We all buy different things from time to time because that is the easiest way to get what we need: food, clothing, tools, furniture, household appliances, cosmetics, stationery, etc. People have different preferences; some like the small, specialized shops, like the grocer’s, butcher’s, baker’s, while others prefer large department stores, shopping malls or plazas. If you work long hours, you just drop in the nearest convenience shop to buy something for dinner. Young people spend a lot of time in shopping centres, where they can not only shop, but have a good time as well in the cinemas, cafés and bowling clubs or have a meal in the food court when they get hungry. The long opening hours attract not only shopaholics, but whole families too, for whom shopping has become a popular programme. If you want to buy direct from the producers, you should go to the market. Markets are interesting places often attracting tourists too, not only with their cheaper prices, but with their wide assortment and special atmosphere.

Wheat is one of the first cereals that was domesticated in a small region of southeastern Turkey and in Jordan around 7500-7300 BC.
When speaking about flour, most people mean wheat flour. However, flours can be made from other grains/cereals, e.g. barley, buckwheat, millet, oats, soy, quinoa, rice, rye and triticale.
The most frequently used flour types are the following:
Flours are classified by the amount of protein they contain. Wheat flours made from soft wheats are relatively low in protein and are generally used for making cakes, cookies, pastries and crackers. Flours made from hard wheats are high in protein and are generally used for quick and yeast breads. all-purpose flour: This flour is made from a blend of soft and hard wheat, or medium-protein wheats. As its name implies, it is used as an all-purpose flour in a range of baked goods.
cake flour: A soft wheat blend. Its low protein and low gluten content make it suitable for baking fine-textured cakes, because gluten is less elastic. Many bakers use it for various cakes.
self-rising flour: Self-rising flour is an all-purpose flour that contains baking powder, baking soda and salt.
whole wheat flour: Whole wheat or graham flours are processed less than plain flour and, therefore, retain more of their nutrients and fiber. Whole wheat flour, also called graham flour is ground from the entire wheat kernel. It is good in breads and some cookies, but generally not the best choice for pastry or other delicate baked goods.

Wheat can be processed and used in many different forms, e.g. flour if it is ground in a mill or semolina if only hard durum wheat is used; it is germinated and dried to create malt; parboiled (or steamed), dried, crushed into bulgur etc. Wheat is a major ingredient in such foods as bread, porridge, crackers, biscuits, muesli, pancakes, pies, pastries, cakes, cookies, muffins, rolls, doughnuts, gravy and breakfast cereals.
instant flour: A patented process is used to produce a quick-mixing flour for use in the thickening of gravies and sauces. bread flour: Bread flour contains more gluten and protein than all-purpose flour, making it ideal for baking breads. If you use a breadmachine, use bread flour instead of all-purpose flour for the best results. Or use all-purpose flour and add 1 or 2 tablespoons of gluten flour (available at groceries or natural food stores).
