• Bereiding Snijd het vet van de eend kruislings in en bak langzaam uit in een droge pan. Meng yuzusap, sap van 3 sinaasappels, 1 eetlepel sinaasappelschil, suiker en shiro miso. Hol de sinaasappels uit zodat je ze als kommetje kunt gebruiken. Laat de eend 10 minuten rusten buiten de pan en strooi peper aan beide zijden. Wrijf de eend in met het misomengsel en gaar nog 15 minuten na op 100 graden in de oven. Bak de shiitake met knoflook, peper en zout. Trancheer de eend, doe wat shiitake onderin de uitgeholde sinaasappel en leg hierop de plakjes eend.

• Preparation Score the fat of the duck breasts in a cross-hatch pattern, and place in a hot dry frying pan, fat side down. Cook slowly until the fat renders. Combine yuzu juice, juice of 3 oranges, 1 tablespoon orange zest, sugar and shiro miso. Hollow out the oranges and reserve the rinds. Remove duck from pan, sprinkle with pepper on both sides, and let rest 10 minutes. Rub the duck with the miso mix and leave to finish cooking for 15 minutes in a 100-degree oven. Fry the shiitake with garlic, pepper and salt. Slice the duck, spoon shiitake into each hollowed orange rind and arrange duck breast slices on top.

• Bereiding Was de rijst grondig onder stromend water tot het water compleet helder is. Laat de rijst 15 tot 20 minuten onder koud water staan, en laat hierna 10 minuten uitlekken. Doe de rijst samen met 550 ml water in een rijstkoker en stoom de rijst in 40 minuten gaar. Snijd de radijs en ui zeer dun op de mandoline, snijd de rode biet in dunne plakjes. Snijd de komkommer en haring in repen van ca. 1 cm doorsnee. Als de rijst is gekookt, deze goed uit laten stomen en de sushiazijn er door spatelen. Laat de rijst afkoelen tot ca. 30 graden. Snijd de norivellen door de helft en verdeel de rijst nauwkeuring over het halve norivelletje, en houd aan de bovenzijde 1 cm ruimte vrij. Bestrooi de rijst met de Wasabi Furikake en draai het norivel om. Zorg dat het vrije stukje aan de bovenzijde blijft. Leg er een lintje komkommer en haring in en rol op. Snijd de sushi en serveer met een salade van ui, radijs en biet, aangemaakt met Kikkoman sojasaus.

• Preparation Wash the rice thoroughly under running water until the water is completely clear. Let the rice soak in cold water for 15 to 20 minutes, and then drain for 10 minutes. Put the rice and 550 ml water into a rice cooker, and steam until done (40 minutes). Slice the radish and onion very thinly with a mandoline, and cut the red beet into thin slices. Cut the cucumber and herring into strips about 1 cm thick. When the rice is done, let steam well and then sprinkle the sushi vinegar over it. Let rice cool to approximately 30 degrees. Cut the nori sheets in half and carefully cover each half-sheet with rice carefully, leaving a 1 cm space along the top edge. Sprinkle the rice with the Wasabi Furikake and turn the sheet over, making sure the 1 cm edge stays at the top. Place a ribbon of cucumber and herring across the nori sheet and then roll up. Slice the sushi and serve with a salad of onion, radish and beet, seasoned with Kikkoman soy sauce.

• Bereiding Meng de sushiazijn, sesamolie, rijstolie en tsuyu no moto. Maak met behulp van een kleine parisienneboor pareltjes van de komkommer en marineer met het mengsel. Kwast de tonijnsteaks in met olijfolie en bestrooi met peper uit de molen. Knip de daikon van de bodem en meng met druppels olijfolie, peper en zout. Meng de Teriyaki mirinsaus met de balsamicoazijn en verwarm. Grill de tonijn snel om en om op hoog vuur en zout na. Maak een spiegeltje van de saus in een diep bord, leg hierop de tonijn en garneer met de gemarineerde komkommer en daikon.

• Ingredients: 4 tuna steaks 1 cucumber 150 ml Teriyaki mirin sauce 50 ml balsamic vinegar 1 package Daikon cress 3 tbsp. olive oil ½ tbsp. sesame oil 50 ml Uchibori Sushi Vinegar ½ tbsp. rice oil 2 tbsp. Tsuyu no moto pepper & salt • Preparation Combine sushi vinegar, sesame oil, rice oil and tsuyu no moto. Using a small melon baller, cut the cucumber into pearls and marinate them in the vinegar and oil mixture. Brush the tuna steaks with olive oil and season with freshly ground pepper. Cut the daikon cress from the package and drizzle olive oil over them. Season with salt and pepper. Combine the Teriyaki mirin sauce with the balsamic vinegar and heat. Sear the tuna quickly on both sides and season with salt. Coat the bottom of a deep plate with the sauce, lay a tuna steak on top and garnish with the marinated cucumber and daikon cress.

Snijd de entrecote in dunne plakjes (sashimi style). Grill à la minute en leg een plakje in een blaadje ijsbergsla. Doe er een beetje kimuchi en mayonaise overheen en rol op.

You may know this rice topping made from wasabi, shredded nori and puffed rice as the coating on the inside-out sushi roll. Mixed with panko (Japanese bread crumbs), it becomes a delicious breading for meat and fish.
• Preparation Wash the radishes and cut the stems off at the bottom. Combine the mayonnaise with the lime juice. Skewer the radishes on a skewer, then coat them first with the mayonnaise and then with the Wasabi Furikake.

• Bereiding Bak de zalm om en om bruin, dompel direct onder in de teriyakisaus en laat rusten. Marineer de komkommer in de yuzudressing. Zet de zalm ongeveer 6 à 8 minuten in de oven, warm een beetje van de teriyakisaus op en lak hiermee de warme zalm. Maak het bord op met de komkommer, dressing, olijfolie, sesamzaad, warme sjalot en lenteui.

• Preparation Sear the salmon on both sides, then dip immediately in the Teriyaki sauce and let rest. Marinate the cucumber in the yuzu dressing. Halve the shallot and fry the halves, cut side down, until dark brown, then wrap in aluminium foil and bake in a 180-degree oven for 12 minutes. Place salmon in oven for 6-8 minutes. Heat a little of the Teriyaki sauce and use it to glaze the hot salmon. Plate salmon and garnished with the cucumber, dressing, olive oil, sesame seed, baked shallot and spring onion.
