EDITORIAL
Toekomst ontmoet nostalgie In de vorige uitgave keken we naar aanleiding van ons bedrijfsjubileum terug op de laatste twee decennia. In die periode hebben zich in de sector maaltijddistributie wezenlijke veranderingen voorgedaan. Wij kunnen met trots stellen dat wij met onze ontwikkelingen daar een belangrijke bijdrage aan hebben geleverd. In dit magazine stellen wij onder meer enkele projecten voor die wij in de beginjaren van onze firma hebben gerealiseerd. Vele van onze oude systemen zijn nog steeds in gebruik. Sommige daarvan kunnen wij weer nieuw leven inblazen door ze aan te passen voor nieuwe regenereersystemen. Ik wil hier opmerken dat onze opdrachtgevers ons in het verleden telkens weer voor uitdagingen hebben geplaatst, die ons menig slapeloze nacht hebben bezorgd. Maar tegelijkertijd wil ik ze daarvoor ook bedanken, want door de vereiste denkprocessen konden ideeën voor nieuwe en verbeterde systemen opkomen. Ook stellen wij in dit nummer opnieuw vier van onze medewerkers voor, zodat de klanten weten wie waarvoor verantwoordelijk is bij Menü-Mobil. We zullen deze rubriek ook in komende uitgaven voortzetten. Ik wil u tot slot ook wijzen op de prijsvraag op de twee laatste pagina’s. Ook nu maakt u weer kans op fantastische prijzen uit Tirol.

Nostalgia meets the future In the last edition of Serve & Enjoy we took a look back at the last two decades as a part of our 20th birthday celebrations. There have been substantial improvements in food distribution during this time. We proudly claim that our developments have contributed to these improvements. Among other things, you can read about some of the projects, which we implemented in the initial years of our company’s histor y. Many of our “old” systems are still being used and we have revived others by converting them over to new regeneration systems. I would like to point out here that our clients have, time and time again, presented us with challenges that have caused some sleepless nights; I am however grateful because the time spent solving these problems has led to the development of new and improved systems. So that our customers also know, who at Menü-Mobil is responsible for what, we are once again introducing four of our employees in this edition. This is something, we will continue to do in future editions of Serve & Enjoy. Finally I would like to remind you of our Quiz on the last two pages. Moderne maaltijddistributie In het interview vertelt Josef Draxl hoe industriële onderneming en en zelfs skiliftexploitanten gebruik maken van producten van Menü-Mobil. En verder kondigt hij een productinnovatie aan. Meneer Draxl, wat zijn de be langrijkste klanten van Menü-Mo bil? Draxl: Met name zorgcentra voor se nioren en ziekenhuizen maken gebru ik van onze maaltijddistributiesys temen, waarmee het eten warm op tafel komt. Wij richten ons echter ook in het algemeen op het oplossen van problemen bij de maaltijddistributie en we hebben ook klanten uit andere branches. Aan welke klanten denkt u daarbij spontaan? Ik kan een heel concreet voorbeeld noemen uit de directe omgeving van onze hoofdvestiging: in Tirol maken enkele skiliftexploitanten gebruik van het „Classic“-systeem voor medewerkers die op grotere afstand van de skihutten werken. De maal tijden worden bij deze medewerkers afgeleverd, die ze op de werkplek kunnen nuttigen. Verder behoren ook
een aantal scholen en kleuterdag verblijven tot onze klanten. Kunt u nog andere voorbeelden noemen? Ja! Een aantal grote industriële on dernemingen zweert inmiddels ook bij ons „Classic“-systeem. Vooral bedrijven waarvan de medewerkers in ploegendiensten werken, als de kantine al gesloten is. Door de goe de warmte-isolatie van de module „Classic“ kunnen ook deze mede werkers genieten van een warme maaltijd. Wie profiteert er verder nog van maaltijddistributie met Menü-Mo bil? Bijvoorbeeld werknemers in een rol stoel. Voor hen is de afstand op grote bedrijfsterreinen vaak te groot om binnen een normale pauze naar een kantine te gaan, te eten en terug te keren. Als een soort sociale dienst
verlening zorgt de werkgever in dat geval voor een Tafeltje Dekje op de werkplek, waardoor de werknemer zonder veel moeite in het genot komt van een warme maaltijd. Welke nieuwe systemen gaan het productportfolio van Menü-Mobil aanvullen? Voor contactwarmtesysteem bieden wij in de toekomst een nog comforta beler systeem aan. Bij „Contactline“ is niet langer de transportwagen voor zien van verwarmingselementen, maar beschikt elk dienblad over een verwarmingselement voor de soep en de hoofdmaaltijd. Waar kan men hierover informatie vinden? In onze volgende uitgave stellen wij een project voor, waarbij deze maat oplossing door de vernieuwing van het maaltijddistributiesysteem nodig werd. Tot die tijd kunnen belangstel lende klanten ons natuurlijk ook op bellen of een kijkje nemen op onze homepage, die we trouwens een tijd je geleden in een nieuw jasje hebben gestoken.

Modern food distribution In this interview Josef Draxl explains how industrial enterprises and even ski lift operators rely on products from Menü-Mobil. He also reveals a new product innovation.
Mr. Draxl, who are Menü-Mobil’s main customers? Draxl: In particular senior citizens homes and hospitals employ our food distribution systems, to ensure a hot meal on the table. We see ourselves however as problem solvers for food distribution in general and also have businesses in other industries as our customers. Which occur to you spontaneously? I can give you a concrete example which is located just near our company headquarters: In Tirol a number of ski lift operators use the “Classic” system for the lift operators, who work a long distance away from the ski huts. Their meals are sent to them hot and they can enjoy them where they are. A number of schools and kindergardens are also among our customers. Can you give us more examples? Yes! Some large industrial enterprises swear by our “Classic” system. In particular those with employees who work
the night shift and have their breaks when the cafeteria has long since closed. With our kind of food distribution these employees also get to enjoy a hot meal. Who else profits from the Menü-Mobil food distribution systems? Workers in wheelchairs are also good examples. Often the premises of large industrial enterprises are simply too extensive for them to take a regular lunch break and be back at their work place on time. Their meals are delivered directly to their offices as a form of social service on the part of the employers so that these employees can enjoy a hot meal in comfort.

Which new systems are set to expand Menü-Mobil’s product range? In the future we will be offering an even more comfortable contact heating system. In the “Contactline” system the tray transport trolley will no longer be fitted with heating plates. Instead this

Samenwerking met succes Al bijna 20 jaar heeft Menü-Mobil een zakelijke band met het Gemeindeverband Altenwohnheim Telfs, de gemeentelijke seniorenhuisvesting Telfs. Daar maakt men momenteel gebruik van de maaltijddistributiesystemen Inductline en Inducook. Vanaf 1990 maakte het bejaardenhuis aan de Wiesenweg in Telfs met zijn toen 20 bewoners gebruik van het systeem Caldotray van MenüMobil. In 1992 werd het complex verbouwd om plaats te bieden aan 120 bewoners. Bij de voorbereidingen hiervan dacht men ook na over de toekomstige maaltijdverzorging. Toen al dacht men aan een keuken volgens het principe „Cook & Chill“,

een voorstelling die pas tien jaar later zou worden verwezenlijkt. Tot die tijd bleef men gebruik maken van het vertrouwde warmhoudsysteem Caldotray. Sinds enkele jaren is op de Wiesenweg ook de beheersorganisatie van de seniorenhuisvesting gevestigd; de organisatie is voor maar liefst tien gemeenten verantwoordelijk voor onder meer begeleide woonvormen.

Moderne tijden
In 2002 werd in Telfs-Schlichtling een nieuw complex met 70 wooneenheden opgeleverd. “Om daar een nieuwe keuken in te richten zou tot enorme investerings- en bedrijfskosten hebben geleid, en daarom hebben wij ervan afgezien. In plaats daarvan worden de maaltijden voor Schlichtling bereid in de nieuwe, centrale „Cook & Chill“-keuken aan de Wiesenweg en van daaruit hierheen vervoerd”, vertelt Peter Gspan, hoofd van de Gemeindeverband Altenwohnheim Telfs. De 14 bewoners van de begeleide woonvorm krijgen hun eten aangeleverd in de „Classic“-Box en verwarmen de maaltijd met het regenereersysteem Inducook. Voor 56 andere bewoners wordt gebruik gemaakt van het dienbladsysteem Inductline. De acht inductiewagens in Schlichtling werden voorzien van externe generatoren: “Het is per slot van rekening zinloos om rond te sjouwen met zware techniek”, licht Menü-Mobil-directeur Josef Draxl toe. En ook de 120 bewoners aan de Wiesenweg krijgen hun warme maaltijden sinds 2002 uit de „Cook & Chill“-keuken geleverd met „Inductline“-wagens met geïntegreerde techniek op het dak.
Andere projecten
In de jaren daarna verwezenlijkte de organisatie nog andere bouwplannen: in Telfs-Lumma werden 31 en in Telfs-Hanffeldweg 22 begeleide wooneenheden opgeleverd; verder in
de andere lidgemeenten: 11 in Oberhofen, 7 in Flaurling en 11 in Leutasch. Net als de 14 bewoners van de begeleide woonvorm in Schlichtling krijgen ook de bewoners van deze andere eenheden hun warme maaltijd geleverd met het systeem „Inducook“. “Daardoor kunnen ze het middag- of avondmaal nuttigen op een tijdstip van hun keuze; zij hoeven het systeem pas kort van tevoren te activeren”, aldus Gspan over de voordelen van deze moderne vorm van maaltijddistributie van Menü-Mobil.
Honderden maaltijden
In 2008/2009 werd een nieuw seniorencentrum met 46 bedden in Seefeld opgeleverd. “Eigenlijk heeft een faciliteit van deze omvang een eigen keuken met minstens zes medewerkers nodig”, vertelt Gspan. Maar de organisatie zag daarvan af! De maaltijden worden in plaats daarvan eveneens bereid in de centrale keuken te Telfs en met een kleine vrachtwagen naar Seefeld vervoerd. De weg daarheen voert over een twaalf kilometer lange bergroute met een stijgingspercentage tot negen procent. Het ontwerp van het systeemservies voorkomt daarbij dat er wordt gemorst. Voordat de maaltijden worden genuttigd, worden ze verwarmd in de inductiewagen. “Sinds de inwijding van het seniorencentrum in Seefeld bereiden wij in onze centrale keuken dagelijks 300 middagmaaltijden en bijna elke dag minstens zoveel avondmaaltijden”, zegt Gspan tot slot.
De maaltijden voor het seniorencentrum in Seefeld worden vanuit Telfs geleverd. The meals for the senior citizens home in Seefeld are delivered from Telfs. In de centrale keuken worden dagelijks 300 middagmaaltijden en bijna evenveel avondmaaltijden bereid. 300 lunches and nearly as many dinners are prepared in the central kitchen everyday.

Successful cooperation For nearly 20 years Menü-Mobil has had an ongoing business relationship with the Local Authorities Association which runs the senior citizens home in Telfs. The food distribution systems “Inductline” and “Inducook” are currently in use there. In 1990 the senior’s home on Wiesenweg in Telfs had just 20 residents and introduced the food distribution system “Caldotray” from Menü-Mobil. In 1992 the house was extended to accommodate 120 residents. At the time considerations were also made about how the supply of meals could look in the future. A Cook & Chill kitchen was considered however it wouldn’t be realised for an-other 10 years. In the meantime the senior citizens home continued to rely on the tried and tested food distribution system “Caldotray” to keep meals warm. The senior citizens home in Wiesenweg has also been home to the Local Authorities Association administration for a number of years. The association is responsible for assisted living in a total of ten municipalities.
Modern times In 2002 a new complex with 70 units was built in Telfs-Schlichtling. “Having a kitchen in the complex would have been extremely expensive, both building it and running it and so we decided against it. Instead, the meals are prepared in the Cook & Chill kitchen in Wiesenweg and then delivered to Schlichtling.” explains Mr. Peter Gspan, head of the Local Authorities Association senior citizens home in Telfs. The 14 people in “assisted living” receive their meals in the “Classic”-Box and heat them up with the regeneration system “Inducook”. Another 56 residents are supplied from the tray trolley “Inductline”. The eight induction trolleys required in Schlichtling were equipped with external generators: “It makes absolutely no

sense to push around this type of heavy machinery” explains Menü-Mobil’s managing director Josef Draxl. Since 2002, the 120 residents in Wiesenweg have also been supplied with hot meals from Cook & Chill kitchen using Inductline and the integrated technology on the tops of the trolleys.
Further projects In the following years the Local Authorities Association in the senior citizens home in Telfs completed a number of building projects: In Telfs Lumma 31 and in Telfs Hanffeldweg 22 assisted living housing units were completed in addition to those of other member municipalities of the association: 11 in Oberhofen, 7 in Flaurling and 11 in Leutasch. These residents are supplied with hot meals using the Inducook system just like the 14 residents in assisted living in Schlichtling. “In this way they can choose to eat their lunch and dinner when it suits them and only need to activate the system prior to eating.” says Gspan describing the advantages of this modern kind of the food distribution from Menü-Mobil.
Hundreds of meals In 2008/2009 a senior citizens home was built to cater for 46 residents in Seefeld. “In a complex of this size you would normally need to build a kitchen and employ a staff of 6.” explains Gspan. The Local Authorities Association decided against this and instead choose to prepare the meals in the central kitchen in Telfs and deliver them to Seefeld in a small lorry. The journey
is a 12 kilometre mountain road with upward gradient of 9%. The clever tableware system prevents any spillages along the way. Prior to consumption the cooking process is completed in the induction trolleys. “Since we opened the senior citizens home in Seefeld, we prepare 300 lunches and nearly as many dinners each day in our central kitchen” concludes Gspan.

„Wij zijn uiterst tevreden“ Sinds 1996 gebruikt men in zorgcentrum Franziskusheim in Wenen het systeem Inductline van Menü-Mobil.
“Met dit maaltijddistributiesysteem hebben wij heel goede ervaringen en we hoefden in de afgelopen dertien jaar slechts tien maaltijdborden en enkele soepkommen te vervangen”, aldus het hoofd van het tehuis, zus ter M. Theresia Sessing, vol lof over de hoge kwaliteit van de producten. Dat komt echter ook door de zorgvuldigheid waarmee de zusters de drie Inductline-wagens, de 60 dienbladen en het complete servies behandelen. Daardoor ziet alles er ook na dertien jaar nog bijna als nieuw uit. “Het nadeel voor meneer Draxl is dat hij met ons nauwelijks nieuwe zaken kan doen”, zegt zuster Theresia met een fijne glimlach.
Snelle verdeling
De warme maaltijden voor de bewoners van het Franziskusheim worden door een cateringfirma ongeportio neerd geleverd volgens de „Cook & Serve“-procedure. In de verdeelkeuken worden de maaltijden op de dienbladen geportioneerd en vervolgens in de Inductline-wagens naverwarmd op de voorgeschreven 75˚C. De bewoners van het centrum nuttigen de maaltijd gewoonlijk in de eetzaal. Voor degenen die daar alleen met grote moeite of helemaal niet heen kunnen wordt de maaltijd op de kamer geserveerd. “Voor de warenkeuringsdienst zijn wij sinds de overstap op het Inductline-systeem ook niet meer
bang, want de maaltijddistributie is sindsdien nog hygiënischer geworden”, merkt zuster Theresia tot slot op.

“We are very pleased” Since 1996 the Franciscan Nursing Home in Vienna has put its trust in Menü-Mobil’s „Inductline” System. “This food distribution system has always operated well and in the past 13 years we have only had to exchange ten plates and a few soup bowls”, the home’s head nun and nurse Sr. M. Theresia Sessing praised the high quality products and expressed her satisfaction. The fact that the nuns take extremely good care of the 3 “Inductline”trolleys, 60 trays and the tableware is very much a contributing factor to their durability. After 13 years of use, everything works
practically like new. “Unfortunately for Mr. Draxl this means that he does practically no subsequent business with us”, smirked Sr. Theresia.
Rapid distribution The warm meals for the Franciscan Nursing Home residents are supplied in bulk by a catering company in the Cook & Serve method. In the distribution kitchen the meals are then portioned onto the trays and subsequently reheated in
the Inductline trolleys at the regulated temperature of 75 degrees Celsius. Normally, the residents take their meals in the dining room. Those who find it very difficult or are unable to reach the dining room are served their meals on a tray in their room. “We no longer need to worry about the food inspections either. Since we introduced the Inductline System, food distribution has become much more hygienic” added Sr. Theresia.

Start van wereldwijd succesverhaal Sinds december 1992 bouwt het Heinrich-Braun-ziekenhuis in Zwickau op het dienbladsysteem Universal van Menü-Mobil. In de jaren daarna werd Zwickau tot een voorbeeld voor ziekenhuizen in de hele wereld, die op hun beurt overstapten op deze moderne vorm van maaltijddistributie. De uitgestrektheid van het zieken huisterrein met zijn verspreid liggende paviljoens was altijd al een struikelblok bij het afleveren van de maaltijden. En dat niet alleen hier, waar in totaal 40 afdelingen moesten worden verzorgd, ook op een 5 kilometer verderop gelegen terrein moest voor nog eens acht afdelingen een flinke afstand worden
afgelegd. Daar kwam nog bij dat de voorbereide maaltijdcomponenten vanuit de centrale keuken werden vervoerd in enkelwandige roestvrijstalen bakken.
Zoeken naar oplossingen
“Voor de overstap kwamen de maaltijden lauw aan op de plaats van be-
stemming en moesten in de afdelingkeukens voor het portioneren nog eens worden opgewarmd. Dat leidde natuurlijk tot verlies aan smaak en kwaliteit”, zo herinnerde Anke Unger zich, hoofd Maaltijdverzorging van het Heinrich-Braun-ziekenhuis. De leiding van het ziekenhuis besloot een einde te maken aan die onbevredigende toestand. Maaltijddistributiesystemen van vijf internationale aanbieders werden onderworpen aan een kritische vergelijking en een harde praktijktest van twee weken. De keus van het ziekenhuis met zijn 1000 bed den viel tot slot op Menü-Mobil met het compacte dienbladsysteem Universal. “Wij waren in 1992 een van de eerste ziekenhuizen in de voormalige DDR die de overstap maakten van een gamellen naar een dienbladsysteem”, vertelt Unger.
Innovatief product
De ontwikkeling van het compacte dienbladsysteem berust op de jarenlange ervaring die Josef Draxl, oprichter en directeur van Menü-Mobil, opdeed als adviseur voor de inrichting van ziekenhuizen. Het dienblad was het resultaat van tien jaar nadenken en experimenteren, waarbij hij uitging van de volgende vraagstelling: hoe breng je afbereide maaltijden heet, hygiënisch verantwoord en met minimaal ruimtegebruik bij de afnemer?

Voor de invoering van het nieuwe maaltijddistributiesysteem werden de afzonderlijke maaltijdcomponenten vervoerd in roestvrijstalen gamellen. Up until the introduction of the new food distribution system, the individual food components were transported in metal buckets.
De uitkomst was een even geniaal als eenvoudig kunststof dienblad conform euronorm met drie holtes en een geïntegreerd vak voor dranken, bestek en overige menucomponenten. In de holtes van het dienblad passen de speciaal ontworpen serviesdelen. Groot voordeel: in dit mobiele transportdienblad kunnen zowel warme als koude menucomponenten tegelijkertijd, thermisch gescheiden en morsvrij worden getransporteerd en geserveerd.

Omdat de noodzakelijke verbouwingen voor het nieuwe distributiesysteem in Zwickau al binnen twee maanden werden afgerond, bleven de kosten binnen de perken. De herinnering aan de dag van de overstap is voor Anke Unger nog heel levend: “Dat was op 8 december 1992. Op die dag kregen onze patiënten het middagmaal nog uit de roestvrijstalen bakken, terwijl het avondmaal al in de dienbladen werd geserveerd. Ik zat toen bij de telefoon te wachten op mogelijke klachten van patiënten. Maar die waren er niet! De overstap verliep uitstekend, ook dankzij de goede voorbereiding door het team van Menü-Mobil.” Met de invoering van het dienbladsysteem kreeg de patiënt keuzemogelijkheden die er voordien niet waren: bij ontbijt en avondeten wordt nu een ruime keus aan componenten aangeboden en voor het warme middagmaal kan men kiezen uit drie menu’s.
Begin van wereldwijd succes
In 1996 liet een delegatie van het grote ziekenhuis Bulovka in Praag zich in Zwickau overtuigen van de voordelen
van het dienbladsysteem Universal. Al spoedig volgde ook daar de implementatie en nog vandaag de dag genieten 2000 patiënten dagelijks van hun maaltijd van dit dienblad. Een in Maleisië gevestigde Oostenrijkse ziekenhuisplanner wilde in 1997 dit product uit zijn geboorteland in zijn planning betrekken. Om die reden bracht hij met de persoonlijke diëtiste van de toenmalige minister-president, Dr. Mahathir, een bezoek aan het Heinrich-Braun-ziekenhuis. De diëtiste raakte enthousiast en zij zorgde voor de invoering van het systeem in de hartkliniek van Kuala Lumpur (zie blz. 26). “Het dienbladsysteem Universal van Menü-Mobil heeft zijn weg gevonden naar ziekenhuizen in Gabon (Afrika), Bahrein, Manilla (Filippijnen), Rusland, Indonesië, maar ook naar Portugal en veel landen in Oost-Europa. Op sommige plaatsen is het systeem al meer dan tien jaar in gebruik en de ziekenhuisexploitanten tonen zich zeer tevreden. Zelfs op booreilanden in Kazachstan en Quatar maakt men er dankbaar gebruik van”, vertelt Christian Sölder, hoofd Export van Menü-Mobil.
Toekomst op rozen
Het dienbladsysteem dat in 1992 werd geïntroduceerd in het HeinrichBraun-ziekenhuis wordt daar nog dagelijks gebruikt. Wel wordt weer nagedacht over een nieuwe aanpak: momenteel test men de 15 jaar oude dienbladen op hun mogelijk gebruik bij het regenereren van maaltijden middels inductie in speciaal gecoat servies. Of men die werkwijze ooit ook gaat overnemen in Maleisië?

The beginning of a worldwide success story Since December 1992 the Heinrich Braun Hospital in Zwickau (Germany) has employed the tray system “Universal” from MenüMobil. In the years that followed, Zwickau became a model, and hospitals around the world converted to this modern form of the food distribution. The vastness of the hospital grounds with its numerous and scattered pavilions has always proved to be a handicap to the effective distribution of food. Long transportation routes were not the only problem here, where alone 40 wards needed to be supplied, but also a district 5 kilometres away that had a further 8 wards that also had to be supplied. Another problem in addition to the distance was that the large-scale catering kitchen transported the food components in non-insulated metal buckets.
The search for a solution “Before the conversion the meals arrived at their destination lukewarm and had to be heated up in the ward kitchens before being portioned. Inevitably this led to a loss in quality and taste”, remembers Mrs. Anke Unger, head of food supply in the Heinrich Braun Hospital. Those responsible at the hospital decided to bring the desperate situation to an end. Five international food distribution system suppliers were compared and were submitted to a gruelling 14 day test. Menü-Mobil’s tender with the compact tray system “Universal” won the contract to supply the 1000 bed hospital. “In 1992, we were one of the first hospitals in the former GDR, to convert from the bucket system to a tray system” says Unger.

Innovative product The development of the compact tray system was based on the experiences of company founder Josef Draxl, who had worked for years as a hospital facility advisor. The product was the result of approximately ten years of mental research and development, and the question: “How can you serve customers complete meals that are hot and hygienic with minimal space consumption?” What emerged was an ingenious and simple food distribution system, which is equipped with a standard European plastic tray with three recesses and an integrated section for beverages, cutlery and other menu components. Specially developed tableware is placed in the grooves of the tray and the great advantage is that both hot and cold components can be transported without spilling and served at the same time.
meals from this tray daily. In 1997 an Austrian residing in Malaysia, wanted to incorporate this product from his home country in the planning of a new hospital. As a result he visited the Heinrich Braun Hospital with Mrs. Mary EasawJohn, who was at the time the Malaysia Prime Ministers personal dietician. They were so impressed by the system that it was put into use at the National Heart Insitute in Kuala Lumpur (see report on page 26). “In addition to clinics in Portugal and in many Eastern European states, the Menü-Mobil „Universal“ tray has found its way into hospitals in Gabon, Bahrain, Manila, Russia and Indonesia. In some cases the system has been in use for more than ten years and
hospital administrators are extremely pleased with its performance. Even oil platforms in Kazakhstan and Qatar swear by it” explains Menü-Mobil’s export manager Christian Sölder.
Rosy future Despite the fact that the tray system introduced to the Heinrich Braun Hospital in 1992 is still in use today, people there are starting to think outside the circle. The hospital is currently attempting to use the trays, which are now over 15 years old, with specially coated tableware to regenerate the food using the induction method. The question remains if Malaysia will also one day introduce this new method.
Extremely satisfied In Zwickau the changes required for the new food distribution system were kept to a minimum both financially and in terms of time and the whole process was finalised in just two months. Anke Unger remembers the conversion day exactly: “It was the 8th of December 1992. That day our patients were served their lunch from the buckets, and their dinner on the trays. I sat at the telephone and waited for the complaints from the patients. There were none! The change over went perfectly owing to the good preparation of the Menü-Mobil team.” After the introduction of the tray system the patients had options, which they had never had before. There was an excellent component selection for breakfast and dinner, and they could choose from 3 different menus at lunchtime.

Succesvolle samenwerking
Na de installatie van het inductiesysteem Menü-Mobil Inductline in 2003 had het academische ziekenhuis van Chemnitz, Klinikum Chemnitz, vier jaar later een mooie vervolgopdracht voor MenüMobil. Bij die beslissing speelden ook de positieve ervaringen en de goede klantenzorg van Menü-Mobil bij het eerste project een belangrijke rol.

Het maaltijddistributiesysteem Inductline – koppelunits met dienbladwagens – werd in het Klinikum Chemnitz in november 2003 samen met de invoering van een nieuwe en moderne centrale „Cook & Chill“maaltijddistributie geïnstalleerd. Dit regenereersysteem doet in Chemnitz nu dus al zes jaar goede diensten en om die reden is een terugblik de moeite waard. Het zogenoemde After Sales Management lijdt al vaak genoeg onder de jacht naar nieuwe successen en winsten. Dat was bij dit project vanaf het begin al anders, wat ook meer overeenkomt met de filo-

sofie van Menü-Mobil en tevens met de voorstellingen en wensen van de klant. En dat deze filosofie vruchtbaar is, en wel voor beide partijen, daar over gaat dit artikel.
Spannende grote opdracht
Aan het begin van het nieuwe millennium dacht men in het Klinikum Chemnitz na over nieuwe technologieën voor de maaltijdverzorging van patiënten. Er bestond al een goede zakenrelatie met Menü-Mobil en om die reden betrok de leiding van het Klinikum het bedrijf uit Tirol bij de planning en advisering. Uiteindelijk
kozen de directeuren van Klinik Catering Chemnitz, Frank Biesold van Klüh-Catering en Konrad Schumann, directeur verpleging van het Klinikum, voor het inductiesysteem van Menü-Mobil. Het doel was een optimalisering van het maaltijdproces op alle standplaatsen en een verbetering van de kwaliteit van de maaltijden. “We installeerden 103 koppelunits en leverden meer dan 300 dienblad transportwagens. Deze werden geconstrueerd en uitgevoerd volgens de gevraagde specificaties. Daar kwam nog een grote hoeveelheid stapelaars bij, want aan een 15 meter lange band

moet natuurlijk ook wat worden geplaatst”, licht Wolfgang Stumpf toe, de verantwoordelijke systeemadviseur van Menü-Mobil.
Hoge klanttevredenheid
Natuurlijk moest er een aantal moei lijkheden worden overwonnen en waren er aanpassingen en verbeteringen nodig om nieuwe technologie in het proces toe te passen. “In de jarenlange zakelijke relatie betoonde Menü-Mobil zich steeds een betrouwbaar partner die ons altijd met raad en daad terzijde stond. Dat willen we graag bevestigen, ook voor klanten die referenties voor Menü-Mobil zoeken”, zegt directeur verpleging Schumann. Misschien is het juist in deze tijd zinvol om eens goed te kijken naar normen en waarden van weleer. Een goede en eerlijke
samenwerking tussen leverancier en klant is een vast bestanddeel van de koopmanstraditie, ook al vraagt de moderne tijd om enkele aanpassing en. In Chemnitz houdt men deze traditie al jaren in ere en sinds vijf jaar ook samen met Menü-Mobil.
Innovatieve toekomstplannen
“Een goede begeleiding van de klant gaat veel verder dan het naleven van wettelijke garantieverplichtingen en leidt niet zelden tot vervolgopdrachten”, zo de overtuiging van Wolfgang Stumpf. In Chemnitz was dat in elk geval zo: het Klinikum gaf in 2007 aan Menü-Mobil 2007 een nieuwe opdracht voor veertien regeneratiebuffetten en 28 bijbehorende shuttlewagens. Deze werden binnen de kortst mogelijke tijd speciaal voor Chemnitz ontworpen,
gebouwd en na hun levering volgens beproefd recept door Menü-Mobil geïnstalleerd. Met deze moderne technologie kunnen de meest uit eenlopende patiëntengroepen worden bediend, van kinderafdeling tot geriatrie. Momenteel plant men bij het Klinikum Chemnitz een optimaler gebruik van de capaciteiten door tevens maaltijden aan te bieden aan bezoekers van buiten. Het restaurant Flemming, gevestigd boven de standplaats aan de Flemmingstraße, heeft een goede reputatie opgebouwd: “We willen daarom ook aan werknemers van kleine bedrijven en kantoren in de stad goede maaltijden aanbieden en daarbij komt het individuele regenereersysteem Inducook van Menü-Mobil heel goed van pas”, zegt Konrad Schumann met blik op de toekomst.

Successful cooperation In 2003 the Chemnitz Clinical Centre (Germany) adopted the induction system “Inductline” from Menü-Mobil. The positive experience and the good customer service provide by MenüMobil were contributing factors to the company being awarded a subsequent contract four years later. The food distribution system “Inductline” which is composed of docking stations with tray trolleys, was installed in the Chemnitz Clinical Centre in November 2003 as part of the establishment of a new and modern Cook & Chill food distribution centre. This regeneration system has been operating successfully in Chemnitz for the past six years and it is worth taking a look back to see why. “After Sales Management”, a term that has found its way into the German language, often suffers as a result of the search for new contracts, successes and profits. This was not the case in this project and as a result, corresponds to Menü-Mobil’s philosophy and to the wishes and expectations of the customer. It is a philosophy that pays off, for both sides, as this article demonstrates.
Exciting bulk order At the beginning of the new millennium the Chemnitz Clinical Centre was already considering introducing new technology to improve patient care. At that time good business contacts to Menü-Mobil already existed, consequently the Tyroleans were brought in as consultants and to assist in planning. In the end the directors of Chemnitz Clinical Centre’s catering unit, Frank Biesold from Klüh Catering and Konrad Schumann, the Clinical Centre’s care director, chose to introduce the induction system from Menü-Mobil with the intention of optimising the meal supply and level of quality throughout the Clinical Centre.” 103 docking stations were installed and we delivered over 300 tray trolleys which were designed and produced according to the Clinical Centre’s requirements. In addition, we delivered numerous dispensing equipment because a 15 metre conveyer belt also had to be equipped”,

explains Wolfgang Stumpf, the system consultant from Menü-Mobil responsible for the project.
Customer satisfaction It was of course unavoidable that the one or other problem occurred and had to be dealt with, that technical adaptations had to be made or new technology had to be developed in order to provide the perfect process. “During our longyear business relationship, Menü-Mobil was always a reliable partner and ready and available to provide us with advice and support. We are happy to provide a reference for them at anytime.” confirmed Konrad Schuman, care director at Chemnitz. Perhaps now more than ever it is important to concentrate on the tried and tested “old values” of good and honest business relationships with customers, Here in Chemnitz people having been living and working with these traditions for years and for the past
five years with Menü-Mobil too.
Innovative future plans
“Good customer service lasts longer than the legal product warranty and frequently leads to subsequent contracts.” says Wolfgang Stumpf convincingly. In Chemnitz that was certainly the case: In 2007 the Clinical Centre awarded MenüMobil with a contract for fourteen hot-air regeneration buffets and 28 compatible shuttle trolleys. Within a short period of time the order was designed and built to customer specifications and then delivered in the excellent fashion that has become standard by menu Mobil. This form of modern technology meant that various needs, from the children’s ward to geriatrics were able to be met. The Chemnitz Clinical Centre is currently working towards a better use of capacity so that it can also cater for “external” customers. The “Flemming” restaurant, located above the wards in the Flemming Strasse has earned a good reputation. From there we would like to supply employees working in small companies, offices and legal practises in the city with good meals and Menü-Mobil’s individual regeneration system “Inducook” can service this market well” says Konrad Schumann as he looks to the future.

“De 40 medewerkers in onze keuken werken in drie ploegen van 4.30 tot 20.30 uur, zodat wij op 365 dagen per jaar voedzame en smakelijke warme maaltijden kunnen aanbieden aan de 54 woongroepen binnen onze diaconie”, verklaart chef-kok Jochen Mayer. Dagelijks worden er ca. 1000 warme middagmaaltijden bereid in de keuken van de diaconie, en daar komen nog eens 500 ochtend- en avondmaaltijden bij.
Opgebouwd vertrouwen
Met het tot juli 2008 toegepaste voed selverdeelsysteem kon men niet voor alle deelnemers aan de maaltijdservice een goede maaltijdtemperatuur waarborgen. Daarom koos de diaconie toen voor de invoering van het nieuwe heteluchtsysteem Airline van Menü-Mobil. “Ik heb in het verleden heel goede ervaringen met dit bedrijf opgedaan en heb Menü-Mobil daarom aanbevolen aan de leiding van onze organisatie” zegt Jochen Mayer.
Bij de keuze voor het systeem speelde naast de kwaliteit ook de zuinigheid een belangrijke rol: “We hebben de verschillende systemen aan uitvoerige tests onderworpen. Menü-Mobil kwam daaruit met de beste prestaties naar voren. Vooral de krachtige koeling, de geringe geluidsontwikkeling en het lage energieverbruik van het systeem hebben ons overtuigd”, verklaart de chef-kok. In het epilepsiecentrum gebruikt men nu 32 transportwagens voor elk 24 di-

enbladen, die naar keuze gekoeld of verwarmd kunnen worden vervoerd.
Beproefde techniek
Belangrijke controle
De koppelunits zijn verbonden met het computersysteem in de keuken van de diaconie. Daardoor kan de keukenchef steeds de tempera tuur in de wagenkamers in realtime opvragen en per wagen correcties uitvoeren bij eventuele bedieningsfouten. Dankzij het HACCP-documentatiesysteem van Menü-Mobil
worden bovendien alle relevante temperatuurgegevens opgeslagen. “Dat de invoering in begin juli 2008 zo probleemloos verliep, was vooral te danken aan de uitstekende voorbereiding van het keukenteam en aan de constructieve samenwerking met Menü-Mobil. Van de keuze van de wagens tot de serviesdelen hebben wij elk onderdeel van het systeem samen met systeemadviseur Hannes Abenthung besproken en getest”, zegt de chef-kok. Hij voegt er nog aan toe: “Zo konden we precies de oplossing uitwerken die optimaal voldoet aan de eisen die onze organisatie stelt”. De enige wens die Mayer nog heeft, is dat het systeem nog 15 jaar mee gaat: “De degelijke uitvoering van de wagens en stations stemmen mij heel optimistisch”.

In de diaconie wordt gewerkt volgens het principe „Cook & Serve“. Daarbij worden de maaltijden na hun bereiding op de band in hete toestand geportioneerd. In aansluiting daarop koppelt men dienbladwagens van het type Airline met hun twee thermisch gescheiden compartimenten aan de negen Airline-koppelunits, waar ze met hete of koude lucht op temperatuur worden gehouden. De twee door een stevige kunststofwand gescheiden compartimenten kunnen afzonderlijk worden aangestuurd en geheel naar wens samen of afzonderlijk worden ingesteld op verhitten of koelen. Op die manier kan men achtereenvolgens drie dien-
bladwagens aan een unit koppelen en verhitten of koelen, waardoor de investeringskosten bij de aanschaf van het systeem beperkt bleven. Bij Ortenau-Klinikum-Kehl gebruikt men in totaal dertien wagens met vakken voor elk 30 dienbladen, die elke middag per vrachtwagen naar Kehl worden gebracht en daar door de koppeling aan vier andere units op temperatuur worden gehouden.

High standards in food distribution In the Kork deaconry (Germany) meals are prepared for 54 assisted living groups that focus on aiding people suffering with epilepsy. Since July 2008 the deaconry has relied on Menü-Mobil’s hot air system “Airline”. “Our 40 employees in the kitchen work in three shifts between 4.30am and 8.30pm so that we can supply all 54 internal assisted living groups in the deaconr y with nutritious, tasty and hot meals, 365 days a year.” explains the kitchen super visor Jochen Mayer. About 1,000 lunches are prepared daily in the deaconr y kitchen in addition to the 500 breakfasts and dinners.
Existing confidence Up until July 2008 a dome-shaped lid was used to keep meals warm, however, the food temperature could not be maintained at the same level for ever yone. Therefore the deaconr y decided to introduce the Menü-Mobil “Airline” system which is based on circulating air. “I’d had ver y good experiences with this company in the past and therefore decided to recommend them to those responsible in our organisation.” says Jochen Mayer. It was not only a question of quality when it came to selecting a system – it also had to be cost effective. “We ran extensive tests with different systems. Menü-Mobil’s system stood out and we were par ticularly convinced by the strong cooling capacity, the low energy consumption and how quiet
the system was” explains the kitchen super visor. In the epilepsy centre, 32 transpor t trolleys, which are each fitted with 24 trays which can be heated or cooled, are currently in use.
Technically mature In the deaconr y meals are produced in accordance with the Cook & Ser ve procedure. This means that meals are produced in bulk and then portioned while still hot. The tray-filled “Airline”trolleys, which have two chambers separated thermally by a sturdy plastic wall, are then attached to nine docking stations and by means of hot or cool air the desired temperature is maintained. Both chambers can be controlled independently and either one or both can be switched to heating and/or cooling mode. With this method up to three tray trolleys can be successively heated or cooled which results in a reduction in outlay costs associated with establishing the system. In the Or tenau Clinical Centre Kehl a total of 13 trolleys, each with slide-in compar tments for 30 trays, are in use. The trolleys are transpor ted from Kork to Kehl at noon each day by lorr y. Once in Kehl they are docked on to the four stations
which maintain the desired temperature.
Important control The docking stations are connected to the computer system in the deaconr y kitchen. This allows the kitchen super visor to monitor the actual temperature in the trolley chambers and in the case of an operating error he can correct each trolley individually. Thanks to the HACCP Documentation system from Menü-Mobil all relevant temperature data is recorded. “That the launch at the beginning of July 2008 ran so smoothly is primarily owing to the outstanding preparation by the kitchen team and constructive cooperation with Menü-Mobil. “We discussed and tested ever y par t of the system with the system advisor Hannes Abenthung, from the selection of the trolleys right down to the tableware components” explained the kitchen super visor and adds “In this way we could develop the per fect solution to best meet our needs”. Mayer’s only wish is that the system works for the next 15 years. “The good workmanship of the trolleys and stations make me ver y confident.”

Zonder tulpen, zonder schaatsen In Nederland gebruikt men voor Tafeltje Dekje producten van Menü-Mobil. Op ´t Hoogveld is een middelgroot zorgcentrum voor senioren van de Pantein-STBNO-groep in Sint Anthonis in het zuidoosten van Nederland met ca. 80 bedden en 72 medewerkers. De keukenstaf van dit zorgcentrum produceert volgens het Cook & Serve-principe ongeveer 650 tot 700 menu’s per dag en let bij de inkoop op zeer hoge kwaliteit voor redelijke prijzen. Voor Tafeltje Dekje buiten het centrum worden de 600 menu’s in blauwe Menü-Mobil „ECO-Classic“-boxen met tot 100°C voorverwarmde RVS-onderborden dagelijks afgeleverd bij klanten in de gemeenten Cuijk, Mill, Boxmeer en Sint Anthonis - topkwaliteit op de juiste temperatuur. De maaltijden worden met de auto bezorgd door vrijwillige medewerkers van de Stichting Welzijn Ouderen, waardoor de senioren die aan de maaltijdservice deelnemen dagelijks in contact komen met andere mensen.
Geplande uitbreiding
De chef-kok, de heer Marcel Derks, biedt met zijn drie koks, drie keukenassistenten en zestien overige medewerkers dagelijks diverse menu’s aan voor Tafeltje Dekje. Daarbij houdt men ook rekening met alle mogelijke dieetwensen, van suikervrije maaltijden tot eten in gepureerde vorm. Binnen het zorgcentrum Op ´t Hoogveld bestaan vergevorderde plannen voor de invoering van Front Cooking, waarbij de bewoners de mogelijkheid wordt geboden om een avondmaaltijd à la carte te nemen. Als andere aanvulling op de maaltijdservice bui ten het centrum denkt men aan het „Cook & Chill“-systeem, omdat

de deelnemers daarbij zelf kunnen bepalen wanneer ze de maaltijd gebruiken. Daarvoor is met name het systeem Inducook van Menü-Mobil erg geschikt, omdat de boxen en het servies daarbij dezelfde afmetingen hebben als in de warme distributie.

Without tulips and ice skates In the Netherlands the meals on wheels organisation relies on products from Menü-Mobil. Op ´t Hoogveld is a medium-sized seniors residence and part of the Pantein STBNO group located in Sint Anthonis in the southeast of the Netherlands with approximately 80 beds and 72 employees. The kitchen produces around 650 to 700 meals daily using the Cook & Serve procedure. In the kitchen special attention is paid attention to the purchase of very high quality ingredients at reasonable prices. Menü-Mobil’s blue ECO Classic Boxes with stainless steel under plates that are preheated to 100 degrees Celsius are used for meals that are delivered to “external” customers not living in the residence itself. The top quality meals are then distributed at the perfect temperature to the customers in the municipalities of Cuijk, Mill, Boxmeer and Sint Anthonis. Volunteers from the Welzijn Ouderen Foundation deliver the meals by car which means the customers come into
contact with new people each day.
Planned expansion The kitchen supervisor, Marcel Derks, with his team of three chefs, three kitchen assistants and a further 16 workers, prepare a number of different menus each day for external delivery. All sorts of dietary requirements from sugar-free to pureed meals are taken into account when planning the menus. In the seniors residence Op ´t Hoogveld plans have already been made for “Front Cooking” which means the residents would also have the option to dine a la carte in the evening. A further development for the external customers is also being considered. With the introduction of the Cook & Chill system customers can still have their meals delivered but decide for themselves when they want to take their meals. The Inducook system can be adopted here which is especial-
ly advantageous because the boxes and tableware are identical to those already being used for the delivery of hot meals.
Information The Pantein STBNO group offers a broad spectrum on services to the Northeast Trabant and North Limburg regions and cares for more than 4500 people. The services include home nursing for the sick, meal on wheels, healthcare and medical support along with preventive medical examinations for children and post natal care for mothers. The organisation also provides living and care assistance and sees itself as a companion during life’s more difficult periods. The organisations motto is “Where a man lives, there is his home.” With the food distribution system ECO Classic, Menü-Mobil has made a substantial contribution to the realisation of this motto.

Succes op verre markten
Het succesverhaal van Menü-Mobil in Zuidoost-Azië begon met het hartcentrum van Maleisië in Kuala Lumpur. “Tien jaar geleden werden wij met groot vertrouwen tegemoet getreden door Mary Easaw-John, hoofd Diëtetiek van het nationale hartcentrum en persoonlijk diëtiste van de minister-president van Maleisië. Als eerste in de regio Zuidoost-Azië zag zij het voordeel van centrale portionering en het economisch potentieel hiervan, en zij voerde in haar keuken het isolatiedienblad Universal van Menü-Mobil in”, verteld Christian Sölder, hoofd Export van Menü-Mobil. Het systeem voldoet nog steeds uitstekend.
Stijgende vraag
Tevreden klanten leiden tot nieuwe klanten: de steen die in Kuala Lumpur in het water plonsde, trok concentrische cirkels en in de loop van de tijd kozen nog eens zeven ziekenhuizen in Maleisië voor de voordelen van Central Plating met het dienblad van Menü-Mobil”, stelt Sölder met genoegen vast. De in heel Zuidoost-Azië gewaardeerde diëtiste Mary Easaw-John hield op een congres van vakgenoten in Manilla (Filippijnen) een lezing, waarin zij de voordelen van het systeem van Menü-Mobil en van Central Plating besprak. Haar positieve relaas leidde
tot een intensieve uitwisseling met het hartcentrum in Manilla, waar men vervolgens eveneens koos voor producten van Menü-Mobil. “De exploitanten zijn zeer tevreden, net als de twee regionale ziekenhuizen Tutong en Kuala Beleit in Brunei, waar heteluchtwagens met actieve koeling van Menü-Mobil worden gebruikt op afdelingen met betalende patiënten. Die zijn erg gesteld op ijs, dat echter tot dan toe steeds al gesmolten was – niet zo vreemd bij tropische temperaturen tot 40˚C in de buitengangen. Dankzij MenüMobil kunnen zij daar nu genieten van werkelijk ijskoud ijs!”

She was the first person in Southeast Asia to recognise the advantages of portioning meals centrally and the associated cost-saving potential. As a result she introduced the isolation tray from the Menü-Mobil “ ” system“, explains Christian Sölder, export manager from Menü-Mobil. The system is still functioning perfectly.

“Contented customers bring in new customers: As word of the system spread, another seven hospitals in Malaysia saw the advantages of “central plating” and decided to introduces the Menü-Mobil tray.” recalls Sölder happily. Mary Easaw-John is a recognized dietician throughout Southeast Asia and during a Congress of Dietetics in Manila (the Philippines), she gave a lecture in which she pointed out the advantages of the Menü-Mobil system and “central plating”. Their positive presentation led to an intensive exchange of ideas and views with the
cardiology centre in Manila, which then also decided to convert to Menü-Mobil products. “The hospital operators are very satisfied, as are the two regional hospitals Tutong and Kuala Beleit in Brunei, where hot-air trolleys with active cooling from Menü-Mobil are being used in wards with “private paying patients”. Here ice cream is of great importance which up until now had always melted – which is no surprise considering the temperatures of up to 40 degrees Celsius which are experienced here. Thanks to Menü-Mobil ice cream can once again be enjoyed ice cold!
