources. The program can be said successful; young farmers and youth participated in the program, the life of the region, and they co-operated with the local action group. n

She has implemented the development of her project in this spirit and will continue in the future, which constitute

Szállásadás és vendéglátási szolgáltatások nyújtása gazdák által, amelyet gazdasági társaságok, magánszemélyek, vagy szövetkezetek is gyakorolhatnak úgy, hogy művelik a termőföldet, használják az erdőt vagy állatot tartanak. A multifunkcionális farm sok mindent jelent egyben: kultúrát, tradíciót, környezetet, eredeti termékeket, turizmust, táplálkozási és környezetvédelmi oktatást. Az agroturizmus-vendéglátás, melyet a mezőgazdaságban tevékenykedők látnak el egyre nagyobb figyelmet kap napjainkban. A turisták részéről megnőtt az igény arra, hogy a mezőgazdaságot is láthassák, ne csak a végterméket. A farm, a termelőegység multifunkcionális lett, amelyben a mezőgazdaság mellett más is szerepet kapott. Az agroturizmusnak figyelemmel kell kísérnie a társadalom igényeit, ennek megfelelően tartalmi elemei: vidékjárás, sport, rekreáció, vadászat, kutyaidomítás, testkarbantartási tevékenységek. A környezetvédelemre gyakorolt hatása egyrészt az élhető vidék megőrzésében felfedezhető, de segít a természet és vidék iránti érdeklődés felébresztésében és fenntartásában is. Az agroturizmus egy innovatív tevékenység, amely tradíciókon nyugszik. A vidékfejlesztés fő céljai: a mezőgazdaság támogatása a multifunk cionalitáson keresztül; maradjanak a vidéken élők vidéken és a termelők tudják értékesíteni terményüket. Mit igényel a társadalom? A társadalom igényli azt, hogy összeköttetésbe kerüljön a természetvédelem a gazdaságokkal. Multifunkcionalitás kell a piacnak, és mi minden meglévő erőforrást tudunk hasznosítani. Saját cégtörténet 1970-től létezik a saját cég, kezdetben monokultúrában szarvasmarhatartással foglalkozott. 1995-től női vezetésű, ekkor kezdődött el az iskolákkal való oktatási együttműködés. 1999-től éttermet is üzemeltet, valamint működtet egy helyi vidéki múzeumot. 2002-től lett didaktikai vállalkozás, tanító, kurzusokat adó vállalkozás, általános iskolától egészen egyetemig. Jól felépített programjaik amellett, hogy a cégen belüli fejlődésüket biztosítják, a nemzetközi kulturális képzés kereteinek is megfelelnek. Legfőbb céljuk az, hogy a fiatalok a mindennapok főszereplőivé váljanak, és mellette (rajtuk keresztül) a helyi értékeket és a tradíciót és megvédjék. A háttérben jól működő menedzsment folyamatosan kutatja a szektor lehetőségeit, valamint dinamikus kínálatot és minőséget szolgáltat a szervezetnek. Mit bizonyított a multifunkcionális mezőgazdaság? A multifunkcionális mezőgazdaság okos eszköz az ismeretek terjesztésében. A mezőgazdaságot jobban el kell, hogy ismerjék, és életünk részévé kell, hogy váljon. n
the pillars of the following factors. To be able to get a sharper picture of the bridge that connects her thoughts with her plans, she has ana lysed some elements separately. What is a Farmhouse? It means hosting and accommodation services given by farmers that can be carried out by economic groups, private individuals and co operatives, while they cultivate the fields, use forests or breed ani mals at the same time. Multifunctional farm means a lot of things together: culture, tradi tion, environment, original products, tourism, nutrition and environ ment protection education. The agri-tourism – catering, which is supplied by people in agriculture, receives an increasing attention nowadays. The need to see agriculture as well, not just the end product by tourists have grown. The farm, the production unit has become multi-functional, where beside the agricultural activities, other activities also have taken place. Agri-tourism should monitor the needs of society, according to it the content elements: rural hiking, sports, recreation, hunting, dog training and body maintenance activities. Its environmental impact can be seen in maintaining viable rural areas, but it helps to raise the interest for the rural nature and arousing and maintaining interest. The agri-tourism is an innovative activity, which is based on tradition. The main aims of the rural development: support the agriculture through multi-functionality, keep the rural inhabitants in the rural areas, and make producers to be able to sell their products. What does the society require? The society needs, that the environmental protection should be con nected with farms. The market needs multi-functionality and we can utilize all existing resources. The history of the company The company has been existing since 1970, initially dealt with cattle breeding in monoculture. Since 1995 the firm has been led by women, and since then the production is not monoculture, but it was the time when the educational cooperation begun with the schools. They opened a restaurant and a small local, rural museum in 1999. The company became a didactic enterprise in 2002, it is a teaching, lesson giver enterprise from primary school to university. Their well structured programs ensures development inside the company, but it meets with the framework of the international cultural training too. Their main goal is that the young people should be the main players in the everyday life, and beside it (through them) to defend the local values and tradition. In the background a well-functioning management is always search ing for sector opportunities, as well as it provides a dynamic supply and quality. What has the multifunctional agriculture proved? Multifunctional agriculture is a smart tool in spreading knowledge. The agriculture has to be admitted better and it has to become the part of our life. n

A Zsigmond Malom Fogadó, a Hargita hegység lábánál elterülő Csíkmadaras falu határában helyezkedik el, egy csendes kis Szigeten, melyet az Olt és a Madicsa patakok határolnak. – tudtuk meg a Fogadó vezetőjétől. Az örökségül kapott vízimalom sokkal inkább az előadó felmenőinek (három generációnak) emlékeit őrizte, a XXI. századra már csak árulkodó jelei maradtak a benne valaha is zajló életnek. The Sigmund Mill Inn is located at the foot of Harghita Mountains close to Csíkmadaras village, in a quiet little island, bordered by Olt and Madicsa streams. – we have heard from the head of the Inn. The mill has kept rather the memories of the ancestors (three generations), but for the XXI. century it remained only as a tell-tale of life which once took place there. The young farmer has therefore decided that, although the mill wheels will not longer drain on water, he gives back the dignity of

Till today he has reached it from the motives, we can confirm that the original purpose has become a tool in the transmission of the local culture and traditions. In the more than 100 year old farmhouse, a rustic atmosphere pension waits the guests next to the mill, who can feel from the veranda the magic pine forests, meadows located at the foot of the Hargita mountain and the alpine pastures, so they can become one with the nature.

A ’70 es években egy gátrendszerrel működtetett vízimalom volt, amely a térségben a legkorszerűbbnek számított. A gátrendszer cölöpgátból épült, érdekessége, hogy tisztán emberi erő segítségével
In the seventies it was a water mill operating by a dam system which was the most modern in the region. The dam system was built by piledams, and its curiosity is, that it was built only with human force, and

építették, az óriási malomkerék fából készült. A hengerszékeket 1905-ben a GANZ gyár gyártotta. Az első vízi engedélyt a magyar királyi vízügyi hivatal adta ki 1905-ben. Napjainkra műemlékké nyilvánították a malmot. Felújítása 2004-ben kezdődött, mellyel együtt a családi vállalkozás is – SAPARD pályázatból 50% vissza nem térítendő támogatást kaptak, amelyből 30% uniós, 20% román, 50 % saját erő volt. A pályázat igénybevétele viszontagságos volt, az európai szabályrendszer és a romániai engedélyeztetés miatt fél évvel csúszott a megnyitás. A házikók a régi hagyományok szerint, eredeti technikákat felhasználva épültek famegmunkálással. Egy olyan szerkezet, amelyen szeget sem ütnek, de napjainkban ezt a technikát már nem használják. Belülről a szín, forma, ízlésvilágban a tradíciók szintén megjelennek, a modernizáció a távfűtés és a fürdőszobák kialakításán nyomonkövethető. A működtetés a környék turisztikai lehetőségeire alapozott az infra struktúra hiánya miatt. Ez azonban nem veszélyezteti fennmaradásukat, hiszen akik felkeresik őket pont azzal a céllal érkeznek, hogy maguk mögött hagyják a világ zaját, a mindennapos nyüzsgést és nyugalomban, némi elszigeteltséggel töltődjenek fel az újabb kihívások előtt. Amennyiben igénylik az odalátogatók túrákat is szerveznek nekik a hegyekre, szekérrel is, emellett pedig a környéken élő emberek vendégszeretete, a népszokások is nagy vonzerővel bírnak. Az érdeklődők nem csak a természetben, hanem a továbbörökített hagyományokban is felfedezhetik a mára már kuriózumnak számító kincseket. n
the huge mill wheel was made of wood. The roller-frame was manufactured by GANZ factory in 1905. The first water permission was given by the Hungarian royal water administration office in 1905. By now the mill has been declared as a historical monu ment. Its renovation began in 2004, when also started the family business – 50% of SAPARD fund, a non-refundable support was received, of which 30% was from the European Union, 20% from Romania and 50% was their own contribution. The use of tender was difficult, the opening date was delayed with a half year later because of the European and the Romanian licensing rules. The houses were built according to old traditions, using originally constructed woodcarving techniques. It is a nail-free construction, but nowadays this technique is no longer used. Inside the colour, the shapes, the taste also show the traditions, and it is alloyed with the modern techniques, district-heating and bathrooms. The operation is based on the area’s tourist opportunities with the lack of infrastructure. However, this does not threaten their survival, because those, who visit them come to leave behind the world’s noise and bustle and to fill up in rest and some isolation for the new challenges. If visitors need, they will also organize trips to the mountains, by wagon as well, and the hospitality of the people living nearby, the customs are the major attraction. Those who are interested not only in nature, but also in local traditions can explore these treasures which are unique nowadays. n

Vértes Veronika – Magyarország - tejtermelő és közvetlen értékesítő. „Boci mobil”, közvetlen tejértékesítés „A változások, én azt gondolom, hogy nagyon nagy léptékben és mindenképpen a két generáció, az édesapám és az én közöttem való különbséget tükrözi.” – jegyezte meg Vértes Veronika, miközben gazdaságukat mutatta be a kezdetektől napjainkig tartó fejlődés főbb megállóin keresztül. A közel 20 éves gazdaság áttekintése során a magyar mezőgazdaság történetéről is kapunk egy átfogó képet. A ’90-es évek elejére 10 tehene volt édesapjának és az így termelt tejet a közeli tejcsarnokba, az akkori árakhoz képest, jó áron el tudta adni. Néhány évvel később már látni lehetett, hogy a 10- 15 tehén és a falusi tejgyűjtő nem lesz sokáig életképes, sok volt a minőségi probléma és kezdtek az állattartók a sokféle megfeleltetésbe „belefásulni”. Már nem akartak az új követelményeknek megfelelni inkább abbahagyták a tehén-tartást. A 10-12 tehén tejéért nem jöttek el a tejipartól, hogy elvigyék. 1998-ban megvásároltak a falutól mintegy 150 méterre lévő közművesített, de igen rossz állapotban lévő tanyát és ezzel megkezdődött az új gazdaság felépítése. Abban az évben elkészült egy 48 férőhelyes kötött tartású istálló és egy 10 férőhelyes ellető istálló. Új fejőház, fejőrendszerrel, silótárolóval 30 millió forintos beruházással. Ahogy az építkezé-

Reviewing the nearly 20 years old farm’s story we can get a comprehensive picture about the Hungarian agriculture’s history too. In the early ‘90s his father had 10 cows and he was able to sell the produced milk at a good price in the near milk-hall, compared to prices at the time. A few years later it was clearly visible that 10- 15 cows and the village collection would not be viable for a long time, there were many quality problems and the breeders started to “getting tired”. They did not want to fit to the new requirements, instead of it they stopped keeping cows. No one came from the milk factory to take the milk of their 10-12 cows. In 1998 they bought a farm – 150 metres away from the village – that was equipped with public utilities, but was ruined down, and the building up of the new farm has started. In this year they finished a 48 places stable, and a 10 places calving stable. A new milking house,

Például az emberi munkát gépesítették, így a kezdeti 50 állat 4 dolgozó arányból 180 állat és 2 dolgozó lett. A két dolgozónak az állatok ismerése és a nagy odafigyelés mellett mindenhez kell értenie. A kezdeti Holstein fríz állományból 70 % Magyartarka tehén lett. 2005-ben kezdődött a közvetlen értékesítés. 2007-ben pályáztak az állattartó telepek korszerűsítése jogcímen és mintegy 100 milliós beruházáshoz kaptak támogató határozatot. A támogatás mértéke 40% és 75%-os volt, ami összesen 55 millió forintot jelentett. Ennek keretében pályáztak új 53 férőhelyes istálló építésére, teleszkópos rakodó illetve homlokrakodó gép vásárlására, trágyatároló, szénatároló bővítésre, 2X5 állásos aknás fejőrendszer kiépítésre, csapadékvíz elvezetés felújításra, meglévő mélyalmos istállóban beton padozat kialakítására, tejhűtő berendezés cserére, telepirányítási rendszer kialakításra, bálaszállító pótkocsi beszerzésre és még egy Boci mobil tejértékesítő autó vásárlására. Az autó körülbelül 30 kilométer távolságra megy el a vevőkhöz, mindemellett vásárokon, piacokon árulnak. 2005-ben ez nagy újdonság volt és sok idős ember örült az igazi tejnek. Gátló tényező az, hogy a közvetlen értékesítés szabályozása, jogi háttere egyelőre még rendezetlen. A buktatókat leküzdve 2007. végére felfejlődött a közvetlen értékesítés. 2008-ban azonban egészen megváltozott minden. A beruházás megvalósításával sajnos szinte teljesen leálltak 2008. végén. Először a tej felvásárlási árának csökkenése, majd a gazdasági válság hatására bekövetkező keresletcsökkenés miatt. 1998- ban 68 Ft-ot kaptak egy liter EXTRA minőségű tejért, 2009. júliusában pedig csak 51 Ft-ot. Így jól látható volt, hogy az egyetlen, amit folytatni lehet, az a közvetlen értékesítés. Ma már a megtermelt tej 70%-át adják közvetlenül a fogyasztóknak 135 Ft-os áron. A jövő kulcsa a 100 % közvetlen értékesítésben látható, hiszen még mindig van a környéken szabad piac. Akár feldolgozás árán is, de ennek a körülményeit kell megteremteni. Új törvény lépett hatályba, ami a kisebb tejtermelőket előnyösen megkülönbözteti. A cél a túlélés, ehhez több lábon kell állni, pl. hízóbika tartással, üszőneveléssel. A magyar gazdáknak is be kell látni, hogy nem elég egy dologra koncentrálniuk. A termelést még hatékonyabbá kell tenni a saját termelésű takarmányokkal, turizmus által, bérmunka vállalásával. A saját termelés és a közvetlen értékesítés az, ami életben tart és ez a jövő is. n

It took three years to fill the stable with animals, most of them then was Holstein, and some of them were Hungarian Brindle, that was more economic. The building operations continued in every year, the farm expanded with a machine depot and a granary. They changed from intensive breeding to extensive breeding, that meant a huge change. For example they have mechanized the human work, so the starter 50 animals 4 workers ratio changed to 180 animals and 2 workers. The two workers have to be competent in everything, and have to know the animals as well. 70% became Hungarian Brindle from the beginning Holstein herd. The direct selling started in 2005. They applied for the tender in 2007 in the measure of modernisation of animal breeding farms, and they got supporting decision about a nearly 100 million HUF investment. The rate of the support was 40% and 75%, it meant 55 million HUF altogether. Within the tender they applied to build a new, 53 places stable, to buy a telescopic mechanic loader, build a manure silo, expand the hay storage, build a 2 times 5 spaces milking system, renovation of rain water draining system, make concrete flooring in the existing deep litter stables, change the milk freezing machine, develop a farm leading system, buy bale transporter trailers and to buy a second milk selling “Boci Mobil” vehicle. The car goes nearly 30 kilometres away from the farm to the customers or to the markets and fairs. In 2005 it was a big novelty, and many elderly people were glad that they can buy real milk. It is an obstructive factor that the law background and the regulation of direct selling is disorganised. They dealt with the obstacles, and by the end of 2007 the direct selling has developed. But everything changed in 2008. They nearly fully stopped with the implementation of the investments by the end of 2008. They had to stop the investments because of the decrease of the milk prices, and than because of the declining demand due to economic crisis. They got 68 HUF for one litre of extra quality milk in 1998, but in July of 2009 they got just 51 HUF for the same quality. So prominent was that the only thing what can be continued is the direct sale. Today they sell 70% of the produced milk directly to the customers for the price 135 HUF per litre. The key of the future is the 100% direct selling, as there is still free market in the area. Even by processing the milk, but they have to make the conditions for this. A new rule came into effect, that distinguishes favourably the smaller producers. The aim is to survive, for this it is necessary to be multifunctional, for example with calf or meat bull breeding. The Hungarian farmers also have to see that it is not enough to focus on one thing. The production have to be made more effective by self-produced fodder, tourism or lease-work. The self-production and the direct selling is, that can keep us alive, and it is the future. n

The agriculture is not enough to have as sole source of income; new sources are needed to ensure living.
A fiatal gazdálkodók és a projekt kiválasztásában a motiváltság, az ötletek újszerűsége és megvalósíthatósága volt a fő szempont, melyek alapján választottak a több mint 900 jelentkező fiatal gazdálkodó közül. Végül 90 gazdálkodó vett részt a programban. A következő lépcső az ötletek üzleti tervvé való formálása volt. Csoportokban, szakértők és professzionális tanácsadók segítségével nézték meg, hogy az üzleti tervek reálisak-e, milyen engedélyek kellenek a megvalósításhoz.. Az alábbiakban két, a program során megvalósult, projektet emelünk ki egy rövid bemutatás erejéig. Példa 1: Biogáz létesítmény az amszterdami repülőtér mellett. A fenyegetettséget, a kockázatot, amelyet egy gazdálkodónak az jelent, hogy a repülőtér mellett terül el a földje, lehetőséggé kell átalakítani. Ez egy kooperációt eredményezett a gazdák között, miszerint ételmaradékokból biogáz üzemben energiát termelnek és azt eladják a repülőtérnek. A terv tehát megszületett, a nehézség viszont az volt, hogy először lelkesek az emberek, de végül az előírások láttán elvesztik a lelkesedést. Másrészt egy ilyen nagy szervezetet, mint a repülőtér, nehéz bevonni egy újításba. Ezeken felül Hollandiában különböző ételmaradékokat nem lehet csak úgy összekeverni. The main point in the selection of young farmers and projects was the motivation, the novelty and manageability of ideas, the basis they have chosen from the 900 candidates farmers. Finally 90 farmers participated in the project. The next step was the forming of the ideas to business plans. They analysed in groups with experts and professional advisors, if the business plans are realistic, and what kind of permissions are needed for the implementation of them Below 2 significant projects will be persented shortly, which were implemeted within the confines of the program. Example 1: Biogas institution next to the airport of Amsterdam. The risk and threat which the closeness to the airport means to the farmers has to be converted into advantage. It has resulted a cooperation between farmers, who want to make biogas plant, that makes energy from the leftover food and sell it to the airport. The plan was born, the difficulty was that the people were enthusiastic at the beginning, but later – facing the rules – they lost their enthusiasm. On the other hand such a big organization, like an airport, it is hard to involve into an innovative project. Moreover in Netherlands different food leftovers are prohibited to be mixed. It is very difficult to

Ezért felmérték a környékbeli éttermek igényeit, melynek végeredménye a helyi termékek szükségességét mutatta meg. Elkezdtek helyben termelt kukoricával nevelt helyi kacsát árulni. Tekintettel arra, hogy az emberek szeretik az áruk nyomonkövetését, weboldalukon képek segítségével mutatják be a kacsák növekedéséhez kapcsolódó történéseket. Ez egy nagyon sikeres vállalkozás lett.
Example 2: There were two boys who could not live from farming. Their idea was that their products should be presented in a positive way in the area. They surveyed the demands of the surrounding restaurants, and it was revealed, that local products were needed. Because of this they began to sell local ducks which were raised on locally produced maize. As people do like stories behind the products, so they have presented in pictures, on a web page the story of the breeding of ducks. This became a very succesful enterprise.
„Tanulság az, hogy sok minden lehetséges, több minden megvalósítható, mint gondolnánk. Jó ötletből, jó segítséggel, jó üzleti tervvel, hálózatokra kell támaszkodni. Fontos a jogi lehetőségek és szabályok felmérése és fontos az időzítés, valamint az együttműködés más fiatal gazdálkodókkal nagy előnyt jelenthet.”- hangzott el az előadó intelmei között. Nehéz azonban mindvégig motiváltan tartani az embereket. Engedélyek, üzleti terv, szabályok nehézségei miatt a résztvevők elvesztik lelkesedésüket. A meglévő támogatások nem akkor jönnek, amikor kellenek, hanem a megvalósítás után, utófinanszírozással. Erőssége a projekteknek az, hogy ösztönzőleg hat emberekre az új irányok megjelölésében. A hálózat is segíti őket a tapasztalataival, emellett biztosítja a tudáscserét trendekről, piacokról, pénzügyi dolgokról, jogi lehetőségekről stb. Ez egy igazi csapatmunka valódi ötletekkel. Fel kell tenni a kérdést mit szeretnénk elérni: növekedni, vagy kisebb lépésekben valami mást? n
“The lesson is,that many things are possible and more is achievable than we would think. With a good idea, with good help, with good business plan we should be based on networks. It is important to estimate the legal options and the regulations, also timing is very important, and the co-operation with other young farmers would be a great advantage.”advices the lecturer. But it is hard to keep people motivated. Because of the difficulties of legal rules, business plan, regulations, participants usually lose their moti vation. The subsidy will not come when it is needed, but only after the implementation as a subsequent financing. Strength of the projects is that it is usually worth to encourage people in the designation of new directions. The network helps with experience and ensures knowledge sharing on trends, markets, financial things, law opportunities, etc. This is a real teamwork with real ideas. We have to ask what we want to achieve: to grow or to reach something else in smaller steps? n

Egy Svédországban megvalósított sikeres LEADER programot ismerhettek meg az érdeklődők, melynek következményeként létrejött egy olyan hálózat, amelyben az árértéket egy közös nevezőben határozzák meg a termelők – biztosítva ezzel is a farmok fejlődésének oda-vissza érzékelhető pozitív hatását, fejlődését. 9 millió ember él Svédországban, ahol 63 helyi akciócsoport van és 3,8 millió ember él LEADER területen. Kevés fiatal pályázik LEADER-re és a helyi akciócsoportokban is kisebb számban érhetők el, ezért az egyik nemzeti célkitűzés, hogy az akciócsoportokban több fiatal résztvevővel számolhassanak. A LEADER céljai Svédországban: versenyképes mezőgazdasági, erdészeti szektor létrehozása, a bioenergia fejlesztése, erdősítési tervek létrehozása, a mezőgazdasági hulladék újradefiniálása, a környezet és táj javítása, valamint a halászat fejlesztése. A halászati területek fejlesztése a turistákat is vonzza. A vidéki területen folytatott élet diverzifikációjához és fejlesztéséhez internet elérhetőség kell és a helyi élelmiszerpiacok fejlesztése.
Inquirers have got to know a successful LEADER program in Sweden, in which as a result a network has been built up where common prices are determined by the producers – thus ensuring the positive impact of the development of farms. Altogether 9 million people live in Sweden, where there are 63 local action groups and 3.8 million people live in LEADER areas. Few young people apply for LEADER and also smaller number are available in the Local Action Groups (LAGs), that is why it is a national aim to have more youngsters in the local action groups. The aims of LEADER in Sweden: establishing competitive agricultural and forestry sector, development of bio-energy, making forestation plans, redefining of agricultural garbage, development of fishing and improvement of environment and landscape. The development of fishing areas attracts tourists also. For diversification and development of the life on rural areas the internet accessibility is necessary and the development of local food markets.

Példa egy sikeres programra Svédországban A cél az volt, hogy egy tejtermelő terület és a tejtermelésből való megélhetés fejlődjön. Ennek okán egy hálózat jött létre LEADER pénzből azért, hogy egy jobb árat tudjanak közösen elérni. Először csak a tejtermelők, később a hústermelők is csatlakoztak a hálózathoz. A program 2006. és 2008. között zajlott, 65 résztvevővel, akiknek 15%-a volt fiatal gazda. A cél az volt, hogy a farmonként előállított tej és marhaállomány növekedjen, valamint a termelékenység növekedése által a munkahelyek megtartása és teremtése a régióban szintén fejlődésnek induljon. A program konkrét tevékenységei között szerepeltek tanulmányutak Hollandiába és Németországba, utóbbinál a szarvasmarha-tenyésztésre vonatkozóan tettek gazdaságlátogatásokat a fiatal gazdák. Sor került még szemináriumok szervezésére, szakmai konzultációkra, üzleti tervek kialakítására. A program összességében 225 000 euróba került, amely uniós és önkormányzati támogatásból valamint saját forrásból tevődött össze. A megvalósításba önkénteseket is bevontak, magáról a programról pedig a résztvevők és szakértők számoltak be a helyi rádióban, illetve a helyi terjesztésű lapoknak. Sikeres program volt. Egyik eredményeként említhető, hogy felismerésre került egy adott területen belül az eltérő árak beállítása, különböző árat kaptak ugyanattól a vevőtől a termelők. Ennek tudatában jobb tárgyalási helyzetbe kerültek és együtt jobb árat tudtak kialkudni. A szarvasmarha állomány és a megtermelt tej mennyisége nőtt. 8 új munkahely létesült a farmok fejlődése által. A termelőknek kialakult hálózatra van szükségük. Megszerzett tapasztalataikat más termékekre is szeretnék adaptálni. n 12
Example for a successful project in Sweden. The aim was to develop a milk production area and to ensure the living from milk production. Therefore a network was established from LEADER subsidy to achieve together a better price for milk. First just milk producers, later also meat producers have joined the network. The program was implemented between 2006 and 2008, with 65 participants, 15% of them were young farmers. The aim was to increase the quantity of meat cows and produced milk in the farms, and by the increase of productiveness the keeping and creation of new workplaces also start to develop in the region. The concrete activities of the program included study visits to Netherlands and Germany, the latter farm visits were organised for cattle breeding for young farmers. There were also seminars organised, professional consultations and business plan making. The program altogether costed 225.000 EUR, that was financed by the European Union, self-governmental sources and own sources. Volunteers were also involved in the implementation, about the program participants and experts have reported on local radio and local newspapers. The program was successful. One result was that it has been recognised that the producers got different prices from the same customer. Knowing that they had better negotiation position, and together they could bargain better prices. The number of cows and the amount of produced milk increased. 8 new workplaces were created thanks to the development of the farms. The producers need a well established network. They would like to adapt their acquired experiences to other products too. n

A jószágoknak szánt takarmányt 30 hektárnyi saját és bérelt földön termeli meg. Törekszik a hagyományos állattartás és a természetes földművelés szerinti munkára. Az állatok semmilyen tápot nem kapnak, csupán természetes takarmányt, mint réti széna, lucerna és dara. Jobbára a növénytermesztésben kényszerülnek permet használatára bogár vagy gomba okozta betegségek ellen.
He has chosen meat-cattle keeping as a principal activity, and this was supplemented by keeping sheep and the sale of smoked goods made from pigs. The feed for the stocks is produced on 30 hectares own and hired land. He makes an effort for traditional animal-husbandry and natural farming. Animals do not get any power, but only natural feed like hay, alfalfa and breeze. Mainly in crop production they are forced to use chemicals against bugs or fungal diseases.
Az odafigyelő gondoskodás eredményeként gazdaságát jól menő vállalkozássá fejlesztette. A jó minőségű házi finomságok ízvilága sok ember arcára varázsolt már mosolyt (a háziasszonyok legfőbb örömére). A direktértékesítését nagymértékben segíti önálló weboldala, melyen a gazdaság könnyed, tréfás bemutatásán kívül a farm eseményeiről is folyamatosan informálódhatnak az érdeklődők. Így pl. arról, hogy mikor várható a következő vágás, mely főként az időben történő rendelések miatt és ebből adódóan a friss áru végett fontos, de ugyanígy egy kis állat születéséről is közvetlenül értesülnek a vásárlók. Jelenleg több mint 100 család élvezi áruinak mennyei ízét lakóhelyén és még legalább ennyi a fővárosban. A finomságait vásárokon, különböző városi rendezvényeken is megkóstoltja az érdeklődőkkel, növelve ezzel is gazdaságának népszerűségét. A fentiekhez kapcsolódó tevékenységeiben nem feledkezik el a gyermekekről sem. Részükre állatsimogatón át juttatja el az állat és ember között kialakítható barátság szikráit. A 6×4 méteres fedett területen a kisboci, póniló, kisbárány és a szamár bizonyulnak a legnépszerűbbnek. A fiatal gazdálkodó osztatlan figyelme egyaránt érezhető gazdasága és vásárló köre felett, melyek sokrétűek, és hosszú, kitartó munkával növelhetők a jövőben. Ennek érdekében a gazdálkodó a fejlett technológiát hívta segítségül, melybe sok pénzt és energiát fektetett már, minek okán eredményei a termeléstől egészen az értékesítésig követhetők. n

For example about the expected time of slaughtering, which is mainly important for the orders that should be make in time and consequently, for the fresh products, but it informs directly the customers about the births of small animals. There are currently more than 100 families enjoying the heavenly taste of his products in his living quarters and at least as many in the capital. He makes his subtleties be tasted at fairs and various urban events, increasing the popularity of the farm. Related to the above activities he does not forget about children either. For them he forwards the sparks of friendship, which can be established between man and animal at zoo-stokes. In a 6 × 4 square meter indoor area small calves, pony, donkey and little lamb are seemed to be the most popular. The young farmer’s undivided attention is equally focused on the economy and buyers too, which are multiple, and with a long and hard work it could be increased in the future. In order to get this aim the farmer used advanced technology, in which a lot of money and effort are already invested, so his results from the production to the sales could be seen. n

A house, farm for sick children. The young farmer – who took over the farm form his father – has a farm in North-Western Slovenia, its size is 25 ha included grape, apple and arable farming fields among others. In 2008 flood and hailstorm caused heavy damages in the farm. In 2009 they managed to get over the difficulties when they got support not only from the national agricultural ministry, but even from Brussels too. The co vered own contribution was 50% from the farmer. In this way new orchards, a fruit protection system, and beside that new farm buildings were constructed from the supports. A new enterprise, started a few years ago, could be also followed with attention in the farm. Its basis is a co-operation with organisations dealing with paralysis. On the ground of the co-operation they bought that field where they still work, where they welcome the visitors with competent conditions in rehabilitation, sport facilities and swimming pool could be found together with dealing with horse therapy. The carefully set up agrotourism ensures real relaxation for those who aspired for that, as well as it provides possibility to come to know the process of farming for those who are not able to meet with this style of living. They do organic farming. n
A fiatal gazdálkodó, aki édesapjától vette át a gazdaságot, észak-nyugat Szlovéniában 25 hektáron gazdálkodik, melyen többek között szőlő, alma és szántó területek találhatók. 2008-ban árvíz és jégverés okozott súlyos károkat a gazdaságában. A nehézségekből 2009-ben sikerült kilábalni, amikor támogatási forráshoz jutottak nem csak a hazai agrár minisztériumtól, hanem Brüsszelből is, illetve ehhez 50% önerőt a gazdálkodó biztosított. Így új ültetvényeket telepítettek, gyümölcsvédelmi rendszert építettek ki, mellette pedig gazdasági épületeket is felállítottak a támogatási forrásokból. A farmon egy néhány évvel ezelőtt beindított sikeres vállakozás is figyelemmel kísérhető, melynek alapja egy a gyermekbénulással foglalkozó szervezettel való együttműködésben rejlik. Az együttműködés okán vásárolták meg azt a területet, melyen jelenleg is működnek, ahol rehabilitációra alkalmas feltételekkel várják vendégeiket, sportlétesítmény, uszoda található, valamint lovas terápiával is foglalkoznak. A farmon gondosan felépített agroturizmus igazi kikapcsolódást biztosít az arra vágyóknak, valamint lehetőséget ad a gazdálkodás folyamatainak megismerésére is azoknak, akik számára elérhetetlen ez az életforma. Tanulmányait otthonától távol folytatta, melyet sikeresen tudott alkalmazni családjához visszatérve. A falu meglehetősen szegény volt, így mindenki kételkedve várta vállalkozásának eredményeit. A gondosan felépített stratégia meghozta gyümölcsét. 23 évesen megnyitotta boltját, majd 8 évvel később a következőt is. Amikor elindította a vállalkozást, a tulajdonosnak, akitől bérelte a helységet százalékos arányban fizetett bérleti díjat a forgalom után és ez egy nagyon nagy segítség volt. Kezdetben voltak, akik segíteni akartak, voltak, akik hitelbe adtak árut. Amikor elindult csak egy kabint bérelt, majd később pedig elnyert egy vállalkozói támogatást. Így 40 000 fontnyi támogatás és 60 000 font önerő állt rendelkezésére, hogy megnyithassa a következő boltot. A bolt helyi élelmiszereket árul a falu lakóinak, melyhez részben ők biztosítják a friss árut. n
She attended her studies far from her home, but she could adopt them successfully when she got back home. The village was quite poor, so everybody waited doubtingly the success of her enterprise. The narrowly set up strategy fructified. She opened her shop when she was 23, and after 8 years she opened her second shop. She paid % ratio after her shop’s return to the owner from whom she rented the shop, when she started her enterprise and it was a great help for her. At the beginning there were some people who wanted to help, some of them gave her their products on credit. When she started, she rented just a cabin, later she won an entrepreneurial support. The support was 40.000 GBP and with 60.000 GBP from her own source took to open the next shop. The shop sells local food to the inhabitants of the village, who partly provide the fresh goods themselves. n

A Cornalba gazdaság 1870. óta létezik, melynek alapjait a szenvedély, hagyomány, valamint az innováció alapértékei adták és adják meg napjainkig is. Három fiúgyermek vezeti az üzemet, akik közül egyikük, Ferdinando Cornalba azt mesélte el, hogyan váltak termelőkből vállalkozóvá. A történet főbb megállóit az alábbiakban olvashatják.
The enterprise Cornalba has been existing since 1870, and passion, tradition, innovation were the basic values since then and these are also granted today. Three sons run the business, one of them is Ferdinando Cornalba, he told how they became from producers entrepreneurs. The story’s main stops are the following:
Korábban gabonatermelők voltak, mennyiségi termelők, átlagártermeléssel. Ma már multifunkcionális gazdaságot vezetnek. Olyan gazdaságot, amely termel, előállít, átalakít és értékesít, s amely a minőségi termelésre összpontosít. A termék végső árát pedig a termelési költségek határozzák meg. 1985-ben kezdték a közvetlen értékesítést, rövid termelési lánccal.
Previously they were cereal producers, quantity producers with average price production. Today they lead a multifunctional farm, a farm that produces, processes, transforms and sells. The farm concentrates on quality production. The final price of the product is defined by the costs of the production. They started the direct selling in 1985 with short production chain.

A minőség és az élelmiszerbiztonság viszonya összefügg. A minőség vezet az élelmiszerbiztonsághoz, ami pedig a folyamatos ellenőrzésen keresztül minőséghez vezet. A nyomonkövetés a fő irány. „Ellenőrzött állategészségügy szükséges, saját területen termelt takarmánnyal kell etetni az állatokat, saját vágóhídon vágni.” – javasolja a fiatal gazdálkodó. Közvetlenül ellenőrzik azokat és adják el, miközben az eladott termék megtett útja nulla. Ökológiai fenntarthatóság és fair kereskedelem a cél. A családok bejönnek, személyesen kérik a vágóhídon mindazt, amit szeretnének (hasonlóképpen értékesítik a rizst és a tönkölybúzát is). Mindezek mögött a fenntarthatóság elve él. Ezeknek a formáknak azért van jelentősége, mert környezetvédelmi szempontból kikerüli a csomagolást, ezáltal környezetbarát és mindenki számára olcsóbb is. Olaszországban a háztartási hulladék 40%-a csomagolóanyag. A környezeti hatás tekintetében szintén nagyon fontos, hogy nulla kilométer a termék megtett útja és nincs csomagolóanyag hulladék. Nem a mennyiséghez kötődik jelenleg a termelés, az a múlt volt. Jelenleg a termelés a közvetlen értékesítés igényeihez kötődik és megtakarítással párosul. A fogyasztóért új árusítási, kereskedelmi csatornák létrehozása szükséges, ami mellett a marketing erősítése nagy szereppel bír. Közvetlen eladással csak a termék valódi ára jelenik meg a fogyasztónál. A multifunkcionális mezőgazdaság fenntartható fejlődéssel a fenntartható állapotokat segíti. „Támogassuk azokat, akik minket támogatnak!” n
The relationship between quality and food safety is coherent. The quality leads to the food security, and via the continuous monitoring the food security leads to high quality. The main direction is the follow-up. “Well inspected animal health is necessary. You have to feed the animals with the fodder you produced on your own fields, and slaughter them in your own slaughterhouse.” – suggests the young farmer. They are directly controlled and sold, meanwhile the road of the sold product is zero. The goals are ecological sustainability and fair trade. The families come in to the slaughterhouse, and they ask exactly what they want (rice and spelt are sold the same way). The principle of sustainability is behind it. These forms have the importance because they by-pass the packages and it is environment friendly and cheaper for everyone. In Italy 40% of the house garbage is packaging material. It is important from the viewpoint of the environmental effect that the product takes zero kilometres, so there is no package garbage. Nowadays the production is not connected to the quantity, that was in the past. These days the production is connected to the needs of direct selling, and it is coupled with savings. New selling, marketing channels have to be set up for the consumers, which in addition strengthen the role of marketing. Only the real price of the product comes up at the customers’ with direct selling. The multifunctional agriculture with sustainable development helps the sustainable positions. “Let’s support those who support us!” n

Egy biomassza tüzelésű kazán volt a beruházás tárgya, amellyel fűrészforgácsból és faaprólékból 2 lakóépület és egy tejcsarnok fűtését is ellátják. A kazán beüzemeléséhez egy használaton kívüli épület került felújításra. A beruházás teljes költsége 330 000 euro volt, amelyből 40 000 euro származott európai vidékfejlesztési programból. A kazán 110 kW-os, 93%-os a kihasználtsága. A házak, melynek lakóit a fűtést
The farm is situated in Slovenia, 550 metres height above sea level, with 30 hectares of forest, 25 hectares rented and 15 hectares of owned fields. The subject of the investment was a biomass using furnace that heats 2 living houses and a dairy by using saw shavings and small wood pieces. A building out of order was reconstructed for the operation of the furnace. The total cost of the investment was 330 000 EUR, whereof 40.000 EUR were financed from European rural development sources. The furnace produces 110 kW; its utilization is 93%. The houses, which residents use the heating, are 150 metres away and they pay the costs monthly to the supplier. The price of heating: 1 kWh costs 0,044 EUR. The fix cost is 500 EUR yearly, in summertime the average use is 550 kWh per month, in wintertime it is 3100 kWh per month. It operates with saw shavings and small wood pieces originated from their own forest. Difficulties were in pursuance of the investment: the accounting report, the payment request and the technical and engineering conveniences and the licensing. It probable returns its price in 5 years with the support, in 10 years without support. n

A fiatal gazdálkodó 2004-ben 5 állattal indította el gazdaságát Romániában, Hargita megyében. Célja az volt, hogy növelni tudja gazdaságát és az európai konformnak megfelelő tejet állítson elő. Ahhoz, hogy ismereteit bővítse céljai eléréséért, Németországban és Svájcban is képezte magát agrár tanfolyamokon. Miután tervben ugyan, de megtervezte a célhoz vezető utat, megpróbált a SAPARD pályázaton keresztül támogatási forráshoz jutni. 2006-ban sikerült neki. A SAPARD támogatás mezőgazdasági és vidékfejlesztési támogatás, csatlakozási előtámogatás, amelynek 75%a EU forrás, 25 % romániai forrás. A pályázati érték 300 000 euró volt, amelynek 60%-a nem visszatérítendő támogatás, mert hegyvidéki régióban fekszik a gazdaság. 2006-ban az üszőszám így jelentős mennyiségben megnövekedett (Monbeliard és román piros tarka), 2007-ben pedig megkezdték a kivitelezés. A program segítségével felépítettek egy új istállót, mely 70 fejőstehénnek biztosított helyet a szükséges berendezésekkel, fekvőbokszos elrendezéssel. Az épülethez hozzá tartozik egy fejőház, egy 1600 literes hűtőtankkal. Jelenleg 2 alkalmazottat foglalkoztatnak. Romániában a tejben a felső csíraszám még mindig 1 000 000, az Európa Unióban ez a követelmény 100 000. Romániában még mindig a biztonságos tej előállítása a cél. A gazdálkodó 10 000 és 30 000 csíraszám között termel. A tej mennyisége folyamatosan nőtt, 2008-ra elérte a 14 000 litert. 2011-re szeretnék a tejtermelést 18 000 liter körüli értékre növelni. A gazdálkodó a fennmaradás lehetőségét a biotermelésre való átállásban látja. n
The young farmer started his farm in 2004 with 5 animals in Romania, Hargita County. His aim was to develop his farm and to produce milk that meets the European standard. In order to achieve the objectives of his knowledge, he has trained himself in agriculture courses in Germany and Switzerland. After he had plan, and the way to achieve the aims, he tried to get a SAPARD subsidy. In 2006 he succeeded to get subsidy, which is a pre-accession support for agriculture and rural development financed with 75% from EU-sources and 25% from Romania. The value of the application was 300.000 EUR, from this 60% is non refundable aid, as the farm lays in the mountainous region. In 2006, the number of heifer significantly increased (Monbeliard and Romanian Red Brindle), and in 2007 they started the construction. In the program a new barn was built which provided the necessary equipment and space, laying stalls for 70 dairy cows. A milking house is attached to the stable, with a 1600 litres sized milk fridge tank. At present they employ 2 people. In Romania the upper number of germ in milk is still 1.000.000, but in the European Union the requirement number is just 100.000. In Romania the aim is still the safe milk production. The farmer produces bet ween 10 000 and 30 000 germs. The quantity of the milk increased continuously, in 2008 this was 14.000 litres monthly, in 2011 the expected amount 18.000 litres. In his opinion the only way of subsistence is to deal with bio production. n

A családi vállalkozáson belül, ahol termékeik között liszt-érzékenyeknek készített liszt, valamint bio-chips található, a 2 testvér (egyikük az előadónk személyében) látja el az ügyvezetői feladatokat. A cég alapítója (1990) és tulajdonosa az édesapa. A teljes vállalkozás az ügyvezetőkön kívül még 8 alkalmazottat foglalkoztat. A cég korábban extrudált termékek készítésével foglalkozott, de a piac telítettsége miatt technológiát váltottak. 2005. óta kemencében, minimális zsíradékkal készülnek a chipsek. A teljes üzem két részre osztható: rendelkeznek egy saját malommal, és egy a chipset gyártó gépsorral.
The young farmer has presented his business which was set up jointly with his family, which he has managed to make a unique enterprise at European level supported by the various subsidies. Within the family enterprise, there is flour among the products, which is made for flour-sensitive people and also organic-chips, 2 brothers (one of them is the presenter) are responsible for the executive tasks. The company’s founder (1990) and its owner is the father. Beside the leaders 8 more people are employed in the business. The company previously dealt with the preparation of extruded products, but the technology was changed because of the market saturation. Since 2005 chips have been prepared in the oven with minimum fat. The entire plant can be divided into two parts: one of them is an own mill, and the other is the production line, which produces the chips. In 2008 within a complex rural development project the mill was renewed firstly, 19
2008-ban egy vidékfejlesztési komplex pályázat során újították fel először a malom épületét, később pedig a gyártó részleget is. 50%-os támogatással, és banki hitel felvétellel valósult meg a közel 1 millió Euró értékű beruházás, amiből a malom 350.000 Euróba került. A malom esetében a beruházás 7-8 év alatt térül meg. 2007-ben kezdték el a bio-chipsek gyártását. Az ehhez szükséges alapanyagot főként helyi termelőktől vásárolják. Évi 100-120 tonna bio kukoricát dolgoznak fel. A beszállított alapanyag vizsgálatát egy külső laboratórium végzi, mert ők nem rendelkeznek saját, felszerelt laborral. Minél alacsonyabb a kukorica csíratartalma, annál jobb chips alapanyag. Az üzem célja, hogy minőségi terméket állítsanak elő, ezért nem is használják ki a teljes termelési kapacitásukat. A jelenlegi termelési mennyiséget képesek lennének akár háromszorosára is növelni. A malom teljesítménye 700kg/óra, a lisztet pedig 7 féle szempont szerint osztályozza. A malomban megőrölt bio kukorica lisztet, feldolgozás nélkül is értékesítik, főként gyártóknak adják tovább. Ez az eladott mennyiség viszont nem túl jelentős, mert a malomban megőrölt kukoricát 90%-ban a saját sütődéjükben használják fel. Így tehát kiskereskedelmi forgalomba nem kerül a bio kukorica liszt. A gyártás során felhasznált gépek főként saját fejlesztésűek, azaz saját tapasztalat alapján készültek, de japán gyártmányú gépeket is alkalmaznak, pl. a Cibi termékek gyártásában. A teljes gyártósor teljesítménye napi 6000 zacskó. A cég nem szállít áruházláncoknak, biotermékeket forgalmazó disztribútorokkal állnak kapcsolatban. Összesen 30 féle különböző termékük van. Legjelentősebb piacaik Csehország, Spanyolország, Ausztrália, de jelen vannak a Európai Unió minden országában, és a tengerentúlon is. n

The investment in the case of the mill will be returned within 7-8 years. They started the production of organic-chips in 2007. Necessary materials are purchased mainly from local producers. 100-120 tons of organiccorn is processed. The supplied stock is tested by an external laboratory, because they do not have their own, well-equipped lab. The lower the maize seed-contain is, the better the chips stock will be. The plant aims to produce quality product, and therefore they can not exploit their full production capacity. They could increase up to triple of the current volume of production. The performance of the mill is 700 kg/h and the flour is classified according to 7 different aspects. The organic corn flour crushed in the mill is also sold without any processing treatment, mainly to manufac tures. This volume is not very significant, because 90% of the crushed corn mill is used in the own bakery. Thus, the ecological corn flour is not get into the retail market. Machines – which are used in the production – are mainly own developments, they are made by own experience, but also Japanese-made machines are used, for example in the production of “Cibi” products. The total daily production capacity is 6000 bags. The company does not deliver to food-stores; it is in contact with distributors who deal with ecological produces. Altogether they have 30 different kinds of products. Their main markets are the Czech Republic, Spain, Australia, but they reside at the European Union countries and at overseas as well. n

Családi gazdaság Bakson, Szeged mellett, amelynek története 1989ig nyúlik vissza. A szülők egy üvegház telepet vásároltak az akkori TSZ-től, amely elmaradott kertészettel is rendelkezett. A tulajdonosváltással szemléletváltás is jött. 2001-ben baromfiágazatuk tönkrement, így a kertészet irányába próbáltak elindulni. A vállalkozás tulajdonosa 30 éves volt, és pályázatok segítségével termálvízfűtéssel működő üvegházat szeretett volna a telepen lévő termálkút felhasználásával. A cég versenyképességének alapja a térség jó geofizikai adottsága. Csongrád megyében a geotermikus gradiens 5 ºC 100 méterenként, nagyon jó minőségű hévizet rejt magában. A telepen sikerült megvalósítani a beruházást, 2 hektáron agrártámogatási pályázatból nyert forrásból. Jelenleg paradicsomot termelnek.
It is a family farm in Baks, near Szeged, and has its history since 1989. The parents bought a greenhouse estate from the former cooperative, that also had a high and dry horticulture. The change of the owner has brought also a change in the way of thinking. The poultry sector collapsed in 2001, and they saw the future in horticulture. The owner of the enterprise was 30 years old, and by the help of applications he wanted to build a greenhouse operating with the heat of the thermal water. The base of the competitiveness of the business is the good geophysical facility of the region. The geothermic gradient is 5 ºC per 100 metres in Csongrád county, and the ground hides very good quality thermal water.

Csepegtető öntözéssel, klíma komputerrel, szén-dioxidos hőcserével üzemeltetik az üvegházat, mintegy 2 hektáros területen, mindezek mellett pedig biológiai védekezéssel biztosítják a növények védelmét. Az első beruházás 250 000 euro, a második beruházás megközelítően 500 000 euro. Saját erőből és banki forrásokból bővítették telepüket, az ehhez szükséges gépesítést uniós forrásból fedezték. Így mobil művelőkocsikat vásároltak, valamint a klímavezérlés és a levegőrendszer fejlesztése is megtörtént. A jövőt továbbra is a területnövekedésben látják. Baks település több szempontból is hátrányos, csak 37%-os intenzitású volt a támogatási arány, viszont a kamattámogatással ez 50 %- ra emelkedett. Az üvegházakban a termelés 2001-ben kezdődött, akkor még a nagyméretű lédig paradicsom volt az igény. A második blokkban fürtös paradicsom termelés kezdődött, amit jól fogadtak a piacon. A telepen működő biológiai növényvédelem 2002 óta sikeresen működik (ez integrált növényvédelemmel termelt árut jelent), minimálisra csökkent a kémiai védekezés szerepe a biztonságos élelmiszer előállításának érdekében. Az új fajták keresése és tesztelése folyamatos, mert piaci rést kell keresni, ez az életben maradás kulcsa. Az uniós támogatásokról összességében pozitív a megítélés. A fejlesztések nem valósulhattak volna meg a programok nélkül. Ezeknek a jövőben is nagy szerepe lesz, azonban szükséges a gyorsabb döntés, gördülékenyebb kifizetés, kevesebb bürokratizmus és nagyobb kiszámíthatóság. A fiatal gazdák felé jó lenne a pozitív diszkrimináció. A támogatási előleg csak 2009-től került bevezetésre, 20%-os arányú. Alacsonyabb, mint más ágazatoké, így a vállalkozókat nagyobb faktorálásba kényszeríti. Fontos lenne ennek orvoslása. n
Two hectares greenhouses were built up from the subsidy of the Hungarian agricultural application in the estate, in which they produce tomatoes. They operate the greenhouse with trickle irrigation, climate computer and carbon dioxide heat changer. They do the plant protection with biological defence. The first investment costs 250.000 EUR, the second approximately 500.000 EUR. They expanded from own and bank sources and mechanized from EU sources. They bought mobile cultivation carts, and also the development of the climate control and the air system was done. They see the future henceforward in the expansion of the size of the estate. Baks as a village is disadvantaged for many reasons, the support rate was only 37%, but with the interest subsidy it went up to 50%. In the greenhouse the production started in 2001, then there was demand for big sized tomatoes. In the second block they started to grow tress tomato that was welcomed in the market. There is biological plant protection in the estate, this is successful since 2002, and it means products grown with integrated plant protection. The role of chemical protection was decreased to the minimum in the interest of safe food. The search for new species and the testing are continuous, and they have to find a gap on the market, this is the key to survive. The overall judgement about EU sources is positive. The developments could not be made without the programs. This will have important role also in the future, but faster decision making, more fluent payments, less bureaucracy and higher computability are needed. The positive discri mination would also be good concerning young farmers. The payment in advance has been brought since 2009, and it is 20% of the support, this is lower than in other sectors, this way it forces the entrepreneurs for bigger factoring. The remedy of it would be important. n

Láng Letícia kertészmérnökként, szőlész-borászként végzett. 20022003-ban Kőszeg város borkirálynője. Szakmai tapasztalatokat itthon, Olaszországban, Franciaországban gyűjtött. Jelenleg 150 ha-on folyik a termelés Kőszegen, mely a soproni borvidék része. Talajai hűvösek, kötöttek és a klíma is hűvös, ezért az itteni borok markánsabbak, savasabbak. A Soproni borvidéken főként kékfrankost termelnek. Aktív szőlészeti, borászati hagyományőrzést folytatnak, kis kézműves borászatban, hagyományos fajtákkal. A családtagokon kívül 3 fő állandó alkalmazott és 8-10 fő segíti munkájukat. Fontosak a helyi, hagyományos tájjellegű fajták, ezekre építenek a jövőben is. 10 ha- ból 8 ha saját, 2 ha bérelt. Szőlőtermesztés termőhely választásnál rendszerint déli fekvéssel, a késői érésű fajtákat igyekeznek középérésűekkel kombinálni. Művelésmódjukat az ernyős művelésmód jellemzi. 5-7 tonna/ha termésátlagokkal dolgoznak. Főleg a soproni borvidékre jellemző kék szőlőfajtákkal foglalkoznak, választék bővítésként fehérbort, rosé bort, édes desszertbor is készítenek. Szőlőültetvényük nagy része az őrségi tájvédelmi körzet közelében helyezkedik el. A feldolgozás során az erjedés spontán történik, nincs élesztő, fahordós érlelést alkalmaznak. Éves szinten 500 hl-t állítanak elő, amit főként a közelben értékesítenek, de vásárokon, borfesztiválokon is jelen vannak. Szállodákkal is kapcsolatban állnak, a vidéken erősödő agroturizmussal lépést tartva. A szürettel egybekötött borkóstolás egyre népszerűbb a turisták körében, így a jövőben is szeretnének erre hangsúlyt fektetni. Támogatások közül az agrár környezetgazdálkodási támogatást és a fiatal gazda támogatást vették igénybe. Fontosnak tartják a növényvédelmi kutatások támogatását és fejlesztését. A jövőt tradicionális fajták telepítésében látja és az agroturizmusban. n
She is a wine grower from Kőszeg, young farmer and wine queen. She grew up in a farming family, in the Láng winery, which determined her choice of career. Letícia Láng graduated as horticultural engineer, grape and wine grower. She was the wine queen of Kőszeg town in 2002-2003. She gained professional experience in Hungary, in Italy and France. Kőszeg is part of the Sopron wine region with 150 ha field for producing. The soil is chilly and bound, and also the climate is chilly. That is why the wines here are more strong, and more acidic. Mainly „kékfrankos” is produced in Sopron wine region. They keep actively the viticultural and wine traditions in a small hand-craft winery with traditional varieties. Beside the family members they have 3 permanent emloyees and 8-10 helpers. The local, traditional, provincial species are important, they want to rely upon them in the future. 8 hectares are their own, 2 are rented from their 10 hectares. They try to choose southern located fields and late maturing species combined with middle maturing ones. The cultivation manner is umbrella cultivation. The average yield is 5-7 tons per hectare. They grow mainly the typical blue grape species in the Sopron wine region, to expand their palette they make white, rosé and dessert wines also. The biggest part of their vineyards is situated close to Őrség landscape protection area. During the processing the fermentation happens spontaneously, they do not use yeast. The fermentation is made in wooden barrels. They produce 500 hectolitres of wine yearly. Principally it is sold in the neighbouring, mainly from house, but they usually participate on fairs, wine festivals. They have connection with hotels also, as in the countryside the agricultural tourism is increasing. The wine tasting connected to wine harvest is more and more popular among the tourists, so they want to emphasise on it in the future. They applied for agricultural environmental farming support and the young farmer support of the supports. They attach importance to support and develop the researches on plant protection. The future is in the planting of traditional species and agricultural tourism in her opinion. n

Magyarországon az ártéri gímszarvas tartás nem elterjedt ágazat, az engedélyeztetés, a bonyolult feltételek és a vadász társadalom hozzáállása miatt- Magyarországon mindössze 4-5 farm rendelkezik engedéllyel. Feleségével együtt hozták létre a szarvas-farmot 2007-ben, melynek továbbfejlesztési céljából több ízben vettek részt külföldi tanulmányutakon. 2008-ban fiatal gazda forrást kaptak. A terület vízrendezését segítő meliorációs munkákhoz szintén pályázati úton jutottak támogatáshoz. A minőségi állományt több helyről gyűjtötték egybe, melynek során többször okozott fejtörést az állategészségügyi szabályok szigorúsága. Ugyan Európában viszonylag könnyen lehet élő állatot szállítani, de például az oroszok olyan követelményeket támasztanak, amelyeket csak Magyarország és Románia tud teljesíteni. A nagy szarvas-tenyésztő országok közül Németország, Franciaország, Ausztria, Anglia nem tudja teljesíteni azokat, mert ők vakcináznak bizonyos betegségekre. Így az élő állatként történő szállítás nehézkes A legnagyobb állomány Új-Zélandon található, amelynek 60-70%-a magyar génállományból ered, jelenleg nagyon beltenyésztett. A szarvastenyésztő olyan állományt kívánt előállítani, amely magas genetikai értékkel rendelkezik. Ártéri gímszarvas tenyésztés 23,5 ha-on folyik a gazdaságukban, ebből 11 ha legelő, amely kimondottan a szarvas táplálkozási sajátosságait veszi figyelembe. A maradék területen takarmányt termelnek. Összesen 36 db tenyészállattal rendelkeznek. Náluk található meg az ország két legjobb bikája. Naponta 1-1,5 órás munkával látják el a szarvasokat a feleségével ketten. Saját kutatási programokat is folytatnak Új-Zélanddal, Angliával, Horvátországgal és Szlovákiával közösen. Tenyészérték-becslési eljárásokat alkalmaznak a minél jobb színhús, nemesebb trófea eléréséért. Kis állománynál a beltenyészetet minimalizálni kell. A kutatás számára, a korszerű vadgazdálkodás számára olyan eredmények kellenek, amelyek terepi körülmények közt, szabad környezetben is hasznosíthatóak. A saját fejlesztésű szoftverben az összes állat minden fontos értékmérő adata, születésüktől kezdve rögzítésre kerül. A szelekció alapját képezik az adatok. Olyan technikát alakítottak ki, ahol a szarvasokat sérülésmentesen tudják vizsgálni. Éves folyamatos testsúlymérés van, mérik a bikák agancsfejlesztő képességét, az agancsról 37 paramétert, a testről 9 paramétert vesznek fel. Érdemes ellátogatni a farmra, különösen június, július hónapban, mert akkor könnyen látható, megtekinthető az állomány. n
In Hungary the red deer breeding in floodplains in not a very prevalent sector, because of the licensing, the difficult conditions and the attitude of the hunter society. In Hungary only 4-5 farms have the permission to breed red deer in floodplains. They founded the deer farm in 2007 with his wife, in order to develop on the farm they attended several study visits abroad. They both won young farmer subsidy in 2008. They also won support for melioration works to help the the water settlement of the field. They collected the breeding stock from several places, during it the strictness of the animal healthcare rules caused problems several times. It is relatively easy to transport living animals in the EU, but for example the Russians have requirements that can be fit only by Hungary and Romania. From the big deer-breeding countries England, Germany, France, Austria can not fit these conditions, because they use vaccines against some diseases. In this way the livestock transportation is difficult. The biggest population can be found in New Zealand, 60-70% of this population came from Hungarian gene substance, and nowadays it is very inbred. The deer breeder wanted to make a population with high genetic value. The red deer breeding in floodplains is on a 23,5 ha farm. 11 hectares are pasture from it, which takes into consideration the nutritional specialities of the deer. On the rest of the farm they produce fodder for the animals. They have 36 breeding animals. They have the two best stags in the country. It takes 1-1,5 hour long work for him and his wife to tend the animals. They do their own research programs together with New Zealand, England, Croatia and Slovakia. They use breeding value estimation methods to achieve better boneless meat, grander trophies. The inbreeding has to be minimized in small population. For the research, and for the modern breeding they need results that can be used in open environment as well. They record all the data of all the animals from the birth in their self-developed software. These data are the base of the selection. They established a technology that allow them to examine the deer without hurting them. They measure their weight every year, the antler growth ability of the stags. They measure 37 parameters of the antler and 9 parameters of the body. It is worth to visit their farm, especially in June, July, as in these months the sock could be viewed easily. n

Szabó Péter felmenői között nem volt mezőgazdasággal foglalkozó rokon, a méhészet irányába saját elhivatottsága vezérelte. Közgazdasági és környezetmérnöki végzettséggel bír, melyből adódóan Budapesten dolgozott 2005-ig, amikor úgy döntött, hogy önállóan létrehozza saját méhészetét. Terveinek megalapozására önkéntes munkát vállalt az Európai Önkéntes Szolgálaton keresztül (European Voluntary Service, EVS) egy olaszországi kolostorban, ahol egy kisebb méhészet felett is gondoskodhatott ott lévő társaival. Kilenc hónap elteltével hazaérkezett, majd az EVS által meghirdetett„Befektetés a jövőbe” című kiírásra Ő is benyújtotta pályázatát, melynek elbírálását követően 3900 eurós forráshoz jutott. Ennek köszönhetően el tudta végezni a méhész szakképzést Velencén, valamint megvette az első 20 bioméhcsaládját és az alapvető méhészeti eszközeit. Első önálló méhészetét a galgahévízi ökofaluban alakította ki, ahonnan később máshová kellett települnie a falu terjeszkedése miatt. Ez nem okozott törést a vállalkozás fejlődésében, 2007-ben már 250 kg bio akácmézet, 100 kg bio vegyesvirág-mézet és 100 kg hagyományos napraforgómézet szorgoskodott össze az állomány. Új marketingstratégiára volt szükség, melynek felépítését a méz fogyasztására alapozta. A kidolgozásában nem csak hazai, hanem nemzetközi szinten is vizsgálódott. Ennek főként azért van nagy jelentősége, mert Magyarországon, más európai országokhoz mérten, nagyon alacsony a mézfogyasztás. Németországban átlagosan három kiló mézet fogyasztanak évente, míg hazai szinten csak harminc dekát. Ezek a számok pedig egyértelműen a nemzetközi piac felé való nyitást irányozták. 2008-ban méhcsaládjának száma elérte az ötvenet, melyek a nógrád megyei Berkenyén szorgoskodtak. 2009-ben tovább bővítette gazdaságát, melyet a Fiatal Gazdálkodók Induló Támogatása című pályázatból tudott megvalósítani. A támogatásból rozsdamentes tárolókat, újabb kaptárakat és tehergépkocsit tudott vásárolni. Az állománya 50 méhcsaláddal bővült, ezért a Bakonyban folytatta újabb méhészeti területeinek felkutatását. Az így beállt változás nem csak a méheknek volt kedvező, hanem gazdájuknak is az együttműködés jegyében. A bakonyi méhészekkel kialakított stabil kapcsolat újabb lehetőségekhez engedték a gazdálkodót a virágpor, speciális mézek, propolisz forgalmazásában. 2008 óta rendszeresen részt vesz hazai és nemzetközi biofesztiválokon, több ízben díjazták is munkájának eredményességét. A sikerek számos nemzetközi kapcsolat létrejöttéhez hozzásegítették, melyek üzleti szálaiból kisebb hálót szőtt a világ térképén – termékei többek között Svájcba, Németországba, Hongkongba is eljutnak. Szabó Péter szakértelmét itthon is elismerik, ugyanebben az évben kérték fel a fejér megyei méhészeti egyesület elnöki tisztségére. 2011-re szeretné tovább növelni a méhcsaládjai számát, a hazai méhészkapcsolatokat tovább erősíteni. Útravalóul egy fontos tévhitet tisztázott a hallgatókkal: minden valódi méz kristályos, illetve kristályosodásra hajlamos. A hamis méz sajátja az állandóan folyékony állapot. A kristályossághoz csak nálunk tapad valami negatív tartalom. A méz egyszerű cukrokban gazdag, túltelített oldat, víztartalmának 20% alatt kell lennie. A víz folyamatosan oldja magában ezeket az egyszerű cukrokat, és amikor többet már nem tud, akkor kristályként kicsapja magából. Ez a méz kristálya. Ha a méz rövidebb hosszabb idő után nem kristályosodik, akkor más anyagokat is tartalmaz (izocukor). Tehát kristályos, termelői mézet vegyünk és együnk! n
None of Péter Szabó’s ancestors dealt with farming, he orientated towards apiary on his own interest. He has a degree in economics and environmental engineering, by it he worked in Budapest until 2005, when he decided to establish his own apiary. To establish his plans he undertook voluntary work by the European Voluntary Service (EVS) in an Italian monastery, where he could have arrange a small apiary with his fellows. Nine months later he came home and submitted his application to a tender of EVS “Investing in the Future”, and by the decision on the application he won 3900 Euro. Thanks to it he could attend a bee-keeper training inVelence , and bought the first 20 bio-bee families and the basic means of bee-keeping. His first apiary was developed in Galgahévíz in an eco-village, from where he had to move to somewhere else because of the expansion of the village. It did not cause a break in the development of the business because in 2007 250 kg of organic acacia honey, 100 kg of organic mixed flowers honey and 100 kg of conventional sunflower honey was produced by the bees. A new marketing strategy was necessary to build up which was based on honey consumption. For the development of it, he made a research not only domestically but also internationally. It has a great importance, because in Hungary, compared to other European countries, the honey consumption is very low. In Germany, on the average, people consume three kg of ho ney per year, while in Hungary it is only thirty decagrams. These numbers are clearly allocated him to open towards the international market. In 2008, the number of his bee families reached fifty, which were producing honey in Berkenye, in Nógrád county. In 2009 he has further expanded his farm, which was implemented by the Young Far mers Installation Aid. From the support he could buy stainless steel containers, truck and new bee hives. The colony has developed with 50 bee-families, so he continued to seek new areas for bee-keeping in Bakony mountain. The resulted changes were not only beneficial for bees, but also for the farmer in the spirit of cooperation. The stable relationship which was built up with bee-keepers in Bakony created new opportunities in the distribution of pollen, special honeys and propolis. Since 2008 he has been regularly participating in national and international bio-festivals, on several occasions he was awarded for his effective work. The successes helped him to build up many international connections, reaching every part of the world on the map – products can be bought in Switzerland, Germany and Hong Kong. Péter Szabó’s experiment is also acknowledged in Hungary, in the same year he was asked to be President of Bee-Keepers Association in Fejér county. Till 2011 he would like to increase further the number of colonies and to strengthen the domestic bee-keeper relationships. At last he has made clear an important misconception for the audience: real honey is all crystalline and liable to crystallize. False honey is always in liquid state. Only we think that crystalline state is something negative. Honey is rich in simple carbohydrates, it is a saturated solution and water content should be below 20%. The water permanently dissolve these simple sugars, and when it can not dissolve more, then crystallize. This is the honey’s crystal. If honey does not crystallize after shorter or longer time, it also contains other substances (iso-sugar). So, buy and eat crystalline honey from producers! n
