Lisování : Celé hrozny jsou lisovány v pneumatickém lisu, potom musí odpočívat po dobu 12 hodin při teplotě 12 až 15 ° C ve velkých tancích speciálně určených pro tento účel, které urychlují přirozenou sedimentaci. Kvašení: 3 týdny při 20 ° C. 50% ve francouzských dubových sudech 3 - 4 roky staré, 50% z nerezové oceli. Jablečno-mléčná fermentace: 100%. Vinifikace: 12 měsíců na kalech s mícháním Lahvování: Jemná filtrace a stáčení pod inertní atmosférou. Domaine BALLOT-MILLOT et Fils, Meursault 2009 Doména Ballot-Millot je rodinné vinařství které se nachází ve vesnici Meursault, nabízí jedno z nejkrásnějších míst v Côte de Beaune: Výroba vína Třídění začíná ve vinici , vždy ruční sběr. Po příjezdu na vinařství, hrozny procházejí dlouhým lisováním při nízkém tlaku (pneumatický lis) Toto Pak následuje po velmi lehkém usazování, odstranění hrubých kalů. Šťáva jde do sudů, ve velmi chladných sklepech probíhá kvašení. Sudy jsou doplňovány a kartáčované každý týden pro vytvoření optimálních hygienických podmínek. Po 12 měsících zrání( proběhne jablečno-mléčném kvašení), je víno uloženo v nerezových tancích po dobu dalších šesti měsíců. Podle sklizně je provedeno velmi lehká filtrace ( křemelina) a stáčení. VINEYARD North side of the Côte de Beaune, the Montagne of Corton meets the villages of Aloxe-Corton, Pernand-Vergelesses and Ladoix-Serrigny. The vineyards belong to altitudes between 250 and 330m, which make of that location a unique amphitheatre in the Côte. The Corton Grand Cru is essentially red wine and is located on an area of 90 ha, and it can bear the name of its climate. There are 25 climates such as : Les Bressandes, Les Combes, Clos des Meix, Les Perrières, Le Rognet, Les Renardes, Le Clos du Roi. CHAMPY PRODUCTION 1 500 bottles DESCRIPTION Deep ruby colour with garnet highlights. The nose is frank and concentrated with small black fruit notes (morello), on a smoked and peppered touch (black pepper). Fresh attack, the wine is well built, opulent but powerful. Excellent balance. Well coated integrated tannins. Long aftertaste on a vegetal finish. WINE MAKING AND AGEING Purchase of grapes from « Les Perrières »: 3 barrels and « Les Combes » : 2 barrels. Maturing in oak barrels (40% new oak) for 16 months.Bottled in February 2012. SERVICE Appreciated when served at a temperature around 15-16°C. This red wine will bring out the flavours of dishes such as beef cheeks in Burgundian, jitter deer huntsman sauce, and strong cheeses like "Ami du Chambertin", “Livarot”, “Epoisses”.
Maison CHAMPY Pommard 1er cru "Les Grands Epenots", Côte de Beaune 2007 VINEYARD Pommard, in the heart of the Côte de Beaune region, produces one of France's most renowned AOC wines. The village lies on a pronounced slope surrounded by its closely clustered vineyards, which are at altitudes of between 250 and 330 metres above sea-level and enjoy an easterly and south-easterly aspect. This appellation includes 28 Premiers Crus which the most famous are “Les Epenots” and “Les Rugiens”. DESCRIPTION Deep nice ruby colour with garnet highlights. Very open nose, with redolent aromas of small red fruits (raspberry, strawberry), spices (black pepper) on a mineral touch. The mouth is fleshy and rich with a pronounced acidulous red fruit aroma, with a minerality supported by tannins. Long finish of cherries. WINE MAKING AND AGEING Grapes coming from Official Organic Certification from Domaine Champy. SERVICE Best appreciated when served at a temperature of around 16-18°C. The firm texture of its tannins and the concentration of its aromas will easily match with food like venison, roasted or braised. Maison CHAMPY Pernand-Vergelesses "Clos de Bully", Les Villages : Côte de Beaune 2010 VINEYARD The vineyards of Pernand Vergelesses are in a very hilly area. They stretch over the slopes in between the hills of Aloxe Corton and Savigny les Beaune. In the commune of Pernand Vergelesses only 6 « clos » are classified red Premiers crus : les Fichots, en Carendeux, Creux de la Net, Iles des Vergelesses, Les Vergelesses and Les Plantes des Champs. This locality, one of the oldest vineyard in Burgundy, was planted in 1158 by the monks of the Abbaye de Maizières and located on a limestone marl soil. CHAMPY PRODUCTION 2 700 bottles DESCRIPTION Nice and deep garnet robe, bright. Good aromatic intensity. Very fresh nose with aromas of black and red fruits and hints of minerality, smoked. (marly limestone). Good texture and good balance. On the palate fresh and frank attack. Presence of melted tannins. Persistent finish between the mineral freshness and the fruity texture. WINE MAKING AND AGEING Grapes coming from Domaine Champy in Official Organic Certification. Maturing of 12 months in oak barrels (30% new oak). Bottled in 2011 November, 23rd. SERVICE Will be appreciated when served at around 15-16°C. Matches well with refined charcuterie, red meat like legs of lamb, a filet of beef in thin brioche, a roasted lamb shank bone…and any kind of cheeses.

Tato vinice, která je „monopol“ rodiny produkuje nejvíce strukturované Givry vhodné také k ležení v lahvi. 100% Pinot noir První zmínka o vinici není známa, nicméně v roce 1780, byla Clos Saint-Pierre je zařazena mezi jedenu z šesti nejlepších poloh pro Pinot Noir v Givry. Průměrný věk révy- je 33 let.
35-year-old vines, and the vineyard has earned the reputation for being the epitome of what Givry can produce. This recently released ’09 is a classic, traditional Givry that shows lots of fruit, a dusting of star anise, and a satisfyingly full mouth-feel. This ‘09 has wonderful approachability, but it can also be held for a number of years.
