Az élelmiszer-feldolgozás fenntarthatóságának követelményei korunk globális kihívásaival összefüggésben Farkas József Összefoglalás Korunk számos globális és komplex kihívása: 9 milliárd ember táplálásának igénye 2050-re, a klímaváltozás, a csökkenĘ fosszilis energiaforrások, az édesvíz- és ásvány-készletek korlátozott volta, a termĘföld és az ökoszisztémák fokozódó károsodása miatt az élelmiszerlánc és annak fontos része, az élelmiszer-feldolgozás fenntarthatósága érdekében változtatások szükségesek. E rövid közlemény áttekinti ennek a követelménynek néhány elemét: az energiafelhasználás hatékonyságának növelését, a környezetszennyezĘ emissziók csökkentését, az élelmiszeripari vízgazdálkodás javítását, az élelmiszerveszteségek csökkentését, az élelmiszer-feldolgozási technológiák és a csomagolás optimálását és fenntarthatóvá tételét. Sustainability requirements for food processing in relation to the contemporary global challenges J. Farkas Due to several global and complex challenges, such as to feed 9 billion people in 2050, the climate change, the declining fossil fuel sources, limited fresh water and mineral resources, increasing destruction of arable land and ecosystems, systematic innovations are required for sustainable food chains, including their important part, food processing. This short article reviews some of these requirements: reduction of energy consumption and environment polluting emissions, improving water management in the food industry, innovations for reduction of food losses, optimation of food processing technologies, and development of sustainable packaging systems. Such efforts require more support to apply scientific and engineering knowledges in the practice and a multidisciplinary co-operation between the stakeholders. PEF technológiai kutatások Cserhalmi Zsuzsanna − Hartyáni Piroska Összefoglalás A kutatás és az ipar részérĘl tapasztalható érdeklĘdés a kíméletes, nem hĘkezelésen alapuló élelmiszer-tartósítási technológiák iránt egyre fokozódik, melynek oka a fogyasztók tartósított élelmiszeripari termékekkel szemben támasztott egyre igényesebb (hosszan eltartható, tartósítószermentes, friss ízĦ) elvárásaiban keresendĘ. A kíméletes, nem hĘkezelésen alapuló élelmiszer-tartósítási technológiák egyik potenciális képviselĘje a pulzáló elektromos térerĘ (PEF). The reason of this increased interest is the special requistments of consumers who would like to buy fresh taste food products having long shelf life without preservatives. A projekt során egy TaqMan alapú real-time PCR diagnosztikai módszert dolgoztunk ki, mely kvalitatív és kvantitatív módon is képes a mangalicatartalom arányát meghatározni, akár feldolgozott élelmiszerekbĘl is. A MANGFOOD projekt eredményeit felhasználva a rendelkezésünkre álló genomszekvenálásból született bioinformatikai adatok elemzésével több száz ígéretes lókuszt detektáltunk, ezekre az SNP-kre primereket terveztünk és egy elsĘdleges PCR szĦréssel majd Sanger szekvenálásokkal történĘ visszaellenĘrzéssel jutottunk el az egy mangalica-specifikus illetve a tizenhárom sertés-specifikus génhez. Ezek specificitását tovább szĦrtük PCR módszerrel, és így maradt a mangalica kimutatásra egy, míg a sertés-specifikus génre két primerpár készletünk, amelyeket további optimalizálásnak vetettünk alá, a minél hatékonyabb real-time PCR módszer kidolgozása érdekében. In the framework of the MANGFOOD R&D project a real-time PCR diagnostic method was developed to determine the mangalica breed in processed foodstuff. During the project, a TaqMan real-time PCRbased diagnostic method was developed, which is able to determine the mangalica-content qualitatively and quantitatively, also in processed foods. We detected hundreds of promising loci using bioinformatic analysis from available genome sequencing data related to the result of MANGFOOD project. We constructed primers for SNPs and with initial PCR screening backed by Sanger sequencing data, we identified one mangalica-specific gene and thirteen swine-specific gene. The specifications were further filtered by PCR and resulted one mangalica-specific and two swine-specific primer pairs, which were subjected to further optimization, in order to develop the most efficient real-time PCR method. As a result of the real-time PCR optimization, only one primer pair and probe proved to be reliable out of two swine-specific reference gene primer set variants that were constructed for the same locus, while the TaqMan probe and primer pair used for the detection of mangalica proved to be optimal. An integrated wastewater management solution with the application of special yeast strains produced by bioconversion J. Hegóczki József – G. Vereczkey – F. Pándi In this paper we present the RETOXMET project: Application of special yeast produced by bioconversion on food industry byproducts for the detoxification of heavy metal polluted wastewaters – an integrated wastewater management solution (REmoval of TOXic METals by special yeast produced by bioconversion on food byproducts). The project was carried out by a consortium with the support of the European Community LIFE-ENVIRONMENT program No. LIFE04ENV/H/000374. Heavy metal pollution in the aquatic system has become a serious threat today. The conventional processes used for effluent treatment are precipitation as hydroxides/sulphides, oxidation/reduction and ion exchange. These processes are expensive and not eco-friendly. Further, the major disadvantage with conventional treatment techniques is the production of sludge. As a result, an aquatic problem is changed into solid disposal problem. Therefore, amongst the chemical adsorbents only ion exchange
resins were considered as the option for remediation with the least ecological problem. However, chemical resins are expensive and the increasing demand of eco-friendly technologies has led to the search of low-cost alternatives which could be considered as single use materials. In this light, biological materials have emerged as an eco-friendly and economic option. Biosorption offers advantages of low operating cost, minimizes the volume of chemical and/or biological sludge to be disposed, is highly efficient in dilute effluents and has no nutrient requirements. These advantages have served as potential incentives for promoting biosorption as a viable clean-up technology for heavy metal(s) pollution. Food industry by-products and/or wastewaters pose a continuously increasing and yet unsolved problem for both Europe and the world. The main goal of the RETOXMET project was to utilise them, contemporaneously purify and recycle them and thus improve a biosorbent. Developed into a product, with the help of this biosorbent, toxic heavy metals (classified as hazardous wastes from the environmental point of view) from industrial wastewaters and polluted soils can be fixed during the process of detoxification and later also regained if profitable. This technology enables us to clarify and re-utilise both wastes and wastewaters of the food industry and heavy metal-polluted industrial wastes and wastewaters. In this way, the project offers a breakthrough in the field of wastewater treatment, a priority of LIFE-ENVIRONMENT, too. During the realization of the project we set up a demonstration plant, the goal of which was the presentation of the efficiency of the new technology developed by the consortium for heavy metal detoxification, conviction of new partners, and their involvement in the application of the newly developed technology. Napfény és C-vitamin Balogh Tibor − Szarka András Összefoglalás A C-vitamin az élĘlények egyik legfontosabb természetes antioxidánsa, enzim kofaktora. Az ember, néhány állatfajhoz hasonlóan, képtelen szintézisére, ezért C-vitamin szükségletünket elsĘsorban növényi forrásból fedezzük. Az aszkorbinsav bioszintetikus útvonala, az arra képes állati sejtekben, már több mint fél évszázada részletekbe menĘen ismert, ezzel szemben a növényi C-vitamin szintézis folyamata egészen a közelmúltig ismeretlen maradt. Bár az aszkorbinsav tartalom és a vitamin kedvezĘ hatásai jelentĘsen hozzájárulnak a gyümölcsök és zöldségek táplálkozásminĘségi értékéhez, a Cvitamin szint szabályozásáról ismereteink még korántsem tekinthetĘk teljes körĦnek. Az a megfigyelés, hogy növényekben az aszkorbinsav szintje fény hatására drámai növekedést mutat, szoros összefüggést feltételez a fotoszintézis és az aszkorbinsav bioszintézise között. Valóban úgy tĦnik, hogy az aszkorbinsav a fotoszintézis, a mitokondriális respiráció és a citrátkör szabályozási hálózatának egyik fontos eleme. Humans and a few animal species have lost the ability to synthesize it. Hence we cover our need from plant sources. The biosynthetic pathway of ascorbic acid in animals is well understood, however, the plant pathway has remained unresolved until recently. Although the ascorbic acid content and the positive effects of the vitamin contribute significantly to the nutritional value of fruits and vegetables, our knowledge in the regulation of vitamin C levels is still incomplete. The observation, that ascorbate exhibit dramatic increases in response to light suggest tight connection between the photosynthesis and ascorbate biosynthesis. Indeed it seems ascorbate can be an important element of the photosynthesis, mitochondrial respiration and citrate cycle regulatory network. These recent biochemical investigations can contribute to enhance the nutritional value of different fruit and vegetable species via the influence of ascorbate biosynthesis.
