Weet wat je eet - Schotse Hooglanders Samen met Gea van Geaardleven ben ik op bezoek geweest bij het bedrijf Schotse Hooglanders in Groningen. Onder het genot van een heerlijk kopje koffie spraken wij
daar met Jelwin en Ymkje Kuipers over gras gevoerd vlees, keurmerken en transparantie.
Oerrunderen Schotse Hooglanders zijn gemoedelijke oerrunderen die nog zijn toegerust op de
omstandigheden van moeder natuur. Met hun dikke (ietwat slordige ;-) ) wintervacht kunnen ze het jaar rond buiten grazen. Precies op de plek waar ze zich het meeste thuis voelen.
Waarom Schotse Hooglanders? Jelwin heeft ongeveer 8 jaar geleden een kleine kudde Schotse Hooglanders geërfd
van zijn vader, welke als hobby gehouden werden. In de loop der jaren werd de vraag om diervriendelijk, duurzaam en gezonder vlees steeds groter en groeide de hobby uit naar een volwaardig bedrijf. De ontwikkelingen gaan hard, de vraag naar gezond vlees is groot en inmiddels wordt het vlees door heel Nederland geleverd.

In Inverness, dat als de hoofdstad van de Highlands bekend staat, kunt u het nieuwe jaar inluiden met de
Red Hot Highland Fling. Dit is het grootste gratis Hogma-
nay-feest in Schotland, waar u zich bij meer dan 10.000 Highlanders en internatio-
nale bezoekers kunt voegen om met zijn allen 2015 welkom te heten. Verder ten zuiden in Aberdeenshire worden de straten van het kustplaatsje Stonehaven elk
jaar op spectaculaire manier verlicht voor het jaarlijkse Vuurballen Festival. De deelnemers creëren bijzondere lichtvoorstellingen door vuurballen om hun hoofd te slingeren.
Het grootste Hogmanay-feest vindt in Edinburgh plaats, waar de drie dagen du-
rende festiviteiten op 30 december beginnen met een fakkeloptocht. Op Hogmanay zelf wordt Princess Street omgetoverd in het grootste straatfeest ter wereld, waar

Eten en drinken in december Als het op eten en drinken aankomt, dan hebben we in Schotland keuze genoeg! Tijdens de herfst en winter kunt u genieten van hartige soepen, vlees- en wildschotels, maar ook heerlijke vis- en zeevruchten.
Kerstmis is in aantocht dus tijd voor kalkoen, maar ook wild, zoals wilde eenden en patrijzen zijn overal verkrijgbaar. Landelijke seizoensgroenten zoals pastinaak, lof,
boerenkool en rode kool vormen het perfecte bijgerecht. In restaurants en hotels door het hele land vindt u menu’s van het seizoen, met de beste (en vaak lokale) producten die er in dit jaargetijde zijn.
Als u liever iets minder formeel eet, dan kunt u eens ‘stovies’ proberen, een uitstekende winterschotel die op allerlei verschillende manieren gemaakt kan worden,
naar gelang het deel van Schotland waar u zich bevindt. Dit traditionele gerecht bevat altijd aardappelen en groenten, maar kan worden bereid met allerlei ingrediënten, van geroosterd rundvlees tot gehakt.
Als u van zoet houdt, probeer dan eens het traditionele Schotse tablet, dat op elk moment van de dag gegeten kan worden. Deze versnapering wordt van suiker, con-
densmelk en boter gemaakt en lijkt op fudge maar is iets harder. Soms wordt het op smaak gemaakt met vanille en stukjes noot: compleet onweerstaanbaar!
Wilt u even een break nemen tijdens het kerstinkopen doen, proef dan eens onze heerlijke producten zoals Aberdeen Angus rundvlees of wild op een van de kerstmarkten die door heel Schotland worden gehouden. In

Dag 2 een dag landschap en bezienswaardigheden ontdekken in de omgeving, the Crinan Canal. Kintyre, in Inverary zelf bevinden zich een Victoriaanse gevangenis, kasteel (hoofdkwartier van Clan Campbell), wandelingen en kleine winkeltjes. Overnachting in Inveraray. Dag 3 historische rondreis vandaag, rijdend langs de kust naar Kilmartin Glen, 5000 jaar oude staande stenen, grafheuvels, oude graven, village Kirk (dorpskerk) en pub. Fantastisch landschap als u richting Oban rijdt. 13 Kilometer voortijdig linksaf slaan naar Seil Island, over de “bridge across the Atlantic”, erg pittoresk met een pub naast de brug. Terug naar de hoofdweg op naar Oban, zeevis hoofdstad van Schotland. Overnachting hier. Dag 4 opties: rijd oostwaarts naar Glencoe en Fort William, of een veerboot naar het eiland Mull. Beide opties zullen u goed bevallen, overnachting in Oban. Dag 5 terugrijden naar Edinburgh via Tyndrum, Killin, Perth, of een meer directe route, kan vooraf bepaald worden bij uw boeking. Curling tour of Scotland
This itineraray is a long weekend curling trip, we can be flexible and offer any dates
Dag 1 aankomst op Edinburgh airport, neem de bus of taxi naar Edinburgh centraal station
(20 minuten) en neem de trein naar Inverness. Na een fantastische pittoreske reis aankomst in het centrum van de stad, een taxi naar uw accommodatie, relaxen, bagage afgeven en de rest van de namiddag/avond gebruiken om te ontdekken en dineren. Dag 2 een ochtend uitstapje. Van het VVV-kantoor wordt u opgehaald door de toeringcar die u naar de River Ness Jacobite Loch Ness Cruises brengt (bij de reis inbegrepen). U vaart door het loch naar Urquhart castle om de ruïnes van dit kasteel, ooit een van de grootste van de highlands, te bezoeken. Ruimschoots de tijd voor een bezoek, te winkelen en wat te eten. De bus wacht u op om u terug te brengen naar Inverness. Eenmaal aangekomen, neem een taxi naar Culloden Battlefield waar Bonnie Prince Charlie in 1746 werd verslagen (zijn enige nederlaag) door de Engelsen. Hier een bezoek aan het fantastische museum, gevolgd door een wandeling met een gids over The Battlefield Moor. Terug wanneer u dat wilt naar Inverness per taxi. De rest van de dag vrij te besteden om de vele winkels te ontdekken, pubs, wandelingen langs de rivier, touristische attracties. Overnachting in Inverness. Dag 3 opnieuw naar de trein, in zuidelijke richting naar de in de Perthshire highland gelegen stad Pitlochry. Hier zijn twee whisky distilleerderijen (Edradour & Bells), theater, visladder, tuinen, winkels en restaurants. Een Victoriaanse vakantiestad! Als u zin hebt een balletje golf slaan. Ook het beroemde Heathergems Centre bevindt zich hier: sieranden en snuisterijen gemaakt van heide. Een alleraardigst pension voor uw overnachting. Dag 4 Opties voor vandaag zijn: per locale bus naar Blair Castle of per touringcar naar Dewar world of whisky in Aberfeldy, the Crannog (oude boven het water gebouwde huizen), Killin en de Falls of Dochart, pittoreske stroomversnellingen met plaatselijke dorpspub, erg pittoresk. Overnachting in Pitlochry. Dag 5 een laatste treinreis, deze keer naar Edinburgh. De resterende tijd van de dag besteden aan het ontdekken van onze hoofdstad, zoveel te zien en te doen. Annandale 01 Jolly Jaunt Annandale Distillery Visit 12 October, 2014 Jolly Toper on the Road Prior to its official opening, the distillery invited Jolly Toper to organize a sneak peak
tour of the facility, for a group of twenty-five whiskyphiles from the Edinburgh area. A
rare glimpse into a distillery that is yet to begin production was quite a treat, particu-
larly considering this is a Lowland distillery. When it begins production, which may peak at 250,000 liters per year capacity, Annandale will serve as Scotland’s most southerly active distillery.
Touring and Tasting The day-long trip included an assembly in central Edinburgh and a pleasant two-hour
coach ride through the Scottish Borders to Dumfries and Galloway. Upon arrival the
visitors assembled at the Village Inn in Kirtlebridge, a few miles from the distillery. Because of the space available and construction works still in progress, the visitor team was divided in two manageable groups. Jolly Toper’s program included an educa-
tional tasting on closed distilleries - a lineup of five whiskies - but in a manner slightly
different from his usual tasting program. It proved to be an interesting approach. After the first group departed for the distillery, the others engaged in a three-whiskies
tasting session. Upon the return their roles changed. Later, the groups joined into another session with two more whiskies.
This approach has created an inspiring whisky experience, which became a conver-
sation topic in the aftermath. The members of each group compared notes on the first three separately-tasted whiskies and the distillery tour with their counterparts.

Annandale 01 vervolg Equal Attention to Past and Future At the distillery, Michael Hanratty, Annandale’s Whisky Experience Manager, took
special care in giving equal attention to everyone, answering questions about its
past, present, and projections for the future. Here, one feels that “the present is the fruit of the past and contains the seeds of the future,” as a scholar of culture, E. Rostlund, once noted. Emphasis on history is evident in an attempt to integrate the distillery into the landscape and cultural context. Remnants of the 19th century masonry, discovered during the recent construction, have been preserved to illustrate this very
point. Future visitors will be in position to learn about the four iterations of Annandale Distillery, its place in the industry and the local and overall Scottish history.
Within the Walls Inside, creating an aesthetically pleasing environment has received much attention. This is particularly evident - to the visitors’ great satisfaction - in the open floor
still room. A comment that this was one of “the most beautiful” in Scotland was not inappropriate. The photographs speak even louder than words. Stills, slightly elevated from the washbacks made of Douglas fir, make for an enjoyable view the
moment a person steps in the room. Condensers are outside. Although it does not
appear that way, the stills are actually at the ground level, because the building is dug into the ground. The future tasting room leaves an impression of a cozy place
where the visitors will have fun. Distillery’s theme of rock and crafted wood are
represented in the tasting room, too. During our visit the work to finish the details was still ongoing.
Wrapping Up Time flies by fast when people have fun. After the tour and the final part of the tasting, an occasional pint and a war story or two, the group gathered for the departure. In a cheerful mood Jolly and the Topers carried conversations about the latest adventure to Edinburgh. Already in the making are future Jolly Jaunts to other Scotch whisky destinations.

Curling & Whisky This itinerary is a long weekend curling trip, we can be flexible and offer any dates
within the season, week days are better to curl as the weekends are tied up (mostly) with local clubs. We can also add days to any tour plans. All out curling tours include
full transportation, hotel with fully cooked breakfasts daily, curling ice time and local teams to play against. It also includes any visit fees.
Day 1; Arrival in Aberdeen suggested at 09:55. Paul and Liz will meet you all here.
Then drive to Brechin, where you will take a tour and a good sample selection at Glencadam whisky distillery. Then continue to Broughty Ferry. You stay overnight here at a local hotel. Get used to our Scottish weather, and enjoy the local scene at the ‘Ferry, we know all the very best pubs and restaurants, enjoy your first night here with a few drinks with the locals.
Day 2; Curling Bonspiel Another visit this morning, we can arrange a visit with tast-
ings to Eden Brewery & Distillery at St Andrews. From here directly to Perth Dewar’s
rink. We can allow for a short lunch break either in St Andrews, a rest and “meet
the local team” for your second session - we will arrange local Scottish teams to curl against. Returning to the ‘Ferry for overnight, meet the locals in Liz’s local pub.
Day 3; From the hotel, we travel to Forfar for a double curling session, two sessions against local teams on Forfar ice. Time for lunch between sessions and plenty of time
after the second session for mixing with the locals. Return to the ‘Ferry overnight once again.
Day 4; Depart hotel approx. 8.30 Drive direct to Aberdeen, flight probably at 12:55
Based on a team of 4 curlers, sharing two twin rooms, fully cooked Scottish breakfast

Dalmunach distillery Production Commences at Chivas Brothers’ new Speyside malt whisky distillery Chivas Brothers, the Scotch whisky and premium gin business of Pernod Ricard, has completed the construction of its new Speyside malt whisky distillery, reinforcing
its long term growth prospects in the face of increased global demand for Scotch
whisky. Production at the new distillery, commissioned by Chivas Brothers in 2012, will commence this month (October 2014).
Built using the latest innovations and environmental expertise such as heat recovery
technology, the distillery is capable of producing up to 10 million litres of high quality Speyside style spirit per year to support the growing global demand for the bestsell-
ing blended whisky brands within Chivas Brothers’ portfolio, which includes Chivas Regal, Ballantine’s and Royal Salute.
The new distillery, which is Chivas Brothers’ 14th operating malt whisky distillery, is
named Dalmunach after the nearby pool in the River Spey on whose banks the distillery sits. It has already had a positive impact on the local economy with companies from the Speyside area heavily involved in the construction, while an additional eight permanent employees have joined the Chivas Brothers production team.
Every element of the distillery design, including the unique still shapes, has been
geared to producing the very highest quality Speyside malt whisky with a rich, fruity character, a vital ingredient to the highest quality blended Scotch whiskies.

The distillery architecture has been inspired by the shape of a sheaf of barley reflecting the core ingredient of single malt whisky. It houses eight unique copper pot stills,
with a tulip shape used for the wash stills and an onion shape used for the spirit stills,
replicating those from the Imperial distillery which was situated on the site until 2012.

Other original features from the previous distillery have been carefully incorporated to ensure a sense of heritage remains intact. Red brick from the original mill building
has been reclaimed to create a feature wall in the new entrance area, and wood from
the original washbacks has been used to form an entrance ‘drum’ and adorn the
gable walls of the new tun room which contains 16 new stainless steel washbacks. A new 9.5m diameter mashtun has been installed which draws spring water for production from the site’s original distilling water sources.
Situated on the banks of the River Spey, the Dalmunach distillery will not be open
to visitors but will be visible from the nearby Speyside Way walking trail. Great care
has been taken to ensure the external façade of the distillery is in-keeping with its surrounding environment and the traditional architectural style of the region, thus providing an interesting and fitting new viewpoint for passers-by.

Eden brewery Paul was chatting to Kevan Fraser, General Manager. Q; What started you along this whisky road when you have a successful beer operation? A; It seemed the next logical step for us to progress in to distilling. Looking
back at the history of our site it was a brewery and before that a distillery owned by
the Haig family between 1810 - 1882 so its nice to be restoring the site back to its original use.
Q; talking of the beer, how is this going? A; The beers are going down well we are
in the process of increasing capacity to keep up with demands with lots of interest in the export market.
Q; sorry, back to the whisky - Paul Mc’s note; wasnee my fault, he kept giving me
beers as we chatted! - who has been involved during the whisky start up process? A; We have been consulting with David and Tony from Strathearn who are great
Q; where did the stills and equipment come from and why? A; From Hoga in Portugal
to make the great 1000L Stills and do this in the small time frame we were looking for.
Q; where will the casks come from? And what size? A; We get casks from all over
our PX and Sherry casks from Toneleria J.L. Rodriguez as a sherry finish will be
our standard finish. But we will source casks from all over too try new and exciting finishes too.
Q; will you have the opportunity to “finish” differently? A; Yes we will and as we are all
small batch gives us great flexible to experiment and try new things.
Q; who is the master distiller? (whisky) A; Scott Ferguson is the head of our distilling. Q; will you be selling casks from day one? A; We are selling casks but only a limited
number each year.
Q; I think also you mentioned new make sales, can you expand on this? A; We are
looking at perhaps releasing a small amount of new make spirit to show people the
progression of the spirit with the smaller octaves that mature at a faster rate than the larger counter parts.
Q; what will be the annual volume of whisky? A; 80,000L Q; your plans are small but quality distilling? A; Yes Our aim is to create the best

drives you on to write another book, where does your inspiration come from?
A; A pressing need to put food on the table and the bank off my back! Q; I know you also contribute to The Malt Whisky Yearbook, I met Ingvar in Helsinki early this year at a whisky festival, a really nice fella, in fact he is bringing a few
friends on tour here next year, we are taking care of him. How well do you know him and when did you start to contribute?
A; I have been writing for the Yearbook since its second issue (I think). Ingvar is, as you say, a delightful chap; it’s a pleasure to write for the Yearbook, not least because the format allows for longer and more thoughtful articles.
Q; Talking of whisky authors, you MUST know our whisky club Patron, Charlie Ma-
clean (we like to keep things in the family!).
A; Charlie and I have been friends for longer than I care to remember, dating back to when I lived in Edinburgh. We meet up from time to time to share news and views and that’s always a pleasure.
Q; Most whisky authors will upgrade their book, revise the following year and so on,
do you do the same?
A; If the publisher agrees, and the demand is there, then yes. Some of my books e.g.
corporate histories for Dewar’s, Glenfarclas, Glenglassaugh and so on, don’t date so

Q; Do you find the whisky industry is moving on with progress or has it stumbled

A; It’s in pretty good shape overall I think, with record levels of investment and new
consumers entering the market. The recent drop in Scotch exports (-11% Jan-June 2014) is a worry though and the increases in prices seems troubling.

Q; Do you have any thoughts about finishing? Port, Sherry etc. A; I actually developed the prototype product that became Glenmorangie Port Finish
(the first one) so I was in on the ground floor! Done with care it’s a great way to show new aspects of distillery and spirit character. Done wrong, it’s a gimmick. But most
people do it well.
Q; Here’s one to test your mind; what would happen if, for example, a distillery used
beech or larch in place of oak casks?
A; Well, legally, it couldn’t be called ‘Scotch Whisky’. But custom and practice shows
oak to be the best wood for casks. I guess it might make for an interesting, off-beat experiment - just for curiosity’s sake though.
Q; Weird question time; if Aliens came and took ALL our whisky in the world, what
would you then do with your time?
A; Hunt down the little critters and show them no mercy. Q; Do you have plans for the next book already in mind? A; Indeed. A corporate history of Morrison Bowmore should be out just before Christ-
mas and looks stunning. Then I am working on a book about gin right now.
Q; The 101 whiskies aforementioned; did you sample every one? A; I might have tried 102. One has to be selective and some whiskies just didn’t make the cut.

that should be available from each auctioneer. Now, we’re not talking about the
charges, which we covered in the first instalment. No, what needs further consideration is the type of bidding software utilised by the auctioneer.
BIDDING FORMAT Take for instance you’re first in with a bid, all anxious and wanting to get things under-
way. The bottle has no reserve and bidding starts at £5. You’re prepared to pay £100. Now with some auctioneers the winning bid will show as £5 and you’ll have the safety net of being able to sit back and automatically bid right up until £100 is breached.
This is known as proxy bidding software and is featured on some auction websites
including here at Just-Whisky Auctions (JWA). A different approach is also utilised by some auctioneers whereby your maximum bid is immediately taken and displayed. In
this scenario the bid would immediately show at £100, meaning to secure this bottle you may have bid again.
There are pros and cons to both methods so being aware of what format bids are taken in advance is advisable. My own personal preference is the proxy format as a bidder and regardless of what method the auctioneer features, in this day and age
you should be informed almost immediately by email if you’ve been outbid or you can access the auction via your mobile phone.

Lots may have a reserve price and these are set by the seller in advance. A good auctioneer will discuss reserves with their client and set an expectation whether what
they are looking for is realistic. The reserve is there to protect the seller who will only
part with the bottle when a minimum price is met. Of course there is nothing to stop the seller going against the auctioneer and setting their own reserve ignoring any advice. Hence why the auctioneer will charge a reserve fee to cover the entry of the lot in the auction; otherwise it’s a free listing for something that might not sell.
If a reserve has been set on a lot then it should be highlighted as part of the lot de-
scription. Unfortunately some auctioneers do not highlight this so your bidding may
be in vain even if you place the highest offer. In these situations the auctioneer may
act as a negotiator between you and the seller after the auction has ended. Personally I have acquired bottles through such discussions and here at JWA the lot will highlight when a reserve is placed and when it has been met.
Another method is to open the auction at the reserve level. For instance the seller
will not part with the bottle unless his minimum price of £800 is bid. Therefore the
auction bidding starts at £800 rather than £5. While this method protects the seller it can dissuade others from bidding until the very last minute or at all. On the flipside at least you know what you have to bid to remove the reserve.
CLOSING AUCTIONS Just hold on for a moment as you’re almost ready to bid! Another aspect to consider is how auctions close. Every auction has a closing time stated but auctioneers can adopt different methods prior to closing a lot. Again, it is worth being aware of what you will be dealing with in advance.

entity until the bids dry up. This can be annoying to a certain extent, as you’re faced
with babysitting a bottle to ensure you are successful. Literally you can be sitting online several hours after the auction should have ended.
Another approach is one utilised here at JWA and we believe this is fairer to buyers and sellers alike. If a lot receives a bid within the last 5 minutes then a time extension will appear. This means that if a lot doesn’t receive a bid within those dying moments
then you’ll have won the lot when the auction is supposed to end. However say if
a bid does come in then a 15-minute countdown for that specific lot appears. If no further bids are entered within this set period, the highest bid wins.
EXAMINING THE LOT Now we’re almost ready. You’ve ticked all the boxes and know what is expected of you as a bidder in the auction. You’ve identified a bottle and before bidding please
read the description carefully and review the photographs. Look for anything that
may affect the value and for older bottles the auctioneer should comment if the fill level is below the norm - this could suggest poor storage or a weaker seal. The
importance of provenance is only going to increase in the coming years. Each bottle in my personal collection is documented and recorded as to where the bottle was purchased, when, the price and the original receipt/invoice is archived.
If you have any concerns or questions regarding a lot or a more detailed photograph
then contact the auctioneer before bidding. Good customer service should apply to sellers and prospective buyers alike.
If you follow all of these steps then you’ll be better prepared to participate in a whisky auction and remember it can be an enjoyable experience! In the third part of this
feature we’ll look at some tactics and the importance of not getting carried away during an auction.

Isle of Harris distillery Today marks a milestone in the development of the Social Distillery 3rd November, 2014 Isle of Harris Distillers are delighted to announce that one of the main aims of the project, “to be of benefit to the local community” will take a step forward today with the first employees taking up their posts.
The small production team of four members has been recruited entirely from within
the working population of the Island and will be led by Production Manager Kenny Maclean (pictured) whose family have worked the land in Harris for generations.
Joining Kenny will be Donnie Macleod, Billy Fraser and Donald Macleod. All four men have varying work backgrounds including engineering, construction, administration
and I.T. Most importantly they are all united in a passion for our Island and a desire to make The Hearach the finest malt it can be.
The new production team will now undertake an intensive training program to learn the art and science of distilling with the support of experts from within the Scotch whisky industry.
Early in the new year the team will be managing the installation and commissioning
of the new distillation equipment, with the aim of having the first batch of the Harris Spirit filled into casks in the spring.

Curling & Whisky October 2014.
We were hosting a curling team from Norway who just happened to like a dram now and again! Carl, Calle, Morten and Erik wanted to come over (again)
and do some curling with local Scottish teams. We, of course obliged them and
added in whisky - as you do. Thursday 30 October; The guys arrived into Aberdeen, we then drove south towards the County of Angus. With some local sightseeing en route, the first stop was Brechin,
Glencadam whisky distillery. The tour was with
Douglas Fitchett, Distillery Manager. Glencadam first opened in 1825, in the ancient
city of Brechin. It was little more than one year after the Excise Act of 1823 legalised
distilling. Glencadam is now the only distillery in the county of Angus, an area of the Highlands region of Scotland between Dundee and Aberdeen. Glencadam Single Malt has always been premium whisky for blending, and as such was highly sought
after for some of the world’s most prestigious blends. Glencadam was finally bought
by Angus Dundee Distillers on 1st June 2003, an independent Scottish company. Angus Dundee restarted production immediately, and we released our first ever single
malt product, Glencadam Single Malt Scotch Whisky Aged 15 Years, in December
2005. This was subsequently re-launched in November 2009 with new packaging, alongside the release of a 10 year old expression. The current multi-award winning
range includes Age 10, 15 and 21 Years expressions are good, WE TASTED THEM ALL along with a new make spirit. The most popular dram on the day was Aged 14 Years Oloroso cask finish. We all (except Paul who was driving) had a good tour and
taste here, many thanks Douglas and his team. We then drove south to Broughty
Ferry where a grand lunch was taken at the Ship pub, the @Ferry was also where
they stayed overnight. Liz lives in the ‘Ferry, so we were well covered for local news and where to eat and drink.
Friday 31 October; we started the day with a visit to St Andrews Eden brew-
ery/distillery, a tour (doesnee take long) until 10am by then we can legally drink samples - we did! Beers by the way and gins, no whisky as yet. Kevan the general man-

side to the worm tubs. The distillery operates a balanced distilling process: each wash back provides 6 individual charges for the wash stills; two wash distillations make up the charge for a spirit distillation. This makes for a busy shift in the still house with 9 sepa-
rate still charges to be made. Using worm tubs to cool the distilled vapours, as opposed to condensers, adds a depth and richness to the spirit. An added bonus are the fresh water shrimp which thrive in the tubs.

Merry Beth, can you give me a brief rundown on the distillery.
A; MB Roland Distillery is a completely “grain to glass” craft distillery in Pembroke,
Christian Co. KY, using local white corn to hand make a very unique “distillation & barrel proof” Kentucky Bourbon. The distillery was founded by myself (“MB”) and
Paul Tomaszewski in 2009 as Kentucky’s first completely “grain to glass” craft distillery. Paul is a native of south eastern Louisiana and arrived to the area via nearby
Ft Campbell, while MB is a local native. An Amish dairy farm came up for sale and proved to be a wonderful foundation for a Kentucky craft distillery.
Why at this location? A; One of the major benefits of the location is the proximity to a local grain supplier, Christian County Grain, located in nearby Pembroke. The operation started out with Paul as the one and only full-time distiller in 2009. Since then our team has grown
to more than 14 total employees, including myself coming over full time. The one constant with us with both our production process and our location is that we love
what we do and strive to make that come through in our products, the distillery, and our onsite events.
How do you make your whiskey? A; There is no minimum aging time for whiskey, but for certain whiskies (like bourbon or rye) to be designated as “straight,” they must be aged in the barrel for at
least two years. However, there is one whiskey that, by law, does not need to be
aged; corn whiskey. In fact, IF corn whiskey is aged, it can only be aged in used, charred oak, or toasted oak barrels. Unlike most other grain whiskies, corn whiskey also needs to be at least 80% corn, while bourbon, rye, and other whiskies need
only to be at least 51% of their respective major grains. There are some specifics

MB Roland distillery vervolg for the type of barrels that must be used (new vs. used charred, toasted, etc.) for
finishing still. The original 100 gallon still is now a water fountain gracing the front
that must be produced in America, distilled from at least 51% corn, and aged in
tun. We double distil our product, stripping the whiskey on the 600 gallon still using a
certain whiskies, and that’s where it starts to get confusing. Bourbon is a whiskey new, charred oak barrels. There are some other specifics, but the main idea is that it’s American, corn-based and aged in new, charred oak. There is no requirement for bourbon to be made in Kentucky. However, 95% of all bourbon is made in Ken-
tucky. At MB Roland Distillery, in addition to our bourbon we take pride in making
other unique whiskies made a typical Kentucky distillery. We’ve made everything
from our “Black Patch Whiskey” to a wheat-based whiskey. There’s no end to the variations and we’ll be trying out new things anytime we get a chance or an excuse

unique method for our secondary distillation, incorporating previous batch low wines to attain a lower proof finished spirit for a very full flavour.

Nephin distillery Interview with Paul Davis Nephin Distillery - Nephin (pronounced Nay - Fin) Whiskey Company
Nephin Whiskey Company opened the first distillery in the west of Ireland for 100
years. There are many new distilleries either in progress, or planned for Ireland in these coming years,

and my wife (Jude) had bought a holiday home here a number of years ago and fell
in love with the location. On one side we have the peak of Nephin mountain which
dominates the landscape and on the other side we have the blue of Lough Conn. In between we have the peat bogs that have been used for generations in the area for
fuel for heating. It always struck us that this would be a great place for a whiskey bar, but footfall was always light. Then just over a year ago I came across this particular site in the heart of the village and I knew that it was the perfect location for a distillery.
It had the history of local stills (making traditional uisce beatha albeit illegally) and a great sense of community. We both knew it was the right spot to start the business.
Opening ceremony, who cut turf, laid a stone etc? This was a great occa-
sion. We had An Taoiseach Enda Kenny launch the distillery. It was attended by most
of the locally elected representatives, local councilors and most of the residents of
the area. We had speeches from the CEO of Mayo County Council and the Local En-
terprise Offfice. To be honest it was a great day with huge support for the enterprise.
Will this have any impact on the local community? (good or bad) It
will create 18 jobs locally. These will be full time. It will create a cooperage onsite whereby we will train up initially two new coopers. We will have the tourist side
which will bring in over 40,000 visitors per year - currently the village would have
less than 5000 visitors per year. So economically it will be very positive for the
village. We are also working with a couple of the businesses on a redevelopment plan for the village itself to enhance it. You can see the proposed development in the pictures attached.

McLeanScotland MCLEANSCOTLAND recently hosted another whisky tour of Scotland, unknown to us at the time - until the final day - they were taking notes and voting on distillery visits, here are their results;

den, all into the vehicle and away we went! North to Keith and our first distillery tour
at Strathisla. A good private tour here followed by four drams; Strathisla single malt, a grain and two Chivas Regal blends of different ages. Liz joined in … while Paul

Day two saw the group depart after breakfast for Glen Moray distillery and a brief
visit to the ruined Elgin cathedra. Booked in for 11am, we then hot Macallan, Liz and

check in luggage, say goodbyes (the group stay in Edinburgh two nights) and we head home, reached it at 5.45, tired, so drams flared up! It was a good tour, lots of fun, even more whisky and 5 more Swedish friends to add to our growing list!

A; Tullibardine has a core range of Tullibardine Sovereign, which
is our signature malt, and three finishes - 225 (Sauternes), 228 (Burgundy) and 500 (Sherry). We then also have a 20yo and 25yo expression. We also own the High-
land Queen and Muirhead’s brands of Scotch Whisky, which are widely distributed
around the world.
Q; On a personal note, and for all drivers, will future plans include a coffee shop/ A; We are focused on our whisky, so it is unlikely that we will put in a full

Interview: The Whisky Exchange’s Sukhinder Singh October 6, 2014 - Sukhinder Singh has seen the growing interest in whisky collecting and investing from multiple points of view. As the co-founder of The Whisky Exchange in London, he’s made rare bottles available to collectors and investors, and his own personal whisky collection is one of the world’s largest.
While he’s not sure exactly how many bottles he has in a secured warehouse, he estimates his collection at between 6,000 and 8,000 bottles. That includes one of the rarest and most expensive whiskies ever, one of the three bottles of

Whisky travellers Whisky travellers from Norway We were very happy to look after a second group arriving from Norway in two days! To be brief, here is where they visited; Glendronch distillery, a traditional harbour
pub in Portsoy, Speyside cooperage, Glen Grant, Glenfiddich, Aberlour distilleries, in addition to our friend’s shop in Dufftown, where they tried on kilts! With really good evening meals, fantastic whiskies at our great pubs, more whisky in the vehicle and
of course great scenery! Our driver guide took very good care of them, while Liz and
Paul looked after our other Norwegians friends - the whisky curlers (that’s another story).
Here is what they sent us once home; “Hi again, yes we have now recovered from a great and interesting trip, with a lot of new experience, and a very good tour leader/
driver! The trip was fantastic, and enjoying, with a good variety of happenings. As this
was our first time in the highlands, we think the program in general was good. And
we did suggest a couple of things we would like to do, outside of program, and this was no problem. Thank you very much for the present you arranged for Frode, very
surprising for him, and he thought this was a great thing! We will have no problems
